STRAWBERRY-GLAZED FRENCH TOAST WITH SWEETENED SOUR CREAM Serves 4 • 8 1-inch-thick bread slices, cut from a country or peasant loaf • 2 cups half-and-half • 4 egg yolks • 3 tablespoons light brown sugar • 1 tablespoon vanilla extract, plus 1/2 teaspoon • 1/2 teaspoon cinnamon • 3 tablespoons unsalted butter • 1/2 cup sour cream • 1 tablespoon granulated sugar • 1/3 cup strawberry jam or preserves (see note 2) 1. Arrange a rack at center position and preheat the oven to 400 F. Place the bread slices on a baking sheet and bake until dry and very lightly browned, about 8 minutes per side. Watch carefully so that the bread does not burn. Remove the bread from the oven and reduce the oven temperature to 200 F. 2. In a medium bowl, whisk together the half-and-half, egg yolks, brown sugar, 1 tablespoon vanilla, and cinnamon. Pour the mixture into a shallow pan (a 9-by-13-inch glass baking dish works well). toasted bread slices and soak them 4 minutes per side. Remove to a large plate or platter. 3. Place a large, heavy frying pan over low to medium heat. Add about 2 teaspoons of the butter, or enough to coat the bottom of the pan lightly. When melted, add enough bread slices to fit comfortably in a single layer. Cook slowly until the slices are golden brown and crisp on both sides, about 4 minutes per side. Remove to a baking sheet and place in the warm oven. Repeat, adding more butter to the pan as needed until all the bread slices have been sautéed. 4. In a small bowl, stir together the sour cream, granulated sugar and remaining 1/2 teaspoon vanilla. 5. When ready to serve, spread each toast with a thin coating of strawberry jam and top with a dollop of sweetened sour cream. Note 1: The best bread for this dish is an unsliced loaf of good-quality peasant or country bread, preferably one without an extra-hard crust. One that is rectangular, rather than round, is more convenient, but either will do. Cut off the ends of the loaf, and reserve for another use. Then slice the bread into 1-inch-thick slices. If your loaf is large and the slices seem large, cut them in half. Note 2: You can try other jams, preserves or marmalades. Cherry, raspberry or peach preserves and orange marmalade are other possibilities.

Paget’s Disease Causes Arthritis, Pain, Deformities and More ---
DEAR DR. ROACH: My husband has been diagnosed with Paget’s disease. I would like to know more about it; this is the first time I have ever heard of it. I would like to know the treatments and how much damage affects the bones. He is 76, had prostate cancer and underwent radiation treatment. -- C.W. ANSWER: Paget’s disease of the bone is a common disease in people of European ancestry, with a lifetime prevalence of approximately 3%, although it remains undiagnosed in many. The cause of the disease appears to be a defect in bone reabsorption by the osteoclast, a specialized cell that normally helps maintain bone health. Paget’s disease is not a cancer. It is normally diagnosed over the age of 55. Most cases of Paget’s disease are asymptomatic; however, without treatment, some people will develop arthritis, pain, deformities and fractures. The bone deformities may lead to nerve compression and, in the case of the tiny bones in the ear, hearing loss. X-rays and a high alkaline phosphatase (ALP) blood test are suggestive of the diagnosis. A bone scan is recommended to see the extent of damage from the disease. Fortunately, highly effective treatments are available. Bisphosphonate drugs, the same drugs that are used to treat many people with osteoporosis, are very effective. A single treatment with zoledronic acid is effective at stopping (not reversing) the progression of the disease, and fewer than 20% of people will need a second dose. Diagnosing and treating early are ideal. I don’t think his prostate cancer or radiation treatment has anything to do with his diagnosis of Paget’s. ***
MORCILLA CON SETAS (BLOOD SAUSAGE WITH MUSHROOMS, SPRING PEAS AND MINT OIL) Serves 4 1 pound morcilla blood sausage 1 pound mushrooms, sliced 2 tablespoons olive oil 4 cloves garlic, slivered Salt and pepper to taste 2 tablespoons white wine 1 cup shelled spring peas 1 tablespoon chopped fresh mint 2 tablespoons mint oil Mint Oil 1/2 cup extra-virgin olive oil 1/2 cup chopped mint Pinch of salt Cut the blood sausage into 12 slices. Sauté the mushrooms in olive oil with garlic, salt and pepper for 5 minutes. Add the wine and cook for 2 more minutes. Boil the peas for 2 minutes and drain. When mushrooms are done, remove from heat and stir in the peas. In a cast-iron skillet, sear the morcilla in a dry pan for 2 minutes per side. Arrange the slices of morcilla down the middle of a platter. Surround with mushroom/pea mixture and drizzle the plate with the mint oil. For the mint oil: In a small saucepan over medium heat, heat olive oil to warm. Remove from heat and add the mint and a small pinch of salt. Allow to rest for 1 hour. Drain through a sieve. Reserve extra mint oil for other uses, such as vinaigrette.

WHAT TO EXPECT WITH EXTRACTIONS We expect to have our adult teeth for life, but sometimes a tooth extraction is necessary. Serves 12 3 large potatoes, peeled and shredded 1 small onion, shredded 3 large eggs 1 teaspoon salt 2 tablespoons all-purpose flour, or as needed 1/2 cup vegetable oil Toppings: Sriracha sauce Vegan coconut yogurt 1. Place the potatoes and onion into a bowl, and stir in eggs, salt and flour as needed to make the mixture hold together. With wet hands, scoop up about 1/3 cup of the mixture per patty, and form into flat round or oval shapes. 2. Heat the vegetable oil in a large skillet over medium heat until it shimmers, and gently place the patties into the hot oil. Fry until the bottoms are golden brown and crisp, 5 to 8 minutes, then flip with a spatula and fry the other side until golden. 3. Line a colander or strainer with 2 paper towels, and drain the cooked latkes in the colander. Serve hot.

What Expecting Parents Can Do To Make Their Homes Safer • Conceal cables and cords. Cable and cord concealers are inexpensive and easily installed. Often used to cover cords hanging down from mounted televisions, concealers also can be used to hide cords coming from computers, lamps and other items that can pose a threat to young children. • Avoid hand-me-down kids’ furniture. The older a piece of furniture is, the less likely it is that the item will meet current safety guidelines. Some parents may be tempted to let their children sleep in the same crib they slept in as kids decades ago, but it’s safer to eschew nostalgia in favor of products that meet the latest safety standards. • Get rid of potential choking hazards. Prior to bringing their babies home, expecting parents can remove all small trinkets and other items that curious children may want to put in their mouths. When buying toys for kids, read the packaging to make sure each item is safe for babies and avoid buying or accepting any gifts with small pieces. • Store all medicines on high shelves behind cabinet doors. SHARE WITH US Drivers If you want to drive 10 mph under the speed limit that’s fine. If you look in your mirror and see multiple vehicles lined up behind you why can’t you at least move a bit to let some by? You may have all the time in the world but others don’t! Headlights From the Other Side New cars have LED headlights. I didn’t choose LEDs; the car came this way. A recent rant complained about being blinded by bright headlights. I am constantly flashed by other cars as though I have my brights on. I have two options to this flashing. One: do nothing and look like a jerk. Two: flash my brights and let them face a much brighter light, thereby demonstrating that what the other driver thought was bright wasn’t even close. The solution for drivers bothered by lights hasn’t changed. If a car is approaching, fix your gaze on the painted line along the shoulder on the right side of your car until the bright lights pass. Banana Trees Growing in Brockport? You Bet! Former Television Executive Goes Bananas in Brockport! BY R AY T R I M , A K A T I K I R AY
A
Rochester native, I embarked on a fascinating 30 year adventure when I left home and moved to Los Angeles, CA where I worked my way up from casting associate on TV shows like Charles In Charge and Quantum Leap to negotiating contracts at NBC Universal for some of Hollywood’s biggest stars and on hit shows, such as Will & Grace and The Office. After three decades working in the entertainment industry, I moved from LA farther east to Palm Springs, CA where I began restoration of my new home, a mid-century marvel in an iconic, architecturally significant neighborhood. Always a supporter of the arts, I also lent my talents to numerous cultural interests in the Palm Springs area, including Modernism Week, as well as the Palm Springs Art Museum. These civic efforts did not go unnoticed, and soon I accepted the mayor’s appointment to serve as City Commissioner, administrating, among other things, Village Fest, one of the area’s most popular and highly attended weekly arts & cultural events. During my time on the west coast, I was fortunate to travel to the Hawaiian Islands on several occasions, training and participating in the Honolulu Marathon. While in Hawaii, I developed a deep appreciation for the splendor of the lush and tropical island landscape. This inspiration, along with the climate in Palm Springs, presented a variety of options for another of my passions: gardening and landscaping, and soon my desert retreat bloomed with an assortment of palm trees, yucca, plumeria, and other desert-scape plants and trees. However, fate brought change once again, this time prompting a return to New York. About a decade ago, Rochester beckoned me home when a routine medical procedure left my elderly mother with ongoing health Ray Trim challenges requiring my attention. Weighing family obligations, I decided to leave my desert paradise behind and move back to take care of my mother. I said goodbye to three decades of sunshine and palm trees and said hello again to the changing seasons and winter snow. Missing the tropical/desert landscape and gardens, I stumbled upon a store in Rochester selling a “hardy banana tree (perennial),” a Musa Basjoo. I purchased two plants and set out on a mission to successfully grow them and see them through the severe Upstate New York winters and return in the next growing season. Of course, the growing season in this region is too short to produce fruit on these plants, but the tropical effect on their enormous leaf-span is spectacular. Once established, Musa Basjoo can grow an amazing two feet per week, typically growing to 6-9 feet tall when potted indoors or 15 feet when planted outside.
A local garden center purchased some of my pups last year. Various entrepreneurs have expressed interest in buying banana leaves, which are used in cooking, religious ceremonies, and Latin and Asian recipes, as well as for table liners and decorations for special catered events. I recently hosted a free public event for local residents who took a mini tour of my banana garden, grown in my postage-stamp yard in the Village of Brockport. Although unusual recent weather patterns delayed the growing season this year, my crop still managed to soar to a height of 8-10 feet, prompting some to comment that my small garden paradise looks like a scene from Jurassic Park, making me, with my miniplantation, Brockport’s “top banana!” Fun fact: The banana is not a true tree; it is a giant herbaceous plant. Botanically, this means that none of its parts ever become woody like true trees. The main stem of the banana plant is a large rhizome that grows horizontally underground. The shoots that we think of as “trees” grow upward from this underground stem.
Four years later, with a lot of care and a few mishaps, my two banana trees multiplied to twenty, as the original plants produced “pups” (new growth shoots) I carefully separated from the main plant and transplanted to other garden locations! Over time, I have gifted many pups to friends and family locally and across the country.

A study from the Louisiana Office of Public Health found that temperatures in a dark sedan or a light gray minivan parked on a hot, but cloudy day reached higher than 125 F in just 20 minutes. The study also found that cracking the window in such situations had little effect on the temperature inside the vehicle. On hot days, leave pets at home. Owners who must take their pets with them should never leave them in the car, as temperatures inside vehicles rise quickly, putting pets’ health in jeopardy.

DID YOU KNOW? Thought they might be most often associated with dogs, ticks can affect cats as well. According to Blue Cross for Pets, cats are most likely to encounter ticks if they live near areas with lots of deer and sheep or in regions where other wildlife, such as hedgehogs and rabbits, are present. While ticks are active throughout the year, cats are most likely to encounter them between spring and autumn. That’s due in part to the climate during these seasons, which tends to be warmer and therefore more inviting to cats, compelling them to spend more time outdoors than they do in winter. Ticks, which are egg-shaped, are big enough to spot, so cat owners should conduct a careful examination of their cats’ fur each time they come into the house after spending time in the yard. Blue Cross for Pets notes that ticks feel like small bumps on a cat’s skin. Ticks are most likely to attach themselves to particular areas of a cat’s body. These areas include the head, neck, ears, and feet. Routine brushing, especially whenever cats come inside after time spent outdoors, can help cat owners spot and remove ticks from their cats. It’s important to recognize that indoor cats are not invulnerable to ticks, as other pets and humans can track ticks indoors. DEAR PAW’S CORNER: You often mention that owners should spend time with their dogs in basic obedience training. What are “the basics” exactly? -- Ferris T., Huntington, N.Y. A: While the specifics of basic obedience training for dogs are better detailed through books or by professional trainers, I can list these training requirements here. • Housetraining: The most basic and most important to you and your dog’s peace of mind. Teaching a new dog where and when to eliminate, and training yourself to keep a proper schedule, is a crucial initial step. • Heel: Your dog should walk calmly alongside you, and not struggle against the leash, pull you down the street or chase after birds, cars or other dogs. • Sit: A well-trained dog will sit on command. When training on the leash, have the dog sit on your left side. • Down: The dog should lie down (on his belly, paws forward) on command. • Stay: In the “sit” or “down” position, the dog should not move until you release him with a verbal command. • Come: At your command, the dog should come to you, or respond to further directional commands (such as tugging the leash right or left to signal a turn). That’s essentially it: five basic commands and housetraining. It doesn’t sound like much, but teaching a dog of any age these skills will take at least several weeks, if not months. And they must be taught correctly: no hitting or yelling, maintaining dominance over the dog. Training books provide many more details on effective ways to do this, while a professional trainer can demonstrate additional effective techniques to ease the basic training process. Remember that basic obedience training doesn’t stop once these skills have been learned. Dogs need regular reinforcement, even if it’s just a five-minute review during their daily walks.

A November 2020 survey by Union Bank found that 72 percent of Americans said supporting small businesses was more important than getting the best deals. Keep more money in the community The Small Business Administration says $48 out of every $100 spent at a small business stays in the community. Spend the same $100 at a national retailer and only $14 stays.
Enjoy a more local flavor National retailers and other businesses follow a global business model that may not allow for much customization, but small businesses can provide products or services that relate directly to the needs of the communities they serve. These same small businesses may also be more inclined to work with local vendors and start-ups than national companies that have global supply chains.

WOMEN AND STEM The number of women entering the professional fields of science, technology, engineering, and mathematics (STEM) is slowly growing around the world, but there is still a sizable gender gap in these professions. According to the College Board, which produces many standardized tests, only 27 percent of all students taking the AP Computer Science exam in the United Science are women. Similarly, just 18 percent of American computerscience degrees are attained by females. However, this is not the case elsewhere in the world. A paper by Gijsbert Stoet and David Geary published in Psychological Science noted that women who live in countries with traditionally higher gender inequality tend to choose STEM professions more readily. Algeria, for example, has one of the highest ratios of women in STEM professions, at 41 percent. Stoet and Geary surmise that women in these countries may be choosing careers with the strongest path to financial independence. According to a U.S. Department of Education report, students studying science or math in college have a higher employment rate and salary than other majors after graduation. STEM majors typically earn an average of $15,500 more annually than nonSTEM majors. Engineering and engineering technology tends to pay the most. Women eager to secure competitive, stable and well-paying jobs should carefully consider the opportunities available to them in STEM fields.
