Renowned Ballerina Aesha Ash Encourages Byron-Bergen Students to Dream Bigger By Christine Klem Ballet star Aesha Ash told the hundreds of students at Byron-Bergen Elementary that when she was growing up in Rochester, “there were no princesses or fairies that looked like me. There were no magical creatures, unicorns or swans that looked like me.” When she dreamed of being a ballerina, she was told that there were no black ballerinas, and that she would never succeed. She dreamed anyway, and she did succeed. She was accepted to the legendary School of American Ballet where she was chosen to join the New York City Ballet when she was 18 – one of the first black dancers in the corps. How did this world-famous dancer and winner of the National Women’s History Museum’s 2016 Women Making History Award, come to be in Byron-Bergen? Fourth-grade teacher Alyson Tardy heard about Ash’s Swan Dreams Project, which was founded in 2011. This project uses powerful imagery to counter negative stereotypes of race and socio-economic background and inspire children to dream bigger. She thought that Ash’s message would be a great tie-in to the school’s character education program. She invited Ash and coordinated the special visit. Students surprised their visitor with a hallway lined with artwork featuring swans of many shapes and colors. “The art is so beautiful,” said Ash. “I’m honored that the kids welcomed me this way.” At the crowded assembly, Ash shared her story with attentive students, beginning with her passion for dance and her determination to become a ballerina. She explained how she was part of Rochester’s Urban Suburban program, and constantly faced questions and misunderstanding from peers about her background and city neighborhood. Her family was not rich; she told

Even when Ash became a professional ballet dancer, she felt a sense of not belonging, of being different. “All my life, I’ve fought to change perceptions and dispel myths – for myself, my family and my Rochester community,” she said. “The more that people told me that I couldn’t do something, the more I wanted to do it.” Ash’s professional dance career lasted 13 years. It included eight years with the NYC Ballet along with performing in the Bejart Ballet in Switzerland and Alonzo King’s Lines Ballet, and with many other companies as a freelance artist. She and her family currently live in California where she is working to make the Swan Dreams Project an afterschool program. She hopes to open a studio where she can teach ballet to children who are not able to afford lessons. ORANGE-GINGER BABY BACK RIBS INGREDIENTS: 5 pounds baby back ribs SAUCE: 1 cup ketchup 1/2 cup hoisin sauce 4 tablespoons soy sauce 2 tablespoons grainy mustard 3 tablespoons honey 2 tablespoons orange juice 2 tablespoons Asian chili sauce 1 tablespoon Worcestershire sauce 4 cloves garlic, minced 1 tablespoon ginger Grated zest of an orange Salt and pepper DIRECTIONS: Preheat the grill to medium and turn dow n to low. Prepare ribs for grilling by removing the membrane from the underside of the ribs. Prepare several foil envelopes and place 2 strips of ribs into each envelope, w ith 1/4 cup of w ater and seal tightly. Cook for 2 to 21/2 hours on low (300* F) w ith the lid closed. Check the thermometer on the front of the grill lid frequently and adjust the c ooking temperature accordingly. This may require turning one or tw o burners off and cooking indirectly. To prepare the sauce: Combine all ingredients in a saucepan and set aside until the ribs are ready to remove from the foil. Gently heat the sauce on the side burner for 10 to 15 minutes before using. Carefully remove the ribs from the foil and place on grids. Baste generously w ith sauce, and grill for 10 minutes per side, leaving the lid open, turning several times, and basting w ith sauce after each turn. Heat remaining sauce to a boil and then allow it to simmer for 5 to 10 minutes. Serve on the side as a dipping sauce.

STRAWBERRY-GLAZED FRENCH TOAST WITH SWEETENED SOUR CREAM Serves 4 • • • • • • • • • • 1.
8 1-inch-thick bread slices, cut from a country or peasant loaf 2 cups half-and-half 4 egg yolks 3 tablespoons light brown sugar 1 tablespoon vanilla extract, plus 1/2 teaspoon 1/2 teaspoon cinnamon 3 tablespoons unsalted butter 1/2 cup sour cream 1 tablespoon granulated sugar 1/3 cup strawberry jam or preserves (see note 2) Arrange a rack at center position and preheat the oven to 400 F. Place the bread slices on a baking sheet and bake until dry and very lightly browned, about 8 minutes per side. Watch carefully so that the bread does not burn. Remove the bread from the oven and reduce the oven temperature to 200 F. 2. In a medium bowl, whisk together the half-and-half, egg yolks, brown sugar, 1 tablespoon vanilla, and cinnamon. Pour the mixture into a shallow pan (a 9-by-13-inch glass baking dish works well). Add the
toasted bread slices and soak them 4 minutes per side. Remove to a large plate or platter. 3. Place a large, heavy frying pan over low to medium heat. Add about 2 teaspoons of the butter, or enough to coat the bottom of the pan lightly. When melted, add enough bread slices to fit comfortably in a single layer. Cook slowly until the slices are golden brown and crisp on both sides, about 4 minutes per side. Remove to a baking sheet and place in the warm oven. Repeat, adding more butter to the pan as needed until all the bread slices have been sautéed. 4. In a small bowl, stir together the sour cream, granulated sugar and remaining 1/2 teaspoon vanilla. 5. When ready to serve, spread each toast with a thin coating of strawberry jam and top with a dollop of sweetened sour cream. Note 1: The best bread for this dish is an unsliced loaf of good-quality peasant or country bread, preferably one without an extra-hard crust. One that is rectangular, rather than round, is more convenient, but either will do. Cut off the ends of the loaf, and reserve for another use. Then slice the bread into 1-inch-thick slices. If your loaf is large and the slices seem large, cut them in half. Note 2: You can try other jams, preserves or marmalades. Cherry, raspberry or peach preserves and orange marmalade are other possibilities.

AVON - March 11, 2018 at age 83. She is survived by her loving husband, Donald A. Clements of Lima; children, Joanne Cole, Thomas (Marcia) Veeder both of Avon, Judith (Michael) Cirre of NH, Willard J. Veeder (Stacey Ackerman); grandchildren, Daniel, Christopher (fiancee Alison Diaz), Martin Cole, Sarah (Matthew) Tandle, Karen, Thomas Veeder, Emelia Veeder Ackerman; great granddaughter, Emma Cole; several nieces and nephews.
Surviving are four children, Ricky (Pearl Llima) Kelly, Shane Kelly Portuguez, Michele Wiley and Christina (Jeremy) Mercer; 11 grandchildren; two great-grandchildren; brothers, David (Kathy) Kelly, Edward (Kathy) Kelly and Scott (Tracy) Kelly; and many nieces and nephews.
Helen was predeceased by her husband, Willard H. Veeder Jr. and several sisters and brothers.

Diana Lynn Stevenson (Anderson) March 8, 2018 Lima: Diana, a resident of Lima, NY, passed away peacefully at the Teresa House in Geneseo, NY on March 8, 2018 at the age of 72. Diana grew up in the Town of Parma, NY (in Hilton). She was the daughter of Victor and Marion Anderson and sister to Judith Rapelje. In 1963, she graduated from Hilton High School in Hilton, NY. Early on, she worked at Eastman Kodak Company in Rochester, NY. During this time she met her husband James H. Stevenson and they were married in 1967 at the Hilton Baptist Church. Their son Eric J. Stevenson was born in 1972 and their second son Brett J. Stevenson was born in 1977. In 1985 she started working with her sister Judith, at The 1812 Country Store in Hemlock, NY. She always felt very lucky to be able to spend so much time with her sister, doing a job she loved, in a place that became the focal point for her family. She also worked at the Sullivan Insurance Company in downtown Honeoye Falls, NY where she grew close to many people in the community. Diana was a wonderful mother and grandmother. She was giving and selfless. Even near the end, she always had a gentle smile and kind word for everyone around her. She loved her family and pets more than life itself. She kept her home open to everyone, making sure her children and their friends always felt welcome. Many of her children’s friends felt she was their second mother. She will be missed, but her love, compassion, and kindness will live on through her children, grandchildren, and everyone whose lives she touched. Diana is survived by her husband, James H. Stevenson and her sister Judith Rapelje. Her son, Eric J. Stevenson and his wife Bonnie Tamarin, live in Apex, NC with their daughters Liana and Kyra Stevenson. Her son Brett J. Stevenson and his wife Elizabeth “Anna” Stevenson (Quimby) live in Lima, NY with their daughter Skylar Stevenson. Calling hours will be held on Saturday, March 17th, 2018 from 1-3pm at the Kevin W. A MATTER OF PRESERVATION The practice of embalming became widespread in this country during the Civil War for the purpose of transporting the dead long distances to their homes for burial. Elsewhere, motives for preserving human corpses vary according to time and place. In ancient Egypt, citizens were mummified with the goal of gaining eternal life. In the Andes, the bodies of Incan emperors were preserved so they could continue to play key roles in society. In Japan and Tibet, holy men were mummified and revered ancestors were preserved for eternity so they could be consulted on important community matters. Mummies of prehistoric Britain were mummified out of respect for their protective powers and ability to intervene with the gods. Life is full of opportunities to show someone we love them. CONSERVE FUEL DURING YOUR DAILY COMMUTE Commuting is a part of daily life for many working professionals. According to the U.S. Census Bureau’s 2011 American Community Survey, the average American spends 25 minutes commuting to work each day. However, Citi’s 2015 ThankYou Premier Commuter Index says the average commute time in the United States is 45 minutes. The reasons for that disparity are unknown, though if one accepts the latter statistic as more accurate than the yearsold Census Bureau data, it’s fair to say Americans spend far more time getting to work than their neighbors to the north. FRUITS & VEGETABLES MAY LOWER RISK OF PAD Pain in the lower extremities may be indicative of a condition called peripheral artery disease, or PAD. The National Heart, Lung, and Blood Institute says PAD occurs when plaque builds up in the arteries that carry blood to the limbs, head and organs, contributing to atherosclerosis, or a hardening of the arteries. Blocked blood flow and eventual limited oxygen supply to these areas can cause pain and numbness. When severe enough, PAD may lead to tissue death. Discomfort due to PAD usually occurs when a person is walking or exercising, because the muscles are not getting enough blood during these activities to meet their needs, says the American Heart Association. Those with diabetes may confuse pain with neuropathy, and the elderly may think pain from PAD is a normal sign of aging and stiffness. When undiagnosed, PAD can lead to further complications, including increased risk for heart attack, stroke, and coronary artery disease. Even amputation of a limb may be necessary. However, PAD is preventable when taking a few steps to improve diet. According to new research published by the American Heart Association, eating more fruits and vegetables may reduce the risk of developing PAD, which affects an estimated 8.5 million people in the United States alone. Researchers examined dietary data from roughly 3.7 million men and women, with an average age of 65. Approximately 6.3 percent of the subjects had PAD, and 29.2 percent indicated they ate three or more servings of fruits and vegetables each day. The discovery was those who reported eating three or more daily servings of fruits and vegetables had an 18 percent lower risk of PAD than those who reported eating less of these foods. The association between fruit and vegetable consumption and lower PAD risk remained even after accounting for age, gender, race, smoking status, and various cardiovascular risk factors. Saturated fats, trans-fats and sodium can contribute to the formation of plaques that lead to PAD. Replacing these foods with more vegetables and fruits that are naturally lower in saturated fats can help, as can increasing dietary fiber consumption. One way to incorporate these types of foods is to adhere to a Mediterranean diet, which offers high proportions of legumes, fruits, vegetables; moderate amounts of fish and dairy; and limited meat and meat products.

Unnecessary Procedure on Terminal Patient --DEAR DR. ROACH: My mother has stage 4 cancer. She just went to a dermatologist, who performed Mohs surgery on her nose. I am BEYOND upset by this unethical behavior. The country is already deeply in debt, and Medicare is paying for this? Unconscionable! Not to mention the pain and suffering of my mother, who is now at risk of a secondary infection. I was sickened by the entire ordeal. -- J.B. ANSWER: I agree with you completely that often patients with terminal diseases receive unnecessary care. There have been studies clearly documenting this. However, the studies don’t answer why, in a particular case, a physician performed these treatments, which add only pain, anxiety and expense. I suppose it is possible that the motivation is simple greed; however, I still have enough faith in my colleagues that I think that is a very unusual reason; I think it’s far more likely that a specialist just doesn’t see the big picture. There’s an old expression that when all you have is a hammer, the whole world looks like a nail, and I think some specialists see a problem and fix it without realizing that the problem they are fixing isn’t likely to ever cause symptoms. For example, primary-care doctors order unnecessary tests, especially screening tests. I see mammograms ordered for women with advanced colon or ovarian cancer who are in palliative care, and this makes no sense. I have heard some physicians mention that insurance companies monitor the frequency of “quality indicators,” such as mammograms, which affect their ratings and reimbursement. That’s an example of a well-meaning system motivating wrong behavior. I should emphasize that not all care for terminal patients is useless. If the goal is to improve quality of life or reduce suffering, then I am all for it, after a consideration of the costs (pain and inconvenience as well as dollar costs). *** DEAR DR. ROACH: I have heard of yeast infections, but I don’t know what causes them. How do they affect the body, and what can be done to get rid of them? -- C.R. ANSWER: Certain yeasts, but especially the Candida species, are found on our skin, mucus membranes and GI tract. They normally live in balance with the 100 trillion or so bacteria we carry around. However, yeast can cause disease that ranges from fairly mild, like thrush of the mouth or vagina, to life-threatening, like a bloodborne, widely disseminated invasive infection. Candida infection of mucus membranes is usually caused by changes in our bacteria, especially after the use of antibiotics. The antibiotics kill the bacteria they are supposed to (hopefully), but they also may kill the healthy bacteria that assist us in digestion (leading to diarrhea or worse), and this allows the other bacteria and yeast to grow. Some people with genetic faults in their immune system are predisposed to chronic candida infections. These are uncommon but can be severe, and may require treatment by specialists, such as infectious disease doctors and immunologists. The life-threatening yeast infections generally happen in people with severe illness and with poor immune system function. *** Dr. Roach regrets that he is unable to answer individual letters, but will incorporate them in the column whenever possible.
