LETTER FROM THE EDITOR
Whew! Although we in South Alabama have been wiping sweat from our foreheads for a few months, as far as the calendar is concerned, it is the middle of summer. Fourth of July is here and it’s time for fireworks, sparklers, barbecues and celebrating the independence of our great country. As far as large events are concerned, there aren’t too many along the coast but our live music listings and 14-day calendar are packed, so be sure to check those pages out. This issue of the Buzz is focused on camping. Although our county is home to miles and miles of white sand and Gulf water, travel a few miles north and you will find an abundance of nature, animals, flora and fauna. What better way to take advantage of the sites around us than spending a few days with it? I grew up camping in a travel trailer and then a motorhome, and that is where my heart lies. I loved spending time with my family camping at the Gulf, in the mountains or a few miles down the road at Meaher Park on a school night. I have camped a few times in a tent as well, and each time it has rained … no comment on tent camping. I think for an unbiased opinion I need to go camping in beautiful weather. Anyway, for the camping enthusiasts or beginners, we have tips for camping and cooking. Find a twist on favorite campfire treats: s’mores and weenies. There are so many variations of both these dishes and we’ve got a few ideas in store for you. I hope this issue gives you a spark to try camping for yourself … and there is a campground on the beach, so no excuses there! If you already are an RVer or backpacker, I hope you enjoy the recipes and encourage your friends and families to join you. Happy camping!

Get creative around the campfire Sometimes you just need a change. There are endless possibilities to the typical s’mores and weenies. If you don’t have time, energy or just don’t want to go camping, but have a hankering for s’mores, try this indoor s’more recipe. No finding metal clothes hangers, starting a fire and less mess to clean up.

n 32 miniature graham crackers or 16 graham crackers, broken in half n 2 milk chocolate bars, able to be broken into squares n 8 marshmallows

Heat oven to 400 F. Lay the graham crackers on a cookie sheet, broken in half. Top with chocolate pieces to cover. If using regular-size grahams, leave marshmallows whole. If using a quarter of a graham cracker, use kitchen scissors to snip marshmallows in half horizontally. Bake until the marshmallows are puffed and golden brown, about 3 to 5 minutes. Remove from the oven and top with the remaining graham crackers, pressing down slightly to make a sandwich. Serve immediately, while still warm.

Campfire strawberries
A recipe doesn’t get simpler than this.
n Marshmallow fluff n Strawberries
Dip strawberries in marshmallow fluff. Roast away. Try these other variations. Roasted vanilla marshmallow and graham cracker with:
Campfire cooking with foil packs Foil packet cooking tips n Use heavy duty foil. You don’t want the foil to rip and let ashes get in and your dinner leak out. If you use regular foil, double up on the sheets. If your food is heavy, and/or if you plan to eat directly from the pack, it’s a good idea to double up even on the heavy duty sheets. n Spray the side of the foil on which you’re going to place the food with cooking spray before you add your ingredients and seal it up. n When placing your ingredients on the sheet of foil, always put the meat on the bottom as it takes the longest to cook. n Cook your foil packet on the fire’s coals, not in the fire itself. Ideally, you want to place the packet on a bed of coals about 2 inches thick. n Hard, raw vegetables like carrots and potatoes take a long time to cook. If you don’t want to wait, use the canned variety. n When cooking meat, throw in some high-moisture veggies like tomatoes and onions. This will keep the meat from drying out. n Cooking times will depend on how hot the fire is and the kind of food in the packet. Flip the packets over a few times during cooking, and open to check on how the food is progressing from time to time. n When it’s finished cooking, open your foil packet carefully, as it’s full of hot steam!

1 chicken breast 1 cup broccoli 1/2 cup prepared rice 1 can cream of chicken soup Ranch dressing Cheddar cheese
Pound the chicken thinly as chicken can take a while to cook. Mix together the broccoli, soup and cheese. Add spices and condiments. Place the chicken breast on the center of the foil. Top with the soup mix and then rice. Seal in a tent pack. Cook on hot coals for about 25 minutes. (The thicker your chicken breast, the longer it will take.)
n Lemon meringue pie: lemon curd, homemade or store bought n Ice cream sundae: strawberries, bananas, dark chocolate, caramel sauce, pecans/almonds n Samoa: melted caramel, toasted coconut and chocolate n Strawberry lemonade: fresh strawberries and lemon curd n Grasshopper: Andes Mints with chocolate graham crackers n Blueberry or raspberry jam with whipped cream cheese n Fresh apple slices and caramel n Nutella and banana n Cinnamon graham cracker, dulce de leche and bananas n Ghirardelli caramel or raspberry filled chocolate squares n Triple berry: blueberries, raspberries and blackberries plus chocolate or white chocolate n Roasted sweet potato slices n Fresh mango slices n Toasted coconut with macadamia nuts or pineapple n Lime curd and shredded sweetened coconut n Raspberry jam or raspberry curd and dark chocolate n Sprinkle orange zest over chocolate, with chocolate grahams n Use cookies and cream bars instead of chocolate bars n Use Reese’s peanut butter cups instead of chocolate bars n Use pretzels or Ritz crackers instead of graham crackers n Use mini marshmallows with vanilla or chocolate Teddy Grahams and mini squares of chocolate
Catch of the day n Fish, filleted n 1/4 cup onions n 1 tablespoon butter, melted n Lemon juice n Salt n Pepper n Parsley n Dill n Paprika
Mix the melted butter with a dash of lemon juice and the above spices to taste (with the exception of the paprika). Place the onions on the foil sheet. Place the fish on top and sprinkle with paprika. Wrap the foil in a flat pack. Place on hot coals and scoop some hot coals on top of the packet. Cook for 15-20 minutes.

Get out and enjoy So you and your family have decided to explore the unexplored at the many campgrounds in Baldwin County. With numerous campgrounds to choose from, here are three state parks with campgrounds for RVs, tents and cabins.
Gulf State Park
Gulf State Park in Gulf Shores has almost 500 camping sites with modern bathhouses. Gulf State Park Campground has 20, 30 and 50-amp service, water and sewer hookups and fishing, boating and water skiing opportunities are just steps away. Meaher State Park Campground
Meaher State Park Campground in Spanish Fort has 56 new campsites with 20, 30 and 50-amp electrical connections with water and sewer hookups. The park is located at 5200 Battleship Parkway, also known as the Causeway. The campground also features a new bathhouse with laundry facilities for overnight campers. Historic Blakeley State Park
Historic Blakeley State Park, located at 34745 Highway 225 in Spanish Fort has two campgrounds. Apalachee Campground is a modern campground with secluded wilderness sites with underground utilities. These uniquely designed sites with pull-throughs are located in a mini-park area offering privacy from other campers and park visitors. These sites are designed and built to accommodate the largest recreational vehicles. Harper Campground is for tents and pop-ups only with nice sites that have fire rings and picnic tables, but no utilities. Restrooms are nearby, and it’s open daily. Resting on the Tensaw River Delta, Historic Blakeley State Park has miles of trail connecting archeological sites of Indian Villages, a French plantation, the 1813 town of Blakeley and more. Backcountry camping Off the beaten path, a new addition of camping has been added to the Hugh S. Branyon Backcountry Trail on the Cotton Bayou in Orange Beach. Real timber used to frame the porches creates a woodsy feel. The Outpost has three canopy tents up on a wooden platform with four cots each. Four chairs and firewood are also provided. Camping lingo For those that have never camped before, or just need to brush up on their tent-pitching or s’mores-roasting, here’s a list of words you may have heard but don’t know exactly what they mean.
RV: recreational vehicle. This vehicle typically has the living space of a home, either towed behind a vehicle or driven from within. Pull behind campers include travel trailers and fifth-wheels.
Motorhome: a type of RV that is driven inside the same area as the living quarters.
Primitive camping: camping without the amenities of electricity, running water or plumbing. Don’t start running yet, though. If the weather is nice and you’re able to score a campsite near a bathhouse, you’re in good shape.
Pop-up camper: A type of towed RV that can be collapsed for easy storage and transport. When set up, this type of trailer provides a large amount of interior space compared to its size when collapsed. Its relatively affordable price makes it a popular choice for some RVers and its small size contributes to easier towing than many other types of campers.
Bathhouse or Comfort station: Found in most campgrounds, these buildings have toilets, showers and sinks for primitive campers in tents or pop-ups, or those unable to access water in their camper. Some bathhouses include laundry facilities as well.

An ode to overreacting ’m going to take a break from writing about activities to share a story with you. This story is called “the thousandth time I overthought something about my child.” Addy is almost nine months old now, and at her next checkup, she gets blood work done. The tests should reveal how much iron she has, as the stores she had at birth begin depleting after six months. Now, she’s started solids (albeit at a glacial pace). She gets a cereal concoction for brunch, and in the evening she gets a meat, fruit or vegetable. She’s even feeding herself small bits of real banana, but that’s just me bragging. The point being, she was completely fine until I began panicking about the doctor visit. My mother spoke at length with the pharmacist at CVS and brought me a multivitamin with iron.

Huzzah! Now I could relax. That is, until she stopped pooping. For five days. We gave her prunes Saturday and waited. She strained and strained until I thought her little, red head would explode. We finally saw a couple of number twos Sunday and into Monday, and they were hard as bricks. My poor daughter. My ability to find a problem anywhere caused her physical discomfort. Moral of this tale: don’t ever rectify a problem that doesn’t exist. Relax. Your child would tell you if something was wrong. At a very loud volume, I might add.

I
n 2013, one of the most remarkable authors of our time, Neil Gaiman, gifted us with a tale filled with imagination and confusion. In “The Ocean at the End of the Lane,” we are taken to rural England and put into the shoes of a young boy whose name is never revealed to us. In this twist, the reader becomes the boy, for we see the world through his eyes as his life is changed forever. Caught between the thin lines of adulthood and childhood, the boy’s fate becomes intertwined with a young girl from down the lane, Lettie Hempstock, who sees an ocean where there is only a duck pond. Through the talented narrative of Mr. Gaiman, a duck pond can
indeed become an ocean, and the veil between the world that we are familiar with and a world older than humanity can imagine becomes blurred. Suddenly, we are thrown into a realm full of magic and mystery, where it is difficult to tell humans from monsters. Adding an even deeper layer to the tale, readers are able to interpret this world themselves, for the story is told in a distinctive manner that puts readers straight into the middle of the plot. This is a book about family and friendship, of adulthood and childhood and ultimately of good and evil. Neil Gaiman plays upon reader’s every emotion within the pages of this adult fairytale, which will leave you feeling both haunted and awestruck for years to come.

re you ready to snag a snapper? Capt. Joe Nash is the owner/operator of Cool Change, a 46-foot charter boat located at Zeke’s Landing Marina. Capt. Joe is in his 28th season of full-time charter fishing, so he’s the one to book. In fact, my daughter caught her first red snapper on his boat. He is originally from Long Beach Island, New Jersey, where he grew up on the water, commercial fished and hunted the bays. He moved to Orange Beach in 1984 after travelling half way around the world … and the rest is history. The largest red snapper Capt. Joe has ever been involved in catching weighed 34 pounds. He prefers to fish with any live bait and large cut baits. According to him, “A successful fishing trip is any trip where the people are happy and may have caught or seen something they have never seen nor caught before, or possibly watched a child or grandchild catch a fish. Just people having fun! I have taken thousands of people fishing and I never tire of seeing someone struggle with a big one. I love it, and want you to love it, too!”

Medium fillet (any white fish — snapper, trigger, scamp, grouper) Melted butter Blackening seasoning or Tony Chachere’s Ritz crackers
Heat oven to 350 F. Put fillet in baking pan, cover with melted butter, lightly season with blackened seasoning or Tony Chachere’s, sprinkle a thick layer of crushed up Ritz crackers, then drizzle melted butter over the cracker layer. Bake until done (will depend on the thickness of the fillet), then broil to toast the Ritz cracker topping for 3 – 4 minutes. Enjoy!

ac McDonald of Vision Cellars is a simple man. He loves farming and anything related to growing grapes and winemaking. Dressing the part with his denim overalls and signature straw hat, he is a down-to-earth guy. David Ready Jr. of Murphy-Goode Winery, on the other hand, is a “rock star” who toured with Grateful Dead and found himself “forced” into the wine industry. He credits his palate and availability to recall flavor profiles for his success as a winemaker. Both of these guys make excellent wine and I’ve had the pleasure to meet both of them within the past year. Reflecting on their passion for wine, I’ve noticed an increasing trend of more and more wines marketed either under the name of the winemaker or with the winemaker’s name prominently displayed on the label. Yes, I know we had Robert Mondavi, Ernest and Julio Gallo and the likes, but that was a generation ago. Those winemakers were the pioneers that helped put American wine on the map. They dominated the market for so long but a new surge of celebrity winemakers is beginning to take hold. Not too long ago, Charles Smith was managing a rock band in Denmark before teaching himself to make wine. He is best known for his K Syrah wine. His wines are now some of Washington’s most sought after. You may be familiar with The Velvet Devil Merlot, Kung Fu Girl Riesling, House Wine; they all have the signature white and black labels. Joel Gott started in 1996 with the production of Amador County Zinfandel. Shortly thereafter, a marriage to his wine-maker girlfriend Sarah marked a collaboration that led to significant reviews in wine publications and to the Cabernet Sauvignon that Joel Gott is noted for. Robert Foley, while at Pride Mountain Vineyards, found his wines being served in the White House by both President Bush and President Clinton. Foley has a clear passion for winemaking and makes incredibly rich red blends under his personal brand of wine now.

Kim Crawford, even though he sold his brand over 10 years ago, is a highly recognizable label in bottle shops. Many consumers think Kim is a woman, yet he is a country boy from New Zealand and was among the first from New Zealand to gain a foothold in the United States with his Sauvignon Blanc that has become the biggest-selling New Zealand brand by value in the United States. While these are just a few of the names you’ll spot among the aisles of a wine shop, take a moment to notice how many more names are prominently displayed. SPOTLIGHT ON: Coastal Arts Center of Orange Beach The Coastal Arts Center of Orange Beach was, until recently, located in the city's first hotel. Built in 1923, the boarding-house style hotel featured 11 bedrooms and one half-bath upstairs (the area is still used by the art center for storage) while the family resided in the downstairs portion. The facility was only accessible by water until Canal Road was completed in the late 1940s. Due to severe structural damage and black mold, the building was torn down this past spring. Historical elements collected from the hotel (columns, wood flooring, doors and windows) will be featured in the new gallery, expected to be finished late 2016. The center, previously managed by Friends of the Arts nonprofit group, became an Orange Beach city facility in 2013. The city continues to work with the Friends of the Arts to help make the center a well-rounded oasis for the arts.
CLASSES OFFERED Young Masters of Pastels The Young Rembrandts will teach children styles of masters such as Cezanne, Van Gogh and Lichtenstein while encouraging individual creativity. This class will focus on chalk pastels and students will even create caricatures of famous artists! Open to ages 6 – 12. • July 13 – 17; 9 a.m. – noon • Register online at CoastalArtsCenter.com.

The Hot Shop features “make your own glass” classes Tuesday through Friday at 9 a.m.
