According to the National Autism Association, autism is a bio-neurological developmental disability that affects the normal development of the brain in various areas. Those areas include social interaction, communication skills and cognitive function.Autism generally appears before a child reaches his or her third birthday, and the NAA notes it is diagnosed four times as often in boys than it is in girls.Roughly 40 percent of children with autism do not speak,but parents whose children speak between the ages of 12 and 18 months should know that such youngsters can still ultimately be diagnosed with autism. In such instances,the NAA notes that children lose the words they previously learned.Incidences of autism appear to be on the rise,though the reasons for that remain unclear. According to a report from the Centers for Disease Control and Prevention, the prevalence of autism had risen to one in every 59 children by 2018.That’s twice as great as the rate in 2004, when the CDC reported one in 125 children were diagnosed with autism. 11/2 pounds chicken breast, cut into 6 pieces, pounded to 1/4 inch 2 tablespoons plus 2 teaspoons extra-virgin olive oil, divided 4 cups baby spinach

To make the chicken: Combine parmesan cheese, flour, salt, pepper, and basil in a medium dish and coach chicken with cheese mixture. Place a large skillet over medium heat and add 2 tablespoons of oil. When oil is shimmering, add chicken, rounded-side down, and cook until golden on one side, about 5 minutes. Arrange chicken in a baking pan. Pour remaining 2 teaspoons of oil into skillet and add spinach. Cook spinach for 1 to 2 minutes until wilted and swirl in lemon juice. Gently press spinach to release water and divide spinach on top of chicken. Spoon sauce around and over the chicken, place mozzarella on top, and sprinkle with 1/4 teaspoon salt. Bake for 15 minutes until chicken is cooked through. Serve over spaghetti.

To make the sauce: Heat a medium saucepan over medium heat. Add oil and garlic and cook gently for 30 seconds. Do not brown. With your hand, squeeze each tomato into the pan and add basil, oregano, salt, pepper, and honey. Reduce to medium heat and simmer for 20 minutes, lowering the heat as needed.

Author and former personal chef Michelle Dudash was once asked by a client if the she could make a healthier version of chicken parmesan. The result of that request is the following recipe for “Skinny Chicken Parmesan with Spinach,” which Dudash ultimately included in her book, “Clean Eating For Busy Families” (Fair Winds). The recipe was a hit with Dudash’s client and will surely be a hit at home cooks’ dinner tables as well.

2 tablespoons whole-wheat flour

Preheat oven to 375 F and coat the bottom of a 9 x 13-inch pan with olive oil spray.

1 teaspoon lemon juice

Make a household favorite more healthy

6 cups cooked whole-grain thin spaghetti tossed in 2 teaspoons olive oil

Many beloved dishes might be enjoyed more often if they were only a little healthier.

3/4 cup fresh mozzarella cheese, sliced into 6 medallions (or shredded)

For the sauce: 2 teaspoons extra-virgin olive oil

1/4 teaspoon dried basil

Makes 6 servings

Trash Thrown in Hayfield Today at 5:30 AM, I saw a vehicle stop so that the driver could toss a pile of filthy trash into our hayfield on (local road, local town), of mostly cigarette packs, many receipts identified with their debit card number, and a quantity of hard seltzer cans. I just picked it all up; metal fragments, in particular, can kill animals ingesting the baled hay. Be aware that your vehicle’s lights illuminated you! Fair warning: Next time, you will be reported to the sheriff’s office, because we become weary of picking up after pigs. I’m responding to the rant regarding the person troubled by a family posing their children for a photo in front of their farmland. “Personal boundaries” have become quite ridiculous in our country. Unless it’s a public park or state land, every piece of land is off limits and usually filled with those all-too-familiar posted signs. When my family traveled to Scotland a few years back, I quickly noticed the utter lack of those nasty posted signs. When I inquired with the host of the place we stayed at about the absence of Keep Out signs, we were told that there was a mutual respect of property there and that people were free to hike or roam on any piece of open land. I took her up on that and enjoyed that great freedom while feeling uneasy as it was so unusual to me. How nice it would be to have that same attitude here! I know there are those that abuse the privilege, but a true form of “common decency” allowing such a harmless act would remind us that America IS the land of the free.

Find more room, we’d said, room to spread out. Hence, the borrowed space at the rec center (which had to cancel the Tots and Mommy Workout Hour ... something about a stay-at-home father objecting to the name of the class).

The width of a device also is important. A walker or another device that is too wide can affect mobility or require modifications to be made around the home. Weight is another consideration. Many people find it impossible to think about summer without conjuring visions of spending endless hours outdoors from morning until evening, whether beachside, on the open water or even floating in a backyard pool. Although a certain measure of sun exposure is required for some natural functions of the body, it’s well documented that too much time in the sun can be hazardous to one’s health. That’s why summer frolickers need to exercise considerable caution each time they step outside. Taking sunburn for granted can be a big mistake. Many people wouldn’t risk burns from a hot stove or open fire, but they won’t think twice about being unprotected under the very hot rays of the sun. The Centers for Disease Control and Prevention says more than one-third of adults and nearly 70 percent of children admit to suffering from sunburn within the past year. Depending on the intensity of the sun and the amount of time spent outside, sunburn can be a first- or second-degree burn. In first-degree burns, damage affects the topmost layer of skin. However, sunburn can even affect deeper layers and cause blistering in addition to redness and pain. Sunburn also can cause some irreparable damage that goes unseen. According to WebMD, ultraviolet light from the sun can alter DNA, prematurely aging skin or even contributing to skin cancers. It can take years before symptoms become noticeable. Therefore, it is best for people of all ages to exercise caution when spending time in the sun. Sunburn is one of the most easily prevented summertime ailments. It’s also important to note that sunburns are not just limited to the hot weather or when it is sunny outside. Ultraviolet damage can occur at any time of the year, and also from artificial UV sources, such as tanning beds. Preventing sunburn is simple.

Purslane is a vigorous weed that can be difficult to kill. Since it is close to your vegetables, you could carefully apply a weed killing product using a paint brush. Read the product label to make sure it is effective with this plant and follow instructions for personal safety.

The U.S. Bureau of Labor Statistics advises that earning a college degree can greatly improve a person’s chance of landing a job. The more education a person receives, the lower his or her prospects of being unemployed become. The BLS said that, as of 2014, individuals with a bachelor’s degree could earn on average $1,101 per week, compared to $668 for persons with high school diplomas.
