Burke’s Spring
This appealing cocktail entices you with the distinct aroma of bourbon mixed with scents of peach and mango. The artisanal syrup made from star anise, pink pepper, and a touch of vanilla creates a truly unique drink.
Ingredients
For artisanal syrup • 12 ounces (350 ml) water • 2 star anise • 5 pink peppercorns • ½ vanilla pod • 1 ½ pounds (650 g) sugar
For the cocktail • 1 pineapple slice • 1 orange slice with peel • 1 ounce (30 ml) mango pulp • 1 dash lime juice • 1 ounce (30 ml) artisanal syrup • 1 ½ ounces (45 ml) bourbon • 1 ounce (30 ml) peach liquor • 2 basil leaves
Directions
Artisanal syrup Boil star anise, pepper, and vanilla in the water. Add sugar when it starts to boil. Let boil until it reaches a thick, syrupy consistency. Let cool.
Drink Add the pineapple slice and the orange slice to cocktail mixer. Add mango pulp, a dash of lime juice, and the artisanal syrup. Add bourbon and peach liquor. Finally, add the basil leaf and ice. Shake vigorously. Serve on the rocks and decorate with a piece of pineapple.
Chef Tip: Pepper, star anise, and vanilla are strong flavor spices so it is important to watch the quantities when making the syrup. It should have a gentle, yet aromatic flavor.
