SPICY STEAK TAMPICO Makes 4 servings 4 beef tenderloin medallions (each 6 ounces and 3/4-inch thick) 2 tablespoons olive oil Seasoned salt and freshly ground black pepper 1 cup roasted green chile peppers (see below) 1 cup shredded Monterey Jack cheese 1. Brush steaks thoroughly with olive oil. Season with salt and pepper. 2. Place medallions on preheated grill, close lid and grill, turning once, until an instant-read thermometer registers 145 F for medium rare, 5 to 8 minutes per side. Transfer to a plate, tent with foil and let stand for 10 minutes. 3. Preheat broiler with rack 3 to 4 inches away from heat. Place steaks on individual ovenproof plates. Top each steak with equal amounts of chile and cheese. Broil until cheese melts, about 2 minutes. Serve immediately. To roast chiles: Preheat greased outdoor grill to medium or preheat an oven broiler. Place fresh chiles on outdoor grill or gas stovetop over medium heat or arrange on a baking sheet and place 2 to 3 inches away from heat under broiler. Grill or broil, turning often with tongs, until surfaces of skin are lightly charred and blistered. Immediately place peppers in a paper bag or an airtight container and close tightly. Let peppers cool for 12 to 15 minutes. Peel off charred skin and remove stems and seeds. Tear into strips or chop as needed according to the recipe. Wash your hands thoroughly after handling chiles. STRAWBERRY-GLAZED FRENCH TOAST WITH SWEETENED SOUR CREAM Serves 4 • 8 1-inch-thick bread slices, cut from a country or peasant loaf • 2 cups half-and-half • 4 egg yolks • 3 tablespoons light brown sugar • 1 tablespoon vanilla extract, plus 1/2 teaspoon • 1/2 teaspoon cinnamon • 3 tablespoons unsalted butter • 1/2 cup sour cream • 1 tablespoon granulated sugar • 1/3 cup strawberry jam or preserves (see note 2) 1. Arrange a rack at center position and preheat the oven to 400 F. Place the bread slices on a baking sheet and bake until dry and very lightly browned, about 8 minutes per side. Watch carefully so that the bread does not burn. Remove the bread from the oven and reduce the oven temperature to 200 F. 2. In a medium bowl, whisk together the half-and-half, egg yolks, brown sugar, 1 tablespoon vanilla, and cinnamon. Pour the mixture into a shallow pan (a 9-by-13-inch glass baking dish works well). toasted bread slices and soak them 4 minutes per side. Remove to a large plate or platter. 3. Place a large, heavy frying pan over low to medium heat. Add about 2 teaspoons of the butter, or enough to coat the bottom of the pan lightly. When melted, add enough bread slices to fit comfortably in a single layer. Cook slowly until the slices are golden brown and crisp on both sides, about 4 minutes per side. Remove to a baking sheet and place in the warm oven. Repeat, adding more butter to the pan as needed until all the bread slices have been sautéed. 4. In a small bowl, stir together the sour cream, granulated sugar and remaining 1/2 teaspoon vanilla. 5. When ready to serve, spread each toast with a thin coating of strawberry jam and top with a dollop of sweetened sour cream. Note 1: The best bread for this dish is an unsliced loaf of good-quality peasant or country bread, preferably one without an extra-hard crust. One that is rectangular, rather than round, is more convenient, but either will do. Cut off the ends of the loaf, and reserve for another use. Then slice the bread into 1-inch-thick slices. If your loaf is large and the slices seem large, cut them in half. Note 2: You can try other jams, preserves or marmalades. Cherry, raspberry or peach preserves and orange marmalade are other possibilities.

James P. Haynes Jr. December 26, 2023 Honeoye: At age 77, Jimmy passed away on December 26, 2023, after a 5-year struggle with dementia. He was born on August 17, 1946 to the late James and Gloria (Meredith) Haynes. In addition to his parents, he was predeceased by his brother, Michael Haynes. He is survived by his wife, Cheryl (Bennett) Haynes; sons, Michael Conner, Matthew Conner, Jason Haynes; brother, Richard Haynes; sisters, Karen (Steve) Olas, Laura McGonigal; and seven grandchildren. Also survived by numerous extended family and friends. A special thanks to Dakota Conner, Maddy Haynes and Kelly Johnston. Jimmy was a navy veteran and went to work for Eastman Kodak, retiring after 32 years. He then worked at Walmart for 20 years, rarely taking a day off. He was a solid hard-working no BS man, taking pride in providing for his family. A man of few words, but you could get “the look.” Jimmy loved the lake, but most of all loved his grandchildren, Maddie and Dakota. Hot Flashes Persist Well Past Menopause and Thyroidectomy
--DEAR DR. ROACH: I am 81 and had a thyroidectomy in 2017. My whole thyroid gland was removed. I also had a little bit of cancer. I have started to get hot flashes again. I had originally been on thyroid medicine before and after surgery. Then I was put on levothyroxine and decided to try NP Thyroid. I was doing better on NP Thyroid, then started getting the hot flashes again. At this point, for several reasons, I would rather stay on NP Thyroid for the time being. I was wondering if there is anything I can take for hot flashes? Years ago, in my 50s, I took estrogen, which helped, but this is a different time. I have spoken with other people who are also having hot flashes again. -- Anon. ANSWER: Hot flashes are common -- about 75% of women in North America will experience them around the time of menopause. It’s not uncommon for hot flashes to go away, then return, but I personally haven’t seen them recur after 30 or so years. I’d be concerned that there may be another cause for them, which brings me to your thyroid. Elevated levels of thyroid hormone can cause sensations very similar to hot flashes. One reason that I, along with most endocrinologists, recommend against products like NP Thyroid is because most of those products come from pigs. There are two thyroid hormones: thyroxine (T4) and triiodothyronine (T3). Humans have a different ratio of T3 and T4 than pigs do, with T4 getting converted into the active form, T3. T3 is then quickly broken down, so if it’s used, it needs to be dosed twice daily. As a result, if a person takes NP Thyroid, their thyroid levels are too high during one part of the day and too low during another. This isn’t good for anyone; the “high times” not only cause hot flashes, but also predispose people to atrial fibrillation. But it’s particularly a problem in a person with a history of thyroid cancer, where we want the thyroid-stimulating hormone (TSH, the hormone in the pituitary gland that regulates the activity of the thyroid gland) to be on the lower side. If the thyroid blood levels get low in the afternoon/evening when the T3 in NP Thyroid is gone, that can theoretically increase the risk of cancer recurrence as the TSH rises in response. So, in my opinion, you should be on levothyroxine, not NP Thyroid. (I do have a handful of patients who take levothyroxine and also take T3 twice daily. Some people are unable to convert T4 to T3 efficiently.) Estrogen is the most effective treatment for hot flashes, but it increases the risk of heart disease when used by women more than 10 years away from menopause. I don’t normally prescribe it to a woman in her 80s. However, there is a new medication called fezolinetant (Veozah), which is highly effective and reduced hot flashes by 93% in a trial. My only patient on it so far has reported 100% cessation of her hot flashes. There are other rare causes of hot flashes, including tumors that secrete substances, such as carcinoid tumors, and tumors that secrete adrenalin-like hormones (pheochromocytomas).
MAKE THE YEAR AHEAD CLUTTER-FREE Adopt an “out with the old, in with the new” mantra. Resolve to discard old items after purchasing new ones or receiving birthday or holiday gifts. Hanging on to old items because they can still function and serve some utility is a recipe for a cluttered home. Anytime you or a family member brings a new item into your home, make sure the item it’s replacing finds its way out the door.

9 THINGS YOU MIGHT NOT KNOW ABOUT DR. MARTIN LUTHER KING, JR. Well respected, honored and appreciated for his civil rights activism, Dr. Martin Luther King, Jr. rightfully earned his place as one of the most influential figures in American and world history. Through his religious teachings and social activism, Dr. King played a key role in the American Civil Rights Movement of the 1950s and 1960s. While Dr. King lived a good portion of his life in the public eye, many facts of his life are not widely known. In honor of his birthday and Black History Month, the following are some interesting and less publicized facts about Dr. Martin Luther King, Jr. 1. Martin Luther King, Jr.’s birth name was not “Martin,” but “Michael.” Dr. King’s father traveled to Germany and became inspired by Protestant reformer Martin Luther and thus changed his name while also changing the name of his then 5-year-old-son. 2. Dr. King was a prodigious student. Not only did he skip two grades and start college before formally graduating high school, but Dr. King also earned a bachelor’s degree at age 19, graduating from Morehouse College in 1948 with a degree in sociology. 3. Though not a singer, Dr. King earned a posthumous Grammy Award nonetheless. In 1971, Dr. King was awarded Best Spoken Word album for “Why I Oppose the War in Vietnam.” 4. Although people cannot readily find photographs of Dr. King smoking, he was a regular smoker and even hid the habit from the public and from his children so they wouldn’t take up smoking. It was believed Dr. King was smoking a cigarette when he was fatally shot. 5. While Dr. King is remembered as an enthralling public speaker, he actually scored poorly in public speaking during his first year at seminary. He received a “C” in the class but earned straight “As” by his final year. 6. Dr. King was a “Star Trek” fan. He convinced actress Nichelle Nichols, who played the role of “Uhura” on the show, to continue working with the series. Nichols was considering leaving, but Dr. King told her she was breaking boundaries by playing a character who didn’t conform to black stereotypes. 7. Dr. King narrowly escaped an assassination attempt on September 20, 1958. On that day, Dr. King was in Harlem signing copies of his new book, “Stride Toward Freedom,” when he was approached by a woman who stabbed him with a letter opener. He barely survived. 8. Dr. King’s speech in Memphis in April 1968 may have prophesied his death. Speaking to an audience at Mason Temple Church, King said, “Like anybody, I would like to live a long life. Longevity has its place. But I’m not concerned about that now . I’ve seen the Promised Land. I may not get there with you. But I want you to know tonight, that we, as a people, will get to the Promised Land.” 9. Dr. King’s birthday is now observed as a national holiday in the United States. President Ronald Reagan signed the bill in 1983. The only other American to earn this honor is George Washington.

Sowing Poetic Seeds: Webster’s Ron Friedman Spearheads the Webster Arboretum’s Poetry Trail BY RON FRIEDMAN
T
he Webster Arboretum at Kent Park (1700 Schlegel Rd.) is a jewel in Webster, NY. “Dedicated to quiet reflection, beauty, sights, smells, and sounds of nature,” the Arboretum’s Association aims to reflect on the past, provide for the present, and leave a memorial and vision of the future. Open dawn to 9 pm seven days a week, the arboretum provides incredible surroundings for relaxation and reflection, perfect for the poet within each of us. Proposed by Ron Friedman, the Arboretum will include poetry from Finger Lakes region poets later this year. Poems will be posted on signage throughout the park. The arboretum is rich with diverse plant material with seasonal interest, from spring blooming magnolias to later season dahlias and the peeling bark of lacebark maples. Texture, color, shapes, and sizes vary throughout the facility. Friedman sees poetry doing the same in a different medium and adds the element of human emotion. He sees poetry in the park’s architecture and finds it a perfect match. The installation of the poetry trail is scheduled for fall. Between now and then, there is a lot to do. Friedman lists grants being written, sponsors sought, and local schools and poetry / arts groups coordinated for contributions. A committee will select poems to dot the trails around the pond and back through the woodland areas. Local poets and educators are already supporting the project. Elizabeth Johnston and Sarah Cedeno, creative writing teachers at Monroe County Community College and the State University of NY at Brockport, agree the project makes poetry more accessible to the community and is a way to expose their students to a larger writing community. Jonathan Everitt, a Webster poet, says solitude is required for his writing effort. However, he also sees a need for a place for poets and writers to gather so they are part of a community. This project includes space for both. In addition to the park’s 12-20 signs with poetry, workshops and readings will lead up to the trail dedication. Local educators and poets will lead groups in writing exercises to unleash the creativity we all hold. Readings will also be scheduled and, depending upon funding acquired, some half or full day events may be offered. The Curry Building will host indoor events and when the weather’s right, the gazebo and pergola areas are ideal for readings. Tents may also be erected for larger events, allowing different sessions. The options are endless in this pristine natural fusion of poetry and nature. Friedman says they seek volunteers for a variety of tasks for the project. Wind the arms long to cover my fingers, to get in the way so I gnaw on fibers instead of morning shredded wheat. Launder it bitter. Scrub my teeth with obscenity. Relapse, lick like a bitten fork. Pierce like a swollen tongue. Rebel or puncture like a needle on skin. Disease, donate discards to the discount store: mismatched socks, Hanes t-shirts with irregular seams. Share discomfort with another patron, you generous thief. No Singer sewing machines, sweet knitting needles can mend a paying patient with a limp shoulder like yours. Relapse, baste a button up where there is no fabric --my jaw, maybe my mouth. Embroider my name on the tag because I’ll forget what it is I’ve said or worn. Relapse, uncomfortable seamstress of clumsiness and fatigue, leave the sweater half-sewn with pins at the seams. Button the wrong holes. Love, I’m forgiving as a missed stitch.
Do you remember its descent? I mean, the sky was blue, more than blue, beyond blue not the idea of blue. The few clouds, beyond the idea of white. Even though we would sing together on the stage it was the solos that still shake the air sways that kite back and forth feathering onto the earth awakes me at night thinking now is time for song. Let’s say, our high pitch can still reach those clouds like an invisible beanstalk with silken slick backed hair like Gilberto’s voice high above the rest. Or simply say, there are times in our lives when no words can describe colors we see beyond blue, beyond white. No sounds to describe pitches we hear. waves of sound and color go far on a warm day. this is a good life. Now, only now.

Gratitude Finland has been rated the world’s most “happiest” country. Connection with nature, community and simplicity are three of the major factors cited as to the Finnish quality of life. However, there is an over-riding factor that they’ve learned that stands out for them and perhaps for us - gratitude. To quote: “The Nordic countries are united in their embrace of curbed aspirations for the best possible life. This mentality is famously captured in the Law of Jante -- a set of commandments believed to capture something essential about the Nordic disposition,” he explains. They include: “You’re not to think you are anything special” and “You’re not to imagine yourself better than we are.” Which, as Savolainen points out, is pretty much the opposite of America’s endless pursuit of personal and national exceptionalism. This is a great time of year to take stock of what we all have and be grateful. Amen.
[Local Paid Newspaper] Delivery Service I’ve been a subscriber to [local paid newspaper] for 70 plus years. Our new delivery person refuses to drop my paper off at the back of my short drive on the ramp so I can easily pick it up. I’ve posted a sign at my drive asking them to do this to no avail. They drop it in the gutter and if it rains it gets wet and if it snows the plow takes it away. Am I only person in [local town] to have this problem and is there anything that can be done to help? I’m 96 years old!
Fake service animals (dogs) Stop with all these fake service dogs! And stop bringing those fakes into the stores... it’s dirty! They stink. If you have these dogs around people, bathe them please. Don’t just spray them. Dirty and air freshener/perfume doesn’t mix well. The dirty is still there. Seems like any Dr will write off for a *pet. And you can purchase vests online. It’s become too much because you get away with it.

Aggressive Dogs Keep Owner Away From the Dog Park DEAR PAW’S CORNER: I’ve had to change the time of day that I visit the local dog park, because a new neighbor brings his two huge, aggressive dogs each morning at the same time as I do. They charge other humans, chase and snarl at other dogs, and make it impossible for other dogs to socialize calmly. The neighbor does nothing to control them and tells other owners that it’s their fault that his dogs are acting aggressive. To prevent injury to my dog (or myself), I now wait until after work to go. But this is inconvenient for everyone in the neighborhood. How do I address this problem? -- Dog Mom in New York DEAR DOG MOM: You’re doing the right thing by changing the time that you bring your dog to the park. It’s important to remove a dog from a situation you perceive as potentially dangerous or traumatic for them, and protecting them from harm. That’s only the first step, however. The new dogs are terrorizing other dogs within the park, making life miserable for them and their owners. It’s not fair, nor is it right. Dog parks within a city or town typically have rules of conduct posted at each entrance, but sometimes they’re vague. It’s up to each owner to properly train and socialize their dogs, and to keep them away from the park if they can’t control rough play, aggression or reactivity. Report the problem to the organization in charge of maintaining the dog park. This may be a community group or the municipal parks department. Contacting animal control is another option. Write down the dates and times that incidents have occurred. For millenia, people around the world have commemorated the arrival of a new calendar year by adhering to various traditions. Once such tradition is making resolutions for the year ahead. Resolutions are promises to oneself geared around personal fulfillment and betterment. Resolutions are widely practiced, but some people may not understand the origins of New Year’s resolutions and why they have become the norm. Some historians tie the practice of making resolutions to the ancient Babylonians. More than 4,000 years ago, the Babylonians celebrated the New Year in March rather than January. The spring harvest was in March, and a festival called Akitu, which lasted 12 days, was celebrated. An important part of the festival was the crowning of a new king. Special rituals also affirmed a connection to the gods. The Babylonians made promises to the gods, which included vows to return borrowed objects and pay outstanding debts. Resolutions can also be traced to ancient Rome. The Romans were instrumental in creating a more formal calendar, and the start of the new year was moved from March to January (January and February were added to the Roman calendar under the rule of Numa Pompilius). Julius Caesar wanted to honor January’s namesake, Janus, the Roman god of beginnings. Janus’ two faces enabled him to look back into the past and forward into the future. Sacrifices to Janus were made, and worshipers exchanged gifts with one another. A custom of setting resolutions began during this period as well, with Romans promising to be good to one another. Eventually, these resolutions were funneled into prayers and fasting when Christianity was adopted by the Roman Empire. Other religious parallels include the Jewish holiday of Yom Kippur, which is a day of atonement and reflection as celebrants examine their wrongdoings and seek forgiveness and to behave better moving forward. Yom Kippur follows Rosh Hashanah, Judaism’s own new year. Resolutions also may be loosely tied to Medieval times. During this time, knights took a “peacock vow” at the end of the Christmas season. Each year, these knights would reaffirm their commitment to chivalry. Today New Year’s resolutions are largely a secular tradition, but they’re still connected to a desire to be a good person and put one’s best self forward.
