American Irish Stew Servings: 6 1 tablespoon extra-virgin olive oil 1 1/4 pounds beef, top round, cut into 3/4-inch pieces 3 cloves garlic, minced salt & pepper, to taste 1 medium onion, coarsely chopped 3 medium carrots, peeled and cut into 3/4-inch pieces 2 medium parsnips, cut into large chunks (optional) 3 cups low-fat, reduced-sodium beef broth 4 medium russet potatoes, peeled and cut into large chunks 1 tablespoon chopped fresh rosemary 1 leek, coarsely chopped 2 tablespoons chopped fresh parsley
In large pot over medium-high heat, heat oil. Add beef and garlic. Cook, gently stirring until meat is evenly browned. Season with salt and pepper. Add onion, carrots and parsnips. Cook 3-4 minutes. Stir in broth and bring to a boil. Reduce heat to low and simmer about 75 minutes, or until meat is tender. Stir in potatoes and simmer another 30 minutes. Add rosemary and leeks. Continue to simmer, uncovered, until potatoes are tender. To avoid potatoes falling apart, do not overcook. Serve hot and garnish with parsley, if desired. Nutritional information per serving: 370 calories, 8 g total fat (2 g saturated fat), 43 g carbohydrate, 32 g protein, 6 g dietary fiber, 427 mg sodium.

He acts younger than his age but is very fun loving & curious. He likes to push around barrels & exercise balls as well as roll in the snow making snow Pegasus. Shortman is now used for mounted archery and hunter pace jumping competitions. He did not like jumping when we bought him but now, he gets eager when he sees jumps are set up. He is 15 hands tall (5 ft. at his back, like his owner) and 1,100 lbs. Shortman likes orange tic tacs, candy corn and molasses. He has been the best therapist, teacher and friend to his now 21-year-old owner. Congratulations to the Caledonia Fire Department for taking first place in the Scottsville Parade of Lights truck decorating contest. Great job! Just wanted to give a shout out to anyone who has outside decorations up and lit during the early mornings and afternoons. I drive a school bus for pre-k kids and it makes their day as we run around town picking up kids. I hear a lot of ahhhs and ooos. Thanks...it gives the kids something to watch for instead of "are we there yet". P.S. I would remind people to pay attention and not run the stop signs on the busses...it is a BIG ticket and points on your license.

Obviously an impatient too much in a hurry person. In a parking lot, salt sprayer spraying salt in parking lot, sprayed it all over me and the [person] had a smile on his face. Woman continually stopping and braking, letting everybody go across road, letting people turn left, kept on doing it, and my car skidded stopping, I had to keep watching her. Yes, I was doing the speed limit. No, I wasn’t tailgating. I’ll renew my license next year, but who really wants to?

--DEAR DR. ROACH: After having several strange-looking “pimples” on my thighs and one on my face, I was told it is lymphomatoid papulosis. One or two people in a million are diagnosed with this. I know that it is not contagious, but what is it? What causes it, how is it treated, and what can I do to avoid these? They take weeks to heal. -- R.R. ANSWER: Lymphomatoid papulosis is a rare disease. It is in the category of cutaneous lymphoproliferative disorders. It is a chronic disease, and lasts years or even decades. The underlying cause is not known exactly, but it is related in many ways to other lymphoproliferative diseases, such as mycosis fungoides and Hodgkin’s lymphoma. The cells of the skin lesions you notice have similar genetic rearrangements as lymphoma cells. Fortunately, LyP has an excellent prognosis, although people with LyP are at increased risk for developing one of these serious conditions. The papules of LyP can appear on the extremities or the hands and face, and less commonly on other places on the body. They may start off as small red papules, get larger and then crust over. Often, several exist at different stages. Diagnosis may not be easy, as it takes an experienced dermatopathologist (pathologist with special training in skin diseases) and enough tissue to look at the genetics of the cells. Treatment is not necessary for every person with LyP. But for those who do require it, one might be ultraviolet-light treatment. More severe cases may require methotrexate, but this needs to be managed by an expert. Experts have recommended six-month visits to evaluate for early signs of enlarging lymph nodes, which might indicate the development of a lymphoproliferative disorder. *** DEAR DR. ROACH: I would like your opinion, as a noninterested party, on laser therapy. I see many ads touting its advantages and success in treating bone-on-bone knee osteoarthritis. My orthopedic doctor recommended knee replacements on both my knees. I had arthroscopic surgery on the left knee four years ago and was recommended total knee replacement on the right knee about three years ago. How long can I put off surgery, and what is the outlook if I don’t have it done? I am an 80-year-old female in good health, except for the osteoarthritis. I use naproxen when needed. If it works, I think laser therapy would be less pain and downtime. ANSWER: Low-level laser therapy has been studied in people with osteoarthritis, and some of the studies have shown reductions in pain and stiffness. The laser is thought to have an effect on circulation. However, the laser generally has been effective in people with mild to moderate disease, and bone-on-bone is severe. I think laser may help some people, but some of the benefit probably is due to placebo effect. As far as putting off your knee replacements, I have been through this many times with my own patients. Some get it done right away; others avoid surgery until they can’t take it any longer, with worsening pain, stiffness and inability to exercise. Most people have told me that they wish they had done the surgery sooner. Focus on the Children: The Spirit of Christmas All Year Round By Amanda Dudek During the holiday season, there is an almost supernatural outpouring of generosity, giving that flows from the fortunate to those who have been less so. How extraordinary then to find a charitable organization that not only lavishes generosity upon youngsters with less at Christmastime, but which also cares for and strives to meet the needs of these children throughout the rest of the year, as well! One such organization, Focus on the Children (FOTC), is a funding agency that serves the needs of children in Livingston County, needs which cannot be met by any other agency. Even when others help, there are often gaps in the resources that are available, and the FOTC seeks to fill those gaps. Its primary focus year-round is providing new beds and cribs for babies and children in need, something no other agency does. It also aims to provide opportunities like camps, sports equipment, musical instruments or lessons and trips, evening the playing field for children disadvantaged by their families’ economic or social background. Focus on the Children also runs yearly Back to School and Christmas programs which only accept new items. It has generous donors within Livingston county and beyond who have made these campaigns a huge success. This Christmas, the FOTC is on track to serve around 300 children. The process by which these programs work is rather unique and demonstrates the compassion, consideration and respect the agency has for the families and children it assists. The process for receiving gifts from their Christmas program is an excellent example of this. First, a family must be recommended by a third party such as a school counselor or social worker. This is because FOTC no longer has an in-house caseworker. Instead, they have chosen to utilize the help of caseworkers and counselors of schools and offices like DSS, DOH, DOMH to receive referrals of children after assessing their needs. This not only helps put more of its money toward the children, but it also nurtures the relationship between families and these individuals. This school counselor or social worker must first ask the parents/guardians of the
children for permission to recommend their child(ren) to the FOTC program. This may seem like a small requirement, but it makes a huge difference. Rather than being unnecessary needlessly embarrassed by sudden questions or receipt of items, a familiar person, most likely someone who is already helping the family in some way, offers to help equip the parents/guardians with gifts to give to their children for the holidays. For someone struggling financially, so many things can feel as though they are beyond one’s control. Going to the parent first puts this process within the parent/ guardian’s control. Once approved, the parent/guardian receives mail from FOTC and answers questions to help the agency choose gifts best suited for the ages and tastes of their child or children. The parent/guardian is given a date, time and place from which to pick up the unwrapped gifts set aside for them. This, too, is thoughtful as many parents/guardians look forward to wrapping gifts for their loved ones. In previous years, the generosity of others has enabled FOTC to be very gracious, giving several items to each family. FOTC is a United Way agency, and a majority of its funding comes from private donors and memorials. According to the Focus on the Children President, Sarah Sherwood, “Focus on the Children has a wonderful rapport with the community, and we are humbled by the community’s generosity year after year.” While its Christmas program is one of FOTC’s most precious campaigns making certain that no child goes without a Christmas it is not the only way in which the FOTC supports children throughout Livingston County. The holiday season is always a beautiful time of year, characterized by many good deeds of love and charity. Still, when the season ends, many children’s needs remain. Focus on the Children hopes that many kind and compassionate friends and neighbors will be willing to share their blessings with these children not only at Christmas but throughout the year, as well.

Your 3 tips to overcome everyday aches and pains Pain is a significant concern for many people. Estimates from the International Association for the Study of Pain suggest that one in five adults across the globe suffer from pain. Pain can affect anyone, even people who have not been in an accident or suffered an injury while playing a sport or performing another physical activity. For example, lower back pain, which can be caused by sitting at a desk for long stretches of time, is the most common type of chronic pain in the United States. Such pain may be unavoidable, but that does not mean it and other types of everyday aches and pains cannot be overcome. 1. Begin a well-rounded exercise regimen. Regular exercise that includes both strength training and cardiovascular exercise increases blood flow and helps build a strong core. A strong core supports the spine and reduces the pressure on it, making it less likely people who sit for long stretches at a time will end the day with lower back pain. Routine exercise also helps other areas of the body by keeping muscles loose and flexible. Before beginning a new exercise regimen, men and women, especially those with existing aches and pains, should consult their physicians about which exercises they should do and which they might want to avoid. 2. Employ RICE. RICE, which stands for rest, ice, compression, and elevation, can help men and women overcome the aches and pains that result as the body ages and tendons begin to lose some of their elasticity. RICE might be most helpful for people who have been diagnosed with tendinitis. Athletes over 40 who engage in activities that require repetitive motion might need to take more days off between rounds of golf or other competitive and/or repetitive activities. If tendinitis
