School-aged children are busier than ever before, and some may be sacrificing sleep to accommodate their lifestyles. The National Sleep Foundation says school-aged children need between nine and 11 hours of sleep each night to function at a healthy level. Sleep deprivation can be linked to a host of health ailments, including issues affecting the development of the brain. Growing evidence suggests that lack of sleep can cause disturbances in metabolic rates that could affect the risk for cardiovascular disease, diabetes and obesity. A recent study from Johns Hopkins University found that, for each additional hour of sleep a child gets, the risk of that child becoming overweight or obese decreases by 9 percent. Children who slept the least, according to the research, had a 92 percent higher risk of being overweight or obese compared to children with longer sleep duration. The NSF adds that poor or inadequate sleep can lead to mood swings, behavioral problems and cognitive problems that impact kids’ ability to learn in school. To promote good sleep habits in children, parents and other caregivers can establish consistent sleep/ wake routines; ensure children avoid excess caffeine, particularly late in the day; create a cool, dark sleep environment; keep televisions and other media devices out of bedrooms; and help children work through stressors that may impact sleep.

A TURKEY ALTERNATIVE FOR INTIMATE THANKSGIVING MEALS Serves 6 to 8 12 chicken thighs (about 3 to 4 pounds), bone in Salt and freshly ground black pepper 4 tablespoons unsalted butter 2 tablespoons olive oil 6 shallots, minced 6 cloves garlic, minced 1/2 cup apple cider vinegar 11/2 cups dry white wine 1 tablespoon tomato paste 11/2 cups chicken stock, preferably homemade 1/2 cup chopped Italian parsley Season the chicken generously with salt and pepper to taste. In a large, deep skillet (big enough to hold all chicken fairly close together; or use two skillets), melt 3 tablespoons of the butter in 1 tablespoon of the olive oil over medium-high heat. Brown the chicken for about 8 minutes, turning so both sides get nicely browned. Transfer the chicken to a deep, broad, ovenproof casserole that can go from the oven to the table. Remove the skillet from the heat and pour off most of the fat. Preheat the oven to 375 F. Place the skillet back over medium heat and add the remaining 1 tablespoon butter and 1 tablespoon olive oil. Add the shallots and garlic and cook for about 1 minute, or until they become translucent. Add the vinegar and wine, and stir up the crispy bits that have stuck to the bottom of the pan. Allow the liquids to cook down a bit, stirring occasionally, for about 8 minutes. Whisk in the tomato paste and let the sauce simmer and condense, about 5 minutes more. Then add the chicken stock, a little at a time. Keep stirring to mix well. Pour the sauce over the chicken. Bake for 35 to 45 minutes until the chicken is very tender, turning the chicken pieces halfway through, so that both sides are infused with the sauce. Remove one thigh and cut into it to make sure it is done and no red juices flow from the cut. Page 4

Kwanzaa traces its origins to Africa and is celebrated across North America and other nations that have large populations that trace their heritage to Africa. Hold That Turkey Leg: It’s the Annual Thanksgiving Pet Safety Brief DEAR PAW’S CORNER: Can you remind me what foods are unsafe to give to pets? I know onions are bad for dogs, but I’m not clear on other ingredients. My dog loves scraps from the table, and I want to make sure my Thanksgiving dinner guests don’t feed him something dangerous. -- Manuel C., San Antonio, Texas DEAR MANUEL: It may be difficult to keep tabs on all of your dinner guests, so consider placing your dog in a room or in his kennel during the meal and then rewarding him after with some tasty leftovers. When he does get his treat, make sure that it doesn’t include the following ingredients: onions, garlic, raisins or avocado. Turkey is fine; take the skin off to remove extra salt and seasonings that might upset his stomach. Avoid feeding him stuffing. The mashed potatoes should be plain, and hold the gravy. A little apple or pumpkin pie should be fine, but keep him away from chocolate. And try to limit the amount of fat in the leftovers, because too much can cause some messy digestive problems. The same rules apply to cats, by the way. Because they’re small, they may have a more severe reaction to ingredients like grapes, avocados or onions. It can be difficult to keep track of what your pet is eating during the busy holiday season, especially during big meals. That’s why I recommend placing pets in a separate room until people are done eating and the food is put away out of reach. You still need to control their diet, and you can’t always catch Aunt Gladys sneaking peanut butter cups to the dog. Enjoy your holiday, and thanks for keeping your pet safe!

DID YOU KNOW? A study from the Gap Year Association found that 77 percent of students who take a gap year do so between high school and college. Parents may not know how to react when their soon-to-be or newly minted high school graduates bring up the idea of taking a gap year, but additional findings from the GYA’s “National Alumni Survey” might inspire parents to look at gap years more positively. For example, the survey, the findings of which were based on the responses of hundreds of American and Canadian citizens who had taken gap years in the past, found that 98 percent of respondents indicated their gap years helped them develop as a person, while 96 percent felt their gap years improved their self-confidence. In addition, 84 percent of respondents felt that they acquired skills to be successful in their careers during their gap years. Perhaps of most interest to parents of high school students contemplating gap years is that 73 percent of survey respondents felt their gap years increased their readiness for college and 57 percent said their gap years helped them determine what they wanted to study in college.

Feeding the Spirit: Pastor Dave Fish’s Mission Against Food Insecurity BY SUZIE WELLS

P

astor David Fish, of the North Bergen Presbyterian Church, established the North Bergen Food Pantry in August 2019 as a mission activity of the North Bergen Presbyterian Church.

Fish, a veteran of the Navy and Army National Guard, served as chaplain in the Air Force from 1996-2011, where he found his passion. He has and still is very active in outreach, working with programs such as church-sponsored soup kitchens, homeless outreach, and the St Joseph’s House of Hospitality, all in urban areas. In 2016, upon graduating from the Seminary at Roberts Wesleyan College, Fish served as pastor of North Bergen Presbyterian Church. Fish, with his wife, Ann, and their three children relocated to Genesee County. As pastor to a very small church, Fish felt he had more to give and the time to do it. He missed his mission work, but in the rural farming community, it was not apparent who needed his help. Fish says, “I thought the easiest way to find people in need was to feed them!” He shared his idea with members of his church and four women agreed to help. The church had an unused room Fish cleaned out. He contacted Rochester’s Foodlink and he and the four volunteers took the necessary training, secured shelving, a freezer, and two used refrigerators, and shortly thereafter opened the doors of the North Bergen Food Pantry. Word spread, and soon people from towns in Genesee, Orleans, and western Monroe Counties regularly came. “This is not only a place to get food,” volunteer Pat Iamon says, “It’s a friendly welcoming place where Pastor Dave takes the time to greet each person and introduce them to the pantry. Through that process he gets to know the patrons and their families. In turn those he befriends often feel comfortable sharing their hardships. This is where Pastor Dave does his best work!” often referring patrons to other services and agencies. Fish says, “There is such need in this area, more than you would suspect. People are really hurting. The elderly and those on fixed incomes seem to fare the worst.” Pastor Dave’s welcoming attitude is shared by volunteers. They happily greet new patrons and welcome those they’ve gotten to know. Long time volunteer, Audrey, looks forward to greeting the young children entering and happily pulls them aside to read them a story from one of the many children’s books donated while their parents wait to go through the line. Fish also loves meeting children; he gets down to their level and engages them. Iamon says it helps that he usually offers them a treat! Even though Fish also works as a part-time minister at Stone Church in Bergen, he finds time to do extra special things. Fish really enjoys the holidays and loves spreading holiday cheer. For the last few years, the pantry has made Thanksgiving and Christmas boxes with fixings for a complete dinner for one hundred families in need. Fish even reached out to other churches and businesses in the community to help him give every young child in each family a Christmas stocking full of goodies!

Iamon says, “A couple of winters ago Pastor Dave saw that many patrons were in desperate need of winter clothing. He spread the word to other churches and posted signs at the pantry and collected the much-needed coats, gloves, hats, and even boots. Volunteers organized the donated clothing, and they were available at the pantry for anyone in need.” Fish says, “As a result of the COVID pandemic, the pantry has become even more vital. Food costs have risen and there have been supply-chain issues, causing many families to make difficult decisions with regard to feeding their families.” To date, the pantry has served over 1,000 individuals from nearly 394 households. However, Fish’s goal of combatting food insecurity in his muchloved community may soon come to an end. “I’m very worried that those who have come to rely on us will suffer greatly!” he says. On December 31st, the North Bergen Presbyterian Church, which marks 200 years of service, will permanently close. Membership has slowly dwindled and members made the difficult decision to close. And with it will go the pantry unless they find a suitable space. Fish says they have what they need, refrigerators, freezers, shelving units and, most importantly, volunteers to continue this mission, but they need a space to operate out of. Anyone with potential vacant space available by the end of December is asked to please contact Pastor David Fish at 585-290-5487. Along with food, household and hygiene supplies, the pantry has books for all ages and occasionally used toys. During COVID, one volunteer sewed and donated facemasks to include in each child’s Christmas stocking and were available at the pantry.

Mail-Order Meds Lose Efficacy if They’re Not Stored Properly ---

DEAR DR. ROACH: I am concerned, and have been for some time, about whether my prescriptions that arrive by mail are compromised, since they sit in vehicles with the sun beating through the windows, heating them up. Also, the plastic bottles in which the prescriptions are stored give off toxic emissions as they “broil” in the sun. The instructions that come with some of the meds warn about heat as well. My pharmacist told me that heat does affect a medication’s effectiveness negatively. So, if this is true, millions of us are taking important medications that are basically not doing the job. After all, the meds that arrive at pharmacies come in hot vehicles, too. What’s your take? -- J.Z. ANSWER: All medicines should be stored in a cool, dark place, as direct sunlight and heat can damage their effectiveness. Studies have proven that medicines sent by mail order can indeed get out of their published temperature range. While this happens most often in mailboxes, I understand your point about medications “broiling” in hot temperatures during the shipment itself. Liquid medicines, hormones and nitroglycerin are among the most sensitive. Medicines that need to be dosed exactly, such as transplant rejection medicines, biologicals, and seizure medicines, are also particularly likely to cause problems if they are damaged during shipping. Although some medicines are supposed to be shipped in packaging with cold packs and insulation, this isn’t always the case. I recommend using a local pharmacy, but many people have prescription plans that require them to use mail order. Many states have requirements about customers using retail pharmacies. If that’s not the case for you, try to make sure that the medicine will be delivered when you are available to receive it. If you have a temperature-sensitive medicine, such as the ones I mention above (you can ask your pharmacist about others), request that your mail-order pharmacy sends it in special packaging during warm weather. You might also consider having them shipped to a place where they will be put into a temperature-controlled environment right away. ***

MORCILLA CON SETAS (BLOOD SAUSAGE WITH MUSHROOMS, SPRING PEAS AND MINT OIL) Serves 4 1 pound morcilla blood sausage 1 pound mushrooms, sliced 2 tablespoons olive oil 4 cloves garlic, slivered Salt and pepper to taste 2 tablespoons white wine 1 cup shelled spring peas 1 tablespoon chopped fresh mint 2 tablespoons mint oil Mint Oil 1/2 cup extra-virgin olive oil 1/2 cup chopped mint Pinch of salt Cut the blood sausage into 12 slices. Sauté the mushrooms in olive oil with garlic, salt and pepper for 5 minutes. Add the wine and cook for 2 more minutes. Boil the peas for 2 minutes and drain. When mushrooms are done, remove from heat and stir in the peas. In a cast-iron skillet, sear the morcilla in a dry pan for 2 minutes per side. Arrange the slices of morcilla down the middle of a platter. Surround with mushroom/pea mixture and drizzle the plate with the mint oil. For the mint oil: In a small saucepan over medium heat, heat olive oil to warm. Remove from heat and add the mint and a small pinch of salt. Allow to rest for 1 hour. Drain through a sieve. Reserve extra mint oil for other uses, such as vinaigrette.

CHRISTMAS TREES BRIGHTEN THE SEASON Decked out in tinsel, lights, ornaments, and garland, Christmas trees are enduring symbols of the holiday season that boast a rich history. Evergreen trees have been used to celebrate winter festivals for thousands of years, and eventually became associated with Christianity. Plants and trees that remained green all year held special meaning to ancient peoples, and were purported to keep away illness and evil spirits. Germans were credited with tying evergreen trees to Christmas celebrations. In the sixteenth century, devout Christians brought decorated trees into their homes. Martin Luther, the Protestant reformer, is believed to have first added lighted candles to these trees after he was inspired by twinkling stars in the night sky. While early Americans found Christmas trees an oddity, the tradition, brought over by German settlers, eventually caught on. Today, between 25 and 30 million natural Christmas trees are sold in the United States each year, states the National Christmas Tree Association. Trees are grown in all 50 states and Canada.

Our Turn to Pay it Backward I was disappointed to read the rant from my fellow senior citizen complaining about paying school taxes. I need to remind the writer that when our children were in school, seniors citizens at that time paid to support them. The medicare and social security benefits that we receive come from the taxes that current workers pay. Think about how our lives would be affected if young people questioned why they should support baby boomers and refused to pay their medicare and social security taxes. Current workers are paying it forward to help us and it is our duty to pay it backward to help the students of today become successful productive citizens. Why can’t we get along? Every week it seems that there is somebody complaining about their neighbors. Why can’t we all follow the Golden Rule of treating others as you would want to be treated? Some of the things people do to their neighbors are inconsiderate while some of the things people complain about their neighbors doing are trivial. How about thinking about your actions and how it may affect your neighbors before you act. I’m always touched by the neighbors who mow lawns and do snow removal to make their neighbors lives easier as it is evidence of how our neighborhoods should be. DID YOU KNOW?

Leisure activities may be widely viewed as fun ways to fill up free time, but the benefits of leisure activities extend beyond beating boredom. A 2011 analysis published in the journal BBA Molecular Basis of Disease found that leisure activities have a positive impact on cognitive function and dementia. The analysis, conducted by researchers with the Aging Research Center in Stockholm who examined various studies regarding the relationship between certain activities and cognitive function, defined leisure activity as the voluntary use of free time for activities outside the home. After retirement, leisure time constitutes a large part of many retirees’ lives, and finding ways to fill that time is more beneficial than merely avoiding boredom. The researchers behind the study concluded that the existing research is insufficient to draw any firm conclusions regarding the effects of certain types of leisure activities on the risk for dementia and cognitive decline, though they did note that multi-domain cognitive training has the potential to improve cognitive function in healthy older adults and slow decline in affected individuals. A multi-domain approach to cognitive training involves memory, reasoning, problem-solving, and map reading, among other activities. Aging adults who embrace activities that require the use of such skills may find that they’re not only finding stimulating ways to fill their free time, but increasing their chances of long-term cognitive health as well.

The number of women entering the professional fields of science, technology, engineering, and mathematics (STEM) is slowly growing around the world, but there is still a sizable gender gap in these professions. According to the College Board, which produces many standardized tests, only 27 percent of all students taking the AP Computer Science exam in the United Science are women. Similarly, just 18 percent of American computerscience degrees are attained by females. However, this is not the case elsewhere in the world. A paper by Gijsbert Stoet and David Geary published in Psychological Science noted that women who live in countries with traditionally higher gender inequality tend to choose STEM professions more readily. Algeria, for example, has one of the highest ratios of women in STEM professions, at 41 percent. Stoet and Geary surmise that women in these countries may be choosing careers with the strongest path to financial independence. According to a U.S. Department of Education report, students studying science or math in college have a higher employment rate and salary than other majors after graduation. STEM majors typically earn an average of $15,500 more annually than nonSTEM majors. Engineering and engineering technology tends to pay the most. Women eager to secure competitive, stable and well-paying jobs should carefully consider the opportunities available to them in STEM fields.
