I am happy that GEM has taken the time to recognize such an important demographic in your “40 under 40” feature. It was very comprehensive and had a good mix of people. This year marked the 10-year anniversary for some of our friends, and we extend best wishes and much success to them in the next decade. Speaking of 10-year anniversaries, come January 30, 2014, we too will be celebrating this significant high point for GEM. It feels like just yesterday that we launched the first edition. It goes without saying that the last nine years were full of challenges and milestones, but mostly positive results have been accomplished. Wonderful relationships have been built within our family, the media, advertisers and our loyal readers and supporters.

Lisa has been making a name for herself since winning the first and only Guyana Star Competition in 2008 at age 16. Today at the age of 20, Lisa is already one of Guyana's most sought-after singers as promoters and organizers seek her out to perform at their events. We try to find out what’s her secret on page 20. istory of Rotaract: Rotaract has evolved quickly in its short but dynamic history. In the early 1960s, Rotary clubs around the world began to sponsor university youth groups as community service projects. The 1967- 68 RI President, Luther H Hodges and the RI Board of Directors considered the club activity to have international relevance, and Rotaract was approved in 1968 as an official programme for Rotary Clubs. The first chartered Rotaract Club was the Rotaract Club of North Charlotte, North Carolina, USA, on March 13, 1968. Several decades later, the Rotaract programme has grown into a strong, international network of 8,000 clubs worldwide with over 184,000. Rotaract is a service club for young men and women ages 18 to 30 who are dedicated to community and international service.The purpose of Rotaract is to provide an opportunity for young men and women to enhance the knowledge and skills that will assist them in personal development, to address the physical and social needs of their communities, and to promote better relations between all people worldwide through a framework of friendship and service. The goals of Rotaract are: • To develop professional and leadership skills; • To emphasis respect for the rights of others, and to promote ethical standards and the dignity of all useful occupation; • To provide the opportunity for young people to address the needs and concerns of the community and our world; • To provide opportunities for working in cooperation with sponsoring Rotary clubs; • To motivate young people for eventual membership in Rotary; The Rotaract clubs have five avenues of Service: Community Service, Professional Development, 10 | GEM DECEMBER 2013/JANUARY 2014
International Service, Club Service and Finance under which projects are planned to achieve its goals. Rotaract Club of Georgetown: The Rotaract Club of Georgetown was charted on 1st July, 1985 and is sponsored by the Rotary club of Georgetown. It is the oldest Rotaract Club in Guyana; the club celebrated 28 years of service on July 1, 2013. The basis of the organisation is young men and women between the ages of 18-30 residing, employed, or studying in Regions 3 or 4. The club meets twice per month: first and third Saturdays at the Guyana Red Cross Building commencing at 16:00 hrs. Today, the club’s membership stands at 19 members and 8 guests. These persons work hard towards achieving the goals of Rotaract and developing the community. The club is guided under the theme “Working together to strengthen our Communities” for the Rotaract year 2013-2014 under the leadership of President Cilandell Glen and her committed and hard working Board of Directors. The executive board and members of the Rotaract Club of Georgetown intend to work diligently towards achieving the clubs Vision for the year, “To Rebuild and evolve the Rotaract Club of Georgetown.” To achieve, this a number of activities aimed towards strengthening the club’s administration, diversifying and energizing the club’s membership, increasing membership, boosting the club’s public image and enhancing member’s professional skills have being planned. Service projects for the Rotaract year under these avenues will be executed to fulfil four of Rotary International areas’ of Focus: Basic Education and Literacy, Maternal and Child Health, Disease Prevention and Treatment and Economic and Community Development.

For the first quarter the committees’ have executed the following projects: Community Service: This year the club will continue to execute our Sophia Literacy program. This program was developed in 1999 as an initiative of the Professional Development Committee to serve the children of Sophia in basic literacy. Today the project is the responsibility of the Community Service Committee and the community it serves. The main objectives of the programme are to improve the student’s academic performance, improve the student’s reading, comprehension and reasoning skills and to provide positive guidance through mentorship programs. Currently, the program has a total of 30 children enrolled, ages 6 to 11, who attend reading, writing and math classes every Saturday morning in the National Sophia Exhibition Centre. There are three trained teachers who volunteer their time to assist the children with the academic lectures needed. The Rotaract Club is proud to have executed its 14 Annual Back to school hamper distribution project which was executed on the 31st August, 2013. This Project provided school supplies to 30 Children of the Sophia Area. Community Service Committee has also executed it, “We Care, Giving back” Project at the West Demerara Hospital. The project’s principal objective was to promote a safe, child friendly, healing environment through literature and play for children who are recuperating from ailments.The project entailed the Club’s donations of a bookcase, toys and children books which included story books and colouring books to the Paediatric Ward of the West Demerara Regional Hospital. In addition, Rotaractors painted murals onto the walls of the designated area truly transforming it into a Child Friendly Zone. “We Care, giving Back” Project at West Demerara

Hospital held on 21st September 2013 Professional Development: One of the principle objectives of the Professional Development Committee is to develop members’ professional skills. The committee executed First Aid Training in collaboration with the Guyana Red Cross Society. Fifteen members from the Rotaract Club of Georgetown and five members from the Rotaract of University of Guyana were trained in First Aid Principles and have been successfully certified as First Aiders. Club Service: The Club Service Committee is tasked with building club membership as well as providing opportunities for fellowship so that bonds of friendships can be built and sustained. Under the theme, “Embrace Explore Rejuvenate,” Rotaractors and guests enjoyed a weekend of camp at Pandama Winery and Retreat where friendship bonds were strengthened as we worked and played together as a team. International Service: The International Service Committee is tasked with keeping its membership updated with global issues, needs and problems, promoting international peace and understanding and sharing our cultural diversity worldwide. The “Folk Night” project is aimed at exposing Rotaractors and guests to the cultures of other countries thus increasing our understanding of other’s cultural diversity. For this project, Rotaractors and guests researched and displayed a dramatic piece to showcase the culture of countries from different regions in the world. Finance Committee: The Finance Committee is tasked with executing fund-raisers so that projects can be undertaken to ensure the objectives and goals of Rotaract are achieved. What is the difference between adoption and foster care? Foster Care is the temporary placement of a child with a ‘surrogate’ family, who provides for the daily needs and care of the child in the same way as you would for your biological child. The CPA remains the overall guardian of the child whereas adoption refers to the permanent legal transfer of all parental rights and responsibilities from biological parents to adoptive parents. Who qualifies to be a foster care parent and where can they get information? Persons who can commit themselves wholeheartedly; who are honest, accepting and, above all, flexible. Persons need not be married or have children of their own but good health is an important factor. To acquire more information on the Foster Care Programme, persons may contact the Foster Care team on telephone numbers 227-0138/2274082 or visit the CPA, located at Lot 7 Broad & Charles Sts. Charlestown (opposite Dolphin Secondary) or any of the CPA District Offices across Guyana. What are some of the factors that determine if a child qualifies for the foster care programme? Any child between the ages of 0-18 in need of care and/or protection, who for various reasons, has had to leave his/her immediate family.
Manikchand in 2009, is a relatively new initiative and as such, the general public is still becoming au fait with the purpose of the programme and how they may become involved. However, with the active participation of the media through promotion and advocacy, we believe the objectives may be achieved. Which part of your job brings you the most satisfaction? What brings me the most satisfaction is seeing the vast improvements in a child’s health, development and overall well-being and happiness after receiving appropriate love and nurture from a responsible care-giver. What’s your philosophy on life? Trust your gut (instinct). It will not lead you astray. Cocktail, beer or wine? Gin and Tonic.
What is the estimated amount of parents and children in programme as we speak? There are currently 116 parents and 216 children in the Foster Care Programme.
What does Christmas mean to you? My definition of Christmas involves quality time spent with family and friends over good food as we reflect on our achievements and shortcomings over the given year. It also opens up thoughts and discussions pertaining to what we would still like to accomplish for the upcoming year.
In your experience, what is the biggest misconception people have about foster care? In my opinion, they are not misconceptions as much as they are frequently asked questions. The Foster Care Programme, having been introduced by the Hon. Priya
Where would Old Year’s Night most likely catch you? The location is not as important as the loved ones I choose to surround myself with on New Year’s Eve- my family and my longstanding group of friends. Everything else is secondary.

n October 27, the Guyana Relief Council (GRC) held their annual luncheon and Dutch auction at the Pegasus Hotel Guyana.
This event was one of the many fund-raising activities by the GRC to raise funds so that they are able to continue the important task of assisting the less fortunate in society. This year’s luncheon also included the much anticipated Dutch auction of items donated by patron of GRC. Established in 1994, the GRC assists victims of natural and man-made disasters across the country through generous donations and fundraising activities. ohn Lewis Styles first opened for business on the corners of Lamaha & Waterloo Sts. Georgetown on October 10, 2003. It was the first attempt in retail business by entrepreneur John Lewis at the age on twenty four (24). He had just completed University and decided it was best to remain in Guyana instead of migrating. At one time he had also wanted to become a pilot. John comes from a Guyanese family of businesses with over thirty four (34) years of retail experience. His first employers were his Parents working at The Gift Centre as Marketing Manager. His parents Victor & Doris have always been in various businesses ever since John was born. From Gas Station to Auto Spare Parts, Mining to Appliances, General Merchandise to Exercise Equipment and more recently Shoes. he was always around commerce. Even though there were many boutiques around, John still thought something was missing. He thought that many were and still are being cheated with counterfeits and over-pricing. Over the years of offering both men’s & women’s clothing and accessories, John Lewis Styles have made purchasing merchandise an ongoing Study. Going after the manufacturers and cutting out the middle man. e all remember little 16 year old Lisa Punch from winning the first and only Guyana Star competition in 2000. Then later, she was the voice of the official Carifesta X song in 2008. Little Lisa has grown in to a very beautiful, intelligent and articulate young lady. In addition, her singing career has taken off as she has become the most sought after singer. Besides the singing career, Lisa has been working as a radio DJ and has just completed her album, “The Evolution of Lisa Punch.” GEM sat down recently with this Diva in the making to find out what are her personal and career plans for the future. What is your fondest Christmas memory? LP: It was having my grandmother (my mother’s mother) in the country for the first time after many years. It was the first time she saw her grandchildren. My mom, dad, siblings, cousins and aunt sat as one family on Christmas day. That was the best Christmas ever, not just for the gifts but because our family was complete and it felt like Christmas. The best Christmas I’ve ever had. At what age did you realize that singing was your thing? LP: At age nine I knew I was going to be a singer after seeing Whitney Houston on television singing the ‘Greatest Love of All’. I’ve never seen anyone like her or heard any voice like hers. Right away I asked my parents to buy me her cassettes and they did. I practiced on a beautiful blue and silver tape recorder, which my grandmother sent for me (my father’s mother) and from then I was singing her songs. What was your experience like producing your first album “Evolution of Lisa Punch?" LP: The Evolution of Lisa Punch is a compilation album of all the songs the PUNCHERS (my fans) love. It was wonderful doing those songs because each song on that album is from personal experience, songs that I absolutely love.

Being an entertainer and dancing around the stage, people would think that I’ve “done it.” But I made a promise to GOD and myself to remain abstinent until marriage. What is your favourite Christmas beverage? LP: There are many but I stick with mauby drink. What genre of music are you most comfortable with? LP: I am more comfortable with R&B but I love reggae and soul. Which international artiste would you love to perform a duet with? LP: OMG! I’m already excited to answer this question as if I’ve already been approached to do a song. The artiste would definitely have to be NeYo. He’s just so creative and very talented; it would be an honor to collaborate with him for a duet. Who is managing your career at the moment? LP: Ronnie Morris, founder and CEO of the Barbados Music Awards as well as President of Gold Coast Records is managing my career. What should we expect from Lisa in the next 5 years? LP: In the next five years I’ll certainly have some Grammy’s, MTV Awards, BET Awards, Barbados Music Awards, etc. I’m definitely going to make my country proud. What would be a good age for a girl like you to get married? LP: It would definitely be before 30. I always wanted to get married at 21 but now that I am 21, I would want to get married at 25. Hopefully at 25 I will not be saying an older age, but it all depends on when ‘he’ pops the question.

eenager Arvinda Kishore took home the most coveted prize in golf when he won the Guyana Open Golf Tournament sponsored by Digicel Guyana on November 2 and 3 at the Lusignan Golf Club (LGC). In the women’s division, Christine Sukhram continued her winning ways by picking-up a recorded 7th title in this annual prestigious tournament. The eighteen year old Kishore playing with a handicap of 5, completed his eighteen holes with a gross 151 and a 141 net, followed by Patrick Persaud, who finished with a gross of 153 and a net 137 playing off an 8 handicap. Last year’s champion and 5-time winner, Avinash Persaud finished the tournament with a 153 gross and a 147 net from a 3 handicap in third position. Sukhram topped the field in both gross and net scores with 151 and 136 respectively. Joann Deo ended with a gross of 194 and a net of 150, while Shaunella Webster finished third with a 210 gross and a 144 net.

Legendary Karate Master Frank Woon-A-Tai, M.S., F.G.M.S.
L
egendary Guyanese karate master Frank Woon-ATai, M.S., F.G.M.S., ninth-degree black belt is a quiet unassuming man of impeccable credentials coupled with a wealth of experience and knowledge of Martial Arts. He began his lifelong karate journey 50 years ago in Georgetown, Guyana where he was born in 1950. 2013 marks the 45th anniversary of his first karate dojo in the garage of his student’s home in Fifth Street, Albertown. From those humble beginnings, Master Woon-A-Tai is today, Kancho (founder) and Shuseki Shihan (Master of Masters) of his world karate university, the International Karate Daigaku, which, in only two short years, boasts an astounding membership of 46 regional karate organizations in 26 countries throughout the world. Moreover, his organization is rapidly growing every few months. This is testimony to his international popularity as a strong and respected leader who possesses not only power of technique, but strength of character as well.

His karate odyssey began after he viewed the movie “Karate the Hand of Death” that starred Joel Holt at the Rio cinema in Albouystown in 1963. At a 2008 black belt class in Toronto where he resides since 1980, and where his world Headquarters is located, he discussed how his interest in karate began. He told his students about the movie and his only recollection was the star dented a steel coffee pot with a knife hand blow. A few days later, a student handed him a DVD of the movie. He was blown away; not by the movie, but by scenes of legendary Japan Karate Association (JKA) Instructors demonstrating karate techniques led by tenth-degree masters Hidetaka Nishiyama and Hirokazu Kanazawa, and ninth-degree, Hiroshi Shoji and Takayuki Mikami. These famous masters were buried deep in his subconscious mind and he went through 45 years of his karate career not remembering he had seen them as a boy of thirteen, and they, never mentioned the movie to him. Ironically, these masters turned out to be some of his teachers and mentors.
to impart his expertise and administer exams to his Guyanese students. Master Frank, as he is addressed in Guyana, also founded the Toronto JKA in 1981, and the Ontario JKA WF in 1995. He is president of the Caribbean Karate College, former chairman of JKA WF Canada, and Canada Nihon Karate Kyokai, a national organization of all JKA groups he unified in Canada. Moreover, he was a former vice chairman of the ISKF Technical Committee. In 2006, he founded the Guyana Karate College, a non-profit organization and in 2010, former President of Guyana Dr. Bharrat Jagdeo granted the GKC an acre of land at Liliendaal to build a state of the art karate training facility that would serve as IKD South American HQ.

In 1970, 20 year old Frank journeyed to England to train under ninth-degree Keinosuke Enoeda. This was his first formal and practical introduction to JKA karate. The following year, he travelled to Tokyo, Japan to train under legendary Masters: Nakayama, Ito, Shoji, Kanazawa, Asai, Takahashi, Ueki, Oishi, Mabuchi, Yano, Tabata, Isaka, Takashina, Osaka, Yahara, and many others. He was in karate Heaven! At the end of his stay he earned his first-degree black belt. He clutched his precious degree diploma tightly in his hand during the three day trip back to Guyana; no other degree diploma meant as much to him as his Japanese earned firstdegree rank. Frank followed by bringing to Guyana in 1972, Masters Okazaki, tenth-degree, who became his teacher, mentor and karate father for over 40 years, Yaguchi, ninth-degree, Takashina, eighth-degree, and the man responsible for spreading karate globally, Master Masatoshi Nakayama, tenth-degree. He was accompanied by Master Tabata who stood well over six feet tall! In 1976, Frank moved to Jamaica with his wife Maureen who was the first female international black belt (1974) in Guyana and who presently, is the first female eighthdegree black belt in the IKD and a deputy chief master. Frank served as chief instructor of JKA Jamaica for five years. Every year since 1976, Frank has returned to Guyana once initially and now three times yearly
Master Woon-A-Tai was a 1978 Pan American kata champion and the first Canadian Guyanese graduate of the prestigious JKA and ISKF Instructor Training Institute. He is a graduate of the University of Toronto and holds a Bachelor of Arts degree in Japanese Studies (language, culture, judo, history, religion, philosophy, literature) with a minor in East Asian, British and Canadian History. What is remarkable about his university degree is he returned to pursue his education at the age of 50 as a full time student! As a youth he left school early to help support his impoverished family. During his university days, he continued his daily schedule of teaching, managing all his offices, and traveling for seminars and exams. In recognition of his 21 years contribution to karate, he was awarded the French Guiana Medal of Service in 1996. In 2005, he was inducted in the JKA WF Canada Hall of Honour and in 2009, he received the Mayor of Georgetown’s Award for his lifetime of service to the youth of Guyana. In 2013, after conducting seminars and testing, he and his wife received Lifetime Achievement Awards from India. He produced two DVDs: Eclipse of Life (1997), and Soul of Kata (2000). He is the author of the IKD Kyu and Dan Examination Syllabus, the IKD Passport and editor of several other Canadian karate publications. He is currently writing his Memoirs Shu-ha-ri: My life in Karate-do. Master Woon-A-Tai was the first ISKF Instructor to be awarded the coveted JKA seventh-degree in 2001, and in 2008, he received his eighth-degree black belt from Masters Okazaki and Yaguchi. At that time, he also received his A-class instructor’s licence, examiner’s license, and judge’s license. A talented and dedicated teacher, Master Woon-A-Tai produced thousands of black-belt students ranging from first to eighth-degree, as well as international instructors, examiners and judges. In 2008, Master Woon-A-Tai hosted the prestigious ISKF World Shoto Cup in Toronto and in 2010, the 11th ISKF Pan Ams in Guyana. This event was attended by His Excellency President Bharrat Jagdeo and was co-sponsored by the Guyana Government. On that occasion, His Honour, the Mayor of Georgetown, Hamilton Green presented Master Okazaki with the ‘Key to the City’. In 2012, he hosted the First IKD World Cup in Toronto; his team won the Cup. Frank Woon-A-Tai’s greatest achievement was bestowed upon him in 2011, when he was appointed a Member of the Order of Service of Guyana, and awarded the Medal of Service in recognition of his long and outstanding service as an exponent and trainer in martial arts by His Excellency, President Jagdeo. He attributes this as his greatest achievement, because it was from the people who are close to his heart through the government of Guyana and moreover, bestowed upon him by the Guyanese President. Master Woon-A-Tai’s main goal continues to be of helping young people everywhere in the world find purpose and direction in life by keeping them off drugs, and to break the cycle of crime and violence through the discipline of karate training. He has travelled extensively

all over the world to compete, coach and teach karate. Concurrent with his trip to India, he visited China, the land of his grandfather to trace his roots and to explore the possibility of an IKD China organization. To summarize, Master Frank Woon-A-Tai is world famous for his pleasant approachable personality, the power of his breaking techniques, his ability to spot and coach talented young karate-ka, and his pioneering efforts in kata bunkai. In October 2011, the IKD was recognized by the Guyana Ministry of Culture, Youth and Sport.

Indulge your Guilty Pleasures and Stay in Shape this Holiday Text: Coretta Corbin-Rival

adies, here we go again as the season of jolly old Saint Nicolas and good cheer rolls around and we are caught in that place between the temptations of overindulging in our favorite foods and sticking to a healthy diet. Although we may have stayed on the healthy-diet- wagon during the year, the holidays are a tough time of year that spells trouble for the wonderful figure we maintained all year. To help you holiday-proof your diet and shape, here are some tricks I use. Find healthy substitutions for a guilt-free holiday: For me, one of my guilty pleasures is Cadbury chocolate. After finding out that regular milk chocolate is bad for my heart I had to find another way of satisfying my craving for chocolate. Through research I discovered that although milk chocolate may be bad for my heart, dark chocolate on the other hand, is heart healthy. So, to get my chocolate fix, I have a piece of dark Cadbury whenever I feel the need - depending on the amount of calories I already had for that day. Yes, I know that chocolate whether dark or milky is fattening, however, according to the experts, treating yourself once in a while will help you curb your cravings. Eat Before Leaving for the Party: That brings me to another great trick, which I have learned throughout the years to help me control my temptation to pig-out at parties. Before attending any party, I always try to have a small meal that’s high in fiber and water which help me feel full and for a longer period. This way, I can avoid feeling ravenous at the party and curb my desire to chow-down on everything in sight. Once at the party, I try to make myself busy by dancing or getting into a long conversation with someone which helps to distract me from eating. Calorie Counting: Since the daily amount of calories allowed for adults 36 | GEM DECEMBER 2013/JANUARY 2014
are 1800, I try to watch the calories I consume during the day prior to the party by eating only low or no calorie foods. My logic; if I only had 500 calories all day then at the party I have the leeway to consume at least 1300 more calorie-rich foods. And a growing number of researches show that the worst thing you could do is to not eat or avoid certain foods because that will make you crave them more. Portion Control: According to the experts, eating out of a small plate and taking small bites help you avoid gorging on a large portion of food without thinking. Make sure to load up your plate first with fruits, veggies and lean protein so your plate will be too full for you to pile on too much rich, fattening foods. The fiber in the fruits, veggies and the protein will cause you to feel full fast and for a long period of time. Eat Slowly: The experts recommend we make a maximum of 25 bites per meal and 12 per snacks. Eating slowly helps you to eat less and gives your brain the time (at least 20 minutes) it needs to let you know you are full. Also, eating slowly is said to help you lose weight. And always make sure to wait at least 20 minutes before getting back in line for seconds.

AXE: The first thought about AXE came when I started playing squash again and couldn’t find all the stuff I needed at one place. Like many people I

said “I wish that someone would just open a sports store or a pro shop”. While looking for a showcase I stumbled upon a quaint little spot that I thought it would be perfect to have a pro shop there. Busting with excitement I shared with my husband and partner what a great opportunity it would be. Thinking that I had lost my mind and going against all market odds, I got him to agree to my ideas and the rest is history. GEM: How long have you been in business? AXE: We opened our doors on the 21st May, 2013 GEM: Why sports apparel? AXE: Sports is what I know and love so it was a natural fit for me but tapping into the unexplored territory of fitness apparel is what really intrigued me. GEM: What are some of the things we can get at Axe Apparel? AXE: Clothes for adults and kids, shoes, water bottles, supports for various body parts, kinesiology tapes, bags, socks, heart rate monitors and so much more. GEM: What are a few key factors to look for when purchasing sportswear? AXE: A few key things to look for would be comfort, correct size and what is best suited for your activity. GEM: There are a number of sports attire stores, why should we shop at Axe Apparel? AXE: At AXE we don’t just sell our products; we help you find the products that are best suited for your activity that would give you the most comfort and function in addition to our great prices. A Guyanese Christmas Literature Text by Petamber Persaud
H
o, Ho, Ho – A Guyanese Christmas? Yes, Guyana has a Christmas literature and very old at that; dating back to the beginning of our oral literature with the recipe of pepperpot coming down to us, the dish that has become synonymous with Christmas Breakfast in Guyana. I can see I’ve wetted your appetite; so here’s more. On the sixth day of Christmas, that is, New Year’s Eve or Old Year’s Night, our true love is cookup rice. Let me dish this subject out in another form. We have a wide array of locally produced Christmas cards, plaques, scrolls, and verses gracing these products, all crafted by local poets and writers to suit our conditions – a Guyanese blend, a Guyanese touch, adding to a Guyanese Christmas literature. And to cheer things up, we have numerous Christmas songs, lyrics written by Guyanese. ‘A Little Wind of Christmas’, adapted from a poem by A. J. Seymour, music by Teiron Jones; ‘A Christmas Song’ by Joan and Michael Gilkes; ‘Christmas Crazy’ by Deryck Bernard; ‘A Very Merry Guyanese Christmas’ by John ‘Slingshot’ Drepaul, just to name a few. There are three popular calypsos to add to a Guyanese Christmas Literature: ‘Happy Holidays’ by the Four Lords, ‘Christmas is with You Again’ by the Mighty Canary and ‘Christmas Morning’ by Captain McKenzie. Directly bearing on the topic are magazines like the ‘Christmas Tides’ founded in 1893 and the Chronicle Christmas Annual which was started in 1915, bearing Christmas cheers in poetry and fiction. And we must add the Bible to all of this. The Bible is also a part of a Guyanese Literature! The Bible with the Christmas story has been a major influence on our ancestors and continues to hold sway over a large portion of our present society – yes, it could be said it was written for Guyana also. Whether you subscribe to Christmas or not, there is a Guyanese Christmas Literature that is being added to all the time – even now as we explore/debate this subject! Ho, Ho, Ho.....

n October 30, the FIFA Trophy for the 2014 World Cup arrived in Guyana for a brief stop-over.
The trophy which began a 9-month journey on September 12, 2013 in Brazil will return to that country as it hosts the 2014 World Cup. The world tour was organized through an exclusive partnership between FIFA and the Coca-Cola company, one of FIFA’s longeststanding corporate partners. The welcome party at the Cheddi Jagan International Airport were Officials from Banks DIH the Coca Cola brand distributor in Guyana, the Guyana Football
Federation (GFF) and the media. The 18-carat gold cup arrived here from Suriname as part of its 22 nation Caribbean tour. Accompanying the trophy were FIFA representatives Brad Ross and Hector Mantellini along with former Trinidad and Tobago, Manchester United and Aston Villa forward, Dwight EversleyYorke, who is also a FIFA Brand Ambassador. Banks DIH held a number of activities throughout the day at their Thirst Park Sports Club to memorialize this special moment in Guyana’s sporting history.

Shape2000 Unveils Its 2014 Collection P
rominent designer Donna Ramsammy – James on October 27, 2013 unveiled her 2014 Collection “Muujiza wa Amani” at a private showing at her residence in Georgetown. “Muujiza wa Amani” which means “magic of peace” was presented under the designer’s popular brand Shape2000. The collection which was designed using fabrics such as linen and cotton was also modeled with matching costume jewellery, some also had an additional handbag as accessory. . The eye-catching colours of the presentation came in segments of blue, brown, orange, yellow, black, cream, grey and green. This year’s showing was the 15th edition for the designer and it lasted just under one hour. There was also a special segment for children in which they restated in a brief demonstration the importance of disposing garbage properly.

Intro to Region Sawadika! Welcome to the Far East! On this culinary journey, we travel to Asia and visit Thailand. Thai cuisine or “Thai cooking” is internationally-famous, known especially for its blending of various Southeast Asian elements and Indian influences. Thai cooking places emphasis on lightly prepared dishes with strong aromatic components. There is also the signature “spiciness” to Thai cuisine. Originally, Thai cooking reflected the characteristics of a waterborne lifestyle. Aquatic animals, plant and herbs were major ingredients. Large chunks of meat were avoided. However, various influences introduced the use of sizeable chunks to Thai cooking but with their Buddhist background, they shunned the use of large animals in big chunks. This lead to the big meat cuts being shredded and laced with herbs and spices. Chilies were introduced to Thai cooking during the late 1600s by Portuguese missionaries who had acquired a taste for them while serving in South America. The ghee used in Indian cooking was replaced by coconut oil,
and coconut milk substituted for other dairy products. As you can see, the Thais were very adaptive to foreign cooking methods, and substituting ingredients. Similar to Indian cuisine, Thai cooking uses a lot of various spices and exotic ingredients, all of which can be found in your local markets. You will notice special emphasis on coconut milk, curry powders, and a variety of peppers. Another interesting aspect of Thai food is that it is made to share. Instead of serving dishes in courses, a Thai meal is served all at once, permitting diners to enjoy a complementary combination of different tastes. With ingredients that we use every day in our kitchens preparing our local meals, you will find that these Thai recipes are unique but very simple to follow. So on this culinary journey, we will indulge in Thai Prawns in a Sweet Chili Sauce, Peanut Coconut Jasmine Rice, and finishing with a delicate Mango Coconut Pudding. A Chardonnay will complement this dish perfectly.
Recipes: Serves 2
Thai Prawns in Sweet Chili Sauce Ingredients: - 1/2 cup water - 1/2 cup vinegar - 1 cup sugar - 3 tsp fresh ground ginger root - 1 tsp fresh ground garlic - 2 tsp hot pepper sauce with seeds - 2 tbsp ketchup - 2 tsp cornstarch - ½ tbsp salt - 2 lbs large peeled deveined prawns Method: 1. Pour water and vinegar into a saucepan, and bring to a 56 | GEM DECEMBER 2013/JANUARY 2014
boil over medium-high heat. 2. Stir in sugar, salt, ginger, garlic, chili pepper, and ketchup; simmer for 5 minutes. 3. Add prawns; simmer for another 5 minutes. 4. Stir in cornstarch. Remove saucepan from stove to cool. Transfer to a bowl.
Mango Coconut Pudding Peanut Coconut Jasmine Rice Ingredients: - 2 cups of uncooked scented Jasmine rice - ½ cup boiled parched peanuts, in halves - 2 cups of fresh coconut milk - 1 ½ cups water - 2 tbsp grated coconut flakes - 1 tsp salt - 1 tsp coconut oil - ¼ cup finely chopped green onions Method: 1. Rub oil over the bottom of a deep-sided pot. You will also need a tight-fitting lid. 2. Place rice, coconut milk, water, and salt in the pot over high heat. Stir continuously to keep rice from sticking to the bottom of the pot. 3. Once the coconut-water has begun to bubble, stop stirring and reduce heat to low. Cover tightly with a lid and let simmer 15-20 minutes, or until most of the liquid has been absorbed by the rice. To check, pull rice aside with a fork. If most of the coconut milk-water is gone, go on to the next step. 4. Replace the lid and turn off the heat, but leave the covered pot on the burner to steam another 5-10 minutes, or until you're ready to eat. 5. When ready to serve, remove the lid and fluff rice with a fork. Add peanut halves and green onions, also fluff into rice. Serve Jasmine Rice with Chili Prawns on top.
Ingredients: - 2 large peeled sliced ripe mangoes, no seeds - 3 tsp gelatin (you may need to use 4 tsp depending on brand) - ½ cup hot water - ½ cup condensed milk - 1 cup fresh coconut milk Method: 1. Place mangoes in a food processor or blender and blitz to create a smooth mango puree. Leave the mango in the processor/blender. 2. In a saucepan, heat up the water until it reaches a rolling boil. Remove from heat. While stirring the water with a whisk or fork, sprinkle the gelatin over the surface of the water and stir briskly in order not to have any lumps. 3. Add the condensed milk to the hot water/gelatin mixture and stir. 4. Add this mixture to the mango in the food processor/ blender. Also add the coconut milk. Blend briefly until ingredients are combined. 5. Pour into dessert bowls or cups and place in the refrigerator for at least 2 hours. Choc Almond Cake Text and photography: NAMILCO Ingredients For the Cake: • 4 oz semisweet chocolate melted with 2 tbsp rum or coffee Photograph • 4oz or 1 stick softened butter • 2/3 cup white sugar • 3 egg yolks 3 egg whites Pinch of salt • 1 tbsp white sugar • 2/3 cup ground almonds
• 1/4 tsp almond extract • 1/2 cup Maid Marian Self-Rising Flour (scooped and leveled) turned into a sifter Ingredients for the Icing (optional): • 2 ounces (2 squares) semisweet baking chocolate 2 tbsp rum or coffee • 5 to 6 tbsp unsalted butter
Preparation: Preheat oven to 350°F (175°C) . Butter and flour the round, 8" x 11/2" deep cake pan. Set the chocolate and rum or coffee in a small pan, cover, and place (off heat) in a larger pan of almost simmering water; let melt while you proceed with the recipe. Measure out the rest of the ingredients. Cream the butter and 2/3 cup sugar together for several minutes until they form a pale yellow, fluffy mixture. Beat in the egg yolks until well blended. Beat the egg whites and salt in a separate bowl until soft peaks are formed; sprinkle on the tablepsoon of sugar and beat until stiff peaks are formed. With a rubber spatula, blend the melted chocolate into the butter and sugar mixture, then stir in almonds and almond extract. Immediately stir a quarter of the beaten egg

whites to lighten the batter. Delicately fold in a third of the remaining whites and when partially blended, sift in one third of the Maid Marian Self-Rising Flour and continue folding. Alternate rapidly with more egg whites and more flour until all egg whites and Maid Marian Self-Rising Flour are incorporated. Turn the batter into the cake pan, pushing the batter up to its rim with a rubber spatula. Bake in middle level of preheated oven for about 25 minutes. Cake is done when it has puffed, and 21/2 to 3 inches around the circumference are set so that a needle plunged into that area comes out clean; the center should move slightly if the pan is shaken, and a needle comes out oily. Allow cake to cool in the pan for 10 minutes. Run knife around the edge of the pan, and reverse cake on the rack. Allow it to cool for an hour or two; it must be thoroughly cooled before it is iced (if desired).

hristmas is the celebration of the birth of Jesus Christ. Christians believe that Jesus is “the son of God,� the Messiah sent from Heaven to save the world. The 'The Nativity Story' tells of the birth of Jesus in a stable in Bethlehem, the angels announcing the birth to the shepherds in the fields, and the wise men from the East visiting the stable and offering gifts to the newborn child. The origins of Christmas dates back to 336 AD in which a Roman almanac confirms that December 25 was used to celebrate Christmas. However, it was nearly 600 years later that the churches held services for public worship to commemorate this occasion. Christmas, like in many parts of the world is celebrated on December 25 in Guyana. There are many rituals, parties, celebrations and other events all over the

country at this time of year. Christmas trees and lights are part of a long tradition of decorating the home and creating a joyous atmosphere. In the weeks leading up to Christmas, homes, schools, offices and other public places are decorated; greetings cards are sent out; carols are heard over the airwaves; Christmas tree lighting ceremonies are common; and children anxiously wait for a visit from Santa Claus. On Christmas Day, family and friends gather to exchange gifts and enjoy special Christmas food. It is also traditional for companies, organizations and churches to host dinners and parties. Many visitors to Guyana also set their schedules to arrive in time to attend these events. Many churches also hold Christmas Day services, caroling and nativity skits. These events are usually televised live or aired on the radio from some locations.

It is also traditional in Guyana to serve certain popular foods, drinks and desserts at Christmas time. So, it is not uncommon to be offered pepperpot, souse, ham, garlic pork, ginger beer, ice cream, fruit cake and cookies during this festive season. Masquerade bands with dancers dressed in colorful costumes have also been a long held tradition in Guyana’s Christmas celebrations.
Some of the major events to expect during Christmas are the Courts Guyana Christmas Light-up, Main Big Lime, the Forgarty’s Parade and the Banks Beer / GFA and Kashif and Shanghai Football tournaments. In early December, expect to see many companies and organizations offering their clients opportunities to win cash and other prizes in their holiday promotions.
