Apple Butter Bacon-Wrapped Shrimp Servings: 10 cup Apple Butter cup maple syrup teaspoon red pepper flakes teaspoon salt teaspoon smoked paprika pieces bacon extra-large shrimp, cleaned and deveined chopped cilantro, for garnish (optional) Heat oven to 400 F. Line rimmed baking sheet with parchment paper. In medium-sized skillet over medium heat, add apple butter, maple syrup, red pepper flakes, salt and paprika. Whisk until mixture is thick and cooked down by half, about 10 minutes. Set aside. In large skillet over medium heat, add bacon slices and cook until browned but still flexible. Remove from pan and drain on paper towel-lined plate. Wrap one bacon slice around each shrimp, secure with toothpick and place onto prepared baking sheet. Once all shrimp have been wrapped, baste tops with apple butter mixture. Bake 5 minutes then flip and baste other side of shrimp. Bake another 5 minutes. Continue to flip and baste shrimp (2 minutes each time) until shrimp is fully cooked. Do not overcook as glaze can burn. Sprinkle with cilantro, if desired. 3/4 1/2 1/2 1/2 1/2 10 10

Red Velvet Crinkle Cookies cups flour cup unsweetened cocoa powder 1 1/2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup (1 stick) butter, softened 1 1/4 cups granulated sugar 2 eggs 1 1/2 teaspoons Red Food Color 1 teaspoon Vanilla Extract 1/2 cup confectioners’ sugar nonstick cooking spray In medium bowl, mix flour, cocoa powder, baking powder and salt; set aside. In large bowl, beat butter and granulated sugar with electric mixer on medium speed until light and fluffy. Add eggs, food color and vanilla extract; mix well. Gradually beat in flour mixture on low speed until well mixed. Refrigerate 4 hours. Heat oven to 350 F. Shape dough into 1-inch balls. Roll in confectioners’ sugar to completely coat. Place 2 inches apart on baking sheets sprayed with nonstick cooking spray. Bake 10-12 minutes, or until cookies are puffed. Cool on baking sheets 2 minutes. Remove to wire racks; cool completely.

Makes about 2 dozen 6 medium-size red potatoes, peeled and quartered 1/2 cup (1 stick) butter 1 cup finely chopped yellow onions 1/4 cup chopped celery 1/2 cup seeded and chopped red bell peppers 1/2 cup seeded and chopped green bell peppers 1/2 cup seeded and chopped yellow bell peppers 3/4 teaspoon salt 1/4 teaspoon cayenne 1/4 teaspoon freshly ground black pepper 1/4 teaspoon Tabasco brand pepper sauce 2 pounds medium-size shrimp, peeled, deveined and coarsely ground in a food processor 2 large eggs, well beaten 1/4 cup chopped freshly parsley leaves 1/2 cup peanut oil 1/2 cup all-purpose flour 1. In a large saucepan, boil the potatoes in lightly salted water to cover until fork tender. Remove from the heat and drain. Transfer them to a large mixing bowl and mash with a fork. Let cool. 2. Melt the butter over medium heat in a medium-size skillet. Add the onions, celery, bell peppers, salt, cayenne, black pepper, and Tabasco, and cook, stirring, until soft, about 5 minutes. Add the shrimp and cook, stirring until they turn pink, about 3 minutes. Remove from the heat and let cool for about 5 minutes. 3. Combine the shrimp mixture with the potato mixture. Add the eggs and parsley and mix well. Let cool for 10 minutes. 4. Heat the oil in a large skillet over medium heat.

INDICATORS IT’S TIME TO CHANGE AIR FILTERS Vehicle maintenance can protect drivers’ investments and help their automobiles run efficiently. One area drivers should pay particular attention to is their vehicles’ air filters. When operating at optimal capacity, an air filter improves fuel efficiency while ensuring vehicles accelerate smoothly without taxing the engine. But when air filters are clogged, fuel efficiency is reduced and emissions are increased, a 1-2 punch that costs motorists money and hurts the planet at the same time. Drivers can check their owners’ manuals to determine the recommended intervals to replace air filters, but the following are a handful of indicators that suggest it’s time to change them. Gas mileage: Unless you just purchased your vehicle, you likely know how many miles you can drive on a full tank of gas. If that gas mileage is suddenly slipping and you find yourself visiting the filling station more frequently, then it might be time to replace your air filter. Engine light: Drivers may be alerted to engine issues when the “Check engine” lights up on the vehicle’s dashboard. This light may come on to indicate a problem with the air filter, as clogged air filters reduce air flow to the engine, resulting in an imbalanced air-fuel mixture that adversely affects the engine. Starting and idling problems: Vehicles sometimes don’t start up as smoothly as they once did, and drivers may also notice vehicles are not idling smoothly. These symptoms may indicate misfiring spark plugs that are being polluted (and made less effective) by a dirty air filter that is reducing the flow of air to the engine. Acceleration difficulties: Automobiles that are operating at peak capacity accelerate quickly. But dirty, worn out air filters adversely affect acceleration. Drivers who notice that their cars are struggling to accelerate when stoplights turn green or on highways may need to replace their vehicles’ air filters. Dirty air filter: Perhaps the biggest indicator that an air filter needs to be replaced is the filter itself. If you cannot find the air filter on your own, consult your vehicle owner’s manual to determine where it is. Once you find the air filter, examine it in broad daylight. Clean air filters are white, so if the filter has darkened, it may need to be replaced.

Setting The Record Straight: Common Myths About Vacation Rentals (NAPSI)—Vacation rental homes are becoming increasingly popular. In fact, 89 percent of travelers who have never rented a vacation home before would consider it, according to a recent study. However, popular misconceptions prevent some people from doing so. Here are a few facts that can help. Myth #1: More space = a higher price tag. Many travelers assume vacation rentals are more expensive than traditional lodging. Think again: When you break down the price per night and per room compared to traditional accommodations, vacation rentals typically offer better value—plus, you get added living areas. Rental homes can also prove more cost effective when you average in all the convenient amenities, such as kitchens to save money on meals, or washers and dryers to cut down on baggage fees because you can pack less.

Myth #2: I need to have a large group. Vacation rental homes come in all shapes and sizes, from studio units and condos in resort-style communities to larger, private homes with four or more bedrooms. Solo travelers, couples and families alike can enjoy rental homes for the convenience and can find the rightsized home for their needs. Myth #3: I have to stay for at least a week. Many vacation rental homes offer flexibility when it comes to length of stay. Travelers can often find rentals for weekend stays, especially during off-peak travel periods. Myth #4: You have to book far in advance. There is no set time frame for booking a rental home before your trip. While booking further in advance can give you a greater selection to choose from, there are often great last-minute deals in many popular vacation destinations for those who can’t plan as far ahead. Myth #5: If I need help, I’m on my own. This one depends on how you book your rental home. If you book directly with a homeowner through a listing site, you will have to work out any issues directly with the owner. However, if you book through a professional manager, such as Wyndham Vacation Rentals, there is someone available 24/7 to assist you and to serve as a liaison between you and the property owner. DEAR DR. ROACH: I have underarm odor. I wash daily, use deodorant and change my shirts daily. I use mostly cotton shirts and undershirts. I launder my shirts with soap mixed with bicarbonate sodium (baking soda) to eliminate odor. In spite of all this, deodorants seem to work for few hours and then fade away. What other solutions do you have for this problem, whether it’s what to use for the underarm or what to wash the clothes with? Thanks. -- N.I. ANSWER: Body odor comes mainly from bacteria that grow in the moist areas, like axillae (armpits). Keeping them dry and minimizing bacteria are then the ways to minimize body odor. Antiperspirant, rather than deodorant, is effective at keeping the axillae dryer. Applying at nighttime after shower or bath may be more effective. Occasional use of a topical antibiotic to the axillae can keep bacteria growth down as well. Diet can have a role, too. Sulfur-containing foods like garlic, along with onions and many curries, can cause a strong odor. As far as washing clothes, most detergents do a very good job of removing the odor-causing bacteria.

DEAR DR. ROACH: I went in for an annual examination with my primary-care doctor, and she took my blood tests in the laboratory. She told me that I have high potassium, 5.5, and had me retake it. I did, and the test came back with a much lower level of 4.3! What could have caused the level to go up so high? Was this due to eating a lot of avocado and yogurt on a daily basis? I was eating a whole avocado in the a.m. for breakfast and a yogurt with apple and peach. Should I be seeing a specialist to recheck it? Please describe potassium and its job, and advise what I should do. -A.V.R. ANSWER: Avocados and yogurt are high-potassium foods, and peaches and apples are medium-potassium foods. However, most people can take in high amounts of potassium without worry, since the kidney is very good at getting rid of potassium if the body doesn’t need it. I more often see low potassium levels, from poor intake or from medications, such as diuretics, which can cause the body to lose potassium. However, some people with kidney disease (especially severe kidney disease) need to carefully watch and limit oral potassium intake. By far the biggest reason for a potassium blood test to come out abnormally high relates to the lab itself. Samples that sit around a long time or that are shaken will have broken blood cells, which release high levels of potassium into the serum, causing false elevations in the lab. If you didn’t change your diet between the two tests, there is no reason to worry at all. Your primary doctor is the right person to see.

Sunlight can worsen scarring from chickenpox, and the affected skin is more susceptible to burning, so those with chickenpox rash should be kept out of the sun. Chickenpox is also very contagious; restrict contact with anyone who hasn’t had it or the vaccine.

Life, Love and Lima Rotary By Amanda Dudek
“T
hat little extra effort, that positive example for someone else to see, a smile, a hello; that’s Rotary,” said Lima Rotary Club President, John Skiptunas. “Having someone to bring you back up when you’re down, being there for weddings and anniversaries, plowing driveways, getting people unstuck: that is Rotary.” Skiptunas certainly practices this. Under his two-year leadership, Lima Rotary has experienced a rebirth. “We are 80 years-old and the smallest club in our district,” said Skiptunas. “We recently lost our beloved mentor and motivator, Charlie Johnston, as well as our former president, selfless and generous Steve Robinson. It was a major setback.” “We currently have 10 people,” Skiptunas shared. “So, our focus has really been reaching out into the community to find new members. Right now, we have 5 candidates we are ready to bring into our club. Our mantra from last year was, “Be the inspiration,’ and we are looking for people who are doing just that.”

On an international level, Rotary service is reflected in fighting disease. “We pay dues to our global foundation which supports our primary cause which is to eradicate polio,” Skiptunas explained. “The Gates Foundation has pledged a great deal of money to eradicate polio, as well. We have seen 16 cases of polio this year, and we are in hope of one day having zero cases ofpPolio.”
Lima Rotary also offers two scholarships for Honeoye Falls-Lima School and two for Lima Christian School, and it hopes to work with Elim in the future.
Locally, Lima Rotary embodies service through its Community Action events. “We host our Easter Egg Hunt, Trunk or Treat, Thanksgiving Dinner for Seniors and Tree Lighting event and sponsor a booth at the Crossroads Festival,” Skiptunas stated. “Many of these are a way to give back to the kids. At our Easter Egg Hunt, for example, we see anywhere from 150-300 kids. We have to realize that they are our future. We can instill the goodness of our nature and Rotary by giving back a little bit.” The Tree Lighting event is also a highlight. “We take the kids out and choose a tree,” he said. “On the night of the event, a choir or two sings carols. The fire department illuminates the whole front of Town Hall and decorates their fire engine. Last year, we had over 350 people here. The Marketplace donated some cookies. Now former Lima Rotary President John Santa Claus came in on the Skiptunas handed club presidency over to antique fire truck, handing Charmaine Yarka on June 25, 2019 out candy canes and taking photos with the kids. This year, we want to have activities for the kids like decorating ornaments and sugar cookies and mini stockings.” Future club president Charmaine Yarka stated, “Lima Rotary is four things: dreamers, thinkers, motivators and administrators.” Skiptunas agreed, adding that right now, he and other Rotary members are volunteering with Habitat for Humanity to build a house in a Lima. “Also, we are holding an international Books for the World Program,” he said. Lima Rotary also recently held a pancake breakfast for a Lima family that experienced major sewer damage to their home. “The community rallied around them in various ways,” he said. “We had

Skiptunas credits the community. “Whenever they see that little Rotary wheel on an event, they respond and come out,” he said. “We are small, but we have the biggest hearts.”
Even as they move forward, the Lima Rotary will never forget those it has lost. “We will still have Steve Robinson’s hotdog cart at this year’s Crossroads Festival, thanks to a special friend’s generosity,” said Skiptunas. “We will call it The Hotdawg Hut, and its proceeds will go to the Steve Robinson BOCES Scholarship Fund.” “We also plan to plant a tree in Charlie Johnston’s name,” said Skiptunas. “There is going to be a pavilion, also. It will be a permanent part of our town along with a plaque.”

Meanwhile, Lima Rotary members are busy preparing for their August 3rd Crossroads Festival. “It will be Charmaine’s first event as president,” said Skiptunas. “She has a great vision.” Yarka thanked him, stating, “The more members share ideas and communicate with each other, the better our club will be. This will help us to fulfill our Lima Rotary Club Motto: “Love your town.” Lima Rotary needs volunteers, and there are many ways to be involved. “Rotary Members, Friends of Rotary which are non-member volunteers, RotarAct for college students and InterAct for high schoolers,” Skiptunas said. “These are all ways you can volunteer. The smiles on the kids’ faces at these events are so gratifying,” he added. “We feel amazing that we did that.” For more information, visit www.limarotary.org. Many pools are kept clean through the use of chlorine products. The ratio of chlorine to water needed to maintain the clarity of the water depends on the size of the pool, the sanitizer used, weather, sunlight and evaporation, and the pH. In many instances, the available free chlorine in a pool when tested should be between 3 and 4 ppm to offer adequate sanitation. Thank you to the good Samaritan who left a note on our SUV on 6/5 in Wegmans parking lot about the nail in our tire. We do not know who you are, so we cannot thank you personally, but it was very much appreciated. We were able to get it fixed that day and not get a surprise later. So again, thank you! A particular weed and grass killer contains [a chemical] which is said to be carcinogenic to humans. Why is there not a ban on spraying it? After six years of exposure to this chemical, there could be significant factors affecting one’s health. So, why does the landlord keep spraying this chemical around the well? This well is used by the renters daily for everyday needs. What about liability?

So-called climate change sounds like some quasiscience in order to drum up more money. Seasonal change is really what it is. It happens all the time, and the Earth will survive. It has for millions of years, anyway. What is making more negative ‘climate change’ are the oodles of wind and solar farms. Nature has survived for eons without solar farms and wind farms, which do not help the problem at all and make it worse. A moratorium should be put in place to stop them from being built.

I always have great rhubarb. I take good care of it. This year it won’t fill out. It’s mostly tall & spindly. Could it be this bad spring? -Ed S. The most likely reason why your rhubarb is tall and spindly is that it is overcrowded and needs to be divided. It should be divided after about 5 years of growth. The best time to divide is in the early spring, but it can be done in the fall. Dig around the root clump and lift the entire plant. Cut down through the crown between buds, with each division having at least one bud and prefer-

Plant at same depth as the original plant was growing. Another possibility is that due to the very wet spring, if your drainage is poor, your rhubarb may be experiencing crown rot. It damages terminal buds and results in spindly, weak stems. The plant will eventually collapse.
