SHRIMP POTATO PATTIES

Makes about 2 dozen

6 medium-size red potatoes, peeled and quartered

1/2 cup (1 stick) butter

1 cup finely chopped yellow onions

1/4 cup chopped celery

1/2 cup seeded and chopped red bell peppers

1/2 cup seeded and chopped green bell peppers

1/2 cup seeded and chopped yellow bell peppers

3/4 teaspoon salt

1/4 teaspoon cayenne

1/4 teaspoon freshly ground black pepper

1/4 teaspoon Tabasco brand

pepper sauce

2 pounds medium-size shrimp, peeled, deveined and coarsely ground in a food processor

2 large eggs, well beaten

1/4 cup chopped freshly parsley

leaves

1/2 cup peanut oil

1/2 cup all-purpose flour

1. In a large saucepan, boil the potatoes in lightly salted water to cover until fork tender. Remove from the heat and drain. Transfer them to a large mixing bowl and mash with a fork. Let cool.

2. Melt the butter over medium heat in a medium-size skillet. Add the onions, celery, bell peppers, salt, cayenne, black pepper, and Tabasco, and cook, stirring, until soft, about 5 minutes. Add the shrimp and cook, stirring until they turn pink, about 3 minutes. Remove from the heat and let cool for about 5 minutes.

3. Combine the shrimp mixture with the potato mixture. Add the eggs and parsley and mix well. Let cool for 10 minutes.

4. Heat the oil in a large skillet over medium heat.

5. Form the shrimp mixture into patties, using 1/4 to 1/2 cup of the mixture, depending on what size you desire, and pat lightly with the flour. Cook two to three at a time in the hot oil until golden brown, about 3 minutes on each side. Drain on paper towels. Serve hot.

Human beings are not the only creatures looking for warm and cozy spots to ride out autumn and winter. Very often wild animals see homes as the perfect spots to nest and survive the cold. Fall is a great time to inspect your home top to bottom and make sure there are no points of entry for unwanted guests. The Humane Society notes that deteriorated trim and fascia boards can make great entry points for animals like squirrels, raccoons, skunks, and possums. Other animals may bed down under porches or decks or even inside chimneys. Seal any holes or repair points that are penetrable by cold animals. Just be sure to inspect the home prior to sealing or capping any potential entry points to be certain there aren’t any animals already living inside. Otherwise you can trap unwanted animals in your home. Test possible entry points by sealing them loosely with a paper towel or insulation and see if the material gets pushed out.

SHADE-TOLERANT PLANTS COMPLETE LANDSCAPES

Plants need sunlight to thrive and grow, but some need less sunlight than others. People who find their landscapes are less supportive to sun-loving plants can choose from a variety of shade-tolerant plants, shrubs and trees.

Shade tolerance refers to a plant’s ability to withstand low levels of light. Certain plants have adapted this feature to survive in the wild. Plants that grow at the base of forest floors, for example, will get less sunlight than others outside of the tree canopy. Such adaptations enable a wide variety of foliage to grow even though they are not exposed to much sunlight. While sun-loving plants often have broad leaves and expend significant energy to capture sunlight for photosynthesis, shade-tolerant plants expend less energy and tend to be more efficient consumers of soil nutrients and sunlight.

Penn State Extension’s Plant and Pests division says the amount of shade a plant is growing under will directly affect the density of the foliage and the plant’s flowering and fruiting characteristics. Blending shade-tolerant plants into the landscape can be an effective use of space. Before choosing plants for an existing landscape, it’s important to assess the level of shade or sun the plants will receive.

Once homeowners understand which type of shade they are dealing with, they can then visit plant nurseries and select their plants. Most greenery comes with care instructions that include recommendations regarding the amount of shade/sunlight the plant will need to do well. If further assistance is needed, a knowledgeable employee can make suggestions based on landscape needs.

Shade-tolerant plants can make welcome additions to the landscape, offering greenery and color in the darker areas of a property.

Even though it seems counterintuitive to wear “blaze orange” in the fields or woods for fear that animals may spot you, hunters need not worry so much.Deer typically cannot recognize blaze orange attire designed to make hunters visible to other people. According to researchers at the University of Georgia, a combination of factors make deer less likely to be startled by blaze orange. Deer have less binocular overlap than humans. Binocular overlap (the area that both eyes view at the same time) allows focus on a single point and enables depth perception. Deer must shift their heads much more than humans to gain a good threedimensional perspective of an object. Deer also have fewer cones in their retinas compared to humans. Cones are photoreceptors that enable color vision and distinguish fine details. Furthermore, deer cannot readily perceive longer wavelengths of color, so oranges and reds appear more like brown or gray to them. However, deer can see blue colors more easily, so hunters may want to avoid blue jeans paired with their orange gear.

Q&A Master Gardeners with the

If you ask 10 gardeners how they winterize their gardens you get 10 answers... all good ones.

I like to cut my peonies and hostas down to 3-4” so that the “ratty” looking leaves don’t irritate me all winter when I look out my windows! That saves me time in the Spring.

I also save some mulch (or buy/get more) to pile on to those beds that I want to keep from getting “weedy” now & in the early spring.

Besides harvesting all my veggies & cleaning out extraneous vegetation

from those beds, this year (instead of mulching) I am going to plant a “cover” crop of mustard seed to rejuvenate those beds.

Finally, I have dahlias that I dig up when they’re done blooming (& store inside for the winter) and daffodil bulbs to plant before the snow flies.

Harvest all crops. Pull up all plants. Sort diseased and seed bearing and discard. Weeds should be removed to get rid or seeds and insects. Remainder of plants can be mixed with leaves and composted. Test soil pH in Fall in order to

prep soil for Spring. Clean and disinfect outdoor equipment. Put it away in a dry place.Make any notes on current garden noting soil amendments, rotations, pests, or other concerns for next year. For my vegetable gardens, I totally clean them out except for late season/ winter vegetables- kale, winter density spinach & greens, carrots and garlic. Pulling all plants and vines and discarding them in a place away and downwind of the garden for biosecurity. The garden is then rototilled. I prefer to seed the freshly tilled garden with oats as they help clean the soil. In one known to be very wet garden, that is not an option as it would mean not being able to get on it to spring tiller in a timely manner ( June or July??) So that wet garden is often free seeded w/ perennials/herb mixture such as dill, red clover, old sunflower seed. It is surprising what comes up next year and is also fun to watch the turkeys in that wet garden.

Hydrate Evergreens

Deep soaks in the fall are important if autumn has been dry. Conifers, such as yews, and broadleaf evergreens, such as hollies and boxwoods, are susceptible to winter burn because they release moisture through their leaves year-round. Pay particular attention to broadleaf types that have a south/ southwest exposure to the afternoon sun, and give them extra water as needed.

Protect Bark on Young Trees

Newly planted trees, especially fruit trees, have thin bark that can suffer sun scald or crack from fluctuating day/night temperatures. Tree wrap tape and plastic spiral tree protectors can help prevent this problem.

4 REASONS TO TRAVEL MORE

In addition to eating healthier, exercising more and getting more sleep, many people resolve to travel more at the dawn of a new year. Travel is much more than leaving one’s home. It’s about setting habits aside, escaping comfort zones and trying something different - and doing so in a different location.

In its latest World Tourism Barometer, the United Nations World Tourism Organization found that 1.184 billion tourists traveled outside their countries’ borders for at least one night in 2015. Europe, Asia, the Pacific, andtheAmericasallrecordedarounda5percentincreaseininternational arrivals that year. Europe was particularly popular, perhaps hedged by a weaker euro against the American dollar and other currencies. The U.S. Travel Association says that direct spending by resident and international travelers in America averaged $2.7 billion a day.

Millennials may be leading the travel-enamored pack. The United Nations estimates that 20 percent of all international tourists, or nearly 200 million travelers, are young people, and that the millennial demographic generates more than $180 billion in annual tourism revenue. The U.N. also reports that millennials are more interested than older generations in traveling abroad as much as possible.

Infrequenttravelersorthosewhohavenevertraveledmaynotunderstand why heading to parts unknown is so appealing to so many people. The following are just a handful of reasons why travel is so enticing.

1. Engage the mind. Staying mentally active over the course of a lifetime promotes long-term health. Navigating unfamiliar places or reading a foreign language while sitting in an international country can engage the brain and get synapses firing. The Mayo Clinic reports that higher cognitive activity endows the brain with a greater ability to fend off brain pathologies, such as disease and dementias.

2. Connect with new people. Travel opens a person up to not only new experiences, but also new people. English poet John Donne penned the famous line, “No man is an island,” which underscores the importance of having friends and making new acquaintances. Research conducted by the University of Michigan found the act of talking with people in a friendly way can improve a person’s memory, suppress external and internal distractions, and encourage people to see things from another person’s perspective. It doesn’t hurt to broaden one’s social network, either.

3. Build confidence. Leaving one’s comfort zone can be a great way to bolster one’s self-esteem. Navigating cultural boundaries and overcoming those boundaries may be initially intimidating, but doing so can make a person more confident and more adaptable to change.

DID YOU KNOW? Strong communities are able to thrive thanks to the efforts of their residents, including those who give up their free time to volunteer with local charitable organizations. Though the impact of volunteers is often seen through the lens of the projects they help to initiate and complete, there’s no denying just how valuable volunteers are from an economic standpoint. In its 2018 “Volunteering in America Report,” AmeriCorps, an organization dedicated to strengthening communities and fostering civic engagement through service and volunteering, reported that Americans volunteered nearly 6.9 billion hours worth an estimated $167 billion in 2017. Volunteering figures to be even more valuable in the months and years ahead as towns, cities and countries look to recover from a global pandemic that claimed millions of lives and devastated economies big and small. As the world attempts to rebuild itself once the pandemic has ended,volunteers can play vital roles in reestablishing their communities. In fact, many people have already made that recognition. According to data from the professional social networking site LinkedIn, the site’s users had added more than 110,00 volunteer activities to their profiles between the early stages of the pandemic in 2020 and the end of summer 2020.

Can This Dog be Trained?

DEAR PAW’S CORNER: Recently, a new member joined our family: a toy poodle mix named Petey who was rehomed by an acquaintance who said they just couldn’t handle him and that he was untrainable. Petey is 4 years old, bounces everywhere, and loves to play soccer by catching a ball and then bouncing it off of his front paws back toward me. He’s incredibly smart, but training him has indeed been a challenge. I know the previous owners never made an effort to train him in basic obedience, and they le him alone for days at a time. His house-training is spotty. How can I make the training process faster and easier for both of us? - Doug L., Burlington, Vermont

DEAR DOUG: You’ve taken on a real challenge: a smart, independent and energetic dog. Petey sounds like a wonderful little guy, though, and I’m so glad you’ve added him to your family and committed to his well-being.

Building trust with Petey is important so that he knows what to expect from you and the rest of the family. Do that by adhering to a schedule: walks, feeding and training at the same time each day, with as little deviation as possible.

Obedience-training a smart and independent dog requires you to be smart about training, too. Petey needs to know the house rules, and he must want to do the things you’re asking him to do (or not do). Look into positive reinforcement methods like clicker training (https://www. akc.org/expert-advice/training/clicker-training-your-dog-mark-andreward/). Commit to a consistent training regimen so that desirable behaviors are reinforced and negative ones are discouraged. Work with a trainer if you are still struggling with Petey a er a few weeks.

How to Find Bargains this Holiday Shopping Season

e pinch of inflation has been felt throughout the last year, and that squeeze could feel even tighter as the holiday season draws closer. ough inflation might be beyond consumers’ control, there are still ways to find bargains when holiday shopping this year.

• Start comparison shopping early. In addition to the rising cost of living, modern consumers also must contend with supply shortages and shipping delays. Shopping early is a great way to get around those, and it also affords shoppers more time to find great deals.

• Shop on consumer holidays. Black Friday used to be the only game in town in regard to holiday bargains. Consumers can still find great deals on Black Friday and also benefit from reduced prices on days such as Cyber Monday.

• Attend local holiday bazaars and markets. One of the great things about holiday bazaars and markets is that many of the businesses that set up shop at these events are local. ey also tend to sell an array of items, including small items that can easily fit into shoppers’ holiday budgets.

• Pool your resources. Another way to get around rising costs this holiday season is to pool your shopping resources with another friend or family member. e cost of a new tablet for a parent can be easier to bear if it’s split with a sibling.

Finding the Cause Behind Emphysema and Ways to Minimize It

DEAR DR. ROACH: I am male, age 65. I exercise regularly. A shortness of breath led me to get a chest X-ray, which showed that I have emphysema. I smoked for 10 years, but quit 33 years ago. As an avid runner, this revelation was perplexing and depressing. Is it possible that other factors contributed to me getting emphysema, and how do I minimize this disease, if possible? -- T.W.

ANSWER: Emphysema is most often caused by smoking in North America or by cooking fires in many parts of the world. The exact type of emphysema you have can help tell what caused it, but that usually requires a biopsy, which is generally unnecessary for a diagnosis or treatment. Although X-rays and CT scans can help with the diagnosis, the definitive study is the pulmonary function test. For this test, you must breathe in and out for more times and in more ways than you ever thought was possible with a respiratory technician and a lot of machines. (When I was a fourth-year medical student, I had my own PFTs done as a learning experience -- thank you, Dr. Julian Solway -- and have respect for how hard they are to perform correctly.) Besides smoke exposure, another cause is the genetic Alpha-1 antitrypsin deficiency, which can affect the liver as well. This diagnosis is made by blood testing and confirmed by DNA testing through a genetic counselor. I always consider this diagnosis in a person with emphysema who is a nonsmoker or has minimal smoking history. If you do have AAT deficiency, there may be other treatments available, but specific treatment requires special expertise.

Regardless of the cause behind your emphysema, you have already made the most important change by quitting smoking. Avoiding secondhand smoke and other lung irritants is important, too.

There are no treatments to reverse emphysema, but many can improve symptoms. These include medication (such as inhalers), pulmonary rehabilitation and oxygen in people with emphysema that is severe enough to cause low blood oxygen levels. Most people who quit smoking have a very slow progression of the disease. However, it’s important to quit smoking as soon as possible so that there is enough reserve lung function.

Cultivating Community: Summer Work and Education Program for City Teens

During the summer of 2023, Monroe County 4-H Youth Development, in partnership with the City of Rochester Mayor’s Office and Department of Recreation and Human Services, continued Cultivating Community, a paid summer work, education, and community service experience for teens who live in the city of Rochester that was piloted in summer 2022.

In June, a cohort of fi een Community Cultivators were accepted into the program. From July 10 through August 17, these teens spent mornings engaging in horticulture work across all city quadrants including Maplewood Rose Garden, M.K. Gandhi Institute for Nonviolence Garden, the Roc City Skate Park, Enrico Fermi School Number 17’s Edible Food Forest, Washington Grove in Cobbs Hill Park, Miss Merrimac Community Garden, Bay Street Community Garden, and Ryan R-Center gardens.

WORKPLACE GIFTING ETIQUETTE: GET GIVING RIGHT

Gift giving in the workplace can be challenging territory to navigate. And as anyone who has received an inappropriate gift or something that really wasn’t useful can attest, he or she probably doesn’t want to face a situation in which a gift leads to office gossip.

According to a poll conducted by Harris, around half of workers plan to gift at least one business associate around the holidays but are confused about what to give. Too often it’s up to workers to navigate these etiquette minefields on their own, but the following tips can help the process go smoothly.

Keep it impersonal. Impersonal doesn’t mean it’s acceptable to grab anything off the shelf. But the gift should not be something that would offend tastes or sentiments. Avoid clothing, perfume, jewelry, or accessories. Lotions and other scented items are also ill-advised.

Skip your boss. Etiquette experts say that gifts should flow downward not upward in the realm of employment ranking. That means it’s best to stick with gifting colleagues who are on the same level as you. Buying a gift for the boss may look like you’re simply trying to score brownie points instead of offering a meaningful gift.

Give group gifts. Rather than gifting individuals, it can be safer to give a group gift from which many can benefit. This can include coffee and pastries from a nearby bakery, or a bouquet of flowers to brighten up the office environment.

Keep prices modest. Office giving is not about illustrating who can afford the most expensive gift. Remember, some people will not be able to reciprocate, and they shouldn’t feel uncomfortable for being on the receiving end of a lavish gift.

Follow the rules. Gift exchanges should be cleared with supervisors or human resources professionals. It pays to check if there are rules in place for gifting others. Avoid cash gifts. Giving cash or checks is not a good idea. Money should only come by way of bonuses from higher-ups. If you’re stuck on what to give, a gift card to a store that a coworker visits is acceptable.

Cemetery Thank You

Now that I'm back on my feet again after two falls, I'd like to send out a huge thank you to two people who helped me on Father's Day at Oakwood Cemetery. While trying to plant a flower, I lost my footing, fell, and was unable to get up. When I called for help, a lovely lady heard me and signaled a man in a white car who told me his name was Andrew. Andrew was driving his baby around to get him to sleep. Andrew got me upright, walked me to my car, put my walker in the trunk, and then proceeded to finish planting the flower. How great was that?! And how lucky that baby will grow up with Andrew as his father. And how lucky I was to have that lovely lady look for help for me.

Awesome staff

I am a Senior Citizen who gets treated badly by some younger people, however when I attend senior activities at the Henrietta Senior Center, Shelly and her staff treat all of us well. The same happens at the Wheatland Senior Center where Shanna and her staff go out of their way to make seniors feel happy and comfortable. Thank you all, but especially Shanna and Shelly.

Get me to the church on time….NOT!

I detest weddings, and here is why: They have become showy extravaganzas.The music is so loud that one must shout to talk with others. The expenses for the gown, the reception, the band, and the food, not to mention any other perks deemed “necessary” are excessive. And why get married in a church when a garden or a barn or a beach will do? What happened to modest weddings where couples exchange their vows before God and truly mean it? What happened to guests wearing respectful and modest clothing? What happened to families rejoicing in the union of two families and where children are welcome? Weddings were meant to be holy and beautiful celebrations of the sacrament of marriage.

Motorcycles

This is not for responsible motorcyclists. This is for irresponsible motorcyclists. To put it bluntly, stop riding like self-centered idiots! Speeding, ignoring stop signs, passing on double yellow lines, etc. In addition to making automobiles aware of motorcycles, how about a campaign directed at irresponsible riders. Motorcycles vs. automobiles in a crash: the bike looses.
