The Grand Collins

Playing with innovative flavors using exotic fruits, herbs, and infusions is the new trend in signature cocktails. Achieving this perfect fusion, the Grand Collins has become an iconic cocktail at Vidanta.

Ingredients

For the hibiscus infusion • 1.4 ounces (40 g) dry hibiscus flowers • ½ quart (½ l) water • 1½ pounds (700 g) sugar

For the cocktail • 2 ounces (60 ml) premium vodka • 1 ½ ounces (45 ml) hibiscus flower infusion • 1 ounce (30 ml) lime juice • 3 basil leaves • Club soda to complete

Directions

Hibiscus flower infusion Boil hibiscus in water until a ruby-red color is obtained. Strain out flowers and simmer to reduce. Add sugar gradually and keep cooking to achieve a syrupy consistency.

Beverage Pour premium vodka in a cocktail mixer with ice. Add the hibiscus infusion, freshly squeezed lime juice, and basil leaf. Shake vigorously to extract oils from basil. Serve on the rocks. Add club soda and decorate with a basil leaf.

Chef Tip: Hibiscus flower is key to this preparation. Be sure to select high quality flowers in order to get the expected color and flavors.
