Greek breakfast, philosophy of the program The Greek Breakfast is an initiative taken by the Hellenic Chamber of Hotels which utilizes and connects the cultural – gastronomic wealth of the country with the Greek hotel business. It is a program designed by the Hellenic Chamber of Hotels which has been in operation since 2010 and whose aim is to enrich the breakfast offered in Greek hotels with pure and unique Greek products as well as with traditional local dishes from every region of Greece. The aim of the “Greek Breakfast” program is to give Greek hotel guests the chance to know the gastronomic wealth of our country and taste at breakfast the innumerable Greek products and dishes which are at the heart of the Mediterranean Diet. The Mediterranean Diet is not just a modern dietary trend but is according to UNESCO the “intangible cultural heritage of mankind”. The main products of the Mediterranean diet such as the bread, the rusks, the olive oil, the olives, the yoghurt, the honey, the cheese products, the cured meats, the fresh vegetables, the legumes, the pies, the sweets and the fresh fruit form the basis of Greek breakfast. Each part of Greece, depending on the climatic conditions, the soil, the produced products and the cultural relations and exchanges, has formed a particular gastronomic culture and local cuisines. Although the foundation of gastronomy

is common, each region has its own gastronomic treasures and so the characteristics of the Cretan cuisine for example differ from those of Macedonia, of Epirus, of the Peloponnese, of the Aegean islands etc. It is the gastronomic diversity of each region that the “Greek Breakfast” wants to highlight, contributing to the formation of the cultural identity and tourist profile of each place, giving in this way guests the chance to get to know and taste at breakfast the wealth of our Greek gastronomic tradition. Because, apart from getting to know the dishes and products, the aim of “Greek Breakfast” is to bring together the producers with the consumers, to help visitors learn about the ways of production and highlight in this way the place, the landscape and the natural surroundings where each flavor is produced. Our wish is to identify bottarga with the calm and melancholy lagoon of Mesologhi, the gruyere of Crete with the “mitata” (shepherd’s house) in the Lefka Ori mountains, the fava beans and cherry tomatoes of Santorini with the volcanic environment of the island, the “tsakoniki” eggplant with the beautiful valley of Leonidio, the oil with the fertile plains of Messinia, so that the gastronomic experiences are combined with experiences of exploring places, techniques and the way of life of people in the countryside. So that gastronomy, culture and natural environment have a common identity.

Annual Report

The number of the hotels participating in the program is expected to exceed 450 by the end of 2014.

› Completion of the study on the philosophy, the content and the strategy for the development of Greek Breakfast. › Creation of portfolios of the regions of the country, in which the tangible and intangible gastronomic culture of the country is recorded. This material is used to create the model Greek Breakfast for each place and furthermore to train and inform the hotels. › Creation of the logo and distinctive title of Greek Breakfast and distribution of the first information manual to the hotels in Greece. › Participation in national exhibitions and promotion of the project to the Greek society and the Tourism sector through the Mass Media.

› Creation of the first 7 models of Greek Breakfast in Kos, Rhodes, Naxos, Chalkidiki, Santorini, VolosPelion and Lesvos. During the presentation of each model those involved (local producers, chefs, journalists and gastronomy researchers, local self government) form relations of cooperation and become active in the promotion of the project. › The first 62 hotels join the program. › Creation of the www.greekbreakfast.gr webpage where one can find the Greek Breakfast models, the participating hotels, the activities and the publications in the Mass Media.

› Creation of Greek Breakfast models in Thrace, Eastern Macedonia, Western Macedonia, Crete, Corfu and Evia. › Participation in exhibitions, congresses, forums and escalation of the promotion of the program on a national level. › Honorary Distinctions awarded to the first 100 hotels to get the Greek Breakfast sign. › The number of hotels participating in the project has reached 251.

› Creation of 8 new Greek Breakfast models in Epirus, Zakynthos, Lefkada, Chios, Mykonos, Peloponnese, Central Macedonia etc. › The number of the hotels participating in the program is expected to exceed 450 by the end of the year. › Commencement of the outward action of the project in order to inform the international tourism market. Sweets The Greek sweets are divided into two categories: spoon sweets and baking pan sweets. Some of the most traditional sweets of Greece are the spoon sweets. They are sugared fruit from the classic to the most unusual, sweet like honey, which we can find in every corner of Greece. Spoon sweets were created many years ago because housewives needed to find a way to preserve the extra fruit of the production either in syrup aſter boiling them or in marmelades. They are called “spoon sweets” because they were served in special small plates with a small spoon. The most characteristic ones are the orange, the tangerine, the bergamot, the bitter orange, the apple, the quince, the grape, the cherry, the sour cherry, the fig and the peanut. The sweets baked in a baking pan or otherwise called ‘in syrup” are a Greek’s biggest sweet sin. No one can resist the intoxicating smell of the butter, the flavor of the freshly ground dried nuts and crunchy “fillo” dough layers, the aroma of the syrup. Although there are a lot who consider them to be Greek –because they are deep rooted in the country– their names (“kataifi”, baklava, “galaktoboureko”) and their history refers to places like Lebanon, Syria and Egypt.

The pies The pies are one of the most typical dishes of Greek traditional cuisine. With just flour, water, salt, some local product and a baking pan we can have relatively quickly a dish that can feed many mouths. The filling of the pie differs from place to place depending on the local products and local habits with the most common being cheese pies, meat pies, spinach pies, wild herb pies vegetable pies (with different vegetables) and the most complicated ones filled with meat, cured meat, rice, trahanas and various vegetables. The most common pie in Greece is cheese pie –its various versions are endless– and it is made mostly with “feta” cheese or other white cheeses such as “ksinomyzithra”, “anthotyro”, “touloumotyri” or “manouri” and also with harder cheeses like “kasseri”, “kefalotyri” and gruyere. Many regions of our country have as point of reference in cooking their own pie and they all believe their pie is the best. In Greece there are numerous kinds of pie (for those who fast or not) which differ depending on the “fillo” dough they use (thick or many thin layers), the shape (round, square, spiral), the size (big in Epirus, Thessaly, Macedonia and small in the Aegean islands), the flavor of the filling (savory or sweet) and the way of cooking (baked in the oven, on a hot slab or fried in olive oil).
