SHRIMP POTATO PATTIES Makes about 2 dozen 6 medium-size red potatoes, peeled and quartered 1/2 cup (1 stick) butter 1 cup finely chopped yellow onions 1/4 cup chopped celery 1/2 cup seeded and chopped red bell peppers 1/2 cup seeded and chopped green bell peppers 1/2 cup seeded and chopped yellow bell peppers 3/4 teaspoon salt 1/4 teaspoon cayenne 1/4 teaspoon freshly ground black pepper 1/4 teaspoon Tabasco brand pepper sauce 2 pounds medium-size shrimp, peeled, deveined and coarsely ground in a food processor 2 large eggs, well beaten 1/4 cup chopped freshly parsley leaves 1/2 cup peanut oil 1/2 cup all-purpose flour 1. In a large saucepan, boil the potatoes in lightly salted water to cover until fork tender. Remove from the heat and drain. Transfer them to a large mixing bowl and mash with a fork. Let cool. 2. Melt the butter over medium heat in a medium-size skillet. Add the onions, celery, bell peppers, salt, cayenne, black pepper, and Tabasco, and cook, stirring, until soft, about 5 minutes. Add the shrimp and cook, stirring until they turn pink, about 3 minutes. Remove from the heat and let cool for about 5 minutes. 3. Combine the shrimp mixture with the potato mixture. Add the eggs and parsley and mix well. Let cool for 10 minutes. 4. Heat the oil in a large skillet over medium heat. 5. Form the shrimp mixture into patties, using 1/4 to 1/2 cup of the mixture, depending on what size you desire, and pat lightly with the flour. Cook two to three at a time in the hot oil until golden brown, about 3 minutes on each side. Drain on paper towels. Serve hot.

On "Halloween Nite" the Town of Riga Recreation Department along with the Churchville Lions Club, hosted their annual Halloween Parade to provide the community's young "Trick or Treaters" a safe environment in which to
participate. The parade started at the Churchville Commons and was led up Main Street by the Churchville Fire Department's fire truck and the Churchville Fire Police provided safe passage to the Church Lodge in Churchville Park. Once there the youngsters were treated to a beautifully decorated building where apples, cider, donuts, and of course bags of candy were served. A costume contest was also held. All involved were thrilled that the ghoulish characters were able to participate in a safe and secure environment. HUGE “Thank
You’s” go out to the following people and organizations that continue to make this event memorable year after year…Lions Ruth Stewart, Lucy Hackett, the Riga Recreation Dept., Churchville Lions Club, the Churchville Fire Department, Churchville Fire Police, the Monroe County Parks Department, and parents of all the “Trick or Treaters”. The polarization of the US has set us up to be susceptible to manipulation. Instead of asking the more insightful questions and viewing the responses with an open mind we take a party (or tribal) stand and seek to PROVE our position. That opens us to deceptive practices: Changing the criteria, turning perpetrators into victims, deflecting attention, minimizing criminal behavior by generalizing it. Don’t be duped, it's a lie.
In this week’s edition 68% of those polled thought that monuments already erected should never be removed. There are over 700 Confederate monuments and an additional 800 Confederate symbols spanning 31 states and were erected during the Jim Crow era (1870s-1950s). Two of Stonewall Jackson’s great-greatgrandsons penned an open letter to the mayor of Richmond, the former capital of the Confederacy as well as the grandsons’ hometown, regarding Jackson’s statue there. “[W]e are writing today to ask for the removal of his statue, as well as the removal of all Confederate statues from Monument Avenue,” they wrote in their letter published on Slate. “They are overt symbols of racism and white supremacy."
Sunday my ATM card and transaction got frozen on the screen. While I was messaging the bank on FB and talking to them, some of you were swearing at me and throwing me dirty looks. Well, being a Sunday no one was at the bank, so I had to secure my card before I left. You would have done the same thing. Really, some of you people didn't have to act the way you did. It was not my fault. I worked out a solution with the bank, didn't say a word to you angry people and went over and bought a lottery ticket and won $100. I was the winner, not you in more ways than one. Not my fault what happened, the angry looks and words were not appreciated.

PETS AND HOLIDAY GIFTING Furry, finned and feathered friends help make a house a home. These companions are more than just pets; they’re often cherished family members. So it should come as no surprise that, come the holidays, people want to lavish extra attention on their animals by way of presents. The American Pet Products Association says pet owners spend billions of dollars on their pets each year. The majority of pet owners plan to gift their pets on holidays such as Valentine’s Day, Halloween and Christmas. DogTime.com says that pet presents are not a North American phenomenon, either. Pet owners in the United Kingdom are expected to spend the equivalent of $46 U.S. per pet on gifts. While dog owners are more likely to buy their pets gifts, cat owners have been closing that gap over the years. Some pet parents even offer Christmas cards or hang Christmas stockings for their pets. According to data from PricewaterhouseCoopers, shoppers between the ages of 17 and 21 are willing to spend more than anyone else ($70) on holiday gifts for their pets.

Serves 6 to 8 2 to 3 tablespoons unsalted butter 2 pounds apples, peeled, cored and cut into thick slices 1/2 cup honey, preferably sage honey 1/2 cup white wine Zest of 1 lemon Juice of 1 lemon Fresh sage sprigs for garnish 1. Melt the butter in a large skillet over medium heat. Add the apples, turn the heat to high and sauté until they begin to brown on the edges, about 5 minutes. If some are getting too well done, remove them and place on a plate while the rest continue to cook, then return them to the skillet when all are done. 2. Reduce the heat to low and add the honey, wine, lemon zest, lemon juice, and 1/2 cup water. Cover and allow to cook until the apples are tender but still firm; you don’t want them to turn into applesauce. 3. Serve this in a bowl, tuck in a couple sprigs of fresh sage from your garden, and tell your guests all about sage honey.

Serves 2 1/3 cup orzo 2 large tomatoes 1 cup crabmeat, picked over for pieces of shell 1/3 cup chopped black or green olives 2 tablespoons crumbled reducedfat feta cheese 2 tablespoons chopped fresh dill 2 teaspoons balsamic vinegar 1/8 teaspoon salt 1/8 teaspoon black pepper 1. Cook orzo according to package directions, omitting salt if desired. Drain and rinse under cold water; drain again. 2. Meanwhile, cut thin slice off tops of tomatoes; reserve tops. Using spoon, carefully scoop out seeds and pulp; reserve for another use. 3. Gently toss together crabmeat, olives, feta, dill, vinegar, salt, and pepper in medium bowl. Spoon crabmeat mixture evenly into tomato shells and cover with reserved tomato tops. Cook’s note: Scoop the seeds and pulp from the tomatoes into a storage container. Cover and freeze up to 4 months and toss them into a soup or stew.

Plaid Friday: Plaid is the New Black By Amanda Dudek
You’ve heard it before: “I saw this, and it just made me think of you!” Maybe you thought, Am I really the kind of person that makes people think of oversized fuchsia slippers? Don’t blame yourself. You’re yet another victim of one-size-fits-all gifting, but move over, Black Friday and Cyber Monday. There’s a new player this season: Plaid Friday. It all started in Oakland, California in 2009 when gallery owner, Kerri Johnson, grew tired of the seasonal shopping focus repeatedly being on the big box stores. Deciding it was time for local business owners to “weave together” and take back holiday shopping, Johnson created the local business event that is sweeping the nation: Plaid Friday. Now, on Plaid Friday, local businesses across the United States are offering specials to customers who shop while wearing plaid as a gesture of solidarity with both these local businesses and their communities. Not only are you practically guaranteed to choose more unique gifts, but shopping Plaid on Friday offers a host of other benefits, as well. Shopping local has a greater positive impact on your local economy. Local businesses pay local taxes. They hire local people. They also tend to source their goods locally. According to the Institute for Local self-reliance’s 2016 article, Amazon’s Stranglehold, compared to Amazon, independent retailers create 2x as many jobs for the same amount of revenue. Similarly, according to the Andersonville Study of Retail Economics, local business generates 70 percent more local economic activity per square foot than big box retail. According to another statistic, money spent at a local business generates 2.5x more wealth for the local economy compared to money spent at a chain-owned business. Local money spent locally stays and grows local communities; it’s that simple. If every family in the United States spent an extra $10 a month at a locally owned, independent business instead of at a national chain, over $9.3 billion would be directly returned to our economy. Shopping local puts you in touch with local expertise. According to the Codex Group in its article, “why Online Book Discovery is Broken (and How to Fix It),” one learns that at a local store, you are as much as 3x more likely to discover something “New.” Independent, local retailers have a great deal more freedom to choose which products they sell, and they typically choose products with
which they have experience and which they trust. Different products at each local retailer mean a greater diversity of products, and more options tends to increase the chances that consumers will be able to find a more exact fit for their needs and wants. Additionally, local businesses are often able to offer more individualized attention and assistance to their customers, making certain they find the best possible options to suit their needs. Shopping local is better for the environment. Shopping local helps reduce the amount of international shipping and transport involved in commerce. Therefore, it also reduces processing, packaging and transportation waste, leading to less pollution because of this shipping and transport. Local businesses tend to use more locally-produced goods and local resources. These local, independent businesses are also much more likely to reuse materials, conserving both resources and energy. Shopping local builds community involvement. When you are out shopping in your community, you have greater chances of meeting and talking with your fellow community members. You are more likely to become involved with your fellow community members and, therefore, in your community, as well. Meanwhile, your locally spent dollars can make the difference between success and failure for several local businesses while helping to maintain community life. Was Case of ‘Bird Lung’ an Allergy or Infection? --DEAR DR. ROACH: I was a very active, healthy 68-year-old until March, when I was hospitalized for two weeks for bilateral pneumonia. I was told by doctors at the hospital that it would take four to six weeks to get my health back. However, I experienced shortness of breath and bouts of coughing for months, and insisted on seeing a specialist three weeks ago. A CT scan and bronchoscopy showed symptoms typical of bird lung. We had a cockatiel for 17 years! I am now taking prednisone and ibuprofen, which are helping to clear up the inflammation. I hope to be able to return to work soon. My family doctor and several other doctors I know said that they’d studied this at med school but had never seen it in their practices. I hope this serves as a warning to other people who might be tempted to buy a pet bird or to breed them. I was lucky, but someone in poor health might not have survived the deadly combination of pneumonia and bird lung. ANSWER: “Bird lung” is a term that might refer to either of two possibilities. The first condition is “bird-fanciers lung” -- essentially an allergic reaction to bird droppings, feathers and the proteins of various birds. It can look very much like pneumonia, with abnormal chest X-ray findings that can be indistinguishable. The only cure is to get away from the source of the allergens, but prednisone might be necessary in severe cases. It is not an infection. The second possibility is an infection called psittacosis (sit-a-CO-sis), caused by the bacterium Chlamydia psittaci. Cockatiels are commonly infected by this organism, and the birds do not always appear ill. Psittacosis can be a very severe illness, potentially affecting multiple systems, but it usually responds rapidly to appropriate antibiotics, such as tetracyclines. Given your history, I suspect that bird-fancier’s lung, also called hypersensitivity pneumonitis, is more likely. It sounds like your specialist is treating you appropriately. *** DEAR DR. ROACH: I read that microwaving food can cause the food to lose nutritional value or even to become carcinogenic. Is this true? -- S.G. ANSWER: Not really. Heating food does cause some nutrients, such as vitamin C, to break down. But microwaves don’t do that more than any other cooking method does. In general, the longer a food is kept very hot, the more nutrients are lost. So quick heating keeps in the most nutrients. Quickly steaming is another way. That’s essentially what a microwave does, since it heats water molecules very efficiently, steaming the water contained in food or that you use to rinse it. In fact, microwaving may be better than boiling, since many nutrients can be lost in the water if you just throw it out. As far as carcinogens (cancer-causing chemicals) go, these are products of very high heat, especially grilling meat. Because microwaves can heat unevenly, some areas of the food can get very hot while others stay cold, which is why it’s best, when microwaving, to cook for a short while and allow the heat to distribute itself before heating further or serving. CONSERVE FUEL DURING YOUR DAILY COMMUTE Commuting is a part of daily life for many working professionals. According to the U.S. Census Bureau’s 2011 American Community Survey, the average American spends 25 minutes commuting to work each day. However, Citi’s 2015 ThankYou Premier Commuter Index says the average commute time in the United States is 45 minutes. The reasons for that disparity are unknown, though if one accepts the latter statistic as more accurate than the yearsold Census Bureau data, it’s fair to say Americans spend far more time getting to work than their neighbors to the north. But commutes in Canada also can be lengthy, as Canada’s National Household Survey found that, in 2011, commuters in Canada spent an average of roughly 25 minutes traveling to work each day. While many people enjoy their daily commutes, feeling it’s a time to prepare for the day ahead and, if using public transportation, to relax and let someone else do the work, it’s fair to say the majority of commuters would like to spend less time getting to and from work. Many would also like to spend less money getting to and from their offices, and finding ways to conserve fuel is an effective way to do just that.

Close vents to the outside in areas like attics and basements to limit the amount of cold air that gets indoors. Think about insulating unheated areas, as well as using pipe sleeves, heat tape or wraps on exposed pipes. By opening kitchen and bathroom cabinet doors, homeowners can allow warm air from a home to reach pipes under the sink. Your 4 simple ways to save more for retirement It’s never too early to begin saving for retirement. While millions of people have no doubt heard or read those very words before, surveys indicate that few people are taking that lesson to heart. A 2018 survey from Bankrate.com found that 20 percent of Americans don’t save any of their annual income. Things aren’t necessarily rosier in Canada, where the financial institution CIBC reports that 32 percent of people nearing or on the cusp of retiring have nothing saved for retirement. Saving for retirement can seem impossible in households where every dollar counts. But the following are four simple ways to save more for retirement without making dramatic lifestyle changes. 1. Turn raises into retirement savings. According to the WorldatWork 2018-2019 Salary Budget Survey: Top Level Results, salary budgets in the United States are projected to rise by an average of 3.2 percent in 2019, while those in Canada are expected to rise by 3 percent. Working professionals can save more for retirement by converting some or all their raises into retirement savings. Pre-tax retirement accounts allow working professionals to put aside money before taxes are paid, so weekly paychecks will not be greatly affected if you choose to increase the percentage of your income you deposit into such accounts. Do this each time you receive a raise and your retirement savings will grow considerably. 2. Put bonuses to work. Professionals who receive bonuses can speak to their employer and request that their retirement contribution rates be increased when bonuses are issued.
