Cornell Cooperative Extension of Monroe County (CCE Monroe) SNAP Education Nutrition Educators, Iluminada Vlica and Laurenc√© Walker, had the opportunity to present an hour-long food demonstration for individuals from the Irondequoit Public Library at the Irondequoit Community Center. The Irondequoit Public Library is dedicated to enriching the quality of life in the Town by providing quality customer services and life-long learning opportunities. The library is one of the busiest public libraries in Monroe County and an active member of the Monroe County Library System. CCE Monroe and the Irondequoit Public Library have been in collaboration with each other for six years. The food demonstration included two salad recipes; Spring Green Salad and Cucumber Strawberry Salad. During the demonstration individuals learned how to eat healthy on a budget and ways to repurpose leftovers to make them last longer. The two salads were colorful and packed with vitamins and nutrients that were able to be sampled at the end of the demonstrations. In addition to the class, Iluminada and Laurenc√©, welcomed any questions participants may have had about nutrition topics. Comments we received were positive regarding their experience. “Wow, I really like this Spring Green Salad!” “This salad is so refreshing!” “I will take the recipe card and make this at home.” In addition to the 13 participants who attended, the food demonstrations were recorded and they are planning to air the demos on the cooking show at noon on channel 1301 or with the ITown Media streaming App’s Community/School Channel. It will also be available on demand with the streaming app under community events and uploaded to the Irondequoit Library Vimeo Account. We encourage anyone interested to review these recordings. This series is supported by the Supplemental Nutrition Assistance Program (SNAP-Ed). SNAP -Ed is an evidence-based program that focuses on healthy nutrition topics, stretching food dollars, and building strong and vibrant New York communities Cornell Cooperative Extension is an employer and educator recognized for valuing AA/EEO, Protected Veterans, and Individuals with Disabilities and provides equal program and employment opportunities.
Strawberry Cucumber Salad This salad is a bright and tasty addition to your next spring or summer meal. Prep time: 20 minutes Ingredients • 2 Tablespoons nonfat or low-fat plain yogurt • 4 teaspoons apple cider vinegar • 1 Tablespoon honey or brown sugar (see notes) • ¼ teaspoon onion powder • ¼ teaspoon prepared mustard • ¼ teaspoon salt • 1 Tablespoon lemon juice • 1 ½ teaspoons oil • ¾ teaspoon poppy seeds (optional) • 2 cups sliced strawberries • 2 ½ cups thinly sliced cucumber Directions 1. Wash hands with soap and water. 2. In a small bowl, combine yogurt, vinegar, honey, onion powder, mustard, salt, lemon juice, oil and poppy seeds, if desired. Mix well. 3. In a large bowl, add the strawberry and cucumber slices. Pour the dressing over and gently mix until evenly coated. 4. Refrigerate leftovers within 2 hours.

Gardeners Should I prune my rose bush now? Always prune after your plants bloom (deadheading) except if your rose bush forms lovely rose hips that are also a feature of some species and varieties. Cut flower roses lie hybrid teas and many modern hybrids considered ‘everblooming’ will require faded flowers to be removed. Those flowering stems are best reduced by half to stimulate a second and third set of flowers throughout the season. Why is my lawn is turning brown while my neighbors aren’t, even though neither of us irrigate? On any given turf area or in a neighborhood, we can see a wide variety of responses to the current drought. Following is a list of factors
from Cornell Cooperative Extension, Livingston County that will affect how fast a turf shows droughty symptoms or dormancy: • Species: Tall fescue is one of the last to show drought symptoms, many days to weeks following bluegrass or perennial ryegrass. Since dormancy is a survival mechanism, Kentucky bluegrass and perennial ryegrass tend to survive drought better • Mowing height: Higher the mowing height, deeper the roots and the better the ability to find water lower in the soil, but the higher mowing height has to be established in the spring • Compaction/heavy soils: Compacted soils force shallow rooting • Sodded lawns tend to show drought faster
than seeded lawns because sod tends to have less root density than seeded lawns of the same cultivar and species, primarily due to soil texture differences between sod field and lawn • High fertility or heavily irrigated will show drought symptoms faster • Spring fertilizer vs heavy fall fertilizer: Better rooting with heavy fall fertilizer • Shade from an abiotic source like a building tends to keep area cooler and turf will retain
color longer • Shade from a biotic source like a tree will compete with turf for the water and turf always loses • Heavy traffic areas tend to show dormancy faster • Thick thatch leads to shallow rooting in the thatch and very rapid drought symptoms • Insect (grub) feeding or patch diseases also enhance dormancy symptoms

Cut the blood sausage into 12 slices. Sauté the mushrooms in olive oil with garlic, salt and pepper for 5 minutes. Add the wine and cook for 2 more minutes. Boil the peas for 2 minutes and drain. When mushrooms are done, remove from heat and stir in the peas.

Surround with mushroom/pea mixture and drizzle the plate with the mint oil. For the mint oil: In a small saucepan over medium heat, heat olive oil to warm. Remove from heat and add the mint and a small pinch of salt. Allow to rest for 1 hour. Drain through a sieve. Reserve extra mint oil for other uses, such as vinaigrette. SP

Alarming Rate of False Positives Plagues Lung Cancer Screening ---

DEAR DR. ROACH: I’m a 74-year-old female who smoked a pack a day for 40-plus years, having quit smoking about 18 years ago. As a precaution, I asked my primary doctor to order a screening CT scan, knowing that I’m a candidate for lung cancer. The results showed a 3-mm nodule in one lung, and I was advised not to worry and that my doctor would order another CT scan in six months. I can’t help but wonder if this is cancer and if an oncologist, after six months, will ask me why I waited so long to see him. -- T.W. ANSWER: Medical professionals have been attempting to screen for lung cancer for decades. Chest X-rays proved insensitive: By the time cancer could be seen on X-ray, it was usually too late to do anything about it. CT scans are much more sensitive (maybe too sensitive; see below), and studies have shown that some lives will be saved with a screening program. However, the number of people who would benefit is relatively small. 256 moderate-to-heavy smokers would need yearly screening for three years in order to prevent one lung cancer death. There are two other significant concerns about lung cancer screening. The first is the issue you have now: an abnormal result and what to do about it. It’s extremely common. Almost 25% of scans will be abnormal, and 96% of the abnormal results will be false positives. But it will require multiple scans, and sometimes an invasive procedure, to prove it. This means a great deal of anxiety among people who get the type of result you did. The small size of your nodule means the risk that this nodule is cancerous is much lower than 1%. A follow-up scan is the usual recommendation, and if the nodule is the same size or smaller, the chance of it being cancerous is very close to zero. You should have had a careful explanation of the likelihood of false positive results before getting the scan. You also should have been warned of the possible need for a biopsy and the possible financial costs associated with follow-up testing. The second concern is that current smokers who consider screening should receive intensive advice and help in quitting smoking. A negative CT scan is not a “clean bill of health” for a smoker, and quitting remains to be the single most important thing most smokers can do for their overall health.

Make this a safe fireworks season Fireworks displays are a hallmark of summer, and a frequent component of Independence Day celebrations and commemorative events that require a touch of flair. Aweinspiring pyrotechnics shows lure millions of spectators around the world each and every year. Many people experiment with fireworks on their own, but that can be dangerous. According to the U.S. Consumer Products Safety Commission, thousands of people are injured by fireworks in the United States each year. Whether purchased legally or on the black market, fireworks pose a considerable threat. Fireworks purchased on the black market may be especially dangerous, as they likely were not subjected to government regulations and inspections. While summer might be the season of fireworks, it’s important that people who intend to incorporate fireworks into their summer festivities keep safety in mind at all times. The following are a handful of ways to ensure this summer is both fun and safe. •
Attend a municipal firework display rather than hosting your own. Professionals follow certain safety protocols that private citizens are unfamiliar with, and there is often a considerable distance between audiences and professional fireworks displays.

Exercise caution if fireworks are legal where you live. Maintain a safe distance from fireworks at all times and never allow children to handle fireworks.

Read and strictly adhere to manufacturer’s instructions.
•
Light only one firework at a time, and never attempt to re-ignite a firework that doesn’t light the first time around.
•
Do not carry fireworks in your pocket.
•
Do not shoot fireworks out of metal or glass containers.
•
Always wear safety glasses when lighting fireworks, and keep water or a fire extinguisher around for emergencies.

SENIOR NEWS By Matilda Charles Games for Brain Training Cognitive brain training can keep our cognitive abilities functioning better for 10 years. The Advanced Cognitive Training for Independent and Vital Elderly (ACTIVE) is not a new study, but it bears looking at for what it offers seniors in terms of cognitive abilities. The government-funded study followed 2,832 seniors with an average age of 73 after they completed 10 training sessions and four booster sessions 11 and 35 months after the initial training. Participants were divided into four groups: memory training, reasoning training, speed of processing training and a control group with no training. What the study aimed to look at was cognitive abilities and performance in everyday activities, and they collected updated data at the one, two, three, five and 10-year points in the study. What researchers concluded was that seniors reported less decline in cognitive abilities for 10 years in the reasoning and speed portions, not the memory, which dropped off after five years. All this in only 10 training sessions plus four booster sessions? Authentic brain training programs can be found online but generally require a monthly fee. There are others, however, that we can sample for free to create our own training program. Try the dozen brain games at www.mentalup.co/blog/free-brain-games-for-seniors to see if you like these types of challenges. Look online for “free senior brain games,” and you’ll find many sites with free games to play without having to give any personal information or pay a fee. The best “brain stretching” might come from doing a variety of games. Choose from crossword, jigsaw, sudoku, chess, mazes, word puzzles, logic and more, switching around from day to day. Or go to Amazon.com and look for puzzle books. Look at the sample pages to see if they look too easy or too hard. She was born on June 5, 1939 in Canandaigua, NY to the late Frank and Pauline (Harvey) Flood. In addition to her parents she was predeceased by her daughter Colleen Marie Jenks. She is survived by her husband of 66 years, Irwin “Irv” Jenks and children; Debby (Richard) Herendeen of Shortsville and Bret Jenks of Canandaigua; granddaughter Kelly (Joshua) Bowen of Shortsville; great-grandchildren Xavier Simmons, Jillian Bowen, Gabriel Bowen; brother, David Flood; nieces, nephews, cousins, brother/ sister-in-laws and many friends. She was kind, loving, smart, generous, witty, loyal, at times feisty and direct (sometimes too direct for some). She was very artistic, especially with her stained glass. SPICY STEAK TAMPICO Makes 4 servings 4 beef tenderloin medallions (each 6 ounces and 3/4-inch thick) 2 tablespoons olive oil Seasoned salt and freshly ground black pepper 1 cup roasted green chile peppers (see below) 1 cup shredded Monterey Jack cheese 1. Brush steaks thoroughly with olive oil. Season with salt and pepper. 2. Place medallions on preheated grill, close lid and grill, turning once, until an instant-read thermometer registers 145 F for medium rare, 5 to 8 minutes per side. Transfer to a plate, tent with foil and let stand for 10 minutes. 3. Preheat broiler with rack 3 to 4 inches away from heat. Place steaks on individual ovenproof plates. Top each steak with equal amounts of chile and cheese. Broil until cheese melts, about 2 minutes. Serve immediately. To roast chiles: Preheat greased outdoor grill to medium or preheat an oven broiler. Place fresh chiles on outdoor grill or gas stovetop over medium heat or arrange on a baking sheet and place 2 to 3 inches away from heat under broiler. Grill or broil, turning often with tongs, until surfaces of skin are lightly charred and blistered. Immediately place peppers in a paper bag or an airtight container and close tightly. Let peppers cool for 12 to 15 minutes. Peel off charred skin and remove stems and seeds. Tear into strips or chop as needed according to the recipe. Wash your hands thoroughly after handling chiles. Get along? We all know the traffic congestion on the west side of [local town] gets really ugly. Traffic comes to a halt due to construction, but must we lay on the horns and curse at each other while we all sit in traffic? DEAR PAW’S CORNER: Yesterday, our beloved corgi mix, Shemp, was laid to rest. I feel so guilty. He passed from heatstroke after being out in the backyard for just one hour. I never realized that just the heat outdoors could be deadly to dogs. I always was conscientious about dangerous situations; I never once left Shemp in a hot car or walked him on hot sidewalks. Yet a few minutes of inattention, and my Shemp was suddenly in great distress. I rushed him to the veterinarian, but he just didn’t make it. Please warn your readers to keep their dogs inside on hot days and to monitor them closely for signs of heat stress. -- Devastated in Houston Dear Devastated: I am so sorry for the loss of your beloved Shemp. Thank you for warning other readers of the dangers of summer heat. Being outdoors during the extreme temperatures that we’ve experienced this summer, often passing 100 degrees in many states, is dangerous for dogs and other pets. Here are a few ways to keep them safe from heat injury. -- Walk dogs before sunrise and after sunset. Under a hot sun, sidewalks can quickly burn a dog’s paws, and heat and humidity can take a toll on their health. -- Do not leave pets outside unsupervised. Even if they’re just in the backyard, you might not notice their distress until it’s too late. -- Provide a shelter from the sun. A shelter with open sides and a solid top allows airflow and protects from the sun when your dog is outside. -- Make water available all day, everywhere. Carry water on walks, keep their indoor bowl full and provide a water bowl outside.
How to protect your pets from extreme heat Learn to recognize the signs of heatstroke. Pets suffering from heatstroke will exhibit certain symptoms, and pet owners who learn to recognize those symptoms can do something about them before it’s too late. Heavy panting, glazed eyes, rapid heartbeat, difficulty breathing, excessive thirst, and lack of coordination are just a few potential indicators that a pet is suffering from heatstroke. Animals that are very old, very young, overweight, and unaccustomed to prolonged exercise, as well as those who have heart or respiratory conditions, are especially susceptible to heatstroke. PHILLY CHEESESTEAK DUMPLINGS
Magic Maze
Makes about 45 50 thin square eggless wonton wrappers (around 4 inches in size) Vegetable oil, for frying Filling:
ASSOCIATED WITH CROWDS
5 ounces shiitake mushrooms, stems removed and finely chopped 1 tablespoon roasted sesame oil 1 pound, 2 ounces cooked, shredded beef short ribs 11 ounces cabbage kimchi, drained and finely chopped 3 1/2 ounces spring onions, finely chopped 3 ounces pickled jalapeños, finely chopped 1 pound, 2 ounces mature cheddar cheese, grated Sea salt and freshly ground black pepper, to taste To serve: Silgochu (dried chilli threads) 1 spring onion, julienned and soaked in ice water until curled, then drained Sriracha For the filling, first sauté the mushrooms in the sesame oil in a large nonstick frying pan over medium-low heat until just softened. Remove from the heat and set aside. In a large bowl, combine the rest of the filling ingredients with the mushrooms. Mix together using your hands, really breaking up the short rib meat to make a uniform texture. For the dumplings, line a couple of baking sheets with parchment and set aside. Fill a small bowl with water. Unwrap the wonton wrappers and cover lightly with a piece of clingfilm to keep them moist. Lay a wrapper on a clean work surface and put 1 ounce of the meat filling in the center. Dip a forefinger into the water and run it along the edges of the wrapper to moisten the surface. Now bring the open edges to the center, and pinch where the edges meet each other, creating four seams in a cross shape. Set aside and cover with clingfilm or a damp tea towel while you shape the rest. Repeat with the remaining wrappers and filling, making sure the dumplings are not touching on the baking sheets. To a medium saucepan, add the vegetable oil and heat to 340 F (170 C). Working in batches, place the dumplings on their sides in the pan in a single layer without crowding. Cook for 3 to 4 minutes until golden brown. Transfer the fried dumplings to a wire rack or kitchen paper-lined plate to drain. Repeat with the remaining dumplings. If you don’t plan on cooking them straight away, you can freeze them on the baking sheets, then bag them up and store in the freezer.

Sugar and vinegar served as a runner-up for long-lasting blooms, but the best solution for prolonging the flowers was putting the arrangement in the refrigerator each night for roughly eight hours.
Top with some of the silgochu and curly spring onion and serve immediately with the sriracha.

DID YOU KNOW? Brief breaks during the work day can dramatically improve one’s ability to focus on a task. A 2011 study published in the journal Cognition found that brief mental breaks can improve focus on a prolonged task. The study’s authors tested participants’ ability to focus on a repetitive computerized task for 50 minutes under various conditions. The control group performed the task without breaks or diversions. The switch group and non-switch group memorized four digits before performing the task and were directed to respond if they saw one of the digits on the screen while performing the task. The switch group was the only group to be presented with the digits twice during the experiment, and both groups were tested on their memory of the digits at the end of the task. Most participants’ performance declined considerably over the course of the 50-minute task. However, the performance of those in the switch group did not decline at all, as the two brief breaks to respond to the digits allowed them to maintain their focus throughout the experiment. The researchers behind the study concluded that the switch group’s performance was steady because the brain is built to detect and respond to change, and its performance will actually suffer if it must maintain prolonged attention on a single task without taking a break. Professionals with a lot on their plates may see their performance improve by taking frequent mental breaks throughout the workday.
