SHRIMP POTATO

Makes about 2 dozen

6 medium-size red potatoes, peeled and quartered

1/2 cup (1 stick) butter

1 cup finely chopped yellow onions

1/4 cup chopped celery

1/2 cup seeded and chopped red bell peppers

1/2 cup seeded and chopped green bell peppers

1/2 cup seeded and chopped yellow bell peppers

3/4 teaspoon salt

1/4 teaspoon cayenne

1/4 teaspoon freshly ground black pepper

1/4 teaspoon Tabasco brand pepper sauce

2 pounds medium-size shrimp, peeled, deveined and coarsely ground in a food processor

2 large eggs, well beaten

1/4 cup chopped freshly parsley leaves

1/2 cup peanut oil

1/2 cup all-purpose flour

1. In a large saucepan, boil the potatoes in lightly salted water to cover until fork tender. Remove from the heat and drain. Transfer them to a large mixing bowl and mash with a fork. Let cool.

2. Melt the butter over medium heat in a medium-size skillet. Add the onions, celery, bell peppers, salt, cayenne, black pepper, and Tabasco, and cook, stirring, until soft, about 5 minutes. Add the shrimp and cook, stirring until they turn pink, about 3 minutes. Remove from the heat and let cool for about 5 minutes.

3. Combine the shrimp mixture with the potato mixture. Add the eggs and parsley and mix well. Let cool for 10 minutes.

4. Heat the oil in a large skillet over medium heat.

5. Form the shrimp mixture into patties, using 1/4 to 1/2 cup of the mixture, depending on what size you desire, and pat lightly with the flour. Cook two to three at a time in the hot oil until golden brown, about 3 minutes on each side. Drain on paper towels. Serve hot.

COMMON TRIGGERS FOR HEADACHES

Alcohol: According to the health care experts at the Mount Sinai Health System, ethanol is the key ingredient in alcohol. Ethanol is a diuretic that causes the body to lose salt, vitamins and minerals. When consumed in excess, alcohol can contribute to dehydration and chemical imbalances in the brain that lead to headaches. Headaches resulting from the overconsumption of alcohol can last anywhere from hours to days. Mount Sinai recommends individuals who suffer from headaches to avoid alcohol.

Understanding the Mechanisms Behind a Nuclear Stress Test

DEAR DR. ROACH: I had a comment about your recent column on nuclear stress tests. As an 87-year-old person who has experienced atrial fibrillation and a mild stroke, I have had two nuclear stress tests done. In both cases, I told the supervising nurse I wanted to go to the max limits that they would allow. Even though I attempted to prepare by briskly walking up the hill close to my home and thought I was doing well on the treadmill, I failed to reach the final parameters that they were seeking.

To get me there, I was injected with something (the name escapes me) that is supposed to achieve the same result as the final stage of a nuclear stress test. As I recall the discussion, the nurse stated that many couldn’t get as far as I did. Medications were a way for them to obtain the needed results. -- J.M.

ANSWER: Stress testing may be done for several reasons, but the most common is to determine whether there are blockages in the arteries in the heart that are severe enough to limit blood flow. When ordering a stress test, the clinician has to decide how to stress the heart and get information from it.

In people who can exercise (meaning they don’t have an orthopedic or neurological condition that keeps them from being able to move), then using exercise is the best approach in almost all cases. Exercise is safer since you can stop doing it at any time, and it also provides useful information. People who can exercise for a longer time (9 minutes on a standard protocol called a Bruce) have a very good prognosis; whereas if you can’t make it to 3 minutes, this is a poor prognosis.

The treadmill gets steeper and faster every 3 minutes on a Bruce protocol so that eventually even an Olympic athlete has to give up. The goal is to get to maximum exercise where a person simply can’t go any further. The person who runs the stress test looks for any sign of incipient heart damage through an electrocardiogram (EKG), a blood pressure monitor, or symptoms so that the test can be stopped if it seems dangerous.

Despite trying really hard, some people cannot get their heart rate and blood pressure high enough where the stress test can diagnose heart disease. In this case, the exercise stress test is converted to a pharmacologic stress test. A medication, such as dobutamine, is given to make the heart beat faster and stronger until the adequate workload is achieved.

Many of my patients tell me that this is uncomfortable, and more than once, I have heard someone say, “My heart was going to jump out of my chest.” If there are signs of danger, the medication can be stopped, and in some cases, a reversal agent is given.

Once the heart is at an adequate level of exertion,abnormalities in the blood flow can be detected by the EKG. However, the test’s sensitivity can be improved by looking at blood flow through a radioactive chemical injected in the blood, which can measure blood flow to various regions of the heart more precisely. The sensitivity can also be improved by examining the heart’s wall movement through echocardiography. In other cases, a more limited stress test is done to determine the safety of exercise. This is often done after a heart attack to determine which exercises a person can do as part of their cardiac rehab.

According to the online nursing resource Nurse.org, research nurses develop and implement studies to investigate and provide information on new medications, vaccinations and medical procedures. Research nurses, sometimes referred to as clinical nurse researchers or nurse researchers, typically have advanced degrees, and many first work as research assistants, clinical data collectors and/or clinical research monitors to gain some practical experience as they pursue or consider pursuing their degrees.Some research nurses even conduct independent research,though Nurse.org notes that such professionals need advanced degrees such as an MSN or Ph.D. to pursue such a path. Training is provided by the department, and volunteers can serve in a variety of roles, from providing life-saving emergency response services to conducting fire prevention programs and disaster preparedness planning.

On Friday, a couple of weeks ago, I came out of Tops in Dansville and my car wouldn’t start. Tried a couple of times and due to the radio and heat being on and because it was about 11 degrees out it just wouldn’t! A young lady knocked on my window and asked if I needed help. I said my car won’t start, and she said give me 10 minutes, I’ll go home and get my jumper cables. She drove away in a fairly new Ford pickup and sure enough she came back. By that time my car recouped enough power to start. I ran over to tell her it started and thanked her. I can’t tell you how much that meant to an older person that this young person would be so kind! I didn’t get her name but I certainly would know her if I saw her again! Thank you!

While I do appreciate having safe roads to drive on during snowy winter weather, I am dismayed at the amount of salt that coats the roads in our village and town. Not only is it terrible for the environment, it is a waste of taxpayer money, not just for the salt but with the price of fuel.

Plows are out on roads that are clear of snow at all hours of the day and night (can you say overtime?). I passed 6 plows on a 15 minute drive to a nearby town last night. Highway departments, please show some restraint and implement sensible salting and plowing policies!

Cold weather can be deadly for outdoor cats

DEAR PAW’S CORNER: I care for a rescued barn cat who refuses to come indoors -- she will come onto the porch for food and water, and let me pet her, but that’s about it. I was able to get “Gertie” spayed a few years back, so that’s no longer a problem. However, I worry about her in the cold weather. What do you recommend to keep outdoor cats from suffering in freezing temperatures? -- Caroline in Roanoke, Virginia

DEAR CAROLINE: Shelter is important during the coldest months of the year, and even if an outdoor cat has survived OK in past winters, that can change -- especially as they get older.

Food, water and shelter are the three biggest things you can provide to help an outdoor cat survive and remain healthy during the winter.Place fresh water in a container that won’t freeze easily, such as a thick-walled dish.

The Humane Society of the United States recommends building (or purchasing) an outdoor cat shelter that is appropriatefortheirsize--nottoosnug,butnotsolargethat it can’t hold in the cat’s body heat (www.humanesociety. org/resources/how-care-outdoor-cats-winter).

You can line the inside of the shelter with Mylar sheets that reflect body heat even better. For bedding, an old pillowcase filled with packing peanuts or crumpled newspaper is helpful, or you can use straw. Place the shelter near where you’ve observed the cat resting, or try placing it on the porch next to her food and water. (Don’t put water inside the shelter in case it spills.)

is year, the Geneseo Groveland Emergency Food Pantry had an extra gi for clients participating in the Holiday Program.

e story begins with the image of chicken legs in a crockpot on a Facebook page. Knowing that we had chicken legs at the pantry, and that they can be hard to cook, the idea started to take shape. What if we were to gi our clients a crockpot? Was it even economically feasible? everynextweek,wereceivedanemailaboutagrant opportunity with Excellus BlueCross BlueShield. While the Health Equity Innovation Award funding was intended to support efforts to decrease health disparities in those living in rural or urban areas who may be at higher risk for poor health outcomes, we figured it was worth a shot and applied for the grant, upselling the nutritional benefits of using a crockpot.

Much to our delight, we were awarded the grant to purchase the crockpots. At the same time, Amazon washavingaPrimeDayssale,andwouldn’tyouknow, crockpots were on sale. We ordered 70, the number we always use for holiday planning, to be delivered to various volunteers’ homes for transport to the pantry.

Once the 70 crockpots were in-house, we got busy preparing for distribution. Because what good is a crockpot without a recipe? Since we provide a nice ham for Christmas dinner, we decided to include a recipe for heating the ham in the crockpot with brown sugar as well as another recipe for ham & bean soup, along with all the ingredients.

We are fortunate enough to have the students from the LIVES Program volunteer at the pantry to help us on a regular basis. e LIVES Program (Learning Independence, Vocational, and Educational Skills) is a four-year transition program located on the campus of the State University of New York College at Geneseo. e students have been volunteering at the pantryforquiteafewyearsnow,makingkidbags,checking dates, and occasionally doing some shopping. Between the students and the regular pantry volunteers, all of the crockpots were wrapped and ready to go.

With the help of the Central Presbyterian Youth Group and the Geneseo Rotary, the crockpots were all delivered or picked up at the pantry on December 21st as part of the 2024 Holiday Program.

Not only were we able to provide our clients with a means by which they can cook tasty and nutritious meals, we now have the opportunity to provide crockpot theme bags throughout the year. A theme bag contains all the ingredients for a meal, including the recipe. We love theme bags almost as much as our clients!

INGREDIENTS:

1 lb dried white beans (e.g., navy or great northern)

1 ham bone or 2 cups diced ham

1 onion, chopped

3 cloves garlic, minced

3 carrots, diced

2 celery stalks, diced

4 cups chicken broth (or water with bouillon cubes)

1 bay leaf

1/2 tsp thyme (optional)

Salt and pepper to taste

INSTRUCTIONS:

Rinse the dried beans and remove any debris. If you prefer, soak the beans overnight in water, then drain before adding them to the crockpot. (You can skip this step, but it helps with cooking time and digestibility.)

In the crockpot, add the beans, ham bone (or diced ham), onion, garlic, carrots, celery, chicken broth, bay leaf, and thyme.

Cover and cook on low for 8 hours or high for 4-5 hours, until the beans are tender and the ham is falling off the bone.

If you used a ham bone, remove it, shred the meat, and return it to the soup. Season with salt and pepper to taste.

Ladle the soup into bowls and enjoy! Add a slice of crusty bread for the perfect meal.

I don’t know how it started, but in my neighborhood this winter the favorite activity has become ... painting. Each day new photos of “works of art” are sent around via cellphones as the idea spreads.

I decided to join in. Between the internet and home deliveries, we have access to everything we need without going out!

My first step was to do a YouTube search for painting lessons. Right at the top was “Beginner’s Guide to Painting,” and I was off and running.

On YouTube it’s possible to narrow down the search results to the subjects you’re most interested in learning to paint, whether it’s sunsets, flowers, mountains, snow scenes, cats, dogs, lakes, vintage cars, beaches -- if it can be painted, there’s a tutorial for it. The topics can be further broken down by watercolor and acrylic painting.

There are even videos that outline what supplies you need.

Some suggestions, if you’d like to paint:

Unless you have a store near you that will ship or deliver supplies to you, look online for the big names such as Michaels, Joann and Hobby Lobby as places to start.

You need paint and water, and something to paint on, such as paper or canvas panels, plus a selection of brushes. Add in a small plastic palette for mixing colors.

Look for beginner kits that have a selection of a dozen or so small tubes of acrylic paint colors or a dozen watercolors in a metal tray.

If you fear you have no real talent for painting, I invite you to explore Acrylic Squeegee Painting on YouTube. That technique can make anyone an artist!

THE VARIOUS TYPES OF CHOCOLATE

Chocolate wasn’t always the sugar-sweetened dessert people consume today. The history of chocolate dates back to 1900 BC, when Aztecs believed the cacao seeds were the gift of Quetzalcoatl, the god of wisdom. Chocolate was made into fermented beverages, and the cacao beans also were used as a form of currency because they held so much value.

According to the History Channel, some ancient civilizations considered chocolate to be a mood enhancer and aphrodisiac. Chocolate was believed to have mystical properties and was revered so much that it was reserved for rulers, warriors and priests.

It was not until centuries later that edible chocolate became popular among the masses. Dutch chemist Coenraad Johannes van Houten invented the cocoa press, which could turn extrude cocoa butter, paving the way for the modern age of chocolate as a confectionary ingredient and gift.

Choosing the right type of chocolate may require gaining an understanding of various chocolate-related terms.

Cocoa powder: This is the unsweetened raw form of cocoa made from partially defatted chocolate liquor. Dutch-processed (alkalized) cocoa powder is milder and less acidic than natural cocoa powder.

Unsweetened chocolate: “Bitter” or “baking chocolate” are other names attributed to unsweetened chocolate. It is best used in baking when it can be combined with sugar and other ingredients. It is also the base ingredient of most forms of chocolate, with the exception of white chocolate.

Dark chocolate: Chocolate that contains only chocolate liquor, sugar, cocoa butter, vanilla, and lecithin is considered dark chocolate. No milk solids are added in. The higher the percentage on the wrapper, the more bitter the chocolate.

Milk chocolate: In addition to dark chocolate ingredients, milk chocolate also contains dry milk solids or condensed milk. It is sweet and has a mild chocolate taste.

Bittersweet and semi-sweet: These chocolates are milder than dark chocolate, but not as sweet as milk chocolate. Many chocolate manufacturers derive their own formulations for these types of chocolate, varying the amount of cocoa solids they include.

Couverture chocolate: An expensive chocolate, this is coveted by professional bakers or confectioners. It contains a high percent of cocoa butter and chocolate liquor, which helps it to melt evenly. It is ideal for tempering and can coat candies smoothly.

Ganache: Ganache is a whipped filling, glaze, icing, or sauce that is used in various desserts. It is made by heating cream and pouring over chocolate of any kind. When cooled, it is malleable but not runny, which is why ganache is often used in making candies or fillings.

Truffle: A chocolate truffle is made from a ball of ganache rolled in cocoa powder. Truffles can be made from any variety of chocolate.
