MORCILLA CON SETAS (BLOOD SAUSAGE WITH MUSHROOMS, SPRING PEAS AND MINT OIL) Serves 4 1 pound morcilla blood sausage 1 pound mushrooms, sliced 2 tablespoons olive oil 4 cloves garlic, slivered Salt and pepper to taste 2 tablespoons white wine 1 cup shelled spring peas 1 tablespoon chopped fresh mint 2 tablespoons mint oil Mint Oil 1/2 cup extra-virgin olive oil 1/2 cup chopped mint Pinch of salt Cut the blood sausage into 12 slices. Sauté the mushrooms in olive oil with garlic, salt and pepper for 5 minutes. Add the wine and cook for 2 more minutes. Boil the peas for 2 minutes and drain. When mushrooms are done, remove from heat and stir in the peas. In a cast-iron skillet, sear the morcilla in a dry pan for 2 minutes per side. Arrange the slices of morcilla down the middle of a platter. Surround with mushroom/pea mixture and drizzle the plate with the mint oil. For the mint oil: In a small saucepan over medium heat, heat olive oil to warm. Remove from heat and add the mint and a small pinch of salt. Allow to rest for 1 hour. Drain through a sieve. Reserve extra mint oil for other uses, such as vinaigrette.

Heat oven to 300 F. Whisk melted butter with vanilla. Toss brown sugar with cinnamon, allspice and nutmeg. Toss popcorn with butter mixture. Sprinkle evenly with brown sugar mixture. Stir. Transfer to baking sheet lined with parchment paper. Sprinkle apple chips and toffee bits over top. Bake 15 minutes, or until toffee bits start to melt. Cool before serving. Tip: Add chopped pecans for extra crunch.

Santa will hand out presents and stuffed animals to all the children on the route. What Expecting Parents Can Do To Make Their Homes Safer • Conceal cables and cords. Cable and cord concealers are inexpensive and easily installed. Often used to cover cords hanging down from mounted televisions, concealers also can be used to hide cords coming from computers, lamps and other items that can pose a threat to young children. • Avoid hand-me-down kids’ furniture. The older a piece of furniture is, the less likely it is that the item will meet current safety guidelines. Some parents may be tempted to let their children sleep in the same crib they slept in as kids decades ago, but it’s safer to eschew nostalgia in favor of products that meet the latest safety standards. • Get rid of potential choking hazards. Prior to bringing their babies home, expecting parents can remove all small trinkets and other items that curious children may want to put in their mouths. When buying toys for kids, read the packaging to make sure each item is safe for babies and avoid buying or accepting any gifts with small pieces. • Store all medicines on high shelves behind cabinet doors. Vitamins and medicines should be stored on high shelves behind cabinet doors. If kids can see them, they’ll likely try to grab them. OTHER ITEMS TO IMPROVE OUTDOOR LIVING SPACES The popularity of outdoor living spaces has been growing for years. A 2014 study from the home remodeling and design platform Houzz found that 56 percent of homeowners were making updates to improve their yards for entertaining. Similarly, nearly 60 percent of architectural practices surveyed by the American Institute of Architects in 2016 said outdoor living spaces were popular features in the homes they built. Outdoor living spaces may also be sound investments for homeowners looking to improve the resale value of their properties. According to Remodeling magazine’s 2017 “Cost vs. Value” report, outdoor living spaces returned between 55 and 71 percent of homeowners’ initial investments at resale. When planning an outdoor living space, homeowners with ample backyards have much to work with. However, to make the most of the space while simultaneously hoping to get as strong a return on their investments as possible, homeowners should look to create spaces that offer broad appeal and are not too personalized.

Prep time: 30 minutes Cook time: 15-20 minutes Servings: 12 1 jar (16 ounces) Aunt Nellie’s Sliced Pickled Beets nonstick cooking spray 1 sheet frozen puff pastry, approx. 16-by-11 inches 1 tablespoon olive oil, divided 4 navel oranges, segmented 4 ounces crumbled Gorgonzola or other blue cheese, divided 1/4 teaspoon kosher salt (opt’l) 1/4 teaspoon dried basil 2 cups mixed baby salad greens 1/4 cup chopped pecans, toasted if desired Heat oven to 400 F. Drain beets well; set aside on paper towels to absorb remaining liquid. Discard liquid or save for another use. Spray large sheet pan with nonstick cooking spray. Gently place puff pastry sheet on pan. With pastry brush, gently spread 1/2 tablespoon olive oil on pastry sheet. Place about half the orange segments in two rows on top of pastry sheet, leaving 1-inch margins on all sides. Fold edges of pastry sheet to create border. Sprinkle 2 ounces crumbled Gorgonzola over oranges. Sprinkle with salt, if desired, and basil. Bake until golden brown, about 15-20 minutes. Remove from oven; cool on wire rack. Coarsely chop beets. In large bowl, toss together remaining orange segments, salad greens and chopped beets. Drizzle with remaining olive oil; toss gently to combine. Cut cooked galette into 12 pieces. DID YOU KNOW? According to the ASPCA, the number of dogs and cats euthanized in United States animal shelters has declined significantly since 2011. The ASPCA reports that approximately 1.5 million shelter animals are euthanized each year. That number is high, but it marks an improvement over 2011, when roughly 2.6 million dogs and cats were euthanized. The ASPCA credits part of this decline in euthanizations to an increase in animal adoptions and greater success at returning stray animals to their owners. Recent data indicates that roughly 3.2 million shelter animals are adopted each year, with a 50/50 split between dogs and cats. A greater emphasis on adoption can help reduce euthanization statistics even further.

age of 70 that I am in the early stages of the eye disease macular degeneration. The doctor told me to take PreserVision AREDS 2 vitamins. He said that I will be taking them for the rest of my life. I started them immediately, and a few nights later, I started having severe left leg cramps to the point where I woke out of a sound sleep to jump out of bed and shake off the cramp. Is this typical? -- C.L. ANSWER: For the dry form of age-related macular degeneration, the AREDS and AREDS2 vitamins are the usual treatment. Although they are not a cure, they do slow progression of the disease. My experience with these has been that they almost never cause side effects, and muscle cramping is not a reported side effect by the manufacturer. The timing, however, certainly is suspicious. You can try stopping them for a few days, then restarting them to see if the cramps are truly affected by the vitamins. If they are, you have two choices. The first is to deal with cramps the same way that people who get them at night for no particular reason deal with it, which is by getting regular moderate exercise and stretching the calf and hamstring muscles before bed. Having weight on the toes is a trigger for many people, so very light bed covers that aren’t tucked in can be surprisingly helpful. I’ve had a few readers come up with devices to keep all weight off of their toes in bed. Your second option is to discuss an alternative with your eye professional. The AREDS and AREDS2 formulas were shown to be helpful, but some eye professionals only choose a few components of the formula. ***

THE HEALTH BENEFITS OF DAIRY Heart health benefits: Some people avoid dairy because of perceptions that it is bad for cardiac health. A report presented at the 2018 Congress of the European Society of Cardiology that looked at 20 studies involving around 25,000 people found no association between the consumption of most dairy products (including whole fat varieties) and cardiovascular disease. The only exception was milk, but the results showed one would have to drink almost a liter of milk a day for a higher risk of cardiovascular disease. Still, the American Heart Association recommends adults choose fat-free or low-fat dairy products whenever possible. Also, a 2018 study published in the British Journal of Nutrition found men who ate plenty of fermented dairy products like yogurt and cheese had a smaller risk of coronary artery disease than men who ate less.

A favorite of adults and children alike, meatloaf can be prepared however cooks see fit, making it a versatile dish for family dinners. Parents who want to enjoy meatloaf with their families and do so while promoting healthy diets can try the following recipe for “Turkey, Vegetable & Oat MiniMeatloaves with Marinara Sauce” from Michelle Dudash’s “Clean Eating For Busy Families” (Fair Winds).
Turkey, Vegetable & Oat Mini-Meatloaves with Marinara Sauce Serves 6 Expeller-pressed canola oil spray 1 8-ounce package crimini (baby bella) mushrooms (about 21/2 cups) 1 small yellow onion, cut into eighths 4 cloves garlic, minced 1 tablespoon extra-virgin oil 1 cup dry rolled oats 2 large eggs 1 pound lean ground turkey (or beef or bison) 13/4 cups pasta sauce, divided 3 tablespoons red wine vinegar 1 tablespoon Italian herb seasoning 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper Scan our QR code to find your perfect invitation!
Preheat oven to 375 F. Coat a 9 x 13-inch baking pan or 6 mini loaf pans with spray. Pulse mushrooms in a food processor until finely chopped and add them to a large bowl. Repeat with onion and garlic. Place a large frying pan over medium heat and add oil. When oil is shimmering, add vegetables and sauté for 7 minutes or until water releases and evaporates completely, lowering the heat as necessary. Set aside. Process the oats until they are of a fine consistency. Whisk the eggs in the bowl used for the vegetables. Add processed oats, turkey, 3/4 cup of pasta sauce, cooked vegetables, vinegar, Italian seasoning, salt, and pepper and stir together with a fork until blended. Scoop the mixture into 6 mounds on the pan or into each mini-loaf pan, about 3/4 cup each. Shape each mound into a 4 x 2-inch loaf. Spread remaining 1 cup of pasta sauce on top of the loaves, distributing evenly. Bake on middle rack for 25 minutes, turning pan midway through cooking, until loaves are firm or a thermometer inserted in the middle reads at least 165 F. Allow loaves to rest for 5 minutes before serving. Recipe Notes: You can finely chop vegetables with a knife rather than using a food processor if you prefer. EXPLORE WORK WITH CONFIDENCE (NAPSI)—With unemployment at a 50-year low, companies are eager to draw talent from a diverse pool of job seekers, and organizations have recognized the inherent value in a diverse workforce that includes qualified employees with disabilities. Yet, for many who rely on Social Security disability benefits for income and Medicare or Medicaid, work seems like a gamble. What most people don’t know is that there are free services and supports available for those who qualify. Social Security’s Ticket to Work (Ticket) program and other Work Incentives can help take the guesswork out of finding or returning to work. More than 20 Work Incentives are designed to help individuals who receive Social Security Disability Insurance (SSDI) or Supplemental Security Income (SSI) due to a disability, transition to the workplace without immediately losing those benefits. Because each person’s circumstances are different, job seekers are encouraged to consult a certified Benefits Counselor, who can help them make informed decisions about employment and benefits. Through the Ticket program, people ages 18 through 64 who receive SSDI or SSI can receive free job-related services and supports. Whether they work with their state’s Vocational Rehabilitation (VR) agency or with authorized service providers called Employment Networks (EN), people can find the resources they need to prepare for, find and maintain employment. For individuals such as Shirley, this can mean exploring work with confidence. When Shirley was diagnosed with narcolepsy, her doctors advised her stop working. “It was distressing to lose that sense of control over my life,” she recalls. “…[and] stressful making ends meet on an SSDI check.” It took several years to find effective treatment, but Shirley was determined to regain her well-being and that feeling of self-determination she had lost. “Narcolepsy is not something that just goes away,” she says. “But I’ve learned to make adjustments… [and] work around the disability.” Once she felt ready, Shirley attended a job fair where she learned about the Ticket program and connected with an EN. With their help and encouragement, Shirley found work in her State’s General Services Administration, where she helps ensure small businesses are represented on state contracts. “I’m grateful for the help I received through Ticket to Work,” she reflects. “It feels wonderful to have my independence back! DID YOU KNOW? According to the National Autism Association, autism is a bio-neurological developmental disability that affects the normal development of the brain in various areas. Those areas include social interaction, communication skills and cognitive function. Autism generally appears before a child reaches his or her third birthday, and the NAA notes it is diagnosed four times as often in boys than it is in girls. Roughly 40 percent of children with autism do not speak, but parents whose children speak between the ages of 12 and 18 months should know that such youngsters can still ultimately be diagnosed with autism. In such instances, the NAA notes that children lose the words they previously learned. Incidences of autism appear to be on the rise, though the reasons for that remain unclear. According to a report from the Centers for Disease Control and Prevention, the prevalence of autism had risen to one in every 59 children by 2018. That’s twice as great as the rate in 2004, when the CDC reported one in 125 children were diagnosed with autism.

Don’t Eat Then To the person who felt the need to bash your local farmers over….. mud…. you reamed out farmers over mud. Farmers are under more than enough pressure already, with an alarming percentage of American farms going out of business year after year after year. Only a small percentage consistently make a profit. If you want them to get out and pick up dirt, expect to pay them more for it. If you still don’t get it, grow your own. Quit being entitled, eat the food they grew for you, and be grateful. More Being Added I see more junk and vehicles are being added to the Historical Area? I am not sure why this is OK. I know of many people that have contacted the village about this area. Is anything being done? As some residents are afraid to say anything because of the connections involved. When people are driving thru the area this is what they are seeing. Do we want this to be seen as a junk area? Are there any regulations regarding storing vehicles, boats, RV’s, containers? When the village board is asked, they say they will look into it, but never give a response on why this area is OK to be treated as a junkyard. Some residents take pride in their surroundings and village, while others say they do, but take advantage of their so-called liberties. Can we please clean up the historical site? Garbage is garbage no matter who or what it is!!

These can include limiting aggression, reducing the need to roam and helping to prevent fights with other animals. Also, spaying and neutering helps keep animal numbers under control.

ppy Jumping puppy sing is embarassing his owner DEAR PAW’S CORNER: Every time someone comes to visit or says hello at the park, my puppy, Jake, jumps up and tries to lick their face. It’s embarrassing, and I don’t know how to stop it. Can you help? -- Sean in Providence, Rhode Island DEAR SEAN: Jumping up is a common problem for dog owners (for dogs, not so much; they love it). So much so that it’s one of the first things a trainer addresses with an owner. What you’ll need to do is to improve Jake’s overall response to commands as well as train him not to jump on people. Here’s how you do it, step by step: 1. Train the “sit,” “stay” and “come here” commands every day, at home and at the park. Teach him to walk on the leash calmly at your side. 2. Work with a companion who will ring the doorbell from outside, while you command Jake to sit after the bell sounds. 3. Put Jake on a leash. Answer the door to the companion; when Jake tries to jump up, tug the leash once and command him to sit. Remember to use positive reinforcement during training -- lots of praise, with a treat when he follows a command correctly. Avoid negative enforcement like scolding, yelling or hauling on the leash. Jake will not be perfectly behaved for some time; you should keep his leash attached at home when you expect visitors. If he gets overexcited when a visitor arrives and he won’t sit, take him to his crate or another room until he calms down. Even after he masters the training and is better behaved at home and on the leash, you’ll need to train him regularly so that he doesn’t slip back into his jumping-up habit.
WHAT TO KNOW ABOUT CAT REPRODUCTION Cat pet parents must be especially diligent in their quest to squelch reproduction to help control cat populations. According to The Spruce: Pets, female cats that are not spayed will come into estrus (heat) as early as age four months. The animal health resource BondVet says a cat can go into heat as often as every two to three weeks. Generally, though, cats are seasonal breeders, indicates the United Kingdom-based RSPCA, which means heat cycles slow down in autumn. Another thing to note is that cats do not enter menopause like people and other animals. That means a female cat can continue to reproduce well into her senior years.

For example, MHA, a community-based nonprofit focused on promoting mental health, notes that a child’s death could inspire different feelings than the loss of an elderly spouse. When parents lose a child, that death may arouse a sense of injustice that can overwhelm the child’s parents as they contemplate lost potential, unfulfilled dreams and, in certain instances, the child’s suffering. Elderly individuals who lose a spouse may be overcome by feelings of loneliness. Recognition of these different reactions is important because it can help individuals and their support networks more effectively cope with their grief.

Colony Lane Circle of Lights: A Tradition of Peace, Love, and Joy BY SUZIE WELLS
I
n the quiet neighborhood of Colony Lane, a festive spectacle has been lighting winter nights for nearly three decades. The Colony Lane Circle of Lights, a dazzling display of Christmas and Hanukkah decorations, has become a beloved tradition for both residents and visitors. Nancy Sullivan Flynn, a long-time resident and one of the enthusiastic participants, shares insights into the history, inspiration, and community spirit behind this radiant celebration. For about 30 years, the six homes in the Colony Lane Circle have been participating in the holiday extravaganza. What started as simple decorations evolved into a “bit of a friendly neighborly contest” and “a light circus,” as more families joined in the merriment. Nancy, having lived in the neighborhood off and on for 60 years, reminisces about the early days and the evolution of this vibrant tradition. All six homes in the circle currently participate, with each family illuminating their homes and the five tall maple trees in the center of the circle. The process begins in early December, Nancy says, with every house aglow by mid-December. Even the one home that initially hesitated eventually joined the radiant circle, contributing to the brilliance that defines Colony Lane during the holiday season. When asked about the motivation behind the elaborate displays, Nancy’s response is simple yet profound: “To bring peace, love, and joy.” The inspiration for the beautiful arrays comes from the joy of driving around and admiring Christmas lights. Last year, Nancy says a family trip to Rahway Drive left a lasting impression, inspiring her daughter to gift Nancy’s husband, Rob, Light-o-Rama gift cards so they could acquire five of the snowflakes, a new addition to their ever-growing display. The decorations may change from year to year, but some elements remain constant. Gary Smith’s carousel continues to be a fan favorite. Nancy says, “If that were not put out, I think we would have protests.” This year, Flynn Power Washing professionally wrapped the five trees within the circle, adding a touch of elegance. Technological advancements, such as a projector and a movie screen, have replaced a 20-foot-tall Santa and snowman lost to high wind rips and motor malfunctions. “There’s always something new,” Nancy says. The motivation behind this dazzling display is purely communitydriven, especially for children of all ages. Despite Nancy (aka selfproclaimed Grinch)’s suggestions to scale back, her husband, Rob (aka Mr. Christmas, obsessed with new technology and computer-driven displays) as well as the neighbors persist in making the display bigger and better each year. The joy on the faces of visitors, especially when they reminisce about visiting the Circle of Lights as children, is the greatest reward for their efforts, Nancy admits.

The neighborhood’s goal is simple: to be a conduit for good. Whether people donate or not, the essence lies in spreading joy and goodwill. The holiday season, for Nancy and her neighbors, is about coming together as a community to make a positive impact on the lives of others. Amidst the twinkling lights and festive displays, one of Nancy’s favorite parts is the arrival of the Calogeros, friends who come each Friday and Saturday evening as Mr. and Mrs. Santa, along with an elf (neighbor Lynnie Smith), who helps park folks in the driveways when the families want to visit with Santa. This year, Buzz (Rob Flynn) and Woody (Michael Calogero), Elf (Sean McCormick) Mickey, Minnie, and Elmo are also available for pictures with visitors. Nancy explains that when these volunteers finish in the circle at 8pm, they come in and Nancy has a hot dinner ready for them. They share moments of warmth and camaraderie, “debate the best Christmas movies ever, and just spend time together because the BEST part of the holidays is spending time with family and friends.” As the Colony Lane Circle of Lights brightens the neighborhood, Nancy sends a heartfelt message to the community: “We wish you peace, love, and joy!” The tradition, fueled by the passion of neighbors such as Nancy and Rob, serves as a reminder that the true magic of the holiday season lies in coming together, spreading happiness, and creating lasting memories for generations to come.
This year, the Colony Lane Circle of Lights is not just about illuminating the night; it’s also about illuminating lives. Nancy says every year, folks would knock on their doors and offer money to help with electric bills, but the neighbors all declined. As a Girl Scout leader, Nancy says her troops annually adopt a family through RHAFT, the Rush-Henrietta Area Food Terminal, so the neighborhood has

CHOCOLATE CARDAMOM TRUFFLE CAKE Serves 10 to 12 Amaretti Base 5 ounces amaretti 1/2 stick (4 tablespoons) unsalted butter 5 tablespoons sugar Cardamom Truffle Filling 2 1/3 cups heavy cream 4 to 6 green cardamom pods, lightly bruised to open them 25 ounces dark chocolate (60-70% cocoa solids), grated 1/2 stick (4 tablespoons) unsalted butter, cubed 4 tablespoons chocolate liqueur Cardamom Cocoa Sugar 3 green cardamom pods 1/4 cup sugar 1/2 cup unsweetened cocoa 1 10-inch cake pan with a removable base, base and sides lined with nonstick parchment paper To make the amaretti base, finely crush the amaretti in a food processor or put them in a plastic bag and crush with a rolling pin. Melt the butter and sugar in a pan over low heat, then stir in the amaretti crumbs. Press the mixture evenly over the base of the prepared cake pan and refrigerate for 20 minutes. To make the cardamom truffle filling, put the cream and cardamom pods in a pan and heat until almost boiling. Remove from the heat and set aside to infuse for 20 minutes. Meanwhile, put the chocolate and butter in a saucepan. Strain the infused cream through a fine strainer onto the chocolate (the cream will be warm enough to melt the chocolate). If it doesn’t melt, warm over very low heat, stirring occasionally, but do not allow to boil. Stir in the liqueur, then set aside until almost cold, but not set. With an electric mixer, beat the chocolate mixture for a couple of minutes - this will give the cake a lovely airy texture. Pour onto the amaretti base. Let cool, then cover and refrigerate for at least 6 hours, or up to 48 hours before serving. To make the cardamom cocoa sugar, remove the black seeds from the papery cardamom pods and put the seeds in a spice grinder with the sugar and cocoa. Grind to a powder. Carefully remove the cake from the pan and peel off the lining paper. Set on a chilled serving plate and sift the cardamom cocoa sugar evenly over the top. Serve immediately, cut into very thin slices.

SAVE ENERGY AND MONEY (NAPSI)—Don’t let window replacement become a “pane” in your wallet. There’s a disconnect between saving money on energy with window replacements, according to government agencies. In fact, they found, it may take decades to recoup the cash spent on the installation of new, energy-efficient windows.
