In large pot over medium-high heat, heat oil. Add beef and garlic. Cook, gently stirring until meat is evenly browned. Season with salt and pepper. Add onion, carrots and parsnips. Cook 3-4 minutes. Stir in broth and bring to a boil. Reduce heat to low and simmer about 75 minutes, or until meat is tender. Stir in potatoes and simmer another 30 minutes. Add rosemary and leeks. Continue to simmer, uncovered, until potatoes are tender. To avoid potatoes falling apart, do not overcook. Serve hot and garnish with parsley, if desired. Vitamin E Unlikely to Cause Ill Effects --DEAR DR. ROACH: I’m a 47-year-old female in good overall health. About six months ago, I began to take several supplements, one of which was vitamin E (200 IU). I had no noticeable adverse reactions to any of the supplements. About 10 days ago, I started taking 400 IU of vitamin E. Right about the same time as this increase, I began having painful stomach cramps, diarrhea, nausea and tiredness. After a week of this, someone suggested that the vitamin E might be the cause. I have stopped taking it and have even avoided foods high in vitamin E. Three days later, I’m still having the diarrhea and other symptoms. If the vitamin E was the cause of the symptoms, shouldn’t they have gone away by now? -- K.B. ANSWER: Vitamin E is a fat-soluble vitamin, so it is possible for levels to build up in the body if it’s taken in high doses for long periods of time. However, toxic effects are unlikely at less than 1,500 IU daily, which is far higher than what you have been taking. Bleeding is one risk at high doses, as is a theoretical deficiency of vitamin A and D. I think it is far more likely that you happened to get a case of gastroenteritis -- inflammation of the stomach/intestines, often caused by a virus. It’s unlikely to be due to the vitamin E. However, since vitamin E supplementation hasn’t been shown to improve any of the many conditions it has been studied for, I don’t recommend that you continue to take it. Go easy on eating for a few days after gastroenteritis: The timetested BRAT diet (bananas, white rice, peeled apples and dry toast) is effective. You can get enough fluid through water or apple juice, along with some salt, like chicken or vegetable broth. *** DEAR DR. ROACH: I was told that due to the way our food is processed and grown, most people lack magnesium and should take a magnesium supplement. Should I? I read that one symptom of low magnesium can be constipation or irregularity. -- C.B. ANSWER: The prevalence of low magnesium depends on the population. About 2 percent of the general population has low magnesium levels, but among people with diabetes, the rate is about 25 percent. In people who abuse alcohol, the prevalence may be as high as 30 to 80 percent. Some diuretics used for high blood pressure predispose a person to magnesium deficiency. High magnesium foods include leafy green vegetables, nuts, cereals and avocados. The most common symptoms of severe low magnesium are loss of appetite and muscle tremors and weakness. Magnesium is necessary for potassium and calcium balance, so these can be deficient in cases of low magnesium. Since only a small amount of body magnesium is in the blood, magnesium deficiency should be considered in people with unexplained low calcium and potassium. Low magnesium is rare in nondiabetic people who eat a good diet. I don’t recommend magnesium supplementation for low-risk people with no symptoms. Symptoms of low magnesium should be evaluated by a physician and not self-treated. Make a household favorite more healthy Many beloved dishes might be enjoyed more often if they were only a little healthier. Author and former personal chef Michelle Dudash was once asked by a client if the she could make a healthier version of chicken parmesan. The result of that request is the following recipe for “Skinny Chicken Parmesan with Spinach,” which Dudash ultimately included in her book, “Clean Eating For Busy Families” (Fair Winds). The recipe was a hit with Dudash’s client and will surely be a hit at home cooks’ dinner tables as well.
Skinny Chicken Parmesan with Spinach Makes 6 servings For the sauce: 2 teaspoons extra-virgin olive oil 2 cloves garlic, sliced 1 28-ounce can whole tomatoes 1/4 teaspoon dried basil 1/4 teaspoon dried oregano 2 pinches salt 2 pinches freshly ground black pepper 1/2 teaspoon honey For the chicken: 3 tablespoons grated Parmesan cheese 2 tablespoons whole-wheat flour 1/2 teaspoon salt, divided 1/4 teaspoon freshly ground black pepper 1/4 teaspoon dried basil 11/2 pounds chicken breast, cut into 6 pieces, pounded to 1/4 inch 2 tablespoons plus 2 teaspoons extra-virgin olive oil, divided 4 cups baby spinach 1 teaspoon lemon juice 3/4 cup fresh mozzarella cheese, sliced into 6 medallions (or shredded) 6 cups cooked whole-grain thin spaghetti tossed in 2 teaspoons olive oil Preheat oven to 375 F and coat the bottom of a 9 x 13-inch pan with olive oil spray. To make the sauce: Heat a medium saucepan over medium heat. Add oil and garlic and cook gently for 30 seconds. Do not brown. With your hand, squeeze each tomato into the pan and add basil, oregano, salt, pepper, and honey. Reduce to medium heat and simmer for 20 minutes, lowering the heat as needed. To make the chicken: Combine parmesan cheese, flour, salt, pepper, and basil in a medium dish and coach chicken with cheese mixture. Place a large skillet over medium heat and add 2 tablespoons of oil. When oil is shimmering, add chicken, rounded-side down, and cook until golden on one side, about 5 minutes. Arrange chicken in a baking pan. Pour remaining 2 teaspoons of oil into skillet and add spinach. Cook spinach for 1 to 2 minutes until wilted and swirl in lemon juice. Gently press spinach to release water and divide spinach on top of chicken. Spoon sauce around and over the chicken, place mozzarella on top, and sprinkle with 1/4 teaspoon salt. Bake for 15 minutes until chicken is cooked through. Serve over spaghetti.

Fairport Library Challenges Teen Brains with New Group Challenge By Amanda Dudek scape Rooms are a fairly new, popular group activity in which participants must solve several puzzles by putting together whatever clues they discover and “escaping” the room they are in with the final passcode before their time runs out. These escape room experiences typically have themes such as Sherlock Holmes, an epidemic outbreak or being a wanted person on the run. Now, at least one library has taken this concept and recreated it for teens. Carly Dennis, Teen Librarian at the Fairport Public Library, has taken this popular entertainment activity and created “Escape the Library!” Area teens can’t get enough. “We use Breakout EDU,” says Carly. “It gives us everything we need to develop one of these rooms.” Breakout EDU is the creator of several different games, including physical, digital and digital game builder based activities, which encourage critical thinking, teamwork and complex problem-solving skills. Carly Dennis refers to a thick packet of information as she explains, “We use the puzzles included, but sometimes, we may need to adjust them. Some are just too easy, so we increase the difficulty level. Others are too hard to solve, so we add some additional information or clues.” Ms. Dennis then creates the materials to place around the room. Some of the pieces are on the several long tables in the center of the space, and others are placed up on the walls around the room. This Escape Room’s theme is based on the movie, “Elf,” and participating teens must solve the puzzles placed around the room to find the combinations to several locks securing a box containing the key to Santa’s sleigh. The entire event is scheduled to take one hour with participants receiving only 45 minutes to complete over half a dozen puzzles. Young people, ranging in age, pour into the designated room right on time. Ms. Dennis explains the rules of the Escape Room activity as well as the theme-based situation. For example, players may not simply fiddle with the locks. They must have an actual combination guess to try based on clues. There are also two Hints available from Ms. Dennis which the players can ask for at any point so long as the decision to use the hint is unanimous. This particular group of players consisted of approximately a dozen or so teens. Therefore, being unanimous in a decision would, much like the activity itself, requires teamwork indeed. The timer was then set, and the game began. As players moved around the rooms, groups repeatedly formed and unformed. Cooperation, critical thinking, collaboration, creative thinking and many other such skills were actively practiced

Teens successfully solved puzzles and opened locks as time progressed; however, one of the most interesting things to watch was the dynamics within the group itself. Throughout the activity, when puzzles proved challenging, some participants quickly wanted a Hint. However, due to the unanimous vote requirement, several other students would encourage them to keep trying and receiving the Hint was delayed. While control of the Hints remained in player hands, the unanimous vote pushed peers to become motivators, encouraging more discouraged participants to try again. During the last puzzle, a vote for a clue was called for several times, even when over twenty minutes remained on the clock. Several players preferred to solve the puzzle without the final Hint. These players negotiated with the group to wait until the fifteen-minute mark before accepting their final Hint. However, seconds before the fifteen-minute mark approached, a few determined and innovative teens discovered invisible ink on the clues! Importantly, players experienced a confirmed sense of confidence in their own critical-thinking and problem-solving abilities. Protecting your personal online data is equally important as your car or home. News For Older Americans Four Ideas For Health Care Planning In Retirement (NAPSI)—The Employee Benefit Research Institute estimates that a typical 65-year-old couple will spend a total of $265,000 in health care costs over the remainder of their lives. This staggering amount of money has the potential to derail even the best-laid retirement plans. Vanguard and Mercer recently developed a new framework, “Planning for Health Care Costs in Retirement,” that identifies practical tips for forecasting your health care expenses. Here are four top ideas: 1. Personalize health care costs. Start by understanding how your health history and current health status will influence expenses. Even your geographic location, marital status and age at retirement will impact your forecasts. 2. Plan for long-term care. This is a tough one to assess because half of retirees won’t even incur these costs, but on the other end of the spectrum, 15 percent of retirees will spend more than $250,000. Consider potential longterm care options, such as unpaid care from family and less expensive available facilities. 3. Create a hedge in your budget for other expenses. Research shows that retirement spending in virtually all categories other than health care tends to decline with age. By forecasting steady spending in other expense areas, you may create a buffer in your budget to deal with rising health care expenses. 4. Forecast costs in annual spending. There are so many variables involved in estimating health care costs in retirement that trying to plan around a total lifetime budget can be overwhelming.
