1. Melt the butter in a large skillet over medium heat. Add the apples, turn the heat to high and sauté until they begin to brown on the edges, about 5 minutes. If some are getting too well done, remove them and place on a plate while the rest continue to cook, then return them to the skillet when all are done. 2. Reduce the heat to low and add the honey, wine, lemon zest, lemon juice, and 1/2 cup water. Cover and allow to cook until the apples are tender but still firm; you don’t want them to turn into applesauce.

Heatstroke Almost Killed Her Dog DEAR PAW’S CORNER: I never keep my dog “Alfie” in the car, even on cool days. Last Sunday, I took Alfie to the park to get some exercise. It was hot, and after a short while Alfie came back to me, panting heavily. He was still panting on the drive home and seemed lethargic, so I called his veterinarian, who said to take him to the emergency vet immediately. There, he was diagnosed with heatstroke! They treated him and he’s doing much better, but I was shocked at how quickly Alfie developed a heat injury from being outside. Please warn your readers that dogs are very vulnerable to summer heat. -Chris in Portland, Oregon DEAR CHRIS: You are so right! I’m glad Alfie is doing well and that tragedy was averted by your instinct to contact the vet. Just like humans, dogs need to acclimate to their environment. Sudden weather extremes like excessive heat or freezing cold are very difficult to adjust to. Dogs have far fewer sweat glands than humans; they manage their body temperature in other ways, such as panting when it’s hot. So if we’re feeling the heat, dogs are feeling it even more! It’s important to watch for signs of heat injury, especially when outdoors. Excessive panting is a key sign, as is lethargy and excessive drooling. Other symptoms include reddened gums, vomiting, diarrhea, loss of coordination and collapse. Immediate treatment is needed to prevent serious injury or death. Keep plenty of cool water on hand for your dog to drink, both indoors and out. Never leave them in the car, even for a minute. Kevetta Farms Named Livingston County Farm

of the Year

Farm to be honored and agriculture industry celebrated August 15th at the Farmer Neighbor Event BY THE LIVINGSTON COUNTY CHAMBER OF COMMERCE

T

ucked back in the hills of Sparta, Kevin and Annetta Herrington, along with their children Jessica and Tyler, farm a 50-cow dairy operation, milking both Holsteins and Jersey cows. They also sell both high protein and butterfat milk, and breed and sell calves with superior genetics throughout the northeast. The Livingston County Area Chamber of Commerce and Livingston County Farm Bureau are pleased to announce that Kevetta Farms has been named the Livingston County Farm of the Year. The farm will be recognized and the agriculture industry celebrated at the annual Farmer Neighbor Event scheduled for Sunday, August 15th and being held at Deer Run Winery. Kevetta Farm was selected in large part due to the unique nature of this small rotational grazing super herd operation. Many of the strategic and calculated operational decisions have helped to advance the Herrington’s herd and led to it being recognized as a Super Milk producer for 15 years running. The farm that Kevetta Farms sits on today was purchased by Annetta’s grandfather back in the 1950s. It acted primarily as the heifer raising facilities for her family’s Holstein dairy farm located three miles down the road. Kevetta Farms was established in April 1988 when Kevin and Annetta were married, primarily consisting of Holsteins. They had returned to Annetta’s home farm and were working towards a partnership with Annetta’s parents. But unfortunately, a small 60-cow dairy could not sustain four families, so shortly after Jessica was born, their small herd was dispersed in 1991. Someday, they had hoped to return to the farm when Annetta’s father was ready to retire.

When they first started milking, they had about 17 cows in the string, including Holsteins, Ayrshires, Jerseys and even a couple of AngusHolstein crosses. Today, they’re milking about 50 individuals, giving Kevetta Farms the time with the population being close to 2/3 Jersey and 1/3 Holstein. The farm is an intensive grazing operation with the intent of the overall operation being very efficient. Their ration is supplemented with free-choice bailage and they purchase TMR during the winter months, fed at 50% and top dressed grain according to milk production. Milking occurs in a flat-barn parlor and cows are housed in a compost pack barn which was constructed in 2011. Over the years, Kevetta Farms has made a name for itself and has received many awards and accolades, from being a 15-year Super Milk producer, to the Jerseys being ranked nationally for their milk and protein production and their Holsteins being ranked in the top 200 BAA (breed age average) in the United States, along with being a recipient of the Holstein Associations Progressive Breeder Award.

When their daughter, Jessica, was very young, she loved to go to Grandma and Grandpa’s farm to help feed the calves. They gave Jessica her first calf when she was five years old and she started showing at the fair. The kids enjoyed going to the fairs and taking care of their calves during the summer. Annetta’s father sold his dairy herd on December 31, 1999. After that, Kevin and Annetta took over the old heifer facilities with the intention to purchase the 110-acre farm to raise dairy animals for their children, Jessica and Tyler, to show throughout their time as youth, as well as raise beef. At that time, they did not intend on getting back into milking cows.

On January 1, 2000, Annetta’s father passed away from pancreatic cancer, and once the estate was settled, they officially purchased the farm. Since the kids no longer had someone to supply them with calves, Kevin and Annetta encouraged them to apply for scholarships and other grants to use to purchase calves. The first Jersey came to Kevetta Farms in 2001 after Jessica won the Herbert Wheeler Scholarship put on by the Niagara Frontier Jersey Club.

Not too long after, longtime friend, Bob Hill, asked if they would raise his three Jersey heifers for him. They agreed and those individuals eventually became the foundation for the Kevetta Jersey herd. The pair started milking cows when Jessica’s first Jersey calved in. Then they milked Bob’s Jersey heifers, feeding the milk to calves. With the kids and Bob’s heifers calving in, everything fell into place and they made the decision to get back into the dairy business and officially started shipping milk in 2005.

Can Lyme Disease Lead to Parkinson’s

DEAR DR. ROACH: Can Lyme disease send a person into Parkinson’s disease? I tested positive for Lyme -- I had the bulls-eye rash, fever and terrible headaches. After a month on doxycycline, my left arm started shaking and my neurologist diagnosed me with Parkinson’s. The doctor said it had nothing to do with the Lyme disease. What is your opinion? -- S.M. ANSWER: I can absolutely understand why you might suspect that the neurologist could be wrong. The coincidence seems too much to believe. However, I think your neurologist is probably correct. The different types of neurological complications of Lyme disease are many and varied. The most common are any combination of meningitis symptoms (inflammation of the lining of the brain, with headache, fever, stiff neck and light sensitivity); disorders of the cranial nerves (especially the facial nerve, so people with neurological Lyme disease can look like they have Bell’s palsy); and damage to peripheral nerves, causing pain and weakness or numbness, often resembling sciatica (but may include other parts of the body). A detailed neurological exam by a neurologist would look for signs of Parkinson’s disease -- not just the tremor you describe, but also muscle rigidity and changes in gait. These would be very unusual in Lyme disease. I did find cases resembling some aspects of Parkinson’s disease, but they improved with treatment. It is possible that the stress of the Lyme disease hastened the onset of Parkinson’s disease you were destined to get. I say your neurologist is “probably correct” because what I found -- absence of data to support a correlation -- does not mean that there is no correlation, and it is possible that time may prove Lyme disease is connected to Parkinson’s. However, I think it’s unlikely. ***

HEALTH BENEFITS OF VEGETARIAN DIETS Many people change their lifestyles in an effort to improve their overall health. Changing the foods one eats is one of the more common ways people try to get healthy, and many people find adopting a vegetarian diet helps them realize their goals. Adopting a vegetarian diet can be a great way to improve personal health. Vegetarians may now find it easier to maintain their lifestyles than ever before thanks to the year-round availability of a variety of fresh produce and more vegetarian dining options offered at restaurants. Even premade vegetarian foods are more widely available at markets and grocery stores. Approximately six to eight million adults in the United States eat no meat, fish or poultry, according to a Harris Interactive poll commissioned by the Vegetarian Resource Group, a nonprofit organization that disseminates information about vegetarianism. Many more avoid red meat while still eating fish and poultry. Although studies into vegetarianism long pointed out the potential nutritional deficiencies of such a diet, the tides have shifted, and many nutrition experts now note how eating plant-based foods offers sufficient nutrition and can reduce the risk for chronic illnesses. A vegetarian diet may offer protection against cardiovascular disease, some cancers, type 2 diabetes, and obesity. Data published in the Proceedings of the Nutrition Society found vegetarian diets are high in carbohydrates, dietary fiber, essential vitamins and minerals; offer an abundance of antioxidants; and are very low in saturated fat. However, switching to a vegetarian diet is not enough to lose weight or get healthier. Choosing the right type of vegetarian foods - including whole grains, fruits, vegetables, and proteinrich legumes - and controlling portions is key. Vegetarians may have low cholesterol, as well as fewer incidences of stroke and obesity and cardiovascular incidents than non-vegetarians. Whether this is entirely food-based, or because vegetarians tend to also embrace other healthy habits, has not yet been determined.

SENIOR NEWS By Matilda Charles Exercise Can Reduce Risk of Alzheimer’s Can we do this? Exercise twice a week for 10 minutes each time to prevent Alzheimer’s disease? Of course we can. Researchers examined the records and followed the progress of 250,000 patients who had mild cognitive impairment. They concluded that moderate physical activity more than once a week reduced the risk of Alzheimer’s disease by 18%. We need to do more for our brain health than work the daily crossword puzzle or brush up on our chess skills. Physical exercise protects the brain, too, per the study. The key is that it should be moderate to vigorous exercise. According to the Harvard School of Public Health, examples of moderate exercise include walking 3-4 mph (a brisk walk while you’re still able to hold a conversation), vacuuming and washing windows, mowing the lawn and doubles tennis. Other sources are more specific: water aerobics for 30 minutes and raking leaves for 30 minutes. For comparison, examples of light exercise include washing dishes and using a computer. Vigorous exercises are things like shoveling, singles tennis and playing basketball or soccer. Having said that, there are more parts of our bodies that need exercise than just our brains. That’s where more time in an activity comes into play. Instead of a mere 10 minutes per day, we’re told to shoot for 150 minutes of exercise per week, or 30 minutes onr five days. One place to start developing an exercise plan is Mayoclinic.org. Type “moderate exercise” in the search box and scroll down the results until you find something interesting. Among the 600 choices are frequency of workout, using weighted hula hoops, Zumba, secrets to a healthy heart and so much more. Lifeguards at Deep Run Beach Thank you to the Deep Run Beach lifeguards who safeguarded my Border Collie who had run across Rt. 364 to the beach to take a swim in the lake. They secured her with a rope; they had and tried to find her owner in a nearby neighborhood with no success. Without knowing if anyone would show up, they held on to her, saving her from traffic, until I showed up in my car to bring her back to our home on the other side of Rt. 364. Thank you so much for preventing her from getting hit by a car. You went above and beyond, and I am so very grateful! We are reinstalling our electric fence to keep her in the yard.
