4 REASONS TO TRAVEL MORE In addition to eating healthier, exercising more and getting more sleep, many people resolve to travel more at the dawn of a new year. Travel is much more than leaving one’s home. It’s about setting habits aside, escaping comfort zones and trying something different - and doing so in a different location. In its latest World Tourism Barometer, the United Nations World Tourism Organization found that 1.184 billion tourists traveled outside their countries’ borders for at least one night in 2015. Europe, Asia, the Pacific, and the Americas all recorded around a 5 percent increase in international arrivals that year. Europe was particularly popular, perhaps hedged by a weaker euro against the American dollar and other currencies. The U.S. Travel Association says that direct spending by resident and international travelers in America averaged $2.7 billion a day. Millennials may be leading the travel-enamored pack. The United Nations estimates that 20 percent of all international tourists, or nearly 200 million travelers, are young people, and that the millennial demographic generates more than $180 billion in annual tourism revenue. The U.N. also reports that millennials are more interested than older generations in traveling abroad as much as possible. Infrequent travelers or those who have never traveled may not understand why heading to parts unknown is so appealing to so many people. The following are just a handful of reasons why travel is so enticing.

1. Engage the mind. Staying mentally active over the course of a lifetime promotes long-term health. Navigating unfamiliar places or reading a foreign language while sitting in an international country can engage the brain and get synapses firing. The Mayo Clinic reports that higher cognitive activity endows the brain with a greater ability to fend off brain pathologies, such as disease and dementias. 2. Connect with new people. Travel opens a person up to not only new experiences, but also new people. English poet John Donne penned the famous line, “No man is an island,” which underscores the importance of having friends and making new acquaintances. Research conducted by the University of Michigan found the act of talking with people in a friendly way can improve a person’s memory, suppress external and internal distractions, and encourage people to see things from another person’s perspective. It doesn’t hurt to broaden one’s social network, either. 3. Build confidence. Leaving one’s comfort zone can be a great way to bolster one’s self-esteem. Navigating cultural boundaries and overcoming those boundaries may be initially intimidating, but doing so can make a person more confident and more adaptable to change. 4. Develop opinions. Until a person visits a place in person, he or she only has third-party information to form opinions. Visiting a city or country for the first time can offer a more complete perspective. Cook something different! Anna: Breakfast in bed is a well-known staple of Mother’s Day for many families; however, a full English breakfast takes this surprise to the next level. Originating in England in the 1300s, the full English breakfast is one of the longest standing traditions in English history. Beginning as a luxury meal for high society, the breakfast includes bacon, sausage, eggs, toast, baked beans, hash browns, tomatoes, and mushrooms all served on one plate with freshly brewed coffee or tea. Black pudding is usually included in the authentic version, but it is optional. Spend quality time with Mom as she enjoys your creation. Scott: In a lot of families, moms are the ones who do the cooking for the family. On Mother’s Day, take the opportunity to cook something new for dinner so Mom can relax. myasthenia gravis? My dear friend was diagnosed with it and hospitalized for eight days. She is able to walk and move about, but now, six weeks later, she is still on a liquid diet and unable to move any of her facial muscles. -- I.M. ANSWER: Myasthenia gravis, from the Latin and Greek for “serious muscle weakness,” is an autoimmune disease that attacks the connection of nerves to muscles. Specifically, the body attacks the acetylcholine receptor or its associated proteins, where nerves connect to skeletal muscles. This causes weakness of the muscles and increased susceptibility to fatigue. The diagnosis of MG is suggested by typical symptoms, the most common of which are eye symptoms like double vision or droopy eyelid (ptosis). A smaller number of people will have symptoms that involve eating and chewing -- this sounds like your friend’s primary problem -- and a few will have weakness in the limbs, neck or face, or of the breathing muscles. The diagnosis is usually confirmed by blood testing, but a few people will need more sophisticated testing, such as an electrical muscle stimulation test. MG commonly affects women under 40 and men over 60, but it can occur in any age group. The thymus, an immune organ that is located in the upper chest behind the sternum (breastbone), is an important origination point for MG, and 10% to 15% of people with MG have tumors of the thymus. Surgical removal of the thymus is often performed to improve symptoms. In addition to removal of the thymus, there are three other types of treatment for MG. The first is medicines that help the nerve-muscle receptor work better, such as pyridostigmine. This starts working within minutes. The second is treatments to get rid of the antibodies attacking the receptor. Plasmapheresis, the physical removal of antibodies, takes a few days to start working; intravenous immune globulin takes a week or two to work. It’s not clear exactly how these work in MG. The third type, antiimmune system drugs, take much longer: a few weeks for prednisone but several months at least for others, such as cyclosporine and mycophenolate. Your friend is in a period where many of the treatments have not had time to work yet, and I expect that she will get better as the treatments take hold. Her doctors may be talking to her about removing the thymus, but she needs to be well controlled before surgery. Some experts use plasmapheresis or immune globulin to get good control quickly before surgery, especially in people whose symptoms involve eating and facial functions. Makes 6 servings For the sauce: 2 teaspoons extra-virgin olive oil 2 cloves garlic, sliced 1 28-ounce can whole tomatoes 1/4 teaspoon dried basil 1/4 teaspoon dried oregano 2 pinches salt 2 pinches freshly ground black pepper 1/2 teaspoon honey For the chicken: 3 tablespoons grated Parmesan cheese 2 tablespoons whole-wheat flour 1/2 teaspoon salt, divided 1/4 teaspoon freshly ground black pepper 1/4 teaspoon dried basil 11/2 pounds chicken breast, cut into 6 pieces, pounded to 1/4 inch 2 tablespoons plus 2 teaspoons extra-virgin olive oil, divided 4 cups baby spinach 1 teaspoon lemon juice 3/4 cup fresh mozzarella cheese, sliced into 6 medallions (or shredded) 6 cups cooked whole-grain thin spaghetti tossed in 2 teaspoons olive oil Preheat oven to 375 F and coat the bottom of a 9 x 13-inch pan with olive oil spray. To make the sauce: Heat a medium saucepan over medium heat. Add oil and garlic and cook gently for 30 seconds. Do not brown. With your hand, squeeze each tomato into the pan and add basil, oregano, salt, pepper, and honey. Reduce to medium heat and simmer for 20 minutes, lowering the heat as needed. To make the chicken: Combine parmesan cheese, flour, salt, pepper, and basil in a medium dish and coach chicken with cheese mixture. Place a large skillet over medium heat and add 2 tablespoons of oil. When oil is shimmering, add chicken, rounded-side down, and cook until golden on one side, about 5 minutes. Arrange chicken in a baking pan. Pour remaining 2 teaspoons of oil into skillet and add spinach. Cook spinach for 1 to 2 minutes until wilted and swirl in lemon juice. Gently press spinach to release water and divide spinach on top of chicken. Spoon sauce around and over the chicken, place mozzarella on top, and sprinkle with 1/4 teaspoon salt. Bake for 15 minutes until chicken is cooked through. Serve over spaghetti.

MY STORY of injustice… In an age where lives are affected drastically by a pandemic and the stress of our lives along with the daily trauma of uncertainty, this I have been going through myself. In the fact that my life and freedoms may be taken away. Based on a lie and corrupt few in order to make them look good. This is what happened to me. I was profiled and set to fail no matter how hard I tried. Only to have bogus fake charges filed by one man and a system of egos and the unfair treatment of others. I am being SET UP— looked at as a piece of trash who they felt should be punished. I am a business owner and a caretaker for two of our elderly citizens. I have tried to be the best person I can be. One of the people I caretake is a retired judge who recommended I write this in order to be heard. After shopping at one of our local businesses, I was pulled over. I was given several tickets. I was having a bad day—stressed out. It seemed I was on my way to relapse. I have fought addiction for a while. I am now in a program. I could only blame this on myself. As a caretaker you are often stressed out, along with the stress of our life changes due to Covid-19. I NEED HELP AND SOMEONE TO HEAR MY VOICE about what has been done to me. This is my story. I know for a fact I am being set up on outrageous charges. At that point I expected my tickets for what transpired. I made a mistake for that is why a pencil has an eraser, we all make mistakes. To my disbelief, the next thing I know is I am being charged with a firearm. Not true. A violent crime. I did not commit this act. Every day I face a lie where life seems impossible because of the threat of losing my freedoms. Truly terrible, and it seems no one really cares. That is why this must be told. By beefing up the charges and adding new ones is how it works so the D.A.

I have never been convicted of a violent act nor would want to. Never would carry a firearm. Not knowing how far they are willing to go to destroy my life. They changed the ticket after releasing me only after belittling me, and finding out that what I told them was true. I pray only for the truth and justice. I am being set up. I have made mistakes in my life and paid for them because of this. I was profiled as a bad person. How could one man have the power to destroy another life, by manufacturing a crime that did not happen—one that would change my life forever. They know the hassle and chaos this would cause me—Sticking me with a crime I did not do. My only hope is that someone will read this and stand up for this injustice. But even worse, trying to get someone to listen about the unjust and not right treatment of people when no one really cares except the victims who are affected by an unjust system or the people in it by others. So for me, I am only asking to be heard and the truth be known. I will not say the name of the state agency or the officers for that would not be right in a country where we are innocent until proven guilty. My story needs to be told... someone needs to listen. DEAR PAW’S CORNER: After my mother passed away last year, I brought her two cats to live with me. They’re sweet and have settled in nicely, but they also have fleas. These came with them from my mom’s house. Giving them a bath removes the fleas temporarily, but after a couple of weeks both cats are covered again. How can I get rid of these pests once and for all? -- Jeremy in Knoxville DEAR JEREMY: My condolences on your mother’s passing, and thank you for caring for her pets. While it may be impossible to completely get rid of fleas, you can drastically reduce the level of infestation on your cats. Here’s how: -- Continue regular treatment of the cats through flea baths, collars or topical treatments. -- Comb through the cats’ fur daily using your fingers or a brush: Tiny dark specks indicate that fleas are still present. -- Don’t let cats outdoors: Fleas and ticks will hitch a ride on their fur. -- Two to four times a year, treat your entire home for fleas. These pests can lay hundreds or thousands of tiny eggs in your cats’ hair, in carpets and rugs, and in dusty corners. Close your cats in a safe room and sprinkle flea powder across the carpet and into the corners, let sit for as many hours as the instructions say, then vacuum up. Wash rugs, if possible. -- Dust and vacuum your home once a week. Vacuum twice per week in peak flea season, during the warmer months. This helps remove unhatched flea eggs. THE HISTORY OF BOUTONNIÈRES Men wear boutonnières on special occasions, including weddings, religious ceremonies and prom night. At weddings, the groom and his groomsmen typically boutonnières. But some historians believe men have not always worn flowers strictly on special occasions. Some believe the modern-day boutonnière traces its lineage to sporting events in ancient civilizations, including Egypt. During those times, men might have worn certain colored flowers as a show of support for particular participants in sporting events, not unlike how many modern sports fans wear team shirts, jerseys and other attire to display their support for their favorite teams. But according to GentlemansGazette.com, the boutonnières of today likely started appearing just a few centuries ago. A 1771 painting of British Captain William Wade by the artist Thomas Gainsborough depicted Wade wearing a bouquet of flowers in his top buttonhole. And in the 19th century, men’s fashion included coats that folded over the top, revealing the inside of the buttonhole. Now it is time to amend the soil. It’s not enough to enrich only the soil in the hole where the tree will be placed. Move out into a circular area beyond where the roots will start so that roots can expand and properly anchor the tree. The next method of success is to ensure that the tree has a large enough hole to contain the existing root ball and allow for roots to grow and expand. Better Homes and Gardens experts say to prepare a hole that is two to three times as wide as the root ball of the tree. Treat the root ball gently. If the roots are wrapped in burlap, remove the burlap or push it to the bottom of the hole. Backfill the hole with soil and check that the tree is straight. Stake the tree to help it stay upright and straight until the roots anchor it more effectively. A layer of mulch around the base of the tree can prevent weeds and reduce water loss. Water daily for several weeks until the roots have fanned out. It’s best to leave trees be for the first growing season, only removing broken or diseased limbs. Resist pruning and shaping until the tree has survived its first growing season.

This is how it should work. Innocent until proven guilty is the fundamental basis of the US legal system. If every accusation led to an immediate punishment, then everyone with a grudge against someone could exact revenge with unfounded claims. Are these officials guilty of these crimes? He owned up to his error, took responsibility, and vowed to do better in the future. This is the most refreshing and uplifting piece I’ve read in a very long time - to be reminded that folks like this are among us. My hat’s off to him. 2035.
