Serves 10 to 12

Amaretti Base

5 ounces amaretti

1/2 stick (4 tablespoons) unsalted butter

5 tablespoons sugar

Cardamom Truffle Filling

2 1/3 cups heavy cream

4 to 6 green cardamom pods, lightly bruised to open them

25 ounces dark chocolate

(60-70% cocoa solids), grated

1/2 stick (4 tablespoons) unsalted butter, cubed

4 tablespoons chocolate liqueur

Cardamom Cocoa Sugar

3 green cardamom pods

1/4 cup sugar

1/2 cup unsweetened cocoa

1 10-inch cake pan with a removable base, base and sides lined with nonstick parchment paper

To make the amaretti base, finely crush the amaretti in a food processor or put them in a plastic bag and crush with a rolling pin. Melt the butter and sugar in a pan over low heat, then stir in the amaretti crumbs. Press the mixture evenly over the base of the prepared cake pan and refrigerate for 20 minutes.

To make the cardamom truffle filling, put the cream and cardamom pods in a pan and heat until almost boiling. Remove from the heat and set aside to infuse for 20 minutes.

Meanwhile, put the chocolate and butter in a saucepan. Strain the infused cream through a fine strainer onto the chocolate (the cream will be warm enough to melt the chocolate). If it doesn’t melt, warm over very low heat, stirring occasionally, but do not allow to boil. Stir in the liqueur, then set aside until almost cold, but not set. With an electric mixer, beat the chocolate mixture for a couple of minutes - this will give the cake a lovely airy texture. Pour onto the amaretti base. Let cool, then cover and refrigerate for at least 6 hours, or up to 48 hours before serving.

To make the cardamom cocoa sugar, remove the black seeds from the papery cardamom pods and put the seeds in a spice grinder with the sugar and cocoa. Grind to a powder. Carefully remove the cake from the pan and peel off the lining paper. Set on a chilled serving plate and sift the cardamom cocoa sugar evenly over the top. Serve immediately, cut into very thin slices.

Take charge of your to-go order: Convenience became the name of the game when ordering food during the pandemic. Curbside pickup service was offered as a safety measure, and many restaurants that never previously offered delivery or takeout started to do so to generate revenue at a time when in-person dining was limited if not disallowed. Some restaurants began offering delivery through apps like Grubhub or Uber Eats, and though that may be convenient for diners, restaurants must pay a fee to utilize those apps. In lieu of ordering through a third party delivery service, consumers can take charge of their to-go orders and pick up the food themselves. That saves restaurants the delivery app surcharge, allowing them to increase net profits on the meals they sell.

With our crazy spring weather, with several frosts, a drought followed by massive rainfall, should I worry about my garden?

Does anyone remember a “normal” weather year? Not in recent history, it seems, but this year is a doozy! Looking back at the temperature swings we’ve had this year, January through April each had close to or more than half the month with highs at least 10 degrees above the average range. May went the other way, with half thenightsreachingtemperatures at least 10 degrees below average and, in W. Bloomfield where I live, three solid frosts that month. June’s temperatures seem to hover close to

average,which is a bit of a relief. Looking at precipitation, again it has been all over the map. Generally speaking, though, we had very little snoworrainJanuarythroughthefirst week of June. Between Friday, 6/9 and Wednesday 6/14, we received over two inches of rain! Crazy, right?

As I told our Farm Manager, Mike Kincaid, we can always count on a gully-washer right as the peonies start to flower, but this has been an exceptional amount of rain in just a few days.

So,howdoesallof thesetemperature and precipitation swings affect our plants? For established plants you

should not need to worry. They have reserves of food to help them through stressful times. If we go back to very dry conditions, which we most likely will over the next couple of months, you may want to supplement watering plants with higher water needs, such as hydrangeas. With newly planted material, of course, you will want to be sure to add water as needed. We like to see the plants get about

an inch of water per week – a small investment in a rain gauge is money well spent to help you know how much water your plants have gotten. And remember, when we do get a gully-washer, most of that rain runs off before it can percolate into the soil. Sometimes the best measure of moisture is to stick your finger in the soil and judge by feel.

Among the cornerstone programs initiated by the Hope Center is Fresh Start Tutoring, coordinated by Program director Amy ompson. is initiative o ers a comprehensive family literacy and math program for LeRoy and its surrounding areas. Struggling students from grades K to 6 receive free 30-minute weekly tutoring sessions with trained volunteers. e Hope Center also provides juice boxes, crackers, and chips for waiting students and co ee for their parents. e puzzle area has become very popular too.

Another valuable program o ered by the Hope Center is the Senior Moments Lunch Club, run by retired

nurse Tammy Genagon. Held on the second Wednesday of each month, club participants enjoy hours of games, projects, music, dancing, singing, and a delightful lunch. Trained volunteers are paired with guests to assist them throughout the day. All guests of this Lunch Club are individuals a ected by Alzheimer’s or other formsofmemoryimpairment,sothismonthlyclubgivescaregiversa much-needed respite.

e Grief Share program, led by Mari-Lee Ruddy, o ers a twohoursessionforthosecopingwiththelossofalovedone.Participants engage in workbook exercises, watch informative videos, and participate in group discussions, providing support and guidance during the grieving process.

Additionally, the Hope Center hosts the Hope Center Ladies’ Group, also known as Cra ers-Readers-Roamers. is monthly program invites all ladies to join and participate in various activities. Since its inception in January, the group has enjoyed events such as “Cra y Show and Tell,” a “Mug Rug” sewing class, Bible study, and a “Tea for Two” program.

Local Bank Changes

Whose decision was it to close a downtown major bank’s ATM? This has been an ideal location for all bank customers, downtown shoppers, travelers, and especially for walkers - not everyone drives a car. Really, how much time and how much employee expense is there to maintain this convenient service? This bank also made a big mistake by closing their drive thru. It would have been an asset to provide a drive-thru service during the Covid outbreak. I will sincerely consider another bank’s services located downtown.

A Roller’s Rant To All The Walkers Out There

I had an accident a couple years back and I’m now paralyzed from the waist down. I have a modified truck and it requires me to park in a van accessible parking spot or a handicap spot with cross-hatched stripes. I can’t tell you how many times I’ve had to wait for someone to come out and move their vehicle. Why should I wait when it’s illegal to park there? You can walk, I can’t. Use your legs! Also [local business] repaved their parking lot, and the only van accessible parking spot is for the employee of the month! What’s up with that? So I made my own parking spot right in front where all the cross-hatched lines are. I’ve spoken with the head of security as well as the Vice President and they assured me they’d take care of it. That was over 4 months ago!

Cat reacts to Thunderstorms Poorly

DEAR PAW’S CORNER: Yesterday, we had a pretty big thunderstorm roll through. My 8-year-old cat, Sphinx, is normally never afraid of anything. But for the rst time, he hid underneath the sofa, and even a er the storm passed he stayed underneath the co ee table and wouldn’t come out. Why would he suddenly be afraid when he wasn’t before? --

DEAR CLAIRE: A sudden change in behavior may warrant a trip to the veterinarian. is can rule out any physical causes for the change in behavior, such as a silent infection or a chronic condition.

Cats may seem aloof and resilient to us, but they are actually creatures of habit -- much more so than dogs, who thrive on applied structure, like walks at the same time each day. Cats develop their own daily routine: when they eat and drink, when they “patrol” the house, where they sleep at di erent times of the day.

Any change in that routine can be very upsetting to them, but most still won’t let you know it. (Some will -- they might turn their back on you, meow incessantly, or even, when deeply aggrieved, leave a special present right where you can nd it.)

Observe Sphinx as much as you can, and think about any changes to the home. Did you recently rearrange furniture or install new ooring? Did a family member leave or did a new person move in?

To reduce his anxiety, spend more time playing with Sphinx. When a storm rolls in, place one of your favorite old shirts next to him wherever he is hiding. Speak to him calmly during the storm. If his anxiety doesn’t improve, or begins to get worse, talk to his veterinarian about temporarily giving him anti-anxiety medication.

Serves 4

2 cups uncooked long-grain white rice

4 large pork chops

1 teaspoon basil, crushed

1 26-ounce can Del Monte® Spaghetti Sauce with Mushrooms or Chunky Italian Herb Spaghetti Sauce

1 green bell pepper, cut into thin strips

Salt for seasoning (if desired) Black pepper for seasoning (if desired)

1. Cook rice according to package directions.

2. Preheat broiler. Sprinkle meat with basil; season with salt and black pepper, if desired. Place meat on broiler pan. Broil 4 inches from heat, about 6 minutes on each side, or until no longer pink in center.

3. Combine sauce and green pepper in microwavable dish. Cover with plastic wrap; slit to vent. Microwave on high for 5 to 6 minutes, or until green pepper is tender-crisp and sauce is heated through. Add meat; cover with sauce. Microwave for 1 minute. Serve over hot rice.

High Blood Pressure Readings Call for Additional Medication

DEAR DR. ROACH: I am a 68-year-old female who was diagnosed with high blood pressure at 32. I am 5 feet, 5 inches tall and weigh 130 pounds. I’ve been taking 240 mg of verapamil for all of these years. A few years back, my medication started coming in 120-mg dosages, so I started taking one in the morning and one at night. My blood pressure both at home and at the doctor’s office is often higher than I think it should be, averaging 138/88. Recently, I used a 24-hour blood pressure monitor, which showed that more than 50% of my daytime readings were above 140/90, while my nighttime readings averaged 118/82. I am still waiting to hear back from my doctor regarding the results of this test, but I wanted to get your thoughts. Should I be on some other type of medication? Should I alter the timing to get better daytime readings? -- E.T.

ANSWER: In my opinion, these readings are not ideal. Twenty-four-hour, ambulatory blood pressure readings are usually 5 to 10 points lower than office blood pressure readings, so your average daytime readings are correspondingly higher.

There is strong evidence that in people at high risk for heart attack (such as those who are already known to have blockages), controlling blood pressure to an average of less than 120 systolic (the first or top number) and less than 70 diastolic (the second or bottom number) reduces risk. It’s not as clear for people who are at a lower risk, such as people who have high blood pressure without any additional risks. In my own practice, however, I will usually try to get my patients close to those optimal numbers, as long as the medication does not cause side effects. In a situation like yours, I would consider additional daytime medicine. More verapamil might be reasonable, but many doctors might use a different medication, such as a diuretic, in the morning to try to get the optimal blood pressure with less risk of side effects. Very often, the choice of blood pressure medication depends on any other medical issues a person may have. Only your doctor knows enough about your medical condition to make a personalized recommendation.

SOY FOODS PACK A POWERFUL PUNCH

The Cleveland Clinic notes that soy foods provide a host of nutritional benefits. Plant protein, including soy, can provide cardiovascular benefits, including helping with people with high blood pressure lower their blood pressure to healthier levels. While many people rely on animal-based proteins to get their daily recommended intake of protein, soy foods are naturally free of cholesterol and low in saturated fats. That makes soy foods more heart-healthy sources of protein than animal products. The Cleveland Clinic says substituting soy foods for animal-based proteins a few times per week can reduce a person’s risk for cardiovascular disease. Soy foods also can be a great source of dietary fiber, though the U.S. Soybean Export Council advises consumers that not all soy products are the same. The USSEC notes that foods like soy milk and tofu contain very little fiber. People who want to utilize soy beans as a source of dietary fiber should look to foods that utilize the whole bean, such tempeh, soy flour and textured soy protein. The USSEC also notes there’s some confusion in regard to the connection between soy foods and iron, though the group admits research is ongoing. While a 1/2 cup serving of cooked soybeans contains four milligrams ofiron,thephytateandsoyprotein present in soy foods reduce iron absorption, meaning that the body won’t really benefit from the iron. However,theUSSECrecommends consumers purchase fermented soy foods, including tempeh and miso, because the body might absorbmoreironfromthesefoods than it will when consuming other types soy foods.

Wayland, NY – Petersham, MA: Mary Yvonne Bryant died peacefully at home after a long life and short illness surrounded by her children on May 23, 2023 at the spry age of 94.

Yvonne was a devoted and supportive mother who always knew just what to say in any circumstance. Her family, friends and anyone who met her will miss her warmth and charm. She worked at the former UTD where she met and fell for Stuart Bryant. ey were married July 26, 1952 in Athol, MA and celebrated over 41 years together prior to Stuart passing away in May of 1993. While raising her family she waitressed for many years at the Fox Run Restaurant.Later she owned and operated “Bryant Realty”while caring for her ailing husband. She was a devout Catholic, talented artisan and an enthusiastic card shark!

Yvonne lived most of her life in Massachusetts and in 2014 she moved to Wayland. Her children would like to thank the special ladies from the Wayland area who welcomed her with open arms at the age of 86. While in Wayland she was very active at the Wayland Free Library and their di erent programs that included Bone Builders, Book Club and Trust in the Lives of Older Women. She enjoyed exercising, reading and sewing.

Yvonne was predeceased by her parents, Alexander and Roseanna (Arsenault) Labrie; her husband, Stuart Bryant; her siblings, Paul, Zenon, Romeo and Edgar Labrie, Emelda Luippold and Bernadette Chaisson.

Yvonne was Mom to Mary (Scott) Brown, Michael (Marlise) Bryant, Joan Dubrule (David Stiles) and Patricia (Daniel) Stephens; Gramma to Kevin Dubrule (Jaime Page), Alex (Katie) Bryant, Kyle (Jamie) Stephens, Leah (Lance) Ratchford, Makela Brown (Alex DeLorenzo) and Parker Brown; GiGi to Bentley, Indie, Nola Yvonne, Jalen and Jordan; Sister to Joseph (Ruth) Labrie; Sister-in-law to Ann Mayers and Marilyn Richardson; along with many many nieces and nephews.

A Mass of Christian Burial was celebrated for Yvonne Friday, May 26, 2023 at 11am at St. Joseph’s Church, 206 Fremont St., Wayland. Interment took place at East Street Cemetery in Petersham, MA on Saturday, June 10, 2023 at 11am. Contributions in Mary Yvonne Bryant’s memory may be made to a charity that was very important to her, St. Jude’s Children’s Hospital, 501 St. Jude Place, Memphis, TN 38105 or to a hospice facility in your area.

Charitable giving can be a great way to honor a loved one’s memory while helping others. Survivors often find comfort in the knowledge that they can do good in the name of a loved one. Tributes or memorial gifts can be approached in different ways and serve as an ongoing reminder of a deceased loved one. Create a charitable foundation: Those who have the time and resources can establish their own charitable groups in the decedent’s name. This method of charity requires the most time and effort, but can prove to be quite an impactful memorial. Individuals who would like to go this route can consult with financial and tax professionals about the best way to establish a charitable group.

Community foundation: Families can focus on something their loved one cared deeply about, such as animal rescue, children, the arts, or even particular places in a community - such as a local park. According to CarePages, a company that produces free patient websites and offers community support for those coping with illness, families can choose to have their donations funneled to specific charities or nonprofit groups. Otherwise, funds can be allocated to a third party community fund that will distribute money to various organizations no matter where they are located.

Medical tribute: Memorial gifts that assist medical associations or groups working to find cures or offer treatments for diseases are quite popular. If a loved one passed away due to a specific illness, it is common to ask for donations to a specific organization that specializes in information and services pertaining to that illness. Many such groups have a “donate in memory” option on their websites. Oftentimes families are notified regarding who made memorial donations in their loved ones’ names, but the amount of the donation need not be revealed.

Personal intentions: Those who would like to make a donation but cannot think of a charity to associate with their deceased loved one have a host of options at their disposal. Consider donating to a school or library, requesting materials be purchased in the decedent’s name. Otherwise, donate to a general scholarship fund, possibly at the decedent’s alma mater.

Finish their work: If the decedent was engaged in a charitable project prior to their death, volunteer to help complete that project.

Giving back after the death of a loved one is a great way to keep the memory of that person alive.

Feeling the lawn also can help homeowners determine if it needs to be aerated. Lawns that dry out quickly or feel spongy may be overcome with thatch, which can prevent lawns from getting the air, water and nutrients they need to thrive. Lawncare professionals recommend aerating lawns that contain thatch that is more than one-half inch. Thatch also can foster grub infestations, providing another benefit to removing it and aerating a lawn. When to aerate depends on the type of grass. Homeowners should consult with a lawncare professional about the best time to aerate their particular lawns, but it’s generally recommended that cool-season grasses be aerated in early spring or fall, while it’s best to aerate warm season grasses in late spring.

Fireworks purchased on the black market may be especially dangerous, as they likely were not subjected to government regulations and inspections.

While summer might be the seasonoffireworks,it’simportant that people who intend to incorporate fireworks into their summer festivities keep safety in mind at all times. The following are a handful of ways to ensure this summer is both fun and safe.

• Attend a municipal firework display rather than hosting your own. Professionals follow certain safety protocols that private citizens are unfamiliar with, and there is often a considerable distance between audiences and professional fireworks displays.

• Exercise caution if fireworks are legal where you live. Maintain a safe distance from fireworks at all times and never allow children to handle fireworks.

• Read and strictly adhere to manufacturer’s instructions.

• Light only one firework at a time, and never attempt to re-ignite a firework that doesn’t light the first time around.

• Do not carry fireworks in your pocket.

• Do not shoot fireworks out of metal or glass containers.

• Always wear safety glasses when lighting fireworks, and keep water or a fire extinguisher around for emergencies.

If not handled properly, fireworks can cause serious injuries to kids and adults. The safest way to enjoy fireworks is to leave it to the professionals.

Many students believe that the next natural step after graduating from high school is to go off to college. Secondary education has become such a common transition that many parents begin saving for college tuition as soon as their children are born. Although college can be the next chapter in a student’s education, many teenagers still choose to attend trade school.

Television personality Mike Rowe says the country is in the midst of a skilled labor shortage because workers lack the necessary training to fill the hundreds of thousands of available jobs. Many working parents struggle to maintain a healthy balance between their responsibilities at work and their obligations to their families. An inability to maintain that healthy balance can have adverse effects on men and women’s careers as well as the relationships they have with their families.

A 2015 survey of more than 2,000 adults commissioned by the workplace solution provider Workfront found that 38 percent of survey participants have missed life events because of a bad work-life balance. Then she attended the University of Missouri, where she received her Doctor of Veterinary Medicine degree in 2014. After graduation, she moved back to her hometown of Corning, NY, and worked as a mixed animal practitioner.
