PECAN-CRUSTED RACK OF LAM B W ITH ROSEM ARY BALSAM IC SAUCE 8 servings • Preparation time: 15 minutes • Cooking time: 30 minutes 2 American Lamb racks, frenched 2 tablespoons oil 1 teaspoon salt 3 tablespoons coarse grain mustard 2 cloves minced garlic 3/4 cup fresh bread crumbs 3/4 cup toasted and chopped pecans 4 tablespoons chopped fresh rosemary, divided 4 ounces semi-soft goat cheese, crumbled 1 cup balsamic vinegar Rub lamb w ith oil and salt. Place in a roasting pan, fat side dow n. Roast at 425 degrees F for 8 minutes; turn and roast an additional 8 minutes. Remove from oven. Combine mustard, garlic, bread crumbs, 2 tablespoons of the rosemary and cheese. Spread over lamb. Return to oven; cook 15 minutes, until crust is golden brow n. Remove from oven; cover w ith foil to keep w arm. In saucepan, combine vinegar and remaining 2 tablespoons of rosemary; simmer for 6 to 8 minutes or until reduced to half. Thought they might be most often associated with dogs, ticks can affect cats as well. According to Blue Cross for Pets, cats are most likely to encounter ticks if they live near areas with lots of deer and sheep or in regions where other wildlife, such as hedgehogs and rabbits, are present. While ticks are active throughout the year, cats are most likely to encounter them between spring and autumn. That’s due in part to the climate during these seasons, which tends to be warmer and therefore more inviting to cats, compelling them to spend more time outdoors than they do in winter. Ticks, which are egg-shaped, are big enough to spot, so cat owners should conduct a careful examination of their cats’ fur each time they come into the house after spending time in the yard. Blue Cross for Pets notes that ticks feel like small bumps on a cat’s skin. Ticks are most likely to attach themselves to particular areas of a cat’s body. These areas include the head, neck, ears, and feet. Routine brushing, especially whenever cats come inside after time spent outdoors, can help cat owners spot and remove ticks from their cats. It’s important to recognize that indoor cats are not invulnerable to ticks, as other pets and humans can track ticks indoors. Periodic inspections and brushing of indoor cats’ can protect them from ticks and the diseases ticks carry.

Young and middle-aged men are the most likely to be diagnosed with testicular cancer, though the ACS notes that 14 percent of cases occur in children, teens and men over the age of 55. Caulk or add weatherstripping. Small cracks and gaps around windows, which are most often found around windows in older buildings, might not seem like a big deal, but such breaches can lead to considerable energy loss. The DOE recommends using caulk to seal cracks that are less than 1/4-inch wide on the parts of the window that do not move (i.e., frames and where the trim meets the wall). Caulk might be less effective at fixing leaks larger than 1/4 inch in width. Employ weatherstripping to address leaks on movable parts of the window. Properly applied weatherstripping should adequately seal windows when they are closed without making it difficult to open or close them later on. Weatherstripping is available in various materials.

Many beloved dishes might be enjoyed more often if they were only a little healthier. Author and former personal chef Michelle Dudash was once asked by a client if the she could make a healthier version of chicken parmesan. The result of that request is the following recipe for “Skinny Chicken Parmesan with Spinach,” which Dudash ultimately included in her book, “Clean Eating For Busy Families” (Fair Winds). For the chicken: 3 tablespoons grated Parmesan cheese 2 tablespoons whole-wheat flour 1/2 teaspoon salt, divided 1/4 teaspoon freshly ground black pepper 1/4 teaspoon dried basil 11/2 pounds chicken breast, cut into 6 pieces, pounded to 1/4 inch 2 tablespoons plus 2 teaspoons extra-virgin olive oil, divided 4 cups baby spinach 1 teaspoon lemon juice 3/4 cup fresh mozzarella cheese, sliced into 6 medallions (or shredded) 6 cups cooked whole-grain thin spaghetti tossed in 2 teaspoons olive oil

To make the sauce: Heat a medium saucepan over medium heat. Add oil and garlic and cook gently for 30 seconds. Do not brown. With your hand, squeeze each tomato into the pan and add basil, oregano, salt, pepper, and honey. Reduce to medium heat and simmer for 20 minutes, lowering the heat as needed. To make the chicken: Combine parmesan cheese, flour, salt, pepper, and basil in a medium dish and coach chicken with cheese mixture. Place a large skillet over medium heat and add 2 tablespoons of oil. When oil is shimmering, add chicken, rounded-side down, and cook until golden on one side, about 5 minutes. Arrange chicken in a baking pan. Pour remaining 2 teaspoons of oil into skillet and add spinach. Cook spinach for 1 to 2 minutes until wilted and swirl in lemon juice. Gently press spinach to release water and divide spinach on top of chicken. Spoon sauce around and over the chicken, place mozzarella on top, and sprinkle with 1/4 teaspoon salt. Bake for 15 minutes until chicken is cooked through. Serve over spaghetti. Page 25

Yellow Lenses to Rescue for Macular Degeneration ---
DEAR DR. ROACH: I have an elderly friend who’s becoming blind from macular degeneration. After hearing of a particularly frustrating event she experienced due to vision loss, I remembered the great clarity that the yellow-lens (to reduce glare) glasses gave me, not just at night, but daytime also. So, I sent her a pair to see if it would help, as a lastditch effort. She called me crying, it had made such a difference! She has now had her prescription eyeglasses done with the yellow (blue-canceling?) lenses. Of course, we understand that this is just a temporary help, and won’t prevent the blindness from taking its course, but it has given her much better vision for a time. -- I.L.B. ANSWER: Age-related macular degeneration is the leading cause of vision loss in industrialized countries. It is a degeneration of the central part of the retina, called the macula, which is responsible for fine detail central vision. The underlying cause is not precisely known, and the course is progressive. I was able to find a 2002 study that confirmed that yellow or orange lenses improved contrast sensitivity in people with early age-related macular degeneration, whereas red and gray lenses worsened it. Another study suggested that the perceived benefit (the subjective experience by the person) was enhanced, but that objective improvement in vision was not actually improved much at all. In my opinion, perceived benefit is still worth a great deal, and since there is little effective treatment for the more common “dry” form of ARMD beyond vitamins and smoking cessation, I am publishing your letter in hopes that some people will get improvements in their vision, as your friend did, from this low-cost treatment with essentially no risk of side effects.

While many people do so in healthy ways, others take their weight loss efforts to the extreme. For example, many brides-to-be aspire to shed excess weight before their weddings so they can look as slim as possibly in their wedding gowns. The New York Times even reported in 2012 on a bride who spent eight days on a feeding tube to strictly limit calories so she could fit into her wedding dress. Such efforts are dangerous and could put individuals’ long-term health in serious jeopardy. Healthy weight loss for any occasion requires a long lead time, so that individuals can safely shed between one and two pounds per week with a healthy mix of diet and exercise, according to the Centers for Disease Control and Prevention. Trimming between 500 and 1,000 calories per day from their diets can help individuals lose weight safely.
INFLAMMATION Inflammation can affect anyone, and those who have battled it likely have nothing positive to say. But while few people may associate inflammation with something good, inflammation is actually a process by which the body’s white blood cells and the substances those cells produce protect the body from infection at the hands of bacteria, viruses and other foreign organisms. While inflammation is protective by nature, sometimes an inflammatory response is triggered by mistake. When that happens, the body’s immune system, which is designed to protect the body, begins to damage its own tissues. The resulting symptoms of this faulty immune system response may include joint pain, joint stiffness, loss of function in the joints, and swelling of the joints. None of those symptoms are comfortable, and people suffering from them may be on the lookout for ways to alleviate their pain and suffering. While anyone battling persistent inflammation should speak with their physicians to explore their treatment options, a preliminary search of how to best treat inflammation will no doubt turn up information about heat therapy and cold therapy. Excessive persistence and rigidity, impulsivity, neuroticism, harm avoidance, perfectionism, and obsessive thinking are traits often seen in people with eating disorders.
SOY FOODS PACK A POWERFUL PUNCH The Cleveland Clinic notes that soy foods provide a host of nutritional benefits. Plant protein, including soy, can provide cardiovascular benefits, including helping with people with high blood pressure lower their blood pressure to healthier levels. While many people rely on animal-based proteins to get their daily recommended intake of protein, soy foods are naturally free of cholesterol and low in saturated fats. That makes soy foods more heart-healthy sources of protein than animal products. The Cleveland Clinic says substituting soy foods for animal-based proteins a few times per week can reduce a person’s risk for cardiovascular disease. Soy foods also can be a great source of dietary fiber, though the U.S. Soybean Export Council advises consumers that not all soy products are the same. The USSEC notes that foods like soy milk and tofu contain very little fiber. People who want to utilize soy beans as a source of dietary fiber should look to foods that utilize the whole bean, such tempeh, soy flour and textured soy protein. The USSEC also notes there’s some confusion in regard to the connection between soy foods and iron, though the group admits research is ongoing. While a 1/2 cup serving of cooked soybeans contains four milligrams of iron, the phytate and soy protein present in soy foods reduce iron absorption, meaning that the body won’t really benefit from the iron. However, the USSEC recommends consumers purchase fermented soy foods, including tempeh and miso, because the body might absorb more iron from these foods than it will when consuming other types soy foods. Waiting Out COVID
An unscientific poll of senior friends and neighbors revealed just what we’ve accomplished during the past two years of this pandemic. The answer: not much. Mostly, it seems, we’ve been waiting. Waiting for it to be safe to shop in person. Waiting for our clubs and meetings to start up again. Waiting for a visit from family across the country that has feared bringing COVID to our door. Waiting for all the vaccines and boosters to do what they were supposed to do. Waiting to be unafraid again. In the beginning we were all for following the rules. We seniors are a tough bunch, and we know a lot. We have coping skills that got us through any number of crises life has thrown at us. But this pandemic has brought many of us to our knees. Each person in my humble survey could, when queried, point to the exact time when the tide turned in their mental health. It was the omicron variant and the additional vaccine booster, when it became apparent that COVID wasn’t going away soon. For me, a daily to-do list has come in handy. On a sheet of paper I have two columns: one work, one play. In the work column there are household tasks such as doing one load of laundry. In the play column are things like wiping the dust off the piano and learning a new song each week. On the back of the page are two more columns. One is a list of names, and somebody gets called every day. In the other column is an ever-lengthening list of things that are going right. This one is sometimes hard to fill out, but it gets done, even if it’s only notes like: Completed a crossword puzzle in seven minutes. Try it. Make your lists, especially if you’ve felt yourself sinking under the weight of this never-ending pandemic. (c) 2022 King Features Synd., Inc.

Honeoye Falls-Lima Hall of Fame a Time-Honored Tradition BY M A K AY L A H O LL I M A N

raduation for the Class of 2022 is just around the corner, and the Honeoye Falls-Lima Central School District is commemorating their moments by encouraging their seniors to sign up for the Hall of Fame. The Hall of Fame has honored Honeoye Falls-Lima (HF-L) graduates for nearly 30 years. Cathy Hoose of HF-L’s Technology Services clarified some additional aspects of the school’s Hall of Fame, traditions, and other ways the school program plans to celebrate the Class of 2022. The Hall of Fame was established in 1995 by retired principal James Dollard. The motivation behind it was to recognize HF-L graduates who achieved and contributed to their school, community, and country in the years following graduation as well as to provide positive role models for current students in the district while establishing recognition of these graduates as a worthy and good exercise for success. Any graduate of the school, living or deceased, may enter or be nominated to be a part of the Hall of Fame. Its requirements consist of one’s educational background, volunteer assistance for the community, civic development, affi liations, honors, awards, publications, and items in addition to education. Each year in May, the Hall of Fame Committee, which consists of 13 school and community members, reviews each nomination packet then decides on whom to recognize by a unanimous vote by late May.

participate. In this parade, community members and local businesses donate showcase cars (convertibles) to drive the inductees around town. At last, there is the Homecoming Football Game Coin Toss wherein inductees are introduced at the start of the Football game and participate in the coin toss. Finally, the Induction Ceremony takes place in the late afternoon, usually after the football game. Inductees, their family members, and everyone in the community are invited to a presentation ceremony at Honeoye Falls-Lima High School. Inductees are introduced by a committee member, and a song is chosen by the choir for each specific student to sing. Each student then receives a Honeoye Falls-Lima Alumni Hall of Fame pin; a memory book that includes their nomination information, certificate of induction, details of Fall Weekend, a bouquet of flowers, and a HF-L umbrella. As schools prepares to close the final chapter for the 2022 graduating class, Honeoye Falls-Lima Central School District is giving the Class of 2022 memories they will cherish for years to come.

While waiting for the results, HF-L does several other things to celebrate. During the Fall, Hall of Fame inductees are invited to a number of Fall Weekend celebrations. One of the celebrations included is the “HOF inductees visit the schools day,” during which students visit classrooms to present and discuss their HF-L accomplishments and experiences with other students. On Saturday mornings, the school holds Meet and Greets to introduce inductees to the Honeoye Falls-Lima Leadership Team and Board of Education Members. Anne Haley McCarthy (Rita) March 17, 2022 Geneseo: (Rita) Anne Haley McCarthy’s beautiful life story peacefully ended after ninety-six years when she was called to heaven on March 17, 2022. Born to William O’Keeffe and Alice Pearl Haley on June 9, 1925, Anne was the middle daughter and dedicated sister to Margaret (Francis) Van Nortwick and Theresa (Clarence) Ryckman, as well as the loving wife of Robert E. McCarthy. She is predeceased by them as well as her son, John McCarthy, and grandson, Robert McCarthy. She is survived by her three daughters: Molly ( James) Sproul of Centerville, MA, Kathleen ( James) Nolan of Lake Forest, IL and Alicia McCarthy of Geneseo, NY, as well as her daughter-in-law, Lindia McCarthy of Lawton, OK. In addition, she leaves her grandchildren: Sean (Erin) McCarthy of Rochester, NY, Ryan (Kristen) Sproul of Hancock, MN, Kelly Nolan ( Jay) Altman of Eden Prairie, MN, Mara Kathleen McCarthy ( Jeff ) New of Webster, NY, Jonathan (Leslee) Sproul of Boston, MA, Britt (Catherine) Nolan of Arlington Heights, IL, Ben ( Jenna) Sproul of Nolensville, TN, Rory (Kelly) Nolan of Arlington Heights, IL and Molly Nolan (Paul) Matson of Elmhurst, IL. Anne was known as “Gigi” to her 21 great-grandchildren. Anne was a 1943 Geneseo Central School graduate who then followed her childhood dream of becoming a nurse. In 1946 she received her RN degree from Rochester’s St. Mary’s Hospital World War II Cadet Nursing Program. Her nursing profession began as an assistant on emergency ambulance calls in Ithaca, NY. In Fayetteville, NY she was Dr. Charles Elliott’s office nurse. She taught nursing students at Jefferson Community College during her Watertown years. Her return to Livingston County gave her the opportunity to work for the public health department as a visiting nurse. Anne and Bob were married in 1949 at St. Mary’s Church in Geneseo. They celebrated family life, raising four children. Opportunities took them to Scottsville, Canton, Fayetteville, Watertown and in 1970 back to Geneseo. Along the path of relocations, Anne demonstrated her love of life and people in endless measures. She filled her family’s life with warmth and entertainment. She had a song or story for every one of life’s lessons. love came so naturally to her. Everyday occurrences became constant entertainment as they were recounted with humor, impersonations, embellishment and detail. With repetition, those stories have become the folklore of the McCarthy experience. The list of recognitions in her lifetime includes an appointment to the New York State Nursing Association, Livingston County Board of Health member, Geneseo Foundation Meritorious Service Award, and Geneseo Central School Hall of Fame inductee. She acted as president for both the Geneseo Community Players and Association for the Preservation of Geneseo. Anne was recognized with the APOG Award of Commendation, having initiated the restoration of the County Home Cemetery. The magnitude of Anne’s talents hardly ended with family and career. In Watertown she demonstrated her thespian talents with the Watertown Community Players and continued through her Geneseo years, starring in many lead performances until she was eighty years old. In her retirement years, Anne enjoyed her stitchery group, quilting, and writing profound poetry. Her faith in God and love of her church defined her. Anne served as a Eucharistic minister and lector at St. Mary’s Church where she initiated the Neighborhood Ministry Program. During her final months, Anne said she wanted people to remember her as a lady who “didn’t just sit in a chair.” She wanted to be remembered as “the lady who made a difference.” In her reflection she credited her mother with giving her the strength and determination she possessed. Anne will be laid to rest with her family at St. Mary’s Cemetery in accordance with her final request. She asked to be with her family, “the way it used to be.” God rest her sweet soul. Calling hours were held on Sunday, March 20, 2022 from 1-4 PM at the Rector-Hicks Funeral Home, 111 Main St. in Geneseo. Gerald F. “Jerry” Wiesner March 18, 2022 Hemlock/Spencerport: At age 79, Jerry passed peacefully at his home on March 18, 2022. He was born on December 9, 1942 in Rochester, NY to the late Frederick and Helen (Dougherty) Wiesner. In addition to his parents he was predeceased by his brothers, Joseph and James Wiesner. Survived by his longtime partner, Pammy Granger and her son, Jonathan Granger; sons, Stephen J. (Gina) Wiesner and Jeffrey Wiesner; grandchildren, Joey Wiesner, Tiffany Matteson, Trevor Wiesner, and Jamie Wiesner; great-granddaughter, Kendall; brother brother, (Patti) Wiesner; devoted caregiver, Kari Cassady; also survived by nieces, nephews, and many dear friends. In the early years Jerry operated a couple successful ARCO service stations in North Greece and Spencerport, NY. During this time he found his love of auto racing, competing at local tracks in the Street Stock Division, and later helping his brother Dave get started in racing. In the late 70’s, a full-time position at the Spencerport Central schools opened up as a bus mechanic, where he had worked part-time. He sold the service station and never looked back. After retiring from Spencerport Schools, he continued driving school buses part-time for Livonia and Honeoye Schools. During his free time in the winter months he could often be found snowmobiling in Redfield, NY. Whether he was tinkering in the garage or tending to his vegetable garden, he had an attention to detail that was hard to duplicate. Family and friends called on Tuesday, March 22nd, from 3-6pm at the Kevin W. Dougherty Funeral Home Inc., 21 Big Tree Street, Rte 20A, Livonia, NY where Jerry’s Funeral Service was held at 6pm. Casual dress was encouraged as that is the way he would want it. Interment will be held privately. His entry into real estate began with the purchase a fraternity house at the young age of 21, the first of many subsequent real estate investments. Charles went on to lead a successful 30+ yr. career in banking, beginning at Marine Midland Bank in Rochester, NY, with the majority of his career then spent at Manufacturers Hanover Trust (now Chase Bank) as Vice President of Commercial Real Estate, responsible for commercial lending for the Western & Central NY region. Upon retirement, Charles devoted his time and entrepreneurial spirit to his true passion, real estate development. Throughout his life Charles freely shared his financial acumen, real estate expertise and business guidance to colleagues, friends, his children, and his grandchildren, leaving behind a significant footprint in Livingston County and legacy that will be remembered by many for years to come. She taught him the importance of hard work and obtaining an education. These important lessons were passed on to her grandsons. Angry Recently, it seems many are hung up over the price of gas. Hey folks, there are harmless people dying and families forever being torn apart, and you are complaining about having to pay a bit more for fuel? Watch out for them because, if they are killed, you will be killing the babies, too, since they will starve to death. Also, with the deer, if a deer crosses in front of you, stop and watch for a baby. Many times the baby is lagging behind mom. I even do this when more than one deer are up ahead of me because you never know how many more are coming. I watch the sides of the road for any animal. By doing all of this, I have never hit or killed a animal. Have a great spring!
Hair? They spent our tax money on hair style discrimination? We can’t afford food, gas, or utilities, yet our lovely government spent weeks – and our money – discussing hair? I guess they want us middle class folks weak and dependent upon our government. Thank God I still have my right arm to work...and vote.
