ELSIE’S STEWED APPLES Serves 6 to 8 2 to 3 tablespoons unsalted butter 2 pounds apples, peeled, cored and cut into thick slices 1/2 cup honey, preferably sage honey 1/2 cup white wine Zest of 1 lemon Juice of 1 lemon Fresh sage sprigs for garnish 1. Melt the butter in a large skillet over medium heat. Add the apples, turn the heat to high and sauté until they begin to brown on the edges, about 5 minutes. If some are getting too well done, remove them and place on a plate while the rest continue to cook, then return them to the skillet when all are done. 2. Reduce the heat to low and add the honey, wine, lemon zest, lemon juice, and 1/2 cup water. Cover and allow to cook until the apples are tender but still firm; you don’t want them to turn into applesauce. 3. Serve this in a bowl, tuck in a couple sprigs of fresh sage from your garden, and tell your guests all about sage honey.

Dog’s First Encounter With Skunk Ends Badly DEAR PAW’S CORNER: We have a big fenced backyard and have no problem letting our dog “Ace” out to roam. However, for the first time, Ace ran into a skunk! Now I’m trying to get rid of that horrible skunk odor, with no luck. What can I use to clean his fur? And how do I keep skunks off my property? -- Suzie H., via email DEAR SUZIE: I agree, skunk encounters are pretty awful. And when a dog gets a good soaking from the skunk’s defensive spray, it can be very tough to get out of its hair. The American Kennel Club’s website (www.akc.org) has some expert advice on getting rid of the skunk smell on dogs. Rule No. 1: Do not bring the dog in the house if you can avoid it. The AKC recommends a homemade solution to break up and remove the odiferous oil that makes up skunk spray: Mix a quart of 3% hydrogen peroxide (available over the counter at the local pharmacy) with two teaspoons of mild dish soap and a quarter cup of baking soda. This mixture will start foaming immediately, so have Ace ready. (Don’t wet down his fur yet.) Rub the foamy solution into his coat, soaking it completely. (Avoid getting into his eyes or ears.) Leave it on for five minutes, then rinse. Discard any unused solution. To keep the skunk from coming back, determine where it’s getting into your yard and when. Skunks raising young like nesting spots like wood or debris piles. Open trash cans or compost piles are attractive foraging spots. Skunks are most active after sundown or in the early morning hours. Ace may be fine in the yard during the day, but you should accompany him on potty breaks before sunrise or after sundown to prevent another stinky encounter.

Stinging insec ts suc h as bees and w asps play a vital role as pollinators that maintain the national food supply. How ever, a multitude of fac tors, inc luding the lac k of available natural habitats for foraging pollinators, diseases, harmful mites and improper pestic ide usage, have threatened pollinator health in rec ent years. As a result, many people have realized the importanc e of protec ting pollinators and even developed gardens geared tow ard providing safe sourc es of nec tar and pollen. The National Pest M anagement Assoc iation (NPM A) w ants to remind homeow ners that w hile c reating pollinator-friendly habitats is largely benefic ial for both people and pollinators, it is important to keep in mind that some stinging insec ts c an pose signific ant health and safety risks. In fac t, stinging insec ts send an estimated 500,000 people to the hospital every year. People w ith know n allergies to insec t stings or w ith asthma should be espec ially c areful around pollinators, as stings c ould trigger a potentially life-threatening reac tion. There is also a c ommon myth that bees and w asps c an only sting onc e before they die. This only holds true for some spec ies of stinging insec ts, and people should alw ays be c autious around hives and nests. If a person c omes in c lose c ontac t w ith a stinging insec t, sw atting at it w ill often provoke it to bec ome more aggressive. The best c ourse of ac tion is to remain c alm and slow ly w alk in one direc tion until the insec t loses interest. M aintaining a garden that serves as a w elc ome oasis for w ild bees or c ommunity bees that are being raised by loc al professionals is a great w ay to protec t pollinators. W ithout proper beekeeping training, how ever, homeow ners should never allow stinging insec ts to take up residence on their property. If a hive is spotted in or around the yard, a pest management professional or professional beekeeper should be c ontac ted to safely remove it and, if possible, move it to a safe loc ation w here the bees c an be allow ed to thrive w ithout posing any dangers to the public . If the hive is loc ated in a building, utilizing a professional is also c ritic ally important to ensure every part of it is removed; any leftover c ombs c ould c ontain honey that c an ferment and c ause serious damage, as w ell as attrac t pests to the property.

Homemade ‘Foot Box’ Relieves Night Cramps ---

DEAR DR. ROACH: I am a very healthy 74-year-old male. I am not on any medications and enjoy normal blood pressure and great stats from my regular bloodwork. I weigh 140 pounds and have been exercising every day faithfully for decades. A couple of years ago, I started getting cramps in both legs throughout the night. My toes would curl down and my entire leg would get stiff; the pain was horrible. I had a terrible time “walking it off,” and very often when I finally got it to pass, as soon as I got back in bed the whole thing would start all over again. Sometimes I would go a few nights without having a problem, but there was always the fear that I would have another episode. I read online advice to get the weight of the sheet and covers off the feet. I took a strong cardboard box and sleep with my feet in the open end of the box. The first time I got in bed with this rigged up, it felt very strange not having anything on my bare feet, but eventually I got used to it. The remarkable news is that I have not had a single episode since fabricating the box over six months ago. -- G.K. ANSWER: I appreciate your writing in. I have had many patients use a box during sleep for acute gout, where even a sheet on top of the affected toe can be exquisitely painful, but I had not heard this used for nocturnal leg cramps. Some patients have noticed that the symptoms do seem to be started or exacerbated by the weight of blankets. Before resorting to that, I recommend regular exercise, even a few minutes of riding a stationary bicycle before bed can help. Couple that with regular stretching of the calf and hamstring muscles and adequate hydration. Although many readers ask about it, I do not recommend quinine for most people, and it’s quite rare for the cause to be disturbances of sodium, potassium, calcium or other electrolytes. B complex vitamins and magnesium are helpful in some people, but I restrict iron to people with proven iron deficiency. If all else fails, prescription medications such as verapamil may be helpful. ***

ADVICE FOR BLOOD DONORS Unlike other marvels of modern medicine, quality blood is an important health component that cannot be created synthetically. Blood shortages continue to plague medical establishments across the globe. For those who require transfusions, blood from volunteer donors can be the difference between life and death. However, many people are apprehensive about donating blood because of their own unique fears of the unknown or from past poor experiences with the process. With a little knowledge and some preparation, donating blood can be made much easier. Confirming donors’ health: One of the first steps to donating blood is to determine donors’ eligibility. Potential donors undergo a short health screening and are asked various questions to determine their eligibility. The presence of certain illnesses or other disqualifications helps ensure that the blood will be healthy and that the blood drawn will not have a negative effect on the donor. The American Red Cross states that potential donors will undergo a pin prick on the finger to test for iron levels in their blood. This is to ensure that donors will not be made anemic from giving blood. Frequency of donation, weight and age also will be considered before prospective donors are allowed to donate blood. Many organizations urge prospective donors to avoid giving blood if they have had simple dental work done within 24 hours or major dental work in the past month. Dental work in general can dislodge bacteria, which can get into the blood stream and cause systemic infection. Preparing to donate: Potential donors are urged to eat a healthy diet full of iron-rich foods. It is adviseable to drink an extra 16 ounces of water or a nonalcoholic fluid prior to donating. A healthy, low-fat meal prior to donating also is recommended, as the Red Cross says fatty foods can adversely affect blood tests that check for infectious diseases, and the blood may not be used as a result. Needles are no big deal: According to Justin Kreuter, MD, medical director of the Mayo Clinic Blood Donor Center in Rochester, Minnesota, while the needles used to collect blood are slightly larger than those used for immunizations at the doctor’s office, the needles have silicone on them to make the process of donating more comfortable for donors. Donation duration: Donating blood does not take a long time. It may take between 15 and 20 minutes for donation center workers to extract blood. Donating plasma or platelets may require more time. Allocate at least an hour to undergo the medical exam and to rest after the donation. Post-donation: Donors are urged to rest for a few minutes after the donating and to enjoy the snacks and beverages being offered. The Red Cross says people should avoid performing any heavy lifting or vigorous exercise for the rest of the day after donating. It’s also adviseable to drink an extra four glasses of liquids and avoid alcohol during the day following a donation. Donating blood can save lives and reassure donors that they’re doing their part to help others.

S E V RA The Keys to Good Samaritans On April 12, 2021, my wife and I went shopping at Walmart in Geneseo. When we were done shopping and got to the car, we found that we both had left our keys in the car! I called 911, and I told the dispatcher the problem we were in. She was kind to assure us that we would be okay. She told us that she would notify the police and for me to look out for the officer and to signal to him. When the Geneseo officer came, I motioned to him, and he came to us. I told him what happened. He was a true gentleman and calmed my wife down. He then got to work on getting the door to open a little so he could unhinge the lock. He was having some trouble, but another man came and helped him to get the door open. Hardworking Teachers In response to Teacher Vacation: Let's try this again. We have been having regular school five days a week. Those are our "normal" working conditions. So we have the regular work load. We are working as we have in the past. In addition (that means extra) we are working with the online students. This is extra from normal; this is more work, not less work. The at-home students need different methods of instructional delivery than the in-person learners. Being the expert in education you must be, you should know that. Science Regents exams are for Earth Science and Living Environment, so your statement about that is false. The determination about Regents exams was not given until recently. Labs are integral to my teaching; they are not extras or add-ons. I have the students learn by doing labs; perhaps you did not have that opportunity. The online "labs" do not meet the requirements of what my students need. I realize your extensive knowledge of what teachers do is probably from getting through school. Believe it or not, there is more to it than that, but you just want to whine about taxes and someone getting something. Campaign Flags I totally agree. It is not cancel culture to ask for campaign materials to be remove as per local ordinance. It's too bad that others don't see that. Freedom of speech Freedom of Speech is still our right given to us by the U.S. Constitution. We need more of this good, common sense thinking in government now. Cancel Culture is ridiculous and against the rights given to us in the U.S. Constitution, as well.

SENIOR NEWS LINE By Matilda Charles Scammers Try New Ways to Trick You How many phone calls did you receive today? Of those, how many were scam calls? So far today I’ve received eight. This is nothing new, but the tricks that scammers use are changing, and we need to be up on all of their tactics to steal our identities and money. The latest scammer craze is something called tele-transformer. This is step one in the scammer bag of tricks before handing you off to the closers who will pull you into a deal. Sometimes the message will leave a call-back number. Or they’ll claim they’re returning your call, or calling because you recently bought one of their products. If you answer, a typical message will say, “This is Kristen with benefits advisers calling on a recorded line. How are you today?” No matter what you say, they launch into their spiel, sometimes about Medicare, sometimes about Social Security, or your mortgage or your student loan, or car insurance, your disability or senior-living home improvement. The range of topics is long. Just hang up. With other types of calls, however, what they’re looking for is “yes.” With that simple word, they can steal your identity and your money. Here’s how it works: The first question they usually ask is “Can you hear me?” What they want is for you to say “yes.” Sometimes the question is “Are you having a good day?” or “Is this X?” if they have your real name. Do not say “Yes”! Once they have a recording of that one word from you, they’re free to do all kinds of things. They can sign you up for a service or send items to you in the mail. They have proof, they claim, that you agreed to those ... because they have your “yes” recorded in your own voice! Just hang up.

Arthur William “Bill” Griffin January 17, 2021 Dansville - At age 93, went to be with his Lord and Savior Jesus Christ early Sunday morning January 17, 2021, at Noyes Memorial Hospital in Dansville.

He was born in Bridgeport, CT, on October 25, 1927, the son of the late Arthur William Card and Charlotte Besser. On May 4, 1957, he was married to the former Barbara Langdon Griffin, who survives. He was also predeceased by a sister, Charlotte Brand. Bill was an ordained minister in the Assembly of God Church and served as a supple pastor at many churches. He was a member of the Cohocton Assembly of God Church and a former Chaplin at Noyes Memorial Hospital. He was a draftsman for many years at different companies throughout CT. In his free time, he enjoyed many different genres of artistic painting. Bill was a US Navy Veteran during WWII and a US Army veteran during the Korean Conflict. He is survived by his wife of 63 years, Barbara, three sons, Arthur William “Bill” (Kathleen) Griffin II., of Cohocton, and Todd and Jonathan Griffin both of Dalton; three grandchildren, Brittany (Devon) Ferris, Arthur William Griffin III, and Daniel (Hannah) Griffin. A Memorial Service for Bill will be held Saturday, May 1st at 2pm at the Cohocton Assembly of God Church, 31 North Dansville St., Cohocton, NY 14826 STEPS INVOLVED WITH ESTATE PLANNING An aspect of estate planning concerns funeral arrangements. AMERICAN FLAG ETIQUETTE According to USFlag.org, the American flag should be raised quickly and lowered slowly and ceremoniously. Monroe County 4-H Program Receives Earth Day Grant BY DESTINY DRAGGETT

T

he Cornell Cooperative Extension of Monroe County (CCE-Monroe) 4-H Program has been awarded a grant by the Genesee Finger Lakes Chapter of the Air & Waste Management Association (GFLAWMA) in honor of Earth Day 2021. The purpose of the Earth Day Grant is to increase and enhance environmental education opportunities in our community through projects that promote environmental awareness, development of technical skills, and sustainable environmental practices. The grant program is open to educational institutions and not-for-profit organizations in the New York State counties of Monroe, Wayne, Ontario, Livingston, Orleans, Genesee, Wyoming, Steuben, Seneca, Schuyler, Yates, and Allegany. The Monroe County 4-H team will create environmental education take-home kits. Kits will focus on concepts of environmental awareness and sustainable environmental practices centered on water pollution and water protection. Take-home kits will allow youth to learn and engage away from a screen and without the need for internet access or in-person gatherings due to COVID-19 restrictions. Takehome kits will be available to youth serving organizations throughout Monroe County from Earth Day, April 22nd, until the end of May. Each kit will contain the book We Are the Water Protectors, an award-winning picture book that issues a rallying cry to safeguard the Earth’s water from pollution and corruption, an environmental intentions journal with prompts to influence long-term environmental stewardship, a Water Protectors Pledge, and two handson educational activities. The project will teach youth the importance of protecting the water supply, and adopting long-term practices that will protect the environment. The environmental awareness take-home kits seek to increase environmental awareness and consciousness through literary exposure and hands-on learning experiences. Youth will receive a book that can be added to their home library which influences questions and curiosity related to environmental issues. The kit will also contain all of the materials needed to complete two hands-on activities which will teach youth about water pollution and environmental issues.

They will develop problem solving skills through the creation of an invention with the purpose of solving an environmental issue. FINDING WORK AFTER 50 Unemployment isn’t easy for anyone, regardless of their age. But unemployed men and women over 50 may find it especially difficult to find work. Whether it’s a byproduct of age-related discrimination or any of a host of additional variables, jobless older workers often struggle to find work. In a 2016 analysis of government figures, the Schwartz Center for Economic Policy Analysis at the New School estimated that the jobless rate for workers 55 and older in August of 2016, six years after the Great Recession, was nearly 9 percent. At the time, the national jobless rate hovered around 5 percent. Unemployed men and women over 50 who are struggling to find work can consider the following strategies as they look to rejoin the workforce. Revisit your résumé. Unemployed men and women over 50 have no doubt updated their résumés to reflect their most recent professional experience. But they may need to trim some of the fat in regard to their work life 10 or more years ago. Today’s hiring managers may only be concerned with recent experience that illustrates skillsets that are relevant to today’s jobs. Men and women over 50 may consider their experience from 20 years ago invaluable, but if that experience does not meet the specific needs of the jobs they’re now seeking, then they should remove it from their résumés so hiring managers can quickly access the more relevant information from their work histories. Embrace 21st century job hunting. Finding a job in the second decade of the 21st century is unlike job hunting in decades prior, and wholly different from how men and women over 50 looked for jobs upon beginning their professional lives. Networking can mean the difference between unemployment and landing a job. Go to job fairs attended by hiring managers and join professional organizations that host events where professionals in your field can gather. Turn your age into a positive. Men and women over 50 should accept the likelihood that their new managers and/or hiring managers will be younger than them. When interviewing for a job, men and women over 50 should make an effort to showcase their enthusiasm about working with and learning from younger colleagues, while also noting their desire to commit long-term to a company. Some hiring managers may surprise older applicants, viewing them as potentially more reliable than younger workers simply looking to gain some experience in a particular industry before moving on to the next opportunity. Make use of your existing down time. Another strategy unemployed men and women over 50 can try as they look for work is to make better use of their existing downtime. Enrolling in online courses can give prospective employers the impression that applicants over 50 are both tech-savvy and willing to learn new things. Each of those things can help men and women over 50 overcome any unjustified, tech-related stigmas that hiring managers may attach to older job candidates. Finding work after 50 is not always easy, and job seekers may need to adjust their approach before they can get back in the workforce.

cups flour cup unsweetened cocoa powder 1 1/2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup (1 stick) butter, softened 1 1/4 cups granulated sugar 2 eggs 1 1/2 teaspoons Red Food Color 1 teaspoon Vanilla Extract 1/2 cup confectioners’ sugar nonstick cooking spray In medium bowl, mix flour, cocoa powder, baking powder and salt; set aside. In large bowl, beat butter and granulated sugar with electric mixer on medium speed until light and fluffy. Add eggs, food color and vanilla extract; mix well. Gradually beat in flour mixture on low speed until well mixed. Refrigerate 4 hours. Heat oven to 350 F. Shape dough into 1-inch balls. Roll in confectioners’ sugar to completely coat. Place 2 inches apart on baking sheets sprayed with nonstick cooking spray. Bake 10-12 minutes, or until cookies are puffed. Cool on baking sheets 2 minutes. Remove to wire racks; cool completely.
