Pulled Pork Soft Tacos Recipe courtesy of Midwest Dairy Assoc. Servings: 6 For pork: 2 pounds boneless pork loin roast 2 tablespoons brown sugar 1 tablespoon ground ginger 2 garlic cloves, smashed 1 small white onion, coarsely chopped 1/2 cup orange juice 2 limes, cut in half For tacos: 1/2 cup nonfat sour cream 1 teaspoon cumin 2 scallions, trimmed and chopped 12 soft corn tortillas (6 inches each) 1 1/2 cups shredded reduced-fat Colby Jack 1 bag (8 oz.) shredded red cabbage 3/4 cup fresh salsa Trim excess fat off roast. In small bowl, combine brown sugar and ginger; rub generously over roast. Place in slow cooker with garlic, onion and orange juice; cook on low heat 8 hours (or high 4-6 hours.) Transfer pork to large bowl and shred with forks. Strain pork liquid from slow cooker and pour over pulled pork to moisten. Squeeze lime juice on top and mix well. Divide into 12 servings. In small bowl, mix together sour cream, cumin and scallions. Cover each corn tortilla with 2 tablespoons cheese; microwave 20 seconds. Top with pulled pork, 2 teaspoons sour cream mix, 1 1/2 tablespoons shredded cabbage and 1 tablespoon salsa. Fold and serve immediately.

COVID-19 UPDATE NYS What You Need To Know
Step 1: Determine eligibility and schedule an appointment. Vaccines are available at pharmacies, hospitals and through local health departments statewide – please contact your provider of choice to schedule your vaccine appointment. Additionally, there is a network of State-run sites distributing vaccines statewide – to determine eligibility and schedule appointments at New York State-run vaccination sites only, use the Am I Eligible app. You can also call the New York State COVID-19 Vaccination Hotline at 1-833-NYS-4-VAX (1-833-697-4829). Due to extremely limited supply from the federal government, it may be 14 or more weeks before an appointment is available.
Step 2: Complete the Vaccine Form. Once you have a confirmed appointment, you must complete the New York State COVID-19 Vaccine Form. This form can be completed online and you will receive a submission ID, or can be completed at your vaccination site. (We encourage New Yorkers to complete the form ahead of time.)

Cat Frees Crickets, Gecko Goes Hungry DEAR PAW’S CORNER: I have a leopard gecko named Lenetta, and I wouldn’t trade her for the world. There’s a problem, though. I also have a cat, and that cat always finds a way into the room where Lenetta is kept, and spends his time chasing the crickets through the plastic “kritter keeper.” Sometimes it gets flipped over and the crickets escape. Then I have nothing to feed to Lenetta, and there are loose crickets all over the house. How do I get this cat to stop obeying his instinct to chase these bugs? Help, before any more crickets get loose! -- Josiah from New York DEAR JOSIAH: Ah, that’s the thing: It’s a cat’s instinct to chase small, hopping things. Cats think it’s awesome. Rather than try and teach your cat not to chase crickets -- a tough job that will require long-term commitment, daily training sessions and possibly some genetic manipulation to remove that hunting instinct -make it tougher for the kritter keeper to get turned over. Solution 1: Duct tape. One piece on each side of the lid, being careful not to cover the air vents. If you use a cricket shaker or something similar, take out the shaker tube and secure the lid. Solution 2: Camouflage. Make the cricket cage invisible. Put it on a shelf that the cat can’t reach. Cover it with a thin cloth (that air can get through) or place it behind other objects. Out of sight, out of mind. Solution 3: Keep the door to Lenetta’s room closed. This may be more difficult because your cat clearly has figured out how to get in. Think about other ways to discourage his entry. Good luck!

Tire alignment is a w ay to reduce w ear on tires and help avoid steering and “ pulling” problems. SAFELY AVOID POTENTIAL WINTER HAZARDS Exercise extra caution when driving on roadways during the winter, as they may contain ice or snow. All it takes is a small coating of precipitation on roadways to make driving treacherous. Wetlooking roadways may be wet, or they may be covered by ice, and it’s difficult to tell the difference with the naked eye. Always slow down and assume you are driving on ice. Make every effort to improve visibility. This includes checking windshield washer fluid levels and ensuring windshield blades are in good working order.

No Cure, Just Treatment for Rare Skin Disorder ---

DEAR DR. ROACH: My girlfriend has necrobiosis lipoidica. She suffers from this on her shins, as did her mother. She is not diabetic. We cannot find good information on how to rid her of this. The information we find is not about cures, but treatments that mask the symptom, such as steroids. We cannot even find a doctor that specifically treats this condition. Can you help? -- M.B. ANSWER: Periodically I get letters referencing a condition like this one that I know absolutely nothing about. Fortunately, I have the time to do a lot of reading, and I talked to several people with the condition. Here is what I found. Necrobiosis lipoidica is a rare skin disorder, usually but not always associated with diabetes. It occurs mostly in young adults (the average is 25 years old when associated with diabetes, 46 years if not), and is more common in women. It may also be associated with thyroid disorders and celiac disease. The cause is unknown. The diagnosis is made by skin biopsy. The appearance is usually of a large, variably colored and elevated patch of skin, most commonly on the shins, as your girlfriend’s is, but it can spread to other parts of the body, especially skin that has been scraped or damaged. Because necrobiosis lipoidica can occasionally transform to skin cancer, it needs careful surveillance. There is no cure for necrobiosis lipoidica. However, there are treatments that can reduce the inflammation. Steroids, either topical or injected, are the usual first choice. Topical steroids are more effective if they are given as ointment and covered with an air- and water-tight dressing. If topical steroids are not as effective, there are many other therapies that have been tried, including: the medication tacrolimus, which decreases the immune response; ultraviolet light A; antimalarial drugs (also used for autoimmune diseases); and others. The disease normally progresses slowly, then stabilizes, but it can spontaneously resolve in some people. Necrobiosis lipoidica may also ulcerate, at which point a wound care specialist may be of tremendous value. It may not be easy to find an expert dermatologist for this condition. I would start with a support group, as you can get expertise from others who have been living with this condition. I found one large group on Facebook. I read some tips on makeup and temporary tattoos for cosmetic improvement. I found two clinical trials recruiting subjects, one in Boston and one in Pennsylvania. HEALTH BENEFITS OF VEGETARIAN DIETS Many people change their lifestyles in an effort to improve their overall health. Changing the foods one eats is one of the more common ways people try to get healthy, and many people find adopting a vegetarian diet helps them realize their goals. Adopting a vegetarian diet can be a great way to improve personal health. Vegetarians may now find it easier to maintain their lifestyles than ever before thanks to the year-round availability of a variety of fresh produce and more vegetarian dining options offered at restaurants. Even premade vegetarian foods are more widely available at markets and grocery stores. Approximately six to eight million adults in the United States eat no meat, fish or poultry, according to a Harris Interactive poll commissioned by the Vegetarian Resource Group, a nonprofit organization that disseminates information about vegetarianism. Many more avoid red meat while still eating fish and poultry. Although studies into vegetarianism long pointed out the potential nutritional deficiencies of such a diet, the tides have shifted, and many nutrition experts now note how eating plant-based foods offers sufficient nutrition and can reduce the risk for chronic illnesses. A vegetarian diet may offer protection against cardiovascular disease, some cancers, type 2 diabetes, and obesity. Data published in the Proceedings of the Nutrition Society found vegetarian diets are high in carbohydrates, dietary fiber, essential vitamins and minerals; offer an abundance of antioxidants; and are very low in saturated fat. However, switching to a vegetarian diet is not enough to lose weight or get healthier. Choosing the right type of vegetarian foods - including whole grains, fruits, vegetables, and proteinrich legumes - and controlling portions is key. Vegetarians may have low cholesterol, as well as fewer incidences of stroke and obesity and cardiovascular incidents than non-vegetarians. Whether this is entirely food-based, or because vegetarians tend to also embrace other healthy habits, has not yet been determined.

The Spot in Canandaigua: Meeting Student Needs Every Day BY AMANDA DUDEK
I
f you think The Spot sounds like the place to be in Canandaigua, you are not wrong. Now in its 5th year, The Spot, a nonprofit, has been supporting the needs of Canandaigua school children and their families since its inception in 2016. With the pandemic creating more hardship, 2020 was The Spot’s most challenging year yet. Sarah Chilson, Executive Director of The Spot, founded the charitable organization in part due to the need she knew existed as well as her own experiences. “I really wanted to get involved in a meaningful way with the Canandaigua school district,” she explained. “It all goes back to when I was younger. My mother was a single mom, and we really struggled. We received government assistance for a time.” Chilson recalls growing up with thinking of Canandaigua as a city of unattainable economic advantage until an inside perspective changed her view. “When I saw the level of free and reduced lunches, I wanted to make a difference,” she recalled. “It started out as a small neighborhood drive and quickly grew into a full program as we added school supplies and helped the nurse’s office out with extra clothing. Later that year, we hosted our first back-to-school event and distributed free supplies to about 100 families. We have held the back-to-school distribution ever since.” Two years later, The Spot added its resource room at Canandaigua’s Primary-Elementary School, and the following year, it added its middle school and academy resource rooms. “Our free resource rooms carry school supplies, extra clothing and shoes, snacks, and other items student might need,” shared Chilson, noting that The Spot is completely run by volunteers. “Our goal in these rooms was to provide charity with dignity. So, we set it up like a store to give our students choice while maintaining their self-respect. We are working with kids who maybe don’t always get a lot of choice, so this is important. I am grateful to our more than 100 volunteers to putting in the extra time and effort to make this happen.”

The Spot also sends non-perishable food bags home with about 160 students each month in cooperation with FoodLink and Canandaigua Churches in Action (CCIA). “We started doing home deliveries for families with transportation issues and students who do not currently attend school in person,” said Chilson. The pandemic has only increased the need for The Spot. “When things started to shut down, there was a huge uptick in need for food support. Then, at our back-to-school event last year, we noted significant increase in need. Families just did not have the extra $100 per child to get the necessary school supplies. We served 520 students, up from 120 families from the 400 we had served the year before. Food and personal care items were also very much needed.” The impact The Spot is making undeniable. “When we first started this project, our focus was on serving the students,” said Chilson. “The unintended blessing is that it has also been a blessing to the teachers who had been spending their own money to meet the needs they saw.”

Families are in crisis situations who have never been there before, and things like personal care items simply aren’t available through government assistance.” Meanwhile, Chilson and her fellow volunteers at The Spot will continue to support several dozen Canandaigua students every day. Many people are familiar with the term “ozone layer.” But some may not know that the Earth’s atmosphere consists of several layers. The lowest layer of the Earth’s atmosphere is the troposphere, which the U.S Environmental Protection Agency notes extends from the Earth’s surface to roughly six miles in altitude. The troposphere is where nearly all human activities occur. Even climbers who make it to the peak of Mt. Everest are still in the troposphere, as Everest is less than six miles high. But anyone who has ever boarded a commercial flight has likely left the troposphere and entered the stratosphere, where the majority of commercial airplanes fly. The stratosphere begins at six miles above the Earth’s surface and extends to about 31 miles above the surface of the planet. The EPA notes that most atmospheric ozone is concentrated in a layer in the stratosphere that’s roughly nine to 18 miles above the Earth’s surface. The ozone layer in the Earth’s stratosphere absorbs some of the sun’s radiation, including the UV and UVB radiation that has been linked to cancer. The third layer of the Earth’s atmosphere is the mesosphere, which extends from 31 miles above the Earth’s surface to roughly 53 miles above the surface of the planet. The height of the next highest layer, the thermosphere, varies due to changes in solar activity. The exosphere, which contains many of the satellites that orbit the Earth, is the outermost layer of the Earth’s atmosphere.
