Steak and Egg Soft Shell Tacos (Family Features)
1 cup medium or mild Salsa
1 pound skirt steak
Salt, to taste Pepper, to taste
4 tablespoons olive oil
6 eggs, beaten
1 (14.5-ounce) can diced new potatoes, drained well
1 1 2 cups shredded cheddar cheese 9 (6-inch) flour tortillas
Cook steak on grill or saute pan. If using grill, high heat. If using saute pan, heat pan to medium-high heat. Season steak w/salt and pepper. Cook steak, approximately 4-5 minutes on each side for medium temperature steak. Rest 5 min. While steak is resting, in large saute pan on high heat add 2-4 tbls. olive oil followed by potatoes and pinch of salt and pepper. Begin frying until golden brown and crispy, approximately 3-5 minutes. Once potatoes are cooked, add beaten eggs and cook until scrambled. Turn off heat and add cheese. Slice steak thinly against grain of meat. Place flour tortillas in microwave 30 seconds or long enough to lightly warm them. Portion egg and potato mixture evenly between flour tortillas followed by sliced steak and approximately 1-2 tablespoons salsa and serve immediately.

Research firm NPD Group found that, by the end of 2015, restaurant visits by consumers increased by 700 million compared to just five years prior. While chain restaurants invest heavily in advertising, independently owned restaurants do not have those same resources. Multi-unit chains also have more pull with suppliers and might be able to negotiate better deals, or can spread operational costs across various locations. Too often diners are not aware of the vast array of tasty, well-priced and artisanal foods awaiting them just down the street. Much can be said about the advantages of patronizing local eateries. Men and women who want unique dining experiences can give local, independently owned establishments a try.

Yield: 8 slices
Prep time: 5 minutes
Cook time: 25 minutes
8 slices hickory smoked bacon
4 tablespoons Maguey Sap
Heat oven to 400∞F.
On foil-lined rimmed baking sheet, arrange bacon in single layer (use baking rack for crispier bacon). Bake until fat is rendered and bacon is beginning to brown, about 15-18 minutes.
Remove from oven and brush one side with Maguey Sap. Bake another 3-5 minutes, or until coated side of bacon is browned. Remove from oven and flip each piece using tongs. Brush second side with Maguey Sap. Bake another 3-5 minutes, or until browned.
Drain away grease and allow bacon to rest 5 minutes. Serve warm and enjoy with your favorite pancakes.

Can someone please explain why the pickleball and tennis courts at [local park] are LOCKED at noon/1pm on a beautiful Saturday in September!? It is baffling that these courts would not be open dawn to dusk when the weather is nice. What is the harm in people playing an outdoor sport on a public court?!

I live in a small community that is 62 and over and disabled. Recently our community has been taken over by a new company which no one within our facility has seen, met, or even heard about. We only know of the name, and yet that doesn’t even to seem to be the truth! Everyone here is a little scared because we don’t know what’s going on and from inside information everyone’s checks have not been cashed for rent. We have no one in the office and no maintenance! There are three communities that this supposed company bought and they too are in arms about the situation. Our grass is getting a little out of hand, and being a disabled community, people are a bit scared, and no one has any answers for us. Please help us!

How Long Will Dog’s Heatstroke Recovery Take?
DEAR PAW’S CORNER: Two weeks ago, my Golden Retriever Lollie suffered a heatstroke. I let him outside into the backyard around midmorning. When I checked on him a er about a half hour, he stumbled to me and collapsed. I rushed him to the veterinarian, where he was treated. Lollie is recovering, but I am terrified to let him outside again. Why did he have problems so fast? Will this episode affect his health long-term? -- Greg in Houston
DEAR GREG: I’m glad to hear that Lollie is recovering, because heatstroke can be deadly -- as you know. Your fear is normal, because you’re clearly a caring pet owner, and you don’t want Lollie to be injured again.

Lollie may have had an underlying illness that made it harder for him to withstand the warmer temperature. He might not have drunk as much water as he needed to maintain his internal temperature.
You did all the right things: letting him outside earlier in the day; checking on him periodically; and immediately taking him to the vet as soon as you saw his symptoms were serious.
Keep following the vet’s instructions to support Lollie’s care as he recovers. It may be weeks or months before he can spend the same time in the heat. He’ll get tired more easily, so his daily walks should be kept short. Make sure he’s eating and drinking enough water. All these factors will improve his health for the long term.

LeRoy Historian Lynne Belluscio Shares Her Passion through Barn Quilts

Ashop teacher by training, Lynne’s name has become synonymous with LeRoy, where her passion for the town’s history and community comes alive.
She started working at Genesee Country Village & Museum in 1976, sharing her expertise in open air cooking, bread oven baking, cheese making, basket making, and other talents for nearly a decade. She enjoyed coordinating special events and educational programs including annual 4th of July festivities and the Agricultural Fair. In 1988, Lynne transitioned to the LeRoy Historical Society and worked at the Jell-O Gallery Museum for 25 years before retirement last year. rough her weekly historian’s column in the LeRoy Penny Saver, she gets to share stories of LeRoy’s past with the community.
In preparation for LeRoy’s bicentennial in 2012, Lynne and her colleagues envisioned a tribute to the town’s agricultural heritage with barn quilts. e project swi ly gained traction, with farmers and community members either cra ing their own or commissioning paintings for their structures. Lynne organized workshops so people could paint their own quilts.
For the bicentennial, the town hoped for 24 quilts around town. Instead, there were about 75 within the year. Now with 106 quilts featured in the officially printed maps and information and another 50 or so dotting the area landscape, Lynne lauds the LeRoy Barn Quilt Trail as quite a community accomplishment. Drawing inspiration from the Catskills town, Neversink, with its barn quilt trail and map/brochure for visitors, the LeRoy barn quilt trail joins a rich history of art paying homage to local communities. Lynne says she researched Neversink’s trail, as well as Suzi Parron’s Following the Barn Quilt Trail book, which documents the public art project. Since the project’s inception, barn quilts have spread throughout the contiguous states and several Canadian provinces. Lynne says Suzi came to LeRoy to speak on barn quilts’ history and then, when Suzi printed a second book, it included raves about LeRoy’s trail.
Lynne’s pride and passion shines through relation of these stories, even more than her humble note that the trail earned a 2023 NYS Tourism Excellence Award. And now, with the help of the Genesee County Office of Tourism, there’s a billboard on the ruway urging travelers to get off Exit 47 to see the LeRoy Barn Quilts.
Each quilt tells a story of the farm, the families, and the people who painted them. Lynne proudly raves about the project to make this trail come to life as a self-guided driving tour with clues to find the sometimes object-obscured quilts. It’s quite the scavenger hunt and fun for all ages. Lynne eagerly anticipates resuming bus tours, providing insight into the town’s rich history, its farms, and the families that animate LeRoy’s vibrant community.
Lynne says there are so many incredible barn quilts, she couldn’t possibly choose a favorite, but she highlights a few, including the Women’s Suffrage quilt within LeRoy Village Hall, a vibrant testament to the suffrage movement.
e personal anecdotes behind the barn quilts captivate Lynne. Some replicate cherished family heirlooms, while others convey deeply personal narratives. Some individuals are inspired to create fabric quilts a er cra ing their barn quilt.
She loves the story behind the McPherson Orchard’s quilt, “Lady of the Lake,” designed based on an 1867 family heirloom. Lynne’s own family barn features the Whig Rose, a quilt Lynne painted replicating the pattern of a fabric quilt Lynne stitched for her granddaughter. ough Lynne humbly disclaims that she’s “Not a quilter, but I can say I have done it enough to appreciate those who are really good at it!” she loves painting the barn quilts and encourages us all to explore the trail.
For Lynne, the barn quilts are a labor of love in continuous need of repair and repainting for the past decade, but she loves the work, spreading the word about the incredible town. She’s excited to share that more and more people around the area want a quilt on their property. It’s been quite a hit.

What Prompted the Discontinuation of Fen-Phen?
DEAR DR. ROACH: I’m a 71-year-old healthy female who has struggled with my weight all my life. In the ‘90s, I thought I had finally found the solution in fen-phen. It was like a miracle! It took all the nagging thoughts of food out of my brain. My question is, with all the drug ads on TV every day blithely showing the many side effects leading up to -- and including -death, why can’t we use fen-phen? I worked in a hospital where a very large number of employees were taking it with great results. I never heard a hint about anything that could affect someone’s health.
Also, I talked to many of the other patients at the doctor’s office where I was receiving it. Everyone was overjoyed with the results. I had no temptations and no constant yammering in my brain to eat something. As I said, it was a miracle. I felt like a normal person. So, why are all of these drug companies allowed to advertise their products, but one drug that truly worked had to get snatched away from us? -- M.H.
ANSWER: Fen-phen was a combination of fenfluramine and phentermine, which was approved for use in 1986. Approximately 18 million prescriptions were written for this medicine until 1987, when an association was made between the use of fen-phen and valve diseases of the heart. These cases were reported with fenfluramine or with the related dexfenfluramine alone, but never with phentermine alone. (Phentermine remains on the market.) Approximately 150 cases were reported.
Subsequent studies estimated that seven out of 10,000 people who took fenfluramine or fen-phen for less than four months developed valve disease, while 35 in 10,000 people who took fenfluramine or fen-phen for more than four months developed valve disease. They were compared to people who either took phentermine alone or did not use a weight-loss medicine. The U.S. Food and Drug Adminstration determined that the risk of valve disease (some being severe enough to prompt valve replacement surgery) was too high, so the FDA asked manufacturers to remove these drugs from the market. I fully understand your perspective. Some people are willing to take the risk of a side effect because the benefit of the medicine is so great. In my opinion, people should have the option of making their own decision, but in this case, the FDA felt that the risk was too high.
I have not seen a medicine for weight loss as effective as fenphen until recently, when semaglutide (Wegovy and Ozempic) and tirzepatide (Mounjaro, not yet approved for weight loss) became available. Just as you say, many of my patients report that they were able to easily control their eating while on these medicines, and as of the time I am writing, there have not been any serious adverse effects of taking these drugs, although there are plenty of milder effects.
However, these medicines only work when you continue to take them, and stopping them generally results in rapid regain of the weight that was lost. It’s important to realize that if you take a weight-loss drug, you’re making a commitment to a long-term treatment.

Psoriatic arthritis, which causes stiffness, swelling and pain in and around the joints, affects up to 30 percent of people with psoriasis, says the National Psoriasis Foundation. While psoriatic arthritis can develop at any time, it is most common in people between the ages of 30 and 50. This type of arthritis can develop slowly or come on quickly and be severe. Just like psoriasis itself, psoriatic arthritis tends to go through periods of flare-up and remission. Typically, the skin condition precedes the joint disease in 85 percent of patients. Keep in mind that a severe case of psoriasis will not necessarly translate into a severe case of arthritis. Psoriatic arthritis may be treated like other forms of arthritis. Doctors may prescribe anti-inflammatory drugs, antirheumatic drugs, exercise, and complementary therapies.Those who have psoriasis and have begun to experience joint pain and stiffness should talk to a doctor about potential therapies.
Consider the arrangements and services offered. Some facilities offer single rooms, while others provide apartment-style living. Most assisted living facilities provide a variety of services, such as housekeeping, laundry, exercise and wellness classes, and social activities, for their residents. Investigate the offerings at each home you visit, looking for a facility that best suits your loved one’s needs.

4 large eggs
1 1/2 c plain yogurt
1/2 c butter, melted
2 tsp vanilla extract
2 c all-purpose flour
1 1/2 c whole wheat flour
2 c shredded sweet potatoes
1 c sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 c blueberries
Preheat oven to 375° F. Coat muffin tins with nonstick spray.
In large bowl, whisk eggs, yogurt, butter and vanilla. In medium bowl, combine flours, sweet potatoes, sugar, baking powder, baking soda and salt. Mix flour mixture into egg mixture. Gently stir in blueberries.
Divide batter between 24 regular or 10 jumbo muffin cups. Bake until golden brown and set, about 25 minutes for regular muffins or 30 for jumbo.

Serves 6 to 8
2 to 3 tablespoons unsalted butter
2 pounds apples, peeled, cored and cut into thick slices
1/2 cup honey, preferably sage honey
1/2 cup white wine
Zest of 1 lemon
Juice of 1 lemon
Fresh sage sprigs for garnish
1. Melt the butter in a large skillet over medium heat. Add the apples, turn the heat to high and sauté until they begin to brown on the edges, about 5 minutes. If some are getting too well done, remove them and place on a plate while the rest continue to cook, then return them to the skillet when all are done.
2. Reduce the heat to low and add the honey, wine, lemon zest, lemon juice, and 1/2 cup water. Cover and allow to cook until the apples are tender but still firm; you don’t want them to turn into applesauce.
3. Serve this in a bowl, tuck in a couple sprigs of fresh sage from your garden, and tell your guests all about sage honey.

Serves 6 to 8 people
2 Spanish onions, chopped
3 garlic cloves, chopped
1/4 cup olive oil, plus more for drizzling
2 28-ounce cans crushed tomatoes
2 bay leaves
1 pound fresh squid, sliced
1 pound cuttlefish, cut into pieces
1 pound lobster tail meat, cut into pieces
Salt, to taste
3 cups chicken stock
1 cup dry white wine
2 cups Arborio rice
2 dozen fresh mussels
2 to 3 dozen fresh clams
1 tablespoon saffron
1. In a large paella pan, sauté the onion and garlic in the olive oil over medium heat. Add the tomatoes and bay leaves, and simmer for 5 minutes. Add the squid, cuttlefish, lobster, and a pinch of salt, and cook, stirring, for a minute or so more.
2. In a saucepan, bring the chicken stock and wine to a boil. As it boils, add the rice to the fish mixture in the paella pan and blend thoroughly. Ladle three-fourths of the boiling stock over the rice and bring to a boil. Season the rice with more salt to taste. Reduce the heat to low and mix well, distributing rice evenly in the paella pan. Continue to cook the rice for 18 to 20 minutes, stirring occasionally.
3. While the rice is cooking, heat about 1 inch of water and a drizzle of olive oil in a separate sauté pan, then add the mussels. Steam until the mussels open, then transfer to the paella pan with a slotted spoon. Steam and transfer the clams in the same way. Take 1 cup of the clam water and whisk together with the saffron in a small bowl. Add to the paella pan, and simmer the mixture for 5 minutes more. Serve the paella directly from the paella pan.

4 EASY WAYS TO CREATE MORE TIME IN YOUR DAY
Managing one’s time can sometimes feel like an uphill battle. As a result, adults with hectic schedules and multiple responsibilities may pine for an extra hour or two in the day. While it’s impossible to extend a day from 24 to 26 hours, there are ways for busy men and women to create more time in their day.
1. Embrace organization tools. Whether it’s day planners, smartphone reminders or more traditional print calendars with meetings and deadlines written on them, organization tools can greatly cut back on time spent trying to remember and/or confirm meeting times, project schedules, deadlines, and other obligations.
2. Assess your productivity. Some people are most productive in the mornings, while others do not hit their strides until after lunch. Identify the time or times of day when you tend to be most productive, and make an effort to focus exclusively on work during these times. Resist any urge to schedule meetings or conference calls during those times of day when you are most productive, as it can be hard to multitask or focus when discussing projects with coworkers or clients.
3. Minimize distractions. Social media, the internet and texting can distract attention away from tasks that must be completed, ultimately affecting howquicklyandefficientlysuch projects are finished. Make a concerted effort to avoid social media and the internet while at work, and turn off smartphone alerts that entice you to go online. In addition, turn off text alerts if they are proving too great a distraction.
4. Reconsider your commute. Professionals who drive to work but find themselves sitting in traffic on their way to and from work can investigate possible alternatives to driving themselves. Public transportation might not get you to work more quickly than driving yourself, but time spent on a bus or train can be used to workonprojectsandcheckand answer work-related emails, clearinguptimelaterintheday. Time spent behind the wheel of an automobile cannot be safely spent working.

WORKING PARENTS CAN CREATE BETTER WORK-LIFE BALANCE
Many working parents struggle to maintain a healthy balance between their responsibilities at work and their obligations to their families. An inability to maintain that healthy balance can have adverse effects on men and women’s careers as well as the relationships they have with their families.
A 2015 survey of more than 2,000 adults commissioned by the workplace solution provider Workfront found that 38 percent of survey participants have missed life events because of a bad work-life balance. Access to technology that means work is never too far away might contribute to poor work-life balance, as 57 percent of respondents also acknowledged feeling that technology has ruined the definition of a family dinner. Finding a healthy balance between work and life at home may require a concerted effort on the part of working parents, but there are ways to successfully juggle a career and family.
HOW TO NEGOTIATE (AND GET) A SALARY INCREASE
Salaries in the workplace have long been a hot-button issue for women. The differences in compensation for males and females continues to draw the attention of politicians and gender equality advocates alike. The United States Department of Labor noted that, in 2015, the median weekly earnings for fulltime male workers increased by 2.2 percent from the year prior. During that same period, female earnings increased by just 0.8 percent. That latest data marks the third consecutive quarter that the increase in males’ earnings doubled that of females. On average, women who work fulltime earn 81.1 cents for every dollar men earn.
Women aware of that unfair gap in pay may feel helpless to address it with their bosses out of fear of being seen as unappreciative or selfish. In fact, addressing compensation makes many workers uncomfortable, regardless of their gender. According to a salary survey from PayScale, almost 60 percent of male and female workers do not ask for a raise. Negotiating salary increases requires finesse, timing and being informed. It also requires a certain measureofgumption.
