‘tis the season STAY SAFE WHEN STRINGING HOLIDAY LIGHTS Lighting displays are one of the many things that help make the holiday season a special time of year. Often awe-inspiring, holiday lighting displays present a perfect opportunity for communities and individuals to showcase their festive sides. Safety should always be a priority when stringing holiday lights both inside and outside a home. The National Fire Protection Association notes that, between 2009 and 2014, fire departments in the United States responded to an average of 210 home fires that started with Christmas trees per year. M any people count their blessings on Thanksgiving. Few, how ever, count their calories. Overindulging at the dinner table is a Thanksgiving tradition, and often paves the w ay for a season of poor nutritional habits w ith longlasting ramifications. The American Council on Exercise says that the average adult consumes 3,000 calories and 229 grams of fat at a typical Thanksgiving meal. That is w ell above the USDA-recommended guidelines of 2,000 calories and 65 grams of fat that most adults should consume in an entire day. W ith so many options available on the Thanksgiving buffet table, it is easy to see how overeating is commonplace. Rather than w earing elasticw aisted pants and succumbing to too many fattening foods, individuals can make smart food substitutions that w on’t compromise taste but w ill cut calorie intake.

Shaggy Dogs Aren’t Impervious to Cold Weather DEAR PAW’S CORNER: On my morning walks, I’ve noticed that someone in a house down the street puts their dog outside, tied to the porch railing, with only a pan of water. They stay out there all morning. Now that the weather has turned cold, I still see this dog tied up every morning outside. Even with a shaggy coat, the dog is shivering. What can I do to stop this? -- Francesca W., via email DEAR FRANCESCA: If this person isn’t someone you know, and you’re nervous about knocking on their door to talk to them about it, then contact the animal control department for your town, city or county. If you live in an area where there is no animal control unit, call the nearest shelter or Humane Society to make a report. In cold temperatures, even temps above freezing, dogs can suffer a cold injury. Their paws and noses -- any exposed skin -- are at risk for frostbite. Hypothermia can be deadly, or it can permanently impair their immune system and overall health. A thick coat doesn’t provide as much protection from the cold as one might think. Many cities have laws against leaving pets out in extreme cold or heat. And tying up a dog outside, even for a few hours, is also unacceptable. If no one else is saying anything about it, go ahead and make some noise by calling any organization that can help and finding out where you can go to make it happen even faster. That’s because living trees can be promptly planted after they’ve served their purpose indoors. Opt for a moderately sized tree, as root balls on larger trees can be heavy and difficult to move. Living trees can typically be kept indoors for around seven to 10 days before they will need to be returned outside. Move such trees to a sheltered outdoor area for one to two weeks so they can reacclimate to the climate. So long as the ground is not frozen, trees can then be planted when the reacclimation period ends. Better Homes and Gardens suggests selecting a mild day to plant the tree.

t matters where you shop. Where you spend your hard earned money. Your local merchant is working just as hard to earn your money. And when you choose to not support your local merchant and shop outside your community or county, you’ve robbed yourself of the benefits of your money staying where you live. THINK LOCAL, especially at this gifting time of year. Make it a Merry Christmas for all of us because, ‘it matters!’
The feel-good factor Doing for others certainly has an impact on the person on the receiving end, but also benefits the do-gooders. A November 2020 survey by Union Bank found that 72 percent of Americans said supporting small businesses was more important than getting the best deals. That may be due to the feeling of helping out a fellow neighbor.
Create job opportunities Shopping at small businesses keeps those establishments afloat, along with their employees. Small businesses are the largest employers in the United States. That’s also true in Canada, where 68.8 percent of the total labor force works for a small business. A person may never know when he or she - or a relative - will need a job. Keeping small businesses viable provides a strong job market for locals.
Keep more money in the community The Small Business Administration says $48 out of every $100 spent at a small business stays in the community. Spend the same $100 at a national retailer and only $14 stays.

Some homeowners may wait to pick up a rake until all of the trees on their properties are bare. However, allowing fallen leaves to sit on the ground for extended periods of time can have an adverse effect on grass. Leaves left to sit on the lawn may ultimately suffocate the grass by forming an impenetrable wall that deprives the lawn of sunlight and oxygen. The result is dead grass and possibly even fungal disease. Make a household favorite more healthy Many beloved dishes might be enjoyed more often if they were only a little healthier. Author and former personal chef Michelle Dudash was once asked by a client if the she could make a healthier version of chicken parmesan. The result of that request is the following recipe for “Skinny Chicken Parmesan with Spinach,” which Dudash ultimately included in her book, “Clean Eating For Busy Families” (Fair Winds). The recipe was a hit with Dudash’s client and will surely be a hit at home cooks’ dinner tables as well.
Skinny Chicken Parmesan with Spinach Makes 6 servings For the sauce: 2 teaspoons extra-virgin olive oil 2 cloves garlic, sliced 1 28-ounce can whole tomatoes 1/4 teaspoon dried basil 1/4 teaspoon dried oregano 2 pinches salt 2 pinches freshly ground black pepper 1/2 teaspoon honey For the chicken: 3 tablespoons grated Parmesan cheese 2 tablespoons whole-wheat flour 1/2 teaspoon salt, divided 1/4 teaspoon freshly ground black pepper 1/4 teaspoon dried basil 11/2 pounds chicken breast, cut into 6 pieces, pounded to 1/4 inch 2 tablespoons plus 2 teaspoons extra-virgin olive oil, divided 4 cups baby spinach 1 teaspoon lemon juice 3/4 cup fresh mozzarella cheese, sliced into 6 medallions (or shredded) 6 cups cooked whole-grain thin spaghetti tossed in 2 teaspoons olive oil Preheat oven to 375 F and coat the bottom of a 9 x 13-inch pan with olive oil spray. To make the sauce: Heat a medium saucepan over medium heat. Add oil and garlic and cook gently for 30 seconds. Do not brown. With your hand, squeeze each tomato into the pan and add basil, oregano, salt, pepper, and honey. Reduce to medium heat and simmer for 20 minutes, lowering the heat as needed.

To make the chicken: Combine parmesan cheese, flour, salt, pepper, and basil in a medium dish and coach chicken with cheese mixture. Place a large skillet over medium heat and add 2 tablespoons of oil. When oil is shimmering, add chicken, rounded-side down, and cook until golden on one side, about 5 minutes. Arrange chicken in a baking pan. Pour remaining 2 teaspoons of oil into skillet and add spinach. Cook spinach for 1 to 2 minutes until wilted and swirl in lemon juice. Gently press spinach to release water and divide spinach on top of chicken. Spoon sauce around and over the chicken, place mozzarella on top, and sprinkle with 1/4 teaspoon salt. Bake for 15 minutes until chicken is cooked through. Serve over spaghetti. Page 19

Grateful for huge hearts! Two weeks ago I posted a need in the “Give & Take” section for unused cards with envelopes to send to participants in our Catholic Charities of Buffalo older adult programs in Genesee, Orleans and Erie Counties. So many wanted to help and we want to say a HUGE THANK YOU! We received so many donations of cards that our storage area is at capacity! I apologize that I wasn’t able to individually respond to every call left as there were so many. Those whose cards weren’t able to be donated, please consider offering them to a skilled nursing facility or adult day program where they can be used to brighten the day of an older adult who may be spending their birthdays and holidays without those they love. The big hearts of people in our WNY community make us so proud to do the work we do to serve those in need.
Free School Supplies and Meals The budget for the [local school] District has been approved for 20232024, which includes supplies and free meals for all students. I had three children attend [local school] and had to purchase all their school supplies and meals. Now I’m a Senior Citizen on Social Security with a fixed income, and I should not have to pay for these free supplies and meals. Voters, compare your 2022 taxes with 2023 taxes. My school taxes have gone up 21%, yet Social Security only went up 3.2%. Why should Senior Citizens have to pay so much? We have already paid our share. The Superintendent and the School Board need to address this issue.
Plowing Fields Will farmers with tractors, especially big tractors, after leaving the field onto the roads, stop and move the huge chunks of mud left on the road. Some were over a foot and a half around. I saw numerous vehicles who had to maneuver around these. Oncoming traffic plus the damage to their vehicles could be serious. I went out with one other driver and cleared what we could off the driving surface. With all these home cameras, if something serious happens, I’m sure you would be responsible. oah French earned the Rank of Eagle Scout with Boy Scouts of America Troop 4070 of Geneseo. Noah earned his rank on September 26th and received his rank of Eagle Scout during an Eagle Court of Honor ceremony on October 30th. The rank of Eagle Scout is the highest rank available to youth in the Boy Scouts of America. Noah joins over 2.5 million Scouts who have earned the rank since 1912. The French family is an aerie of Eagles—Eagle Scouts, that is. Noah’s older brother, father, three uncles, and grandfather have all earned the rank of Eagle Scout. Noah began his Scouting journey as a Cub Scout in Geneseo Cub Pack 4072. After earning the Arrow of Light award as a Webelos Scout, Noah joined Boy Scout Troop 4070 in April 2019. Noah has camped at Letchworth State Park, Rattlesnake Hill Wildlife Management Area, Silver Lake, the Buffalo Audubon Society Nature Center in North Java, Camp Dittmer in Phelps, Camp Sam Wood in Pike, Camp Scouthaven in Freedom, Camp Merz, Camp Massawepie in the Adirondacks, and Camp Conewago near Gettysburg. Noah’s leadership experience includes serving as a member of the Senior Patrol from 2022-2023. He also served as Webmaster from 2021-2023. He is currently Assistant Senior Patrol Leader. Noah was a member of a team of older Scouts who planned meetings, campouts, service projects, and activities for an entire school year of scouting. Noah’s scouting experience continued this summer at the National Scout Jamboree in West Virginia, a ten-day long high-adventure camp run by the Boy Scouts of America. Noah was one of ten Scouts and three adult leaders from Troop 4070 attending the Jamboree. He served as Patrol Leader of the Yellow Jacket patrol while at the Jamboree. He plans to attend Sea Base in Florida next summer.

After high school, Noah plans to attend college to pursue a degree in a math, science, and/or a computer related field. As for life goals, Noah says, “In the short term, I want to take and pass multiple AP courses, win sectionals in Varsity soccer, and win World Finals for Odyssey of the Mind. Many of my goals are not easy, but I believe that all are achievable if I am persistent and use the skills and knowledge that I have gained from all my experiences in Scouts.”
For his Eagle Scout project, Noah constructed a kiosk for Temple Hill Cemetery to put signage and information about the cemetery’s history and notable members. Temple Hill Cemetery Association representative, Bettina DeBell, explained that the kiosk currently features “six residents whose stories may be new to many. They are the stories of ordinary people in extraordinary circumstances. The panel will invite visitors to wander and wonder as they visit Temple Hill Cemetery.” Noah also had an app made to start geomapping graves within the cemetery to enable them to make self-guided tours of the notable people buried there. DeBell says Noah’s kiosk enables the community to connect with the self-guided version of the spirit walk tours the cemetery has hosted since 2013.

He quips also that, “At the end of my life, I want to be the fun guy in the nursing home that has the most entertaining stories. No matter who and what I become in my life, I know that the life lessons I have gained from Scouts will be with me all along the way, helping me make choices to better the world around me.”
At Noah’s Court of Honor, DeBell declared Noah enthusiastic about preserving historic cemeteries such as Temple Hill, which serve as “outdoor museums,” “public art,” “memorial architecture,” and “community history” combined. DeBell said, “Noah’s project is a model of sustainability that truly gives back to the community.”

According to Mental Health America, individuals’ reactions to the death of a loved one can elicit unique emotions linked to their relationship to the deceased. For example, MHA, a community-based nonprofit focused on promoting mental health, notes that a child’s death could inspire different feelings than the loss of an elderly spouse. When parents lose a child, that death may arouse a sense of injustice that can overwhelm the child’s parents as they contemplate lost potential, unfulfilled dreams and, in certain instances, the child’s suffering. Elderly individuals who lose a spouse may be overcome by feelings of loneliness. Recognition of these different reactions is important because it can help individuals and their support networks more effectively cope with their grief.

Geraldine Fairbrother Bolster November 10, 2023 Geraldine Fairbrother Bolster passed away peacefully on Friday, November 10, 2023 at the age of 103 years old. She was born on February 24, 1920 to Fanny (Striker) and Daniel Fairbrother. She grew up in Atlanta, NY but lived her married life in Cohocton, NY. Geraldine and her twin, Kathleen Fairbrother Zeh, were Valedictorian and Salutatorian of their class at the North Cohocton Atlanta School in 1938. While she spent a majority of her time keeping her house running smoothly, Geraldine was remembered by many for her years as The Lunch Lady at Cohocton Central School. In addition to her cafeteria duties, she took pride in volunteering in her children’s classes as “Grade Mother” or wherever a volunteer was needed. In 1939, Geraldine married Theodore Bolster Jr. Together they celebrated 69 years of marriage before his passing in 2008. Geraldine was an active lifelong member of the Cohocton Presbyterian Church and all of its organizations. In her free time, she enjoyed cooking, baking, sewing and crafts. She and Theodore enjoyed travelling around the country, visiting friends and family along the way. Geraldine was an avid sports fan and devout Yankees fan. In addition to her parents and husband, she was predeceased by twin, Kathleen (Orlo) Zeh; siblings, Daniel Fairbrother Jr., Gerard (Molly) Fairbrother, Laura (Benjamin) Emmons, Betty (Bob) Gonyea, Joyce (Maurice) Guerrette, Ernestine (Edward) Schubmehl, Wilma (Clarence) Gibson, Charles Fairbrother, Donald (Edna) Fairbrother; brother-inlaw, Jay Flint; sister-in-law, Donna Fairbrother; and son-in-law, Dale Lindsey. She is survived by siblings, Dona Flint and Glen Fairbrother; sister-inlaw, Shirley Fairbrother; and four generations of children, Judy Lindsey, Gene ( Jean) Bolster, and Larry (Gail) Bolster; grandchildren, Terry (Debra) Lindsey, Michelle (David) Maker, Suzette (Martin) Kimmel, Jennifer (Gabor) Balazs, Emily (David) Carter, Aaron (Kimberly) Bolster, David (Annette) Bolster, Todd (Melissa) Bolster, Sarah (Stephen) Spatz; fifteen great-grandchildren and seven great-great-grandchildren.

She was a Wayland-Cohocton Central School graduate and worked as a Corrections Officer for New York State for 13 years. Vanna was always the life of the party- she brought immeasurable laughs and fun wherever she went; she was the type of person who lived life to the fullest and she cared deeply for those who she surrounded herself with. In her spare time, Vanna loved to golf, go fishing, play softball and go on vacation. She was very devoted to her friends and family and always made them a priority, especially her daughter, Peyton. Vanna was also a foster parent and believed in helping and taking care of people however she could. Brenda Sharon Yeoman (Bushaw) November 7, 2023 Brenda Sharon Yeoman (Bushaw) left this world on November 7, 2023, after a brief and courageous battle with cancer. She was a caring wife, mother, grandmother, sister, aunt, and friend. She was described as a “mother to many” in a recent oral tribute. Brenda was a self-taught artist who learned the skills of weaving, quilting, pen-and-ink drawings, calligraphy, and other talents. Passionate about history and genealogy, she researched and validated local Atlanta history and self-published a book entitled Blood’s Depot. Her love of antiques and primitives is evident in her collection of countless treasures she proudly displayed in her home and shared with others. Brenda founded and served as a member of the “We Wear History” group and was noted for her portrayal of Rebecca Roberts. She also served the local community as the Director of the E. J. Cottrell Memorial Library for over 15 years and as an EMT. Brenda was born to Donna (Ferris) and George Bushaw on July 11, 1953, in Rome, NY, and was raised by Donna and Edwin (Ted) Harrison. She leaves behind a doting husband, Randy Yeoman, and two loving sisters, Belinda Schuler and Betrina Knox. Brenda had seven children: Shelly, Florence DiGennaro Reed (Derek), Salvatore DiGennaro (Alison), Melinda (DiGennaro) Henderson (Scott), Shannon Yeoman, Brian Yeoman, and Chris Yeoman. She also leaves behind 15 grandchildren, Brandon Yeoman, Brittany Henderson, Destyni (Henderson) Walker, Alexis (Henderson) Ford, Peyton Henderson, Jaiden DiGennaro, Joseph DiGennaro, Brandon Duprey, Tyler Duprey, Austin Duprey, Cassidy (Duprey) Doss, Ian Carter, Amie Yeoman, Emily Yeoman, and Giovanni Reed and 14 greatgrandchildren.

ANSWER: A panic attack is an abrupt change in mental state. They are usually unexpected, sometimes with or without identifiable triggers. Symptoms of a panic attack vary from person to person, but among the most common are feelings of heart palpitations; sweating; trembling or shaking; shortness of breath; chest pain or discomfort; dizziness; numbness or a “pins and needles” feeling; abdominal pain or nausea; feeling abnormally hot or cold; feeling detached from oneself or from reality; and a fear of dying, losing control or “going crazy.” Most of us have had some of these feelings from time to time, and some of these symptoms are identical to ones of heart disease, specifically of angina pectoris -- the classic symptom of poor blood flow to the heart. There are many conditions, both medical and psychiatric, that can cause these symptoms as well, so acquiring a moderate degree of certainty isn’t always easy. A very careful history exam helps. With chest pain due to heart disease, for example, symptoms are commonly brought on by exertion; whereas with a panic disorder, there might not be a trigger, or it may be triggered by psychological stress. Some people have highly specific triggers, such as open spaces or needles. Some people can trigger a panic attack just by worrying that they are going to have one. The time course of the symptoms can be very helpful. With a panic attack, the attack starts, and chest discomfort (for example) will then occur. In people with heart disease, chest discomfort starts, and then people will get anxious. I had a wise cardiology professor who told me to always consider heart disease even if a person’s history is suggestive of a panic attack. I generally check their blood pressure and order an electrocardiogram, blood testing (including thyroid tests) and sometimes other tests when considering the diagnosis of a panic attack. There is very effective treatment available for people with panic disorder (people with recurrent unexpected panic attacks that lead to avoidant behaviors), both through therapy and medication. But your question implies that being pretty sure of the diagnosis is wise before dismissing the possibility of cardiac disease or other medical diseases. *** Dr. Roach regrets that he is unable to answer individual questions, but will incorporate them in the column whenever possible. sheet puff pastry pound turkey meat from turkey breast and/or thigh meat, cut into 1-inch chunks 3 eggs 1⁄2 cup chicken stock 1⁄4 cup Marsala 2 tablespoons unsalted butter Unbleached all-purpose flour, for the pastry 1⁄2 cup celery sliced on diagonal 1⁄2 cup sliced button mushrooms 1⁄2 cup Cranberry Chutney, plus more for serving Fresh parsley sprigs for garnish 1. Following the instructions on the package, thaw the puff pastry. This will take 30 to 45 minutes, depending on the type of pastry. You should be able to unfold it without it breaking. Set aside. 2. Pulse the turkey in a food processor until it is the consistency of ground beef. Add 2 of the eggs, the chicken stock, the Marsala, and the butter. Pulse again briefly, until just combined. 3. Roll out the puff pastry on a floured surface until it is a 12- or 13-inch square. Cover a baking sheet with parchment paper and place the pastry on top. 4. Form the minced turkey mixture into a log and position it down the center of the prepared puff pastry. Make an indentation down the length of the turkey and place the celery, mushrooms, and cranberry chutney along the indentation. Cover the indentation with the meat, forming a log once again. 5. Wrap the puff pastry around the turkey, neatly folding the ends and top together, rolling or tucking the edges together, and pinching to seal any gaps. Make the pastrycovered log as round as possible, like a Yule log — try to avoid a flattened version, like a strudel. 6. Preheat the oven to 450 F. 7. Combine the remaining egg with 1 tablespoon water in a small bowl or cup. Stir well until completely mixed. Brush the roulade with the egg wash, being careful to brush every bit of the exposed pastry. 8. Bake for 10 minutes at 450 F, then reduce the heat to 375 F. Continue to bake for 30 to 45 minutes longer, until the pastry has risen and is a toasty, golden color and the turkey has reached an internal temperature of 165 F. Generally speaking, once the pastry has cooked, the meat will be cooked, too. Remove the roulade from the oven. Transfer it to a serving platter, using the parchment paper to help you. Allow to rest for about 10 minutes. 9. Slice and serve, garnishing with the parsley and served with a bowl of extra cranberry chutney.
