Farfalle with Crabmeat, Asparagus, Scrambled Eggs, Garlic, and Herbs Makes 4 to 6 servings 1 pound farfalle 1⁄2 pound asparagus, trimmed and sliced diagonally, 1⁄4-inch thick 10 extra-large eggs 4 tablespoons unsalted butter 1 garlic clove, minced 1⁄4 cup freshly grated Parmesan cheese, plus more for serving 2 tablespoons heavy cream 1⁄2 pound cooked lump crabmeat, picked over to remove any bits of shell or cartilage 1⁄4 cup finely chopped fresh chives 2 tablespoons finely chopped fresh Italian parsley Freshly ground black pepper Bring a large pot of water to a boil. Add the farfalle and cook until al dente, following the manufacturer’s suggested cooking time. About 2 minutes before the pasta is done, add the asparagus.

Meanwhile, in a mixing bowl, beat the eggs with a fork or whisk until slightly frothy. Set aside.

When the pasta and asparagus are done, drain and set aside.

Immediately melt the butter in a large skillet over medium heat.

Add the garlic and sauté until fragrant, about 1 minute. Add the pasta and asparagus and toss briefly to coat them with the butter mixture. Pour in the eggs, add 1⁄4 cup Parmesan and the cream, and stir and toss the mixture until the eggs just have begun to form moist curds, about 2 minutes. Add the crabmeat, chives and parsley and continue cooking and tossing until the eggs have formed more solid curds that cling to the farfalle, 1 to 2 minutes more.

Serve immediately, passing grated Parmesan and black pepper for guests to add to taste.

Vegetable oil spray lb. walnut halves & pieces lb. dried figs, stems removed, quartered cup all-purpose flour teaspoon baking powder teaspoon fine sea salt cup sugar large eggs, lightly beaten teaspoon vanilla extract cup diced candied orange peel cup walnut brandy

Preheat the oven to 225 F. Coat the inside of a 9-by-13-inch baking pan with the vegetable oil spray; set aside. Toss the walnuts and figs in a large mixing bowl; set aside.

Mix the flour, baking powder, salt, and sugar in a medium bowl. Toss 3 tablespoons of the dry ingredients with the nuts and fruit to coat.

Adds the eggs and vanilla to the remaining dry ingredients and mix with a wooden spoon to form a smooth batter. Mix in the candied orange peel. Scrape into the nuts and fruit and toss with a rubber spatula until everything is evenly coated.

Scrape the batter-coated nuts and fruit into the prepared pan, wet your hands with cold water, and pack the nuts and fruit firmly into the pan. Set in the oven and bake for 8 hours, until the top is golden brown and a skewer inserted into the center comes out clean. (An instantread thermometer inserted in the center of the cake should register 215 to 225 F.) Remove the pan from the oven and spoon the brandy over the top. Cool on a rack for 30 minutes.

Run a knife around the edge to loosen, invert onto a rack, remove the pan, turn right-side up, and cool to room temperature.

Variation: You can “bake” this in a slow cooker; you will need a 11⁄2-quarter soufflé dish and a 6-quart or larger slow cooker.

Once the batter is in the soufflé dish, put it in the slow cooker and cook on low for 6 hours.

Bake until the streusel is browned and the fruit is bubbling, about 25 minutes. Let the tart cool until it can be handled, then remove the pan sides and place on a platter. Serve warm or at room temperature, with chantilly cream on the side.

A Healthy Diet Isn’t One Size Fits All DEAR DR. ROACH: Most health professionals agree that one should follow a “healthy diet,” yet no one ever says exactly what that is. I have low thyroid, high cholesterol, high blood pressure and diabetes. Some of my meds cause chronic constipation.

I and hundreds of others would be most appreciative if you could print a structured diet to follow for a week or two, and then we could repeat it. -- F.G. ANSWER: This is a question I get often, but I have been reluctant to answer it. I certainly could print a diet that I think is healthy, but depending on your medical conditions, it might not be precisely right for you. You have diabetes, so avoiding sweets is particularly important, and since you have high blood pressure, it’s more important for you than it is for others to keep your sodium intake low.

However, the most important reason I can’t publish a healthy diet that would work for everybody is that food choices are intensely personal and relate to your upbringing and locale. With my own patients, I don’t try to give them a diet they should change to, but instead get a careful diet history and work with them to try to make their diet healthier.

For most people, that means reducing red meat and choosing other good protein sources, like legumes, fish, nuts or tofu. It usually means increasing vegetables and fruits, reducing sugars and substituting whole grains for processed ones. It often means removing unhealthy snacks and sugary drinks entirely.

What it emphatically does NOT mean is taking the joy out of eating. If I have a patient who really, really enjoys a less-thanhealthy dish, I recommend that the patient eat it, without guilt, but infrequently, so that it becomes a special indulgence. For most people, it’s easy to make some changes in the diet in order to feel better, get healthier and maybe live longer. *** DEAR DR. ROACH: My daughter recently was operated on for a large tumor in her head. They called it a paranasal sinus cancer, and said that it is very rare, with only a few other known cases. Can you help me know what caused this? -- F.W. ANSWER: Paranasal sinus cancers are very rare. They usually have no symptoms until they get large enough to invade other structures, and so can be very advanced when diagnosed. They often present as pain in the teeth or face, bleeding or persistent nasal obstruction.

They also can press up against the eye, causing double or blurry vision.

Treatment depends on the type of tumor cell, but it usually involves surgery and may include both radiation and chemotherapy.

As far as what caused it, there is no way for me to tell for your daughter. However, factors that increase risk for paranasal cancers include air pollution, tobacco smoke and occupational exposures, especially for leather, textile and wood workers. Human papillomavirus may be the cause in some people.

The prognosis also depends on the cell type. With rare cancers, it is very hard to make a general statement. 1 quart milk Freshly grated nutmeg for garnish 1. Separate the egg yolks from the egg whites, setting the whites aside for a moment.

2. In a large mixing bowl, beat the yolks with a hand mixer until completely combined.

Add the sugar and beat until it reaches a creamy consistency.

3. Add the brandy, rum and bourbon, and then the milk, beating well.

4. In a medium-size mixing bowl, beat the egg whites with a hand mixer until soft peaks form (be sure before beating the whites that you have cleaned and thoroughly dried the beaters).

5. Fold the egg whites into the yolk-sugar-alcohol mixture.

Refrigerate the mix until well chilled (at least 3 hours).

6. Stir to recombine as needed. Serve the eggnog in mugs, topping each serving with some nutmeg.

Churchville-Chili Middle School Students Collect Donations for Foodlink Thanksgiving Baskets

Even Exchange Music teachers in Churchville-Chili’s middle school recently partnered with Foodlink and some local churches to collect food for Thanksgiving baskets to be delivered to families across Monroe County.

MAGIC MAZE WINTER

Mrs. Shelley Sadler, seventh-grade band director worked with her colleagues in the middle school music department to organize and run a three-week food collection. Students in grades 5-8 were asked to bring in either stuffing mix or cranberry sauce to their music classes. Children in all music classes chorus, band, and orchestra students - helped with the donations.

There was a friendly competition to see which class could collect the most food. The 5th and 6th grade band room won! They collected over 100 boxes of stuffing and about 70 cans of cranberry sauce.

A special thanks to Mrs. Mary O’Connor and Mrs. Christie Ricker in that classroom for helping to collect all that food.

Second place prize went to Miss Elise Provenzano’s seventh and eighth grade chorus. Other classes/ teachers who participated include: Ms. Phyl Contestable, Miss Chelsea Hill, and Mr. David Ciarvella.

Overall, the middle school collected approximately 180 boxes of stuffing and 136 cans of cranberry sauce. Those donations were added to others across the county, allowing Foodlink to create 1,060 baskets for families in need across the greater Rochester area.

The middle school would like to thank everyone who contributed, as well as Executive Principal Carl Christensen for his support!

Methods to treating arthritic knees Osteoarthritis of the joints can affect people of all ages, but is one of the leading causes of disability in the aged population in the United States. A study published in the Caspian Journal of Internal Medicine found incidence of knee OA is rising by increasing average age of the general population.

Age, weight, trauma, and repetitive movements are common risk factors for the condition.

According to Dr. Scott Paris of Central Jersey Spine and Wellness, more than 27 million people in the country suffer from knee arthritis. An estimated 37 percent of Canadians aged 20 or older who had been diagnosed with arthritis reported osteoarthritis, with 29 percent occurring in the knees, states Statistics Canada. Knee arthritis occurs when there is a degeneration of articular cartilage that covers and protects the patella (knee cap) at the knee joint, offers the online resource Arthritis-Health. Since this cartilage has no nerve endings, some people can experience arthritis but feel no pain. However, pain may occur when doing specific activities that cause impact between bones, like jumping, walking up stairs or certain sports.

Over time, knee arthritis may become worse, and pain can be accompanied by stiffness and loss of mobility. This may be accompanied by knee locking or buckling.

Those who suffer from knee OA may seek treatment. In 2014, the Osteoarthritis Research Society International, a nonprofit organization dedicated to promoting osteoarthritis research and treatment, updated its recommendations for the treatment of osteoarthritis targeted to different patient characteristics. The main categories of treatment include non-drug treatments, medication, injections, and surgery.

• Non-drug treatments: Examples of non-drug treatments include exercise, stretching and range-of-movement strategies. Weight loss can alleviate excess strain placed on the hips and knees and reduce pain. Braces, sleeves and orthotics may help reduce pain and joint stiffness when directed properly through a specialist.

• Medications: Many medications are geared around reducing inflammation and pain and include over-the-counter pain relievers and NSAIDs, such as acetaminophen, ibuprofen and naproxen sodium. Topical NSAIDs may be tried, and these can reduce the risk of gastrointestinal side effects from oral medications. OARSI also found that the antidepressant duloxetine may help with chronic knee pain.

• Injections: The Arthritis Foundation says that some doctors can inject corticosteroid compounds directly into affected joints. Use of hyaluronic acid injections can supplement the natural substance that gives joint fluid its lubrication and viscosity. These injections may help relieve pain and improve mobility.

• Surgery: In cases when the aforementioned treatments are unsuccessful, doctors may suggest surgery. The Arthritis Foundation says joint lavage and arthroscopic debridement, which involve flushing the joint with a sterile saline solution and the surgical removal of tissue fragments from the joint, are controversial but may help some people achieve shortterm relief. Partial knee replacement may be another option that offers a similar improvement in function, but fewer complications than a total knee replacement.

Osteoarthritis in the knee can be painful and restrictive.

Working with a qualified doctor, individuals can develop a treatment plan that works for their specific conditions.

‘Twas the Saturday before Thanksgiving, when all through the store Shoppers were hustling to fill their carts with more.

The recent festival/concert held in [local] Park caused quite a noise disturbance after 10:00 pm two nights in a row.

The concert could be heard all over the city well into the evening when most people are trying to sleep. Perhaps this event could be held at a different location in the future.

The aisles were filled with displays of the season, While children of young age ran by for no reason.

And I, shopping alone, looked for that cinnamon crumb cake, That great tasting dessert that I, for one, did not have to bake.

The more I looked around, No cake could be found.

I continued to shop, picking up the items on my list, And checking them off so nothing would be missed.

Then to the checkout line where I unloaded my cart.

When all the goodies were on the belt, I suddenly felt a start.

I had reached in my pocket for my credit card and it was not there.

I told the cashier. She said she would hold my order with care.

A young lady said, “I will get that”, and she gave the cashier her Visa card.

I thought she was asking for the empty cart.

She caught me off-guard.

Your 4 year old daughter is up and out getting ice cream at 9:45 pm. The shop closes at 10 and they don’t have the ice cream she wanted. What is a 4 year old doing up at this hour? A lesson learned that she can’t always have what she wants, and to parents, plan your outing at a reasonable hour for both the shop and your daughter’s bedtime. No wonder the clerk was frustrated.

DOMESTIC VIOLENCE PROGRAM ADVOCATE POSITION – FULL TIME, PART-TIME OR PER DIEM FOR OVERNIGHT COVERAGE ASSISTANCE Some weekends and some holiday coverage required. Must be able to provide supportive services to residential and non-residential clients and assist in maintaining the day to day operation, security and confidentiality of the shelter. Hot line responsibilities, must have good communication skills. Extensive and ongoing training and educational opportunities. Prefer a minimum of AS or AAS or equivalent, one year experience in human services, crisis intervention, community residence or related field is helpful. Valid NYS Driver’s License and reliable vehicle required. Competitive wages and great benefits.

BA/BS HUMAN SERVICES DEGREES, BSW AND L-MSW PREFERRED WITH FULL AND/OR PART-TIME POSITIONS AVAILABLE Must be able work in a fast paced and busy environment providing effective services to both residential and non-residential clients, respond to hotline calls, helping maintain the day to day operations, security, and confidentiality of the shelter and the clients. Ability to multi-task effectively is helpful. Minimum BA/BS Human Services degree - BSW and/or L-MSW or equivalent preferred.
