Arrigo Cipriani is Harry’s Bar, which was founded by his father at San Marco and although he’s the keeper of the bar’s historical memory, he’s also utterly discreet. Aged 90, Arrigo Cipriani is an atypical and still incredibly active man. Every morning he’s here in his bar - the world’s most famous bar, the place everyone wants to be regular of, its reputation made by artists, glamour and intimacy preserved intact through the decades. Carpaccio, beef dressed with the universal sauce of egg yolk, white wine vinegar, mustard, and the Bellini, a cocktail of prosecco and peach juice, have become common terms in international vocabulary. al landmark by the Italian Ministry of Cultural Heritage.

What’s your favourite description of Harry’s Bar?

A place where you feel at home. When I greet a guest I do it with the same approach as I would a guest at my house, because this is my home.

What’s in your DNA?

My father’s approach: freedom, which translates into the absence of any type of imposition on our guests. The early years bar was requisitioned by the Republican army. I discovered

What’s the secret of hospitality?

Greet customers with a smile and a kind word, but also - and I stress - create an atmosphere without impositions. It’s no good treating customers like schoolchildren being instructed by the chef, maybe with one of the tasting menus restaurant should be.

Quando accolgo un ospite lo faccio con la stessa motivazione con cui accoglierei un ospite a casa mia, perché questa “è” la mia casa.

Qual è il suo Dna?

La scelta di mio padre, la libertà, che si traduce nella mancanza di qualsiasi tipo di imposizione ai nostri ospiti. I primi anni della mia vita ho vissuto con l’incubo della dittatura, il locale era stato requisito dalle truppe repubblichine. La libertà l’ho berazione a Venezia quindi, conosco bene il valore della libertà.

Accogliere i clienti col sorriso e con una frase gentile, ma anche - lo ribadisco - creare intorno a loro un ambiente in cui non vi siano imposizioni. Guai a trasformare il cliente in uno scolaro, con lo chef che gli impartisce la lezione, magari con un menu degustazione di quelli tanto in voga oggi. Questo è all’opposto di ciò che dovrebbe essere un ristorante.

What role has Venice played in your life?

A fundamental role. There’s nowhere else in the world where children can absorb culture and beauty while playing in the street, as they do here in Venice.

Where do you feel you fully belong?

Where I lived as a child, the San Stefano area in the sestiere of San Marco. It was a working-class neighbourhood in those days, where ordinary people, even poor people, lived. But I also love other popular areas, like Santa Marta and the far end of Cannaregio.

Who are the Venetians?

Venetians have a great sense of humour, they see the funny laugh at themselves and then laugh at others.

The most beautiful view?

Well, wherever you turn there’s beauty with a capital B… St Mark’s Basin with the church of San Giorgio, then look to the right and there’s Santa Maria della Salute. This city is made of wonderful churches.

Which is your favourite?

San Nicolò dei Mendicoli, near Santa Marta and the University of Architecture. Venice’s churches are masterpieces which often display a magical balance of atmosphere, water and nature.

Is there a place you feel the need to return to occasionally?

I particularly love the Island of Torcello, where there’s a fabulous church. When I was a child, all the kids on Torcello were good at drawing because here the proportions of the setting, nature and the work of man achieve absolute perfection.

Which museum do you like best?

The Accademia Gallery and San Giorgio degli Schiavoni, incredibly beautiful canvases, the San Giorgio series.

What’s the appeal of Venice?

Its unplanned beauty. This is a city founded without budgets, architects or town planners, adapting to the shape of the lagoon, its houses following the bends of the ca people. Here humans meet, touch and greet each other in the street. They don’t look at each other through the windscreen of a car, but directly in the eyes. And that’s the crucial difference between Venice and all the other great cities.

Un ruolo fondamentale. In nessun’altra città del mondo i bambini possono assorbire la cultura e la bellezza giocando per strada come qui a Venezia.

Dove abitavo da piccolo, la zona di San Stefano nel sestiere di San Marco. Un quartiere molto popolare allora, dove vivevano famiglie comuni, anche povere. Ma ci sono altre zone popolari che amo, come Santa Marta e la parte terminale di Cannaregio.

Il Veneziano ha un grande senso dell’umorismo, riesce a vedere il comico dove tutto gli altri vedono il serio, sa prendersi in giro e a sua volta prende in giro gli altri.

Lo scorcio più bello?

Beh, qui ovunque ti giri vedi bellezza con la B maiuscola… Il bacino di San Marco con la Chiesa di San Giorgio, poi giri gli occhi a destra e vedi la Chiesa della Salute. Questa città è fatta anche di grandi chiese.

La sua preferita?

San Nicolò dei Mendicoli, vicino a Santa Marta dove c’è l’Università di Architettura. Le chiese di Venezia sono capolavori che spesso manifestano degli equilibri magici tra ambiente, acqua e natura.

Amo moltissimo l’Isola di Torcello dove si trova una chiesa strepitosa. Quando ero piccolo io, tutti i bambini di Torcello sapevano disegnare perché qui, la proporzione tra ambiente, opere dell’uomo e natura raggiunge una perfezione assoluta.

Il museo che ama di più?

Le Gallerie dell’Accademia e San Giorgio degli Schiavoni dove Vittore Carpaccio all’apice della sua carriera ha lasciato tre teleri incredibilmente belli con il ciclo di San Giorgio.

La sua bellezza non programmata. E’ una città che è nata senza preventivi, senza architetti o urbanisti, adattandosi alla forma della laguna con le case che seguono le curve dei canali. E’ la vera città fatta dall’uomo su misura per l’uomo. Qui gli uomini si contrano, si toccano e si salutano per strada. Non si guardano attraverso l’abitacolo di un’automobile, ma dritti negli occhi. Questa è una differenza fondamentale tra Venezia e tutte le altre grandi città.
