HUMBLE AND TRADITIONAL CULINARY CREATION A number of things are readily associated with Irish culture, especially in proximity to St. Patrick’s Day. A particular shade of green, referred to as “Kelly green,” corned beef, potatoes, parades - even enjoying a pint at the pub. One of the cherished traditions of St. Patrick’s Day, and even everyday Irish cuisine, is whipping up a family recipe for Irish soda bread. True Irish soda bread continues today to be an international favorite. While it is enjoyed across Ireland, it’s also widely enjoyed wherever Irish immigrants have established roots and elsewhere. Most of the ingredients necessary to prepare Irish soda bread can already be found in many homes. Irish soda bread gets its name not from a sweetened carbonated drink, but by the leavening agent that is used in place of yeast. Baking soda (bicarbonate of soda) is a common component of quick bread cooking. When the baking soda is mixed with the flour and a soured milk (butter milk, for example), its chemical qualities produce carbon dioxide gas bubbles that help give soda bread it’s risen, airy texture. In some recipes, live yogurt, or even stout, are used as the liquid to activate the baking soda. While the Irish adapted the science behind baking soda and have come to be associated with soda bread’s origins, the earliest reference to soda ash being used in baking bread is actually credited to the American Indians. Baking soda was not brought to nor discovered in Ireland until the middle of the 19th century. However, it is the Irish who have made soda bread much their own. It tends to be an easy an inexpensive bread to make to feed many and is very versatile. Soda bread in some shape or form is enjoyed by cultures all around the world. From Scotland to Poland to Serbia to Australia, these countries have their own versions of soda bread and their own cooking methods. In honor of St. Patrick and other Christian celebrations, soda bread is traditionally made with a cross shape cut into the top of the dough. Legend has it that people did it to “let the devil out” while it’s baking for good luck, and others say that this last step made it easy to divide the bread into pieces. Soda bread has become synonymous with Irish culture. Enjoyed plain or with some Irish butter, it’s a common component of meals throughout the year, and most especially on St. Patrick’s Day.

8 small red potatoes 2 cups baby carrots 1 small onion, quartered 1 corned beef brisket (4 pounds), rinsed and trimmed 2 tablespoons McCormick Mixed Pickling Spice 1 teaspoon McCormick Minced Garlic 1/2 head cabbage, cored and cut into wedges Place potatoes, carrots and onion in slow cooker. Place corned beef brisket over vegetables. Sprinkle with pickling spice and minced garlic. Add enough water (about 8 cups) to just cover meat. Cover. Cook 7 hours on high. Add cabbage. Cover. Cook 1-2 hours on high or until cabbage is tender-crisp. Remove corned beef brisket to serving platter. Slice thinly across grain. Serve with vegetables.

S E V RA Above & Beyond While my husband and I were at Maple Tree Inn this past weekend, we happened to witness a business that went above and beyond for a customer who was in great distress. They didn’t have to do what they did, and most businesses wouldn’t have. It was very heartwarming to see, and I for one applaud them. A great example of customer service and compassion. My Fair Lady Cheers to the Rochester Broadway Theatre League for bringing to Rochester the musical “My Fair Lady.” What a wonderful show it was, and I liked it even better than the original movie! No Denying I’m confused regarding this back and forth about global warming. Who’s denying it? We all know it’s changing. The only question is how much does man really impact these changes? Sure, there’s a lot we can do to lessen our impact, but the changes of warming and cooling have been proven over and over again to be a part of our planet’s history. So, who’s denying it? Local Dog Walker It is great that you pick up after your dog when you walk our local neighborhood. However, it would be really great if you also took that little black bag back home with you! Today while walking, one of the people in the neighborhood put your 10 bags (yes 10 bags), in the middle of the sidewalk and this from just a short distance of a walk for most of us. We are all looking for you, and when we find you, the local police and dog warden will also know you. Why is it so hard to take the bag back home with you like a responsible person? The people’s lawns that you leave the little packages on are really tired of them. There is a law, you know, and you are not above it. We know it is from one person, and everyone is on the look out for you. Clean up and take your bags home. This is also your neighborhood, but you are not a good neighbor, that is for sure. Choices In response to Choose One: No, we should use either paper or plastic, metal or glass wherever appropriate. Paper bags, plastic cars? Yes, I hate to see a tree come down, but trees (and wood and paper) are renewable resources; oil is not. Paper is biodegradable; plastic is not. It’s that simple. We should choose the ones that are least damaging to the environment case by case.

Best Friends CEO Julie Castle says the investment in data was necessary to achieve the organization’s goal of bringing the whole country no-kill by 2025. “Up until two years ago, we didn’t even know how many shelters existed,” she said. “How can you possibly save all the animals if you don’t even know how many need to be saved? “With this data in hand, our goal to save every savable pet by 2025 is finally within reach,” Castle said.

DEAR PAW’S CORNER: When my grandmother passed away last fall, she left behind two beautiful cats. No one else in the family wanted to take care of them, so I took them in. However, I’m financially unable to care for them long-term, and the apartment complex I live in does not allow pets. I’m on borrowed time (and money) at this point, and praying that my apartment manager doesn’t find out about the cats. I contacted a shelter nearby to find out if they will accept the cats. They said there is a “surrender fee” of $200. No way can I pay that; I’m on a fixed income. What alternatives do I have? -- Sherrie R., via email DEAR SHERRIE: I’m sorry to hear about your predicament. You have extended your home and finances to care for two cats in need, and I salute you for it. But you’re right: the current situation is not ideal for you or the cats. When preparing to surrender a pet, the receiving shelter will request that you try every possible option first. Many shelters will provide advice and limited assistance for pet owners going through this. One option would be for you to contact family members and friends directly (not on public social media posts) to ask if they would be able to adopt the cats. If a surrender to the shelter is the last resort, contact your family to see if they can chip in for the surrender fees. After all, you’ve already taken on the cost of food, supplies and maybe medical care for them. You’ve taken on the risk of losing your lease, too. FINDING THE RIGHT FITNESS FACILITY Joining a gym can be a great way to get healthy. Prior to an enrollment meeting, ask for information about the plans an employer is offering, then go through those plans and jot down any questions you may have and ask them during the meeting. Understanding benefits is an essential trait of a wise health care consumer, so don’t hesitate to ask questions about what is and isn’t covered under each plan you’re considering.

DEAR DR. ROACH: I just read another sad story about a woman who had breast cancer, fought it and seemed to win, but after five years, it came back and took her life. The same sequence of events happened to my wife two years ago. She fought the second round of cancer for a year and a half, but it was just about everywhere. What is this connection between the initial breast cancer occurrence and it coming back five or six years later even more widespread throughout the body? Is screening stepped up during that period? -- Anon. ANSWER: I am very sorry to hear about your wife. With most cancers, no evidence of disease five years out from diagnosis usually means a cure, that the person will not have a recurrence of that particular cancer, although people who’ve had one cancer are at a higher risk of developing a second, unrelated cancer. Breast cancer is one of the exceptions. Late recurrences (after five years) are possible, even very late recurrences. I have seen 20 years afterward, and there are reports of even longer. Although the reasons why breast cancer seems to hide for many years are not known precisely, we do know some risk factors for recurrence: Larger tumors are more likely to recur. Those with positive lymph nodes are at high risk, and women with estrogen receptor positive, progesterone receptor positive and HER2 negative tumors are more likely to experience recurrence. Screening is absolutely appropriate in women who have had breast cancer. There is not a consensus about the type and frequency of screening, but many experts choose yearly mammography. Breast MRI has been considered, but it has not been proven to be better in women with a history of breast cancer. A healthy lifestyle, including regular exercise, a diet with plenty of fresh fruits and vegetables, abstinence from smoking and minimal alcohol intake, has been shown to reduce cancer risk in women with a history of breast cancer. ***

HOW TO EASE INTO EXERCISING Men and women who resolve to get healthy often benefit by combining a healthy diet with regular exercise. Making such adjustments can be challenging, especially as men and women accustomed to sedentary lifestyles begin exercise regimens. Whether they’re fitness novices or returning to exercise after a long layoff, men and women can employ various strategies to make that transition go smoothly. Work with a trainer. Many fitness facilities offer a handful of free personal training sessions to new members upon enrollment. Take advantage of such offers, as trainers can devise workout routines for people of various abilities. Trainers also can instruct new members how to use machines and help ensure they’re following proper form so they can avoid injury. If necessary, continue working with trainers after making use of complementary sessions. Personal training sessions typically can be purchased in batches, and men and women can continue working with trainers until they’re comfortable working out on their own. Embrace low-intensity exercises. Even men and women who were once accomplished athletes must take it slow when beginning an exercise regimen after a long layoff. Initial low-intensity exercise sessions might feel ineffective and seemingly produce few results. But early on, the goal is to simply get the body acclimated to physical activity. As their bodies adjust, men and women can begin to make their workouts more intense. Focus on flexibility. Sedentary bodies likely lack the flexibility of bodies more accustomed to exercise. Men and women who are becoming more physically active must include stretching in their workouts and cease exercising if they feel something tweak or suspect they have pulled a muscle. Take days off. As men and women begin to see their work in the gym pay off, they may be tempted to push themselves hard, working out several days in a row without taking time off. But rest is an important component of an effective workout. Days off help the body repair itself and recover from vigorous activity. Exercising for the first time or after a long layoff requires patience. But as men and women grow more acclimated to physical activity, they will begin to see the fruits of their labors. Page 11

Arrange the bread slices on a rimmed baking sheet, slip under the broiler and toast, turning once, until golden brown on both sides. This should take only a few minutes. While the bread is toasting, halve the peaches lengthwise, pit them and then peel each half. Cut each half lengthwise into 1/4-inch-thick slices, keeping the shape of each half intact. When the bread is ready, remove from the broiler and brush each slice on both sides with olive oil. DON’T MISTAKE A SHAMROCK FOR A CLOVER All shamrocks are clovers, but not all clovers are shamrocks. The home and garden resource The Spruce indicates that the term “shamrock” comes from the Gaelic word seamrog, meaning “little clover.” There is no consensus as to which species of clover is the true shamrock. However, many botanists agree that the white clover (Trifolium repens) is the shamrock. However, the lesser trefoil, or hop clover, the black medick and red clover all can be contenders. Four-leafed clovers of any variety are not shamrocks and should not be portrayed as such. That is because the shamrock is a three-leafed sprout that was believed to be utilized by St. Patrick to demonstrate the principle behind the Holy Trinity. St. Patrick, pointing to the three leaflets united by a common stalk, used this visual analogy to spell out the mystery of Christianity’s doctrine of three entities making up one Lord: God the Father, God the Son, and God the Holy Spirit. Therefore, for all of the purported good luck finding a four-leaf clover may bring - based on mythology imparted by ancient Celts called Druids - it cannot be passed off as a shamrock. Before You Sign Up for Senior Discounts We all want to save a dollar every place we can. Discounts aimed at seniors are a good way to get our attention, but now and then it’s just not a good idea to sign up. For example, if you’re low income, Amazon Prime offers a reduced-price membership. With Prime you get free shipping, access to movies and music, and more. Your membership is only $5.95 per month -- after you furnish an image of your Social Security, Medicaid (not Medicare), TANF or SNAP card. You’ll need to renew this every year to keep getting the discount to ensure you’re still on the program. You can stay on this reduced rate for four years. The dilemma is that you’re providing your personal information -- Medicaid number, Social Security number and so on -- to people you don’t know. Where does that information end up? If you cancel your membership, is that information destroyed? Reduced prescription costs are available at certain drugstore chains, but generally on a limited basis, perhaps one day per month. One chain will offer to let you link a new account with them to your existing AARP membership. With another one, should you prefer not to give them your email address, they’re more than happy to take your name and phone number instead. A number of phone companies have reduced plans for seniors. But they do verify your age. With two of them you need to go into the store with a valid ID. With another they’ll use the information they already have on file from when you started your original service with them. How

D

id you know that the United States government encourages everyone to prepare for a zombie apocalypse? It’s a strange yet creative way for them to encourage you to be prepared for disasters. I love it! “Be prepared!” That’s the Scout motto. Are you prepared? Do you know how to start a fire without matches? Could you cook over an open fire? Do you know how to purify water? We can teach you, or maybe we can teach your kids, and they can teach you all these things and more. These are strange times that we are living in. Even though we don’t live in an area that is prone to earthquakes, floods, or fires, it is good to know survival skills in case we have another ice storm like we had in 1991. Also, don’t forget those nasty winds we have which sometimes take out power lines.

Scouts learn how to display our flag and show our colors. They discover that they are part of something bigger than they are. They learn to take pride in opening a door for someone or doing a daily good deed for a David Aman, neighbor. After 25 years, it is Associate Crew Advisor my belief that children will be better adults for having been in Scouts. In short, I encourage all adults to have their kids give Scouts a try. I guarantee we can teach them how to hit a target with an arrow, so bring on the zombies!

In a large bowl, combine all dry ingredients until wellincorporated. In a second bowl, stir together buttermilk, butter, honey, egg and soaked raisins. Hollow out a small well in the dry ingredients and slowly pour in the wet mixture. Stir until combined and sticky. Form into a loaf and transfer to baking pan. Cook for 35-40 minutes until a knife inserted in the middle comes out clean. Let cool and remove from parchment-lined dish. Page 28
