Anyanka Katz wins the 2021 Ryan Scholarship BY SUSAN COYLE

C

ongratulations to Anyanka Katz, winner of the 2021 Norman V. Ryan Scholarship through Monroe County 4-H Youth Development. Anyanka, a member of the Mariah Meadows 4-H Club, will be heading to Niagara University in the fall to begin her studies in Biochemistry. A huge portion of Anyanka’s 4-H experience has been learning more about horses. She was able to go to multiple other barns with her 4-H experience. She said, “talking to other kids and experiencing other methods made me a better rider and greatly improved my horsemanship.” She learned a lot about horses, from care and riding to anatomy, injuries, and illnesses, and even how doctors treat and save animals. “As a result, I chose to pursue a study of biochemistry with a minor in public health because I want to become a medical doctor. I am currently planning to go into pain management after seeing how pain debilitates people and animals and prevents them from enjoying their lives.”

The Norman V. Ryan scholarship is presented to a Monroe County graduating high school senior who has demonstrated leadership and community service. Special consideration is given to teens who are planning to enter a field of study or employment as a result of their 4-H activities and experiences.

Anyanka credits her 4-H experience as an important part of her growth. She said, “When I started with 4-H, I didn’t talk a lot. I lacked confidence and often just didn’t know what to say... My 4-H club gave me opportunities to talk about things I cared about, helped me explore new ideas, and gave me confidence in what I knew. The confidence I gained was not only evident in my knowledge of horses or limited to 4-H. There were improvements in school and in my other activities. I was a captain my second year of Junior Varsity Basketball and again my second year of Varsity Basketball. Academically, I graduated Summa Cum Laude and as a National Honor Society member.” Susan Coyle, 4-H Program Leader said, “It is a pleasure to honor Anyanka with the Norman V. Ryan 4-H Scholarship. Anya has been able to learn and develop life skills through her 4-H experience. It is particularly exciting to see her pursuing studies and a career field that were inspired by the experiences she took part in through 4-H.” Through 4-H, Anyanka has been a role model to others on how to treat horses physically and emotionally, helped plan parties and winter fest as a teen leader, and helped less experienced riders at Intercounty. She has also been involved with volunteering in the 4-H booth at the State Fair by doing presentations and talking to fair goers about the 4-H program. The skills and confidence Anyanka has gained in 4-H, coupled with the satisfaction of continued learning and community service, have prepared her for the transition to college. Everyone involved with the Monroe County 4-H program wishes her well in her new adventures!

MORCILLA CON SETAS (BLOOD SAUSAGE WITH MUSHROOMS, SPRING PEAS AND MINT OIL) Serves 4 1 pound morcilla blood sausage 1 pound mushrooms, sliced 2 tablespoons olive oil 4 cloves garlic, slivered Salt and pepper to taste 2 tablespoons white wine 1 cup shelled spring peas 1 tablespoon chopped fresh mint 2 tablespoons mint oil Mint Oil 1/2 cup extra-virgin olive oil 1/2 cup chopped mint Pinch of salt Cut the blood sausage into 12 slices. Sauté the mushrooms in olive oil with garlic, salt and pepper for 5 minutes. Add the wine and cook for 2 more minutes. Boil the peas for 2 minutes and drain. When mushrooms are done, remove from heat and stir in the peas. In a cast-iron skillet, sear the morcilla in a dry pan for 2 minutes per side. Arrange the slices of morcilla down the middle of a platter. Surround with mushroom/pea mixture and drizzle the plate with the mint oil. For the mint oil: In a small saucepan over medium heat, heat olive oil to warm. Remove from heat and add the mint and a small pinch of salt. Allow to rest for 1 hour. Drain through a sieve. Reserve extra mint oil for other uses, such as vinaigrette.

You can remove the bin, get what you need and replace it, rather than digging through cans and boxes on a shelf and having to straighten it back up when you’re done. * A better use for soda: Use it to scrub your pots and pans. If you have grime and slime, try letting the acids in soda pop work it out for you. Pour enough soda to cover the bottom of the pots or pans and let soak for 5-10 minutes. Then scrub away. * “If you have a retractable cord on your vacuum, try this trick. Clip a clothespin at the optimum length, and the cord will not retract past that point. Heatstroke Almost Killed Her Dog DEAR PAW’S CORNER: I never keep my dog “Alfie” in the car, even on cool days. Last Sunday, I took Alfie to the park to get some exercise. It was hot, and after a short while Alfie came back to me, panting heavily. He was still panting on the drive home and seemed lethargic, so I called his veterinarian, who said to take him to the emergency vet immediately. There, he was diagnosed with heatstroke! They treated him and he’s doing much better, but I was shocked at how quickly Alfie developed a heat injury from being outside. Please warn your readers that dogs are very vulnerable to summer heat. -Chris in Portland, Oregon DEAR CHRIS: You are so right! I’m glad Alfie is doing well and that tragedy was averted by your instinct to contact the vet. Just like humans, dogs need to acclimate to their environment. Sudden weather extremes like excessive heat or freezing cold are very difficult to adjust to. Dogs have far fewer sweat glands than humans; they manage their body temperature in other ways, such as panting when it’s hot. So if we’re feeling the heat, dogs are feeling it even more! It’s important to watch for signs of heat injury, especially when outdoors. Excessive panting is a key sign, as is lethargy and excessive drooling. Other symptoms include reddened gums, vomiting, diarrhea, loss of coordination and collapse. Immediate treatment is needed to prevent serious injury or death. Keep plenty of cool water on hand for your dog to drink, both indoors and out. Never leave them in the car, even for a minute. Lifeguards at Deep Run Beach Thank you to the Deep Run Beach lifeguards who safeguarded my Border Collie who had run across Rt. 364 to the beach to take a swim in the lake. They secured her with a rope; they had and tried to find her owner in a nearby neighborhood with no success. Without knowing if anyone would show up, they held on to her, saving her from traffic, until I showed up in my car to bring her back to our home on the other side of Rt. 364. Thank you so much for preventing her from getting hit by a car. You went above and beyond, and I am so very grateful! We are reinstalling our electric fence to keep her in the yard.

SENIOR NEWS By Matilda Charles Exercise Can Reduce Risk of Alzheimer’s Can we do this? Exercise twice a week for 10 minutes each time to prevent Alzheimer’s disease? Of course we can. Researchers examined the records and followed the progress of 250,000 patients who had mild cognitive impairment. They concluded that moderate physical activity more than once a week reduced the risk of Alzheimer’s disease by 18%. We need to do more for our brain health than work the daily crossword puzzle or brush up on our chess skills. Physical exercise protects the brain, too, per the study. The key is that it should be moderate to vigorous exercise. According to the Harvard School of Public Health, examples of moderate exercise include walking 3-4 mph (a brisk walk while you’re still able to hold a conversation), vacuuming and washing windows, mowing the lawn and doubles tennis. Other sources are more specific: water aerobics for 30 minutes and raking leaves for 30 minutes. For comparison, examples of light exercise include washing dishes and using a computer. Vigorous exercises are things like shoveling, singles tennis and playing basketball or soccer. Having said that, there are more parts of our bodies that need exercise than just our brains. That’s where more time in an activity comes into play. Instead of a mere 10 minutes per day, we’re told to shoot for 150 minutes of exercise per week, or 30 minutes onr five days. One place to start developing an exercise plan is Mayoclinic.org. Type “moderate exercise” in the search box and scroll down the results until you find something interesting. Among the 600 choices are frequency of workout, using weighted hula hoops, Zumba, secrets to a healthy heart and so much more. DON’T LET SUNBURN DERAIL SUMMER FUN

Can Lyme Disease Lead to Parkinson’s ---

DEAR DR. ROACH: Can Lyme disease send a person into Parkinson’s disease? I tested positive for Lyme -- I had the bulls-eye rash, fever and terrible headaches. After a month on doxycycline, my left arm started shaking and my neurologist diagnosed me with Parkinson’s. The doctor said it had nothing to do with the Lyme disease. What is your opinion? -- S.M. ANSWER: I can absolutely understand why you might suspect that the neurologist could be wrong. The coincidence seems too much to believe. However, I think your neurologist is probably correct. The different types of neurological complications of Lyme disease are many and varied. The most common are any combination of meningitis symptoms (inflammation of the lining of the brain, with headache, fever, stiff neck and light sensitivity); disorders of the cranial nerves (especially the facial nerve, so people with neurological Lyme disease can look like they have Bell’s palsy); and damage to peripheral nerves, causing pain and weakness or numbness, often resembling sciatica (but may include other parts of the body). A detailed neurological exam by a neurologist would look for signs of Parkinson’s disease -- not just the tremor you describe, but also muscle rigidity and changes in gait. These would be very unusual in Lyme disease. I did find cases resembling some aspects of Parkinson’s disease, but they improved with treatment. It is possible that the stress of the Lyme disease hastened the onset of Parkinson’s disease you were destined to get. I say your neurologist is “probably correct” because what I found -- absence of data to support a correlation -- does not mean that there is no correlation, and it is possible that time may prove Lyme disease is connected to Parkinson’s. However, I think it’s unlikely.

Many people find it impossible to think about summer without conjuring visions of spending endless hours outdoors from morning until evening, whether beachside, on the open water or even floating in a backyard pool. Although a certain measure of sun exposure is required for some natural functions of the body, it’s well documented that too much time in the sun can be hazardous to one’s health. That’s why summer frolickers need to exercise considerable caution each time they step outside. Taking sunburn for granted can be a big mistake. Many people wouldn’t risk burns from a hot stove or open fire, but they won’t think twice about being unprotected under the very hot rays of the sun. The Centers for Disease Control and Prevention says more than one-third of adults and nearly 70 percent of children admit to suffering from sunburn within the past year. Depending on the intensity of the sun and the amount of time spent outside, sunburn can be a first- or second-degree burn. In first-degree burns, damage affects the topmost layer of skin. However, sunburn can even affect deeper layers and cause blistering in addition to redness and pain. Sunburn also can cause some irreparable damage that goes unseen. According to WebMD, ultraviolet light from the sun can alter DNA, prematurely aging skin or even contributing to skin cancers. It can take years before symptoms become noticeable. Therefore, it is best for people of all ages to exercise caution when spending time in the sun. Sunburn is one of the most easily prevented summertime ailments. It’s also important to note that sunburns are not just limited to the hot weather or when it is sunny outside. Ultraviolet damage can occur at any time of the year, and also from artificial UV sources, such as tanning beds. Preventing sunburn is simple.
