SHRIMP POTATO PATTIES Makes about 2 dozen 6 medium-size red potatoes, peeled and quartered 1/2 cup (1 stick) butter 1 cup finely chopped yellow onions 1/4 cup chopped celery 1/2 cup seeded and chopped red bell peppers 1/2 cup seeded and chopped green bell peppers 1/2 cup seeded and chopped yellow bell peppers 3/4 teaspoon salt 1/4 teaspoon cayenne 1/4 teaspoon freshly ground black pepper 1/4 teaspoon Tabasco brand pepper sauce 2 pounds medium-size shrimp, peeled, deveined and coarsely ground in a food processor 2 large eggs, well beaten 1/4 cup chopped freshly parsley leaves 1/2 cup peanut oil 1/2 cup all-purpose flour 1. In a large saucepan, boil the potatoes in lightly salted water to cover until fork tender. Remove from the heat and drain. Transfer them to a large mixing bowl and mash with a fork. Let cool.
DID YOU KNOW? The demand for qualified, talented nurses figures to grow in the years to come. According to the U.S. Bureau of Labor Statistics, more than half a million nurses are expected to retire by 2022. Couple that with an existing nursing shortage, and the BLS projects a need for 1.1 million registered nurses in the near future. A shortage also figures to affect Canada, where the Canadian Nurses Association recently estimated that the country would be forced to confront a nursing shortage of roughly 60,000 nurses by 2022. Various factors are contributing to the nursing shortage in both countries, including an increasingly large aging population that will require more and more nurses to meet its health care needs. In the United States, the Affordable Care Act, which was passed in 2010, increased access to health care for millions of people across the country, thereby creating a greater need for nurses and other health care professionals. In addition, a greater emphasis on preventive care in many countries across the globe figures to compel more people to visit their physicians even when they’re otherwise feeling healthy. As more people prioritize preventive care, the need for more nurses will likely increase.

2. Melt the butter over medium heat in a medium-size skillet. Add the onions, celery, bell peppers, salt, cayenne, black pepper, and Tabasco, and cook, stirring, until soft, about 5 minutes. Add the shrimp and cook, stirring until they turn pink, about 3 minutes. Remove from the heat and let cool for about 5 minutes. 3. Combine the shrimp mixture with the potato mixture. Add the eggs and parsley and mix well. Let cool for 10 minutes.

Cook two to three at a time in the hot oil until golden brown, about 3 minutes on each side. Drain on paper towels. Serve hot.

Big thank you Thank you to the people who bought my dinner last Saturday night at a local restaurant. It’s a hard season for me since my husband and I were married Christmas Day. He passed from Agent Orange in 2011. It was so nice of them to treat me to dinner. I hope they have a very blessed Christmas and a prosperous New Year. Courteous Drivers I’d like to give a shout out to the Henrietta drivers who show such courtesy and caution when cyclists are going through intersections or crossing the crosswalks. They wait until the cyclist is completely through the intersection or over the crosswalk before making their turns. Thank you for truly sharing the road.
Not Playgrounds Please let us remind you that senior apartment buildings are not playgrounds. You need to be more respectful of the elderly that live there. Take the children outside to play or to a playground where it's more suitable and safe for the tenants. Appointments I’m furious about, mostly medical offices, when they call to reschedule an appointment that you’ve been waiting months for. They want to reschedule for sometimes 2 to 3 months, if not more, out further. How about “bumping” others that haven’t been waiting so long. If it’s not your fault that the appointment is cancelled but it seems you’re the one that inconvenienced. You have no heart To all the people that dump their animals, you are the lowest. Do you even care that as you drive away, they are thinking what they did wrong? Take them to a shelter so they are warm and fed. How can you even sleep at night.

Make sure you choose the right ladder. DIYers may spend ample time shopping for drills and other electronic tools and gadgets that are fun to use. But ample time also must be afforded to the type of ladder you intend to use on a project. Estimates from the West Bend Insurance Company indicate that roughly 90,000 people visit the emergency room due to ladder accidents each year. Never use a broken ladder or an aging ladder that’s uneven. In addition, do not use a ladder that forces you to reach far away. If you’re leaning while using a ladder, the ladder is either too short for your project or positioned too far away from the wall. The National Home Security Alliance advises DIYers to place their ladder one foot from the wall for every four feet it rises above the ground. Test your ladders for their sturdiness prior to beginning work so you aren’t tempted to use a subpar ladder.

Estrace Cream Is Safe to Use in Woman Who Had Melanoma

DEAR DR. ROACH: I am a 70-year-old woman who has been using Estrace vaginal cream weekly for several years. I am in excellent health, work out daily, run half-marathons and have my own business. I take 10 mg of atorvastatin daily. Ten years ago, I had melanoma removed from my arm. My concern is the use of Estrace. My gynecologist recommended that I use it after a Pap smear, but my primary care physician is not of the same mind. I would appreciate your opinion on this. My mother had breast cancer in her 80s, my sister had uterine cancer, and my brother passed away from bladder cancer. -- C.S. ANSWER: As far as the safety of using estradiol (Estrace), the bioidentical hormone to major natural estrogen, I am definitely of the same opinion as your gynecologist. When used topically, it works on the vulva and the lining of the vagina, keeping the tissue healthy. Without estrogen, the tissues that line the female perineum can become atrophic (thinned), predisposing a woman to discomfort, infections and incontinence. The Pap smear may have resulted in a finding that was suggestive of vaginal atrophy (increased neutrophils). Without treatment, the labia can even fuse together. With long-term use, the estrogen levels in the body are only slightly higher in women who use topical estrogen compared to those who do not, so the absorption into the body is minimal. The only case where I get concerned is with someone who has a personal history of an estrogen-sensitive tumor, such as endometrial cancer and some breast cancers. In those cases, I discuss options with both the patient and their oncologist. ***

THE HEALTH BENEFITS OF BEING IN NATURE Nature and overall well-being - Given the aforementioned health benefits related to spending time in nature, it’s easy for even non-scientists to conclude that being outdoors has a profound impact on overall well-being. But non-scientists can rest assured that recent research has confirmed such conclusions. A 2019 study published in the journal Scientific Reports found that individuals who spent at least 120 minutes a week in nature were significantly more likely to report good health and psychological well-being than those who spent less time outdoors. Though the authors of the study cautioned that the exposure-response relationship was under-researched, and therefore likely needed to be studied more extensively, in the meantime individuals, after a consultation with their physicians and confirmation that it’s safe to get out more often, can aspire to spend at least 120 minutes in nature each week. The results may speak for themselves.
HOW LONG SHOULD A FILLING LAST? Fillings generally last around 10 years, but it depends on the type of filling and your personal chewing, grinding, and oral health habits. Amalgam and ceramic fillings can last for 15 years, while composite fillings last around 7 to 10 years. Glass ionomer fillings last about 5 years. Amalgam (silver mixed with other metals) and composite (acrylic and ceramic resin) fillings are the most common. Composite fillings are popular because the color can be matched with the surrounding teeth. Fillings sometimes crack or wear down over time—and can even fall out on their own—and require replacement. You may not be able to tell if you need a new filling, but your dentist assesses fillings during regular exams.

Many people struggle to find the right size clothing, shoes and undergarments. It’s a situation that affects both men and women. Consider these facts: • Research by menswear retailer Jacamo found 22 percent of British men are wearing the wrong size clothes or shoes. • A recent international study done by Swiss lingerie company Triumph found that, of the 10,000 women polled, 64 percent are wearing the incorrect bra size. • The average shoe size is up about two sizes since the 1970s. Yet, at least one-third of men and half of women are buying the wrong size, according to Long Tall Sally, a U.K.-based apparel and footwear retailer that gets almost half its sales from North America. Many people today purchase their clothing off the rack and never step inside a tailor’s shop unless it is to have formal clothing adjusted for special occasions. People generally give little thought to taking out the measuring tape and getting a refresher on their measurements - despite changes in their body weights. Plus, many do not recheck their shoe sizes, likely because shoe stores are mostly self-service and the number of Brannock devices, or the standard foot measuring tool for the worlds footwear industry, are dwindling in retail centers.
HOW TO ROAD TRIP IN AN ELECTRIC CAR Find some RV parks along your route. RVs have required charging stations for years, so RV parks typically have these stations available for a nominal fee of around $50. RVs typically are Level 2, so EV drivers that require Level 2 charging systems should be able to charge their vehicles at RV parks. In addition, many RV parks now also provide charging stations for Level 1 vehicles, though drivers should confirm which parks have such offerings prior to embarking on their trips.

Here’s a Tip * Before you use your grater to grate cheese, give it a quick shot of nonstick spray. It will keep the cheese from gunking up in the grate. If you need softened butter for a recipe, you can grate it from frozen and it will soften up very quickly, but not melt like in a microwave. * Clean your cellphone screen often. This is especially important if you have a smartphone. We use our fingers nonstop to touch the phone, then put it directly up to our face. It’s a germ’s paradise. Just remember: A quick swipe with an alcohol cloth might save you from getting the flu this season. Stay healthy! * When heater season is in full effect -- like now -- I keep a spray bottle of water to which I add two tablespoons of liquid fabric softener. Duane was born October 15, 1952 in Batavia, NY the son of David L. and Gladys L. Coral Johnson. He was a US Army Vietnam Veteran. He retired from Southern Ice Cream Specialties in Marietta, GA as a Mechanic. Duane was an enthusiast of American made Ford Muscle cars, NASCAR, and sprint car racing. He also enjoyed Harley-Davidson Motorcycles, especially the years 1960’s and 70’s. He enjoyed tinkering in his garage using his mechanical skills.

Business dinners are a great opportunity to lay a foundation for long, potentially lucrative professional relationships. Etiquette is important when hosting business dinners, as a breach of decorum can derail a relationship before it even begins. Professionals tasked with hosting business dinners can take the following tips to heart before sitting down to break bread with their colleagues. Choose a restaurant that can cater to various diets. Hosting a business dinner can be similar to hosting family during the holiday season, when hosts must cater to guests with various food allergies and dietary restrictions. Asking for such information in advance of a business dinner may seem intrusive to guests, so try to find a restaurant that offers a flexible menu capable of accommodating vegetarians, vegans and guests who might be gluten-free. Avoid restaurants that specialize in styles of cuisine that might be unhealthy or so extraordinary that guests might be hesitant to order anything from the menu. Confirm the reservation. Make the reservation well in advance of the date of the dinner, and don’t forget to confirm the reservation a week beforehand. Confirming a week beforehand gives hosts time to book another reservation should theirs have been canceled by mistake. Arrive at the restaurant before your guests. Hosts should arrive at the restaurant before their guests so they can address any potential issues in advance of the beginning of the dinner. Arriving early gives hosts time to ensure the table set aside for their party is not in a heavily trafficked area of the restaurant, such as adjacent to the kitchen or restroom. Hosts who arrive later than their guests may also give guests the mistaken impression that they are unimportant. Let guests order first. Once everyone has sat down at the table, hosts should allow guests to order first. Doing so saves guests who don’t want to eat that much the potential discomfort of sitting there while their hosts eat an appetizer and/or large entrée. If guests choose to abstain from alcohol, follow suit. If guests want to have a drink, hosts can limit their consumption to a single beverage. Don’t eat too quickly or too slowly. Hosts should try to keep pace with their guests in regard to how quickly or slowly they eat. Guests might feel uncomfortable if they finish first or feel pressured to eat quickly if their hosts finish first. Pay in advance. Business dinner guests do not expect to pay for their meals. While it’s widely accepted that hosts will pay, it can feel awkward to have the bill brought to the table. Upon arriving early, hosts can give their credit cards to the wait staff and ask that they be charged without having the bill brought to the table. If necessary, step away from the table during the meal to sign the bill and address any discrepancies. Business dinners have sparked many successful professional relationships, oftentimes thanks to hosts who took the time to ensure the dinners went off without a hitch.

Instead of revealing the puppy on Christmas Day, we wrapped a big box that had a little note in it from Santa saying that a new puppy will arrive soon, and to write down their ideas for a name on the back of the card. Do you have any tips on how we can prepare the house for the puppy's arrival in a few weeks? -- Chet in Boise, Idaho DEAR CHET: First, kudos to you for handling the Christmas announcement so well! That's a great way to surprise the kids during the gift-opening while not having to supervise a puppy who has no idea what is going on. And keeping the puppy with its mother until it's at least 8 to 12 weeks old is so important. Involving the kids in preparation for the puppy's arrival is important. Explain to them that puppies like to explore -- often with their teeth. So they need to put away their toys, clothing and anything that they don't want to get chewed up. Puppies can also get into foods and cleaning items that can be dangerous or deadly for them, so those items need to be lifted off the floor or removed from the house's common areas entirely.
