Chicken and Black Bean Chili Serves 6 to 8 1/2 cup olive oil or vegetable oil, divided 11/2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes 2 to 3 tablespoons chili powder 1 tablespoon cumin seeds 2 cups diced yellow onions 1 cup seeded, diced poblano chiles 1 red bell pepper, diced 3 canned chipotle chiles in adobo sauce, minced 1/4 cup minced garlic 1 14.5-ounce can black beans 1 15-ounce can diced tomatoes 2 ears corn, kernels cut from the cobs Salt Freshly ground black pepper 1 ripe avocado, halved, pitted, and diced 1 cup cherry tomatoes, quartered 1/2 red onion, diced 1/2 bunch fresh cilantro, minced

1/2 cup freshly squeezed lime juice 2 jalapeno chiles, seeded and minced 11/2 teaspoons kosher salt 1/2 cup crumbled Mexican cotija cheese 1/2 cup grated mixed cheddar and Monterey Jack cheeses Heat 1/4 cup of the oil in a heavy-bottomed, 8-quart pot over medium heat. Add the chicken, chili powder and cumin seeds and saute until the chicken is cooked through, 4 to 6 minutes. Transfer the meat to a bowl and set aside. Return the pot to the heat, add the remaining 1/4 cup of oil, and cook the yellow onions, poblanos, bell pepper, chipotles, and garlic, stirring frequently, until the onions start to brown. Stir in the beans with their liquid, tomatoes and corn and return the cooked chicken with all its juices. Turn the heat down to low and simmer, stirring every 5 minutes, until the chicken is cooked through and tender, about 25 minutes. Season with salt and pepper to taste. In a large bowl, combine the avocado, tomatoes, onion, cilantro, lime juice, jalapenos, and salt. Set aside. To serve, ladle the chili into bowls and top with the salsa and the cheeses.

Gluten-Free Dinner Rolls Makes 18 rolls 4 tablespoons granulated sugar 2 cups warm milk (about 110 F) 2 tablespoons active dry yeast 3 cups gluten-free all-purpose flour 2 teaspoons xanthan gum 4 teaspoons baking powder 1 teaspoon salt 2 extra-large eggs 1/4 cup neutral-flavored oil such as rice bran or canola 2 teaspoons vinegar, preferably apple cider Melted unsalted butter for brushing Tapioca flour for dusting Brush 18 standard muffin cups (one 12-cup pan and one 6cup pan) with melted butter and dust with tapioca flour. In a small bowl, whisk 1 tablespoon of the sugar into the warm milk. Whisk in the yeast to dissolve. Set aside to proof. The mixture will get foamy. If your kitchen is warm, the mixture will foam quickly, so watch it to make sure it does not overflow the bowl.

In a medium bowl, mix together the all-purpose flour, xanthan gum, baking powder, salt, and remaining 3 tablespoons sugar. In the bowl of a stand mixer fitted with the paddle attachment, beat the eggs on medium speed until foamy, about 3 minutes. Add the oil and beat for 2 more minutes. Reduce the speed to low, add the vinegar and beat to combine. Add the yeast mixture and beat to mix. Add the flour mixture and beat to combine, then increase the speed to mediumhigh and beat for 3 minutes longer. Distribute the dough equally among the prepared muffin cups and fill them about three-quarters full. With a sharp knife that has been dipped in tapioca flour, cut a deep slash in the top of each roll. Dip the knife in flour before each cut, and don’t worry if a little extra tapioca flour is left on top of the rolls. Preheat the oven to 375 F. Let the dough stand in a warm, draft-free place to rise until doubled in bulk, about 40 minutes. Brush the top of each roll with melted butter. Bake until the tops are a nice golden brown, about 20 minutes. If they start to brown too quickly, loosely tent the rolls with aluminum foil. Remove the rolls to wire racks to cool. If you are serving them immediately, it’s nice to put them in a tea towel-lined blanket to keep warm. Store in an airtight container for up to 3 days.

Irritable Bowel Disease, Syndrome Very Different DEAR DR. ROACH: Could you please explain the difference between irritable bowel syndrome and irritable bowel disease? What is the treatment for each? I saw in a health magazine that there is a blood test to determine which one someone may have. -- ES ANSWER: Although the two names are very similar, the conditions are very different. Irritable bowel syndrome is a common condition, more frequent in women than in men, of abdominal discomfort and bowel changes, such as diarrhea and/or constipation. It is managed by diet (such as the low-FODMAP diet I have recommended several times), stress management and sometimes medications. It can cause significant changes in one’s social life, in addition to pain and discomfort. IBS is a clinical diagnosis, and there is no blood test to confirm it. Primary-care doctors manage IBS, and severe cases may benefit from the care of a gastroenterologist. Irritable bowel disease -- of which there are two types: ulcerative colitis and Crohn’s disease -- is a potentially life-threatening condition of the GI tract. In ulcerative colitis, there is inflammation that’s limited to the colon, whereas in Crohn’s disease, the inflammation can be in any part of the GI tract, from the lip to the anus, though it is most frequent in the far end of the small bowel and the colon. IBD should be managed by a gastroenterologist, preferably one with special expertise in these diseases. IBD usually is diagnosed by colonoscopy or other endoscopy with biopsy. Many blood tests can be abnormal in IBD, but only the pathologist’s report is definitive. Most people with IBD will need medication treatment, although symptoms and therefore treatment may change dramatically across time. *** DEAR DR. ROACH: I am 83 and recently began having sciatica pain down my right thigh. My doctor recommended using a hotwater bottle. Are there any painkillers I can use? Are there any other products I can use? -- G.L.B. ANSWER: The sciatic nerve is a very large nerve that runs down the back of the leg. When the nerve is pressed on in the back -from a herniated disk in the back or from spinal stenosis -- there can be intense pain that feels like it is coming from the back, or anywhere from the top of the thigh to the foot. Since other nerves besides the sciatic can be affected, the condition is called lumbar radiculopathy. A herniated disk is when the shock-absorbing material in between the vertebrae comes out into the space where the nerve root is, on its way out of the spinal column toward the leg. Spinal stenosis is a narrowing of the bony canal through which the nerve travels. In most cases, people get better within four to six weeks. Standard pain medications, such as acetaminophen (Tylenol) or ibuprofen, can be helpful. If pain is severe and not responsive, there are other treatments, including a short course of steroids and narcotics, which should be given only during that initial period of pain. Assistive devices help people remain mobile Disabilities affect people from all walks of life. The Centers for Disease Control and Prevention estimates that around 55 million Americans have a disability of some kind. Of these people, 33 million have a disability that makes it difficult for them to carry out some daily activities. Statistics Canada states that, as of 2012, 13.7 percent of the population age 15 years or older reported having a disability that could impact daily life. People with disabilities may need assistive devices to reclaim some measure of their independence. For example, millions of people rely on wheelchairs or walking aids to get around. These are called assistive technology and rehabilitative devices, which include tools, equipment or products that can help people with disabilities get around more easily. These devices may be as small as magnifying glasses for reading to as large as wheelchairs. The National Institutes of Health state that 2.2 million people in the U.S depend on wheelchairs for day-to-day tasks and mobility. More than six million use canes, walkers or crutches to assist with mobility. The following are some of the common types of mobility devices available for purchase. · Canes: Canes are handheld devices that provide a little extra stability or support to weakened limbs. Canes are easily transported and can assist those who need only a little help. · Standard walkers: Also known as medical walkers, standard walkers offer substantial support and must be lifted

to move. That requires upper body strength, which can be difficult for some to maintain on long trips. · Rolling walkers: Rolling walkers are similar to standard walkers. But rolling walkers have wheels, either on the front only or on both sets of legs. They are somewhat less stable than standard walkers. Rolling walkers with wheel-locking devices may offer stability when needed. Some rolling walkers are called “rollators.” · Wheelchairs: Standard wheelchairs must be powered by the person in the chair or by someone pushing it from behind. This can be difficult for people with minimal upper body strength. Mechanical wheelchairs are powered with a lever or button. Some people may opt for motorized scooters over bulkier wheelchairs when possible. Assistive devices can be highly effective, but only when they are used properly and safely. Assistive devices should be measured for each user. Many walkers are height-adjustable. The width of a device also is important. A walker or another device that is too wide can affect mobility or require modifications to be made around the home. Weight is another consideration. The device should be lightweight so it can be maneuvered, but also weigh enough to provide enough stability to keep users upright. Users should proceed slowly and favor their stronger sides when relying on canes or walkers. Devices should not be used to climb atop other items like step stools. Children should not be allowed to play with or ride on assistive devices. If there are safety belts or locks on any assistive technology, they should be put in place before use to prevent further injury.

Ingredients • Olive oil cooking spray • 1 teaspoon olive oil • 1 garlic clove, minced • 1 can (15 ounces) tomato sauce • 1/4 teaspoon salt • 1/8 teaspoon granulated sugar • 1/8 teaspoon crushed red pepper flakes (optional) • 6 tablespoons unseasoned panko or breadcrumbs • 1/2 teaspoon garlic powder • 1/2 teaspoon dried oregano • 1/4 teaspoon kosher salt • 1/4 teaspoon ground black pepper • 2 tablespoons enriched flour • 2 egg whites, lightly scrambled • 4 pieces Weight Watchers Light String Cheese (or Weight WatchersNatural Light Smoked Mozzarella String Cheese), cut in half Preparation 1. Spray a baking sheet with olive oil cooking spray. 2. In a medium saucepan, heat olive oil over medium-low heat until just warm, about 1 minute. Add garlic; sauté for 1 minute. Add tomato sauce, salt, sugar, red pepper flakes; stir well. Heat until sauce begins to bubble. Reduce heat to low; simmer 10 minutes. Remove from heat. 3. On a medium plate, combine panko, garlic powder, oregano, salt, pepper. 4. Place flour on small plate. Coat each stick in flour. Shake off excess; dip in egg. Dip sticks in panko mixture. Place sticks on baking sheet 2 inches apart. Spray tops with olive oil cooking spray. 5. Place baking sheet in freezer for 1 hour; refrigerate sauce. 6. Preheat oven to 400°F 15 to 20 minutes before serving. Remove baking sheet from freezer; place in oven. Bake for 8 to 10 minutes, until sticks are just heated through, not melted. Remove from oven. 7. Remove sauce from refrigerator. Microwave for 1 to 2 minutes until warmed through. Serve with sticks. What a blessing it was to have the Classical Conversations group visit the Genesee County Nursing Home. The residents thoroughly enjoyed the caroling, cards and poinsettia pins. Thank you for spreading Christmas cheer! My car was stuck in a snow bank last night in absolute awful weather. Even though seeing right in front of you was difficult, two people stopped and made sure I was okay. When we live in a world where everyone has a cell phone, we often think not to stop – how much more are we going to be able to help this person when they have probably called someone and are getting help already? Well, I will think to stop next time because it was reassuring, especially since I was out on rural roads with nothing nearby. Thank you to all who stop and offer to help when they see someone stranded as well as those who tow out our cars and brave the storms to help others. You are all appreciated! Once such tradition is making resolutions for the year ahead. Resolutions are promises to oneself geared around personal fulfillment and betterment. Resolutions are widely practiced, but some people may not understand the origins of New Year’s resolutions and why they have become the norm. Some historians tie the practice of making resolutions to the ancient Babylonians. More than 4,000 years ago, the Babylonians celebrated the New Year in March rather than January. The spring harvest was in March, and a festival called Akitu, which lasted 12 days, was celebrated. An important part of the festival was the crowning of a new king. Special rituals also affirmed a connection to the gods. The Babylonians made promises to the gods, which included vows to return borrowed objects and pay outstanding debts. Resolutions can also be traced to ancient Rome. The Romans were instrumental in creating a more formal calendar, and the start of the new year was moved from March to January (January and February were added to the Roman calendar under the rule of Numa Pompilius). Julius Caesar wanted to honor January’s namesake, Janus, the Roman god of beginnings. Janus’ two faces enabled him to look back into the past and forward into the future. Sacrifices to Janus were made, and worshipers exchanged gifts with one another. A custom of setting resolutions began during this period as well, with Romans promising to be good to one another. Eventually, these resolutions were funneled into prayers and fasting when Christianity was adopted by the Roman Empire. Other religious parallels include the Jewish holiday of Yom Kippur, which is a day of atonement and reflection as celebrants examine their wrongdoings and seek forgiveness and to behave better moving forward. Yom Kippur follows Rosh Hashanah, Judaism’s own new year. Resolutions also may be loosely tied to Medieval times. During this time, knights took a “peacock vow” at the end of the Christmas season. Each year, these knights would reaffirm their commitment to chivalry. Today New Year’s resolutions are largely a secular tradition, but they’re still connected to a desire to be a good person and put one’s best self forward.

Fairport ADEPT Program Donates to Foodlink By Christina Lewis Gursslin

Students in the ADEPT program at Fairport High School show the three barrels of food they collected as part of a food drive to help support Foodlink, in December.

Students in Ms. McGrath’s and Mrs. Burgess’s ADEPT (Accessing and Developing Employment, Personal and Transitions skills) classes at Fairport High School (FHS) recently hosted a food drive for the Foodlink BackPack Program. As a result, the class was able to donate three full barrels of food and was awarded third place during the Tops Markets Food for Families Weigh-In Challenge this month to help support tens of thousands of children in the 10-county service area who receive free or reduced-price meals at school. “Our students were amazing as they created and displayed posters all over the school, were part of the morning announcements each day

publicizing the project and encouraging donations, along with collecting and graphing the food we collected,” said FHS Special Education Teacher Assistant Julie Vaisey. Vaisey said students will be visiting Foodlink in early 2017 to help assemble the backpacks in an effort for students to see the process from start to finish. Foodlink is a regional food hub and the Feeding America food bank serves 10 counties around the region. In the 2015-16 school year, the BackPack Program served more than 4,000 children and distributed nearly 45,000 bags of food.
