sheet puff pastry pound turkey meat from turkey breast and/or thigh meat, cut into 1-inch chunks 3 eggs 1⁄2 cup chicken stock 1⁄4 cup Marsala 2 tablespoons unsalted butter Unbleached all-purpose flour, for the pastry 1⁄2 cup celery sliced on diagonal 1⁄2 cup sliced button mushrooms 1⁄2 cup Cranberry Chutney, plus more for serving Fresh parsley sprigs for garnish 1. Following the instructions on the package, thaw the puff pastry. This will take 30 to 45 minutes, depending on the type of pastry. You should be able to unfold it without it breaking. Set aside. 2. Pulse the turkey in a food processor until it is the consistency of ground beef. Add 2 of the eggs, the chicken stock, the Marsala, and the butter. Pulse again briefly, until just combined. 3. Roll out the puff pastry on a floured surface until it is a 12- or 13-inch square. Cover a baking sheet with parchment paper and place the pastry on top. 4. Form the minced turkey mixture into a log and position it down the center of the prepared puff pastry. Make an indentation down the length of the turkey and place the celery, mushrooms, and cranberry chutney along the indentation. Cover the indentation with the meat, forming a log once again. 5. Wrap the puff pastry around the turkey, neatly folding the ends and top together, rolling or tucking the edges together, and pinching to seal any gaps. Make the pastrycovered log as round as possible, like a Yule log — try to avoid a flattened version, like a strudel. 6. Preheat the oven to 450 F. 7. Combine the remaining egg with 1 tablespoon water in a small bowl or cup. Stir well until completely mixed. Brush the roulade with the egg wash, being careful to brush every bit of the exposed pastry. 8. Bake for 10 minutes at 450 F, then reduce the heat to 375 F. Continue to bake for 30 to 45 minutes longer, until the pastry has risen and is a toasty, golden color and the turkey has reached an internal temperature of 165 F. Generally speaking, once the pastry has cooked, the meat will be cooked, too. Remove the roulade from the oven. Transfer it to a serving platter, using the parchment paper to help you. Allow to rest for about 10 minutes. 9. Slice and serve, garnishing with the parsley and served with a bowl of extra cranberry chutney.

Pre-cut trees can make it through the holiday season looking their best, but buyers should request that employees cut as much as two inches off the bottom of the tree before leaving the lot. Once trees are cut, sap begins to seal their base, making it hard for them to absorb water. By requesting that between one and two inches be removed from the bottom of the tree at the time of purchase, buyers are ensuring their trees will be able to absorb the water they’ll need to make it through the season when they get home.

UNDERSTANDING DEMENTIA A KEY TO COMPASSIONATE CARE Alzheimer’s disease is one of the more prominent forms of dementia, but there are many additional types of dementia that also can cause both physical and cognitive alterations. Understanding the complexity of dementia can be beneficial to both dementia sufferers and their caregivers. Dementia is a general term used to define a decline in mental ability severe enough that it can interfere with daily life, offers the Alzheimer’s Association. Alzheimer’s disease is the most common type of dementia. Dementia is not a disease but a term used to describe a wide range of symptoms. The words “senility” and “dementia” often are incorrectly used interchangeably. However, serious mental decline is not a normal part of aging. Vitamins for Macular Degeneration Coincide With New Cramps

DEAR DR. ROACH: I have been told at the
(585) 398-1210
age of 70 that I am in the early stages of the eye disease macular degeneration. The doctor told me to take PreserVision AREDS 2 vitamins. He said that I will be taking them for the rest of my life. I started them immediately, and a few nights later, I started having severe left leg cramps to the point where I woke out of a sound sleep to jump out of bed and shake off the cramp. Is this typical? -- C.L. ANSWER: For the dry form of age-related macular degeneration, the AREDS and AREDS2 vitamins are the usual treatment. Although they are not a cure, they do slow progression of the disease. My experience with these has been that they almost never cause side effects, and muscle cramping is not a reported side effect by the manufacturer. The timing, however, certainly is suspicious. You can try stopping them for a few days, then restarting them to see if the cramps are truly affected by the vitamins. If they are, you have two choices. The first is to deal with cramps the same way that people who get them at night for no particular reason deal with it, which is by getting regular moderate exercise and stretching the calf and hamstring muscles before bed. Having weight on the toes is a trigger for many people, so very light bed covers that aren’t tucked in can be surprisingly helpful. I’ve had a few readers come up with devices to keep all weight off of their toes in bed. Your second option is to discuss an alternative with your eye professional. The AREDS and AREDS2 formulas were shown to be helpful, but some eye professionals only choose a few components of the formula.

Here’s a Tip On internet memes, they call them “life hacks,” simple tricks to save you perhaps time, money or simply frustration. Here’s mine: Place a bowl near your entryway. Place your keys in the bowl when you come home. They stay there until you leave. No more lost keys. Now more life hacks for your tip file. -- JoAnn Put a dryer fabric softener sheet on the back of a fan. It sticks and will distribute a fresh scent through your room. -- T.I. via email Put an apple in the potato bag to keep them from growing buds. Check often. -- E.W. in Oregon Sharpen your scissors by cutting through aluminum foil. All you have to do is fold a piece over on itself and use your dull scissors to cut strips. Sometimes older windows can be salvaged, especially if they are not damaged and only moderately drafty. Replacing panes, sash cords, weather stripping, and even glazing may be less expensive than replacing a window. Plus, older homes with attractive windows complement one another. To keep energy bills down, think about adding insulation to the attic and basement - which is a good idea even if you are replacing windows.

SHOPPING LOCALLY
It Matt ers
I
t matters where you shop. Where you spend your hard earned money. Your local merchant is working just as hard to earn your money. And when you choose to not support your local merchant and shop outside your community or county, you’ve robbed yourself of the benefits of your money staying where you live. THINK LOCAL, especially at this gifting time of year. Make it a Merry Christmas for all of us because, ‘it matters!’
The feel-good factor Doing for others certainly has an impact on the person on the receiving end, but also benefits the do-gooders. A November 2020 survey by Union Bank found that 72 percent of Americans said supporting small businesses was more important than getting the best deals. That may be due to the feeling of helping out a fellow neighbor.
Create job opportunities Shopping at small businesses keeps those establishments afloat, along with their employees. Small businesses are the largest employers in the United States. That’s also true in Canada, where 68.8 percent of the total labor force works for a small business. A person may never know when he or she - or a relative - will need a job. Keeping small businesses viable provides a strong job market for locals.
Keep more money in the community The Small Business Administration says $48 out of every $100 spent at a small business stays in the community. Spend the same $100 at a national retailer and only $14 stays.
Enjoy a more local flavor National retailers and other businesses follow a global business model that may not allow for much customization, but small businesses can provide products or services that relate directly to the needs of the communities they serve. These same small businesses may also be more inclined to work with local vendors and start-ups than national companies that have global supply chains.

DID YOU KNOW? Through the years, cars have evolved so much that certain parts once integral to their operation have now become obsolete. Only time will tell which components and features of today’s cars will disappear in the future. However, present drivers can reminisce about how cars have evolved even in the last 20 to 30 years. The following are some once-standard parts and features that have all but disappeared from modern vehicles. Ashtrays and cigarette lighters: Smoking-related accessories began to vanish as the dangers of smoking became more apparent. Ashtrays in the dashboard and in the rear armrests are no longer standard. Full-sized spare tire: The “doughnuts” of today can be driven on for only limited distances and look awkward on larger vehicles. The full-sized spare enabled drivers to repair the flat tire on their own schedules. Control knobs: Push buttons and digital dashes have replaced the manual knobs of the past. Levers often enabled drivers to adjust the heat without taking their eyes off the road. Bench seats: Front bench seats have given way to two seats separated by a center console. No longer is it possible to fit three or four people in the front of a vehicle. Whip antenna: Remember those thin, flexible antennas? Many modern vehicles feature more solid antennas that can be unscrewed for trips through the carwash or an antenna that is modeled into the car in an inconspicuous way. If drivers exhibit a preference for satellite radio in the years ahead, traditional antennas may soon become obsolete as well.

Kelli Marsh, Jenna Knauf, and Sean McCarthy bring nostalgia to Rochester each December BY SUZIE WELLS
I
n the heart of Rochester, the Dr. Martin Luther King Jr. Park on Court Street undergoes a magical transformation every December, thanks to the tireless efforts of Kelli Marsh, Jenna Knauf, and Sean McCarthy. Their collective brainchild, Roc Holiday Village, has become a cherished tradition, filling the city with the warmth of Christmas cheer. However, behind the festive spectacle lies a deeply personal connection for Kelli Marsh, a Rochester native with a profound love for her community and a passion for creating lasting holiday memories. For Marsh, the roots of Roc Holiday Village trace back to her own childhood, where visits with family to Santa left an indelible mark. Her subsequent travels around the world exposed her to the grandeur of Christmas markets in France, Germany, and New York City, planting the seed for her desire to bring that same enchantment back to her hometown. For Marsh, Roc Holiday Village is not just an event; it’s a reflection of nostalgia and commitment to infuse the holiday spirit into the heart of Rochester. As a mother, Marsh hopes to create for her son the same magical experiences she treasured as a child. Her vision extends beyond personal nostalgia; she says she, Knauf, and McCarthy wanted to revitalize downtown Rochester during the winter season, filling the void left by the closure of Midtown Plaza. “Winter in Rochester is a special time of year when the community comes together to celebrate,” Marsh says. When not working on the annual Roc Holiday Village event, she and her family actively embrace the winter spirit, hitting the slopes for skiing and snowboarding. She explains, “We make a point of embracing all the seasons Rochester has to offer. The festive season in December is particularly magical. Rochester has something for everyone, from its renowned museums to exceptional performance arts experiences, making it an ideal winter destination.”
Among festival highlights, Marsh says her personal favorite is Santa’s Workshop. Transforming it into a magical and inclusive space, the workshop caters to visitors of all ages. Marsh emphasizes the significance of creating an event where elements are free, accessible, and diverse. “It’s a place where everyone feels welcome and happy,” she says, underlining the importance of representation accessibility, including a Black Santa and a Santa who communicates using American Sign Language. Marsh says, “What I love most is seeing the children’s faces light up with joy while they visit us. It’s a place where everyone feels welcome and happy!” As the coordinator of Roc Holiday Village, Marsh’s role extends far beyond the festive season. Describing the year-round planning process, she notes the challenges of scheduling, booking special events, ordering supplies, and creating bespoke keepsakes. However, with a dedicated team of staff, volunteers, and crucial sponsor support, the event comes to life, year after year. Roc Holiday Village coordinators aim to continue providing the same magical experiences visitors have come to love over the years. In its fifth year, the event now includes The Giving Cup: Hot Cocoa for a Cause, where representatives from local non-profits serve cocoa and coffee to raise money for their charities. Also featured this year is a private Igloo Inn that offers guests an exclusive space to overlook the ice rink. Roc Holiday Village partnered with Rohrbach Brewing Company this year for an exclusive beer flavor called Village Lager. Silent Discos on the outdoor ice rink and an expanded selection of free arcade games add to the activities to keep the family entertained and mesmerized. In Kelli Marsh’s vision, Roc Holiday Village isn’t just an event; it’s a manifestation of the joy, inclusivity, and community spirit that define the festive season in Rochester. “Our city comes alive during December when we bring back this special event.” Marsh says, “With a wide range of vendors in the Village, delicious local food, music featuring local acts, and the opportunity to spend time with loved ones, the whole area sparkles with festive cheer.” The commitment of Marsh, Knauf, and McCarthy to create a magical space for all shines, making the 17day Roc Holiday Village a beacon of winter wonder for families and individuals alike. Visit rocholidayvillage.com for more information.
The festival itself, now in its fifth year, has become a testament to Marsh’s dedication to inclusivity and community engagement. Recognizing and celebrating various cultural traditions, including Hanukkah, Three Kings Day, Kwanzaa, and Christmas, Roc Holiday Village has evolved into a melting pot of festivities. Marsh says, “One of the best things about the winter holidays is the multitude of cultural traditions we can explore and appreciate. Community partners help us create memorable and educational experiences for our guests, allowing them to discover new traditions. With family at the center of the holidays, we relish the chance to bring people together and establish new traditions of our own.”

FRIDAY, DECEMBER 1, 2023
Alexander HM Breidenstein November 17, 2023 Honeoye: Alexander Helmut-Martin Breidenstein passed away suddenly on November 17, 2023. He was 30 years old. He is survived by his parents, Peter and Heidi Breidenstein; his brother, Peter Z. Breidenstein and his wife Erin; brother, Benjamin Breidenstein; grandmothers, Betty Zillmann and Annmarie Breidenstein; nieces, Avery and Eve Breidenstein, and many aunts, uncles, and cousins. He is predeceased by his beloved grandfathers, Helmut Breidenstein and Martin Zillmann. Alex was a kind and gentle person who will be missed dearly not only by his family but by his many friends, especially Dalton Sauers and Shane Sidlowskus and their families. Alex was born in Rochester and grew up in Honeoye, New York. He graduated from Honeoye Central School District in 2011 and went on to attend Finger Lakes Community College. Alex was a respected supervisor at Artisan Meats in Canandaigua and also worked at Party Man Catering, and enjoyed working in an industry that he considered to be a part of his family roots. Alex was a loving “old soul” who was interested in living life and being the best person he could be. At his core, Alex was a collector, and from a young age enjoyed collecting anything from things, to talents and hobbies, to friends. Alex often showed his love for others, including strangers, in quiet ways, and went out of his way to help those in need. In high school he befriended those who seemed lonely or were picked on, and at the grocery store you could find him helping elderly people carry their groceries to their cars.
Alex was a gamer and interested in collecting any kind of game, including both board games and video games. His first gaming passion was The Legend of Zelda, and he even learned how to play the ocarina, a musical instrument showcased in the game. He later followed his brothers into the world of Halo and StarCraft, where he found his passion for multi-player role playing games. He had a network of friends with whom he loved to game, whether they were sitting on their own computer next to him, or on the other side of the country. Alex was a musician in the Honeoye Central School Band and Jazz Band, where he participated in scholastic music festivals and marched in the Hemlock and Honeoye Memorial Day Parades. He was selected to play the trombone because of his great ear for notes, and also played the tuba and sousaphone at school. Alex later taught himself how to play guitar, ukulele, drums, and tried to tackle the didgeridoo. His love for music was diverse and ranged from classical, to jazz, to international indie music, rock, and heavy metal. It was always interesting to hear what was playing when he picked you up in his car. Alex also recently rediscovered his love for the outdoors, and would often go hiking with friends and family in various spots around the area. Family and friends may call on Friday, December 1st, from 4pm - 7pm at the Kevin W. Dougherty Funeral Home Inc., 8624 Main Street, Rte 20A, Honeoye, NY. A Celebration of Life will be held at 2 pm on Saturday, December 2nd, at the Willow Creek Venue, 3100 Rochester Avenue, Lakeville, NY 14480. In lieu of flowers, donations can be made to the Honeoye Band Boosters (which supports the HCS Music Programs), Attn: Brian Wilkins, 8528 Main Street, Honeoye, NY 14471. To send a condolence or share a memory please visit: www.doughertyfuneralhomes.com
Alex loved to collect knowledge, from trying to master discrete math, to learning how to be a dungeon master in Dungeons & Dragons. He learned how to build computers with his friends and then helped others build their own.

Women spend considerably more time each day than men engaging in various household activities. According to the 2019 “American Time Use Survey” from the United States Bureau of Labor Statistics, women spend an average of 2.16 hours each day on household activities, while men spend an average of 1.39 hours on such pursuits. The survey identifies household activities as housework such as interior cleaning and laundry, but also other activities such as managing the household’s finances and preparing food. Women also spend roughly twice as much time as men caring for and helping household members. Such figures may reflect gender roles that date back several decades if not longer, even though family situations have long since changed as more and more women have entered and remained in the workforce. For instance, the BLS survey found that, in 2019, men spent an average of 7.96 hours per day working, while women spent 7.15 hours per day working. Such figures support the notion that many households can share household activities more equitably between spouses.

Seasonal Tree A big thank you to the person(s) who decorate the evergreen tree at the corner of Cheese Factory and Quaker Meetinghouse Roads in Honeoye Falls. We always look forward to seeing the latest decorations as they change to celebrate the current holiday/season. You have consistently brightened this corner for years and have brought a smile to many faces. Please know your hard work is appreciated very much!
Merr Christma!
Don’t Eat Then To the person who felt the need to bash your local farmers over….. mud…. you reamed out farmers over mud. Farmers are under more than enough pressure already, with an alarming percentage of American farms going out of business year after year after year. Only a small percentage consistently make a profit. If you want them to get out and pick up dirt, expect to pay them more for it. If you still don’t get it, grow your own. Quit being entitled, eat the food they grew for you, and be grateful. More Being Added I see more junk and vehicles are being added to the Historical Area? I am not sure why this is OK. I know of many people that have contacted the village about this area. Is anything being done? As some residents are afraid to say anything because of the connections involved. When people are driving thru the area this is what they are seeing. Do we want this to be seen as a junk area? Are there any regulations regarding storing vehicles, boats, RV’s, containers? When the village board is asked, they say they will look into it, but never give a response on why this area is OK to be treated as a junkyard. Some residents take pride in their surroundings and village, while others say they do, but take advantage of their so-called liberties. Can we please clean up the historical site? Garbage is garbage no matter who or what it is!!

DEAR PAW’S CORNER: Every time someone comes to visit or says hello at the park, my puppy, Jake, jumps up and tries to lick their face. It’s embarrassing, and I don’t know how to stop it. Can you help? -- Sean in Providence, Rhode Island
315-766-7220
DEAR SEAN: Jumping up is a common problem for dog owners (for dogs, not so much; they love it). So much so that it’s one of the first things a trainer addresses with an owner. What you’ll need to do is to improve Jake’s overall response to commands as well as train him not to jump on people. Here’s how you do it, step by step: 1. Train the “sit,” “stay” and “come here” commands every day, at home and at the park. Teach him to walk on the leash calmly at your side. 2. Work with a companion who will ring the doorbell from outside, while you command Jake to sit after the bell sounds. 3. Put Jake on a leash. Answer the door to the companion; when Jake tries to jump up, tug the leash once and command him to sit. Remember to use positive reinforcement during training -- lots of praise, with a treat when he follows a command correctly. Avoid negative enforcement like scolding, yelling or hauling on the leash. Jake will not be perfectly behaved for some time; you should keep his leash attached at home when you expect visitors. If he gets overexcited when a visitor arrives and he won’t sit, take him to his crate or another room until he calms down. Even after he masters the training and is better behaved at home and on the leash, you’ll need to train him regularly so that he doesn’t slip back into his jumping-up habit.
Chocolate Caramel Cookies Tracy Thomas INGREDIENTS: 1 cup all purpose flour ½ tsp baking soda ¼ cup cocoa powder ⅓ cup unsalted butter ½ cup white sugar 1 egg 1 tsp vanilla extract ½ cup semi sweet chocolate chips 1 cup chocolate frosting* 12 Werther’s soft caramels 1 Tbsp heavy cream 1 Tbsp Heath English Toffee bits
Send your tips, comments or questions to ask@pawscorner.com. MAKE THE HOLIDAY SEASON MORE MERRY Visit with an elderly or housebound neighbor and share conversation.
*Any chocolate frosting will work, Duncan Hines Creamy Milk Chocolate frosting suggested DIRECTIONS: 1. Preheat the oven to 350 degrees F and line a cookie sheet with parchment paper. 2. In a stand mixer or a large bowl with an electric mixer, cream together butter and sugar. 3. Add egg and vanilla and continue to mix on low speed. 4. Add dry ingredients to the wet ingredients slowly and combine until a soft dough forms. 5. Fold in the chocolate chips, scraping dough from the sides of the bowl. 6. Drop 8 to 10 large scoops of dough onto the prepared baking sheet. Leave at least 2 inches between each cookie dough ball. 7. Bake at 350 for 12 minutes or until the top is set. Place on a wire rack to allow the cookies to cool. 8. Once cool, cover each cookie with frosting. For a clean look, you can use a 1A decorating tip or frost by cutting a small hole in the corner of a Ziploc-style bag. 9. To make the caramel topping, combine caramels and heavy cream in a small bowl. 10. Melt the caramels in the microwave in 15 second intervals, stirring in between until a smooth caramel sauce is created. 11. Drizzle the caramel sauce over the frosted cookies. 12. Sprinkle toffee bits on top and allow the caramel drizzle to cool and set. Enjoy! This recipe makes 8-10 cookies. Can be stored in a freezer bag or airtight container at room temperature for a week or in the freezer for up to three months.
