Please Note: This is a GYC Girl YOU Crazy Book...which means that my recipes will not be in any particular order, and will probably appear to be somewhat placed at random unlike it would be in a regular cookbook. I’ve tried to be normal...there is no room for mistakes...Therefore, this is done on purpose and not as an excuse (*smile). If YOU are a regular Reader of GYCGirlYOUCrazy.com, then you know I do this consistently, and I encourage it! However, the recipes are conveniently placed in 4 short categories. It is 8 OH SO DELICIOUS recipes from my own life that I personally want to share with YOU! Cheers to enjoying every meal and dessert down to the last bite and getting your passion stirred in the process!!

I’m a wannabe foodie... and I’m cool with that!
Introduction In my first year of blogging (2012), I was told by fellow Bloggers that Readers love to see us live, talk about Holidays, recipes, what we’re wearing, etc. However, that was not the initial goal or aim of GYC-GirlYOUCrazy. com. GYC (blog + collaborative) is about living YOUR/Mine/Our dreams, and encouraging ourselves on the process to getting there (you may forward to the end of the book for more details). Therefore, I was far from sure as to HOW to incorporate recipes or any other “thing” that was not without a doubt inspirational and/or story-sharing related to my blog+collaborative. In respecting their advice, I gave it a true attempt! That year I added Dessert to my blog with one GYC version of a Banana Split, and shared the story of the “Girl YOU Crazy” faces I received whenever it was ordered. This Banana Split was sassy and confident (yes...I am talking about a dessert), it was drizzled with Hot Fudge, Caramel, Pecans and Whipped Cream. That’s it. Apparently, no one orders that and especially not with a serious face like mine because I am serious about my desserts (I have e-mail subscriptions to prove it!)... Don’t believe me (about the faces...)? Then go to your local ice cream shop and order it! Long-story-short, this GYC Banana Split marked my introduction of how I can relate/inspirationally blog about confidently going in the direction of our dreams, using creativity, and not backing down from what we want/desire (no matter the faces of disapproval/discouragement) through doing everyday things like ordering food! Although at the time as a new Blogger, I did briefly place fully pursuing this idea on hold, leaving the Dessert tab there but keeping 1
the agenda focused before I branch out. Fast-forward, this year (2014) I launched a Lifestyle section where I document “the life we live is the story we tell.” I recognize that “through the limitless of the #ICAN…We Live.” Therefore, I decided to use the #ICAN because before we decide to do…we have to decide in some manner that WE CAN. In circling back to relating everyday life activities to living out our dreams and fulling our purpose, that bring us to today...Passion and Cooking (Oh...and Eating too)!! Earlier this year, I wrote a blog post titled “Let Those With Passion Eat Cake.“ It was a hybrid of “how-to” with “let’s do!” A recipe for a deliciously moist (and easy) Peanut Butter Sheet Cake with six steps that attempted to demonstrate accessing passion, keeping passion flowing no matter where we are on our journey, and being satisfied, which is where the photo on the first pages of this book comes from! It was definitely ONE of my favorite posts of the year. So in keeping up with the annual tradition I started to creatively show my appreciation to you all, gifting a free end-of-the-year GYC Book... book number 3 is an extended version of the blog post mentioned above minus the Peanut Butter Sheet Cake recipe. Allow me to welcome YOU to “Let Those With Passion Eat Cake & Other Things.” What you will find in this short cookbook, is inspiration beyond filling your stomach with simple but really good, like really good food! I know “inspiration” can be read as a vague blanket statement but over time, I’ve realized that I just want to inspire people with my journey while they are on 2
their perspective journey in whatever way my Purpose will allow. I want to creatively inspire and provoke YOU and myself to live our best Purpose-Filled life, free and passionately! Pasta salad Serves 2-4 // Prep 10 min. // Cook 15 min. // chill 20 min. Ingredients: 2 boneless chicken breast, raw pepper garlic salt lawry’s seasoning salt ¼cup green pepper ¼cup yellow pepper ¼cup orange pepper (or carrots) ¼cup onion 3 tbsp. mayonnaise 3 tbsp. grated parmesan cheese shredded sharp cheddar cheese spinach (optional) ½lb pasta noodles (spaghetti or your choice) 1 small frying pan 1 pot for boiling pasta 1 medium size bowl for mixing butter & sunflower oil (or olive oil), enough to fill pan
InsTructions: Bring a medium pot of lightly salted water to a boil. Add pasta. Cook for 11 to 13 minutes or until tender, stirring occasionally. Drain and pour pasta into a medium size bowl, chill for 10 minutes in freezer. Dice raw boneless chicken breast, season to taste with garlic salt, pepper and Lawry’s seasoning Salt. Cook in small greased frying pan over medium heat on stove-top, covered. Add a little water after 5 minutes and continue (covered) cooking for 5 more minutes, or until done (whichever is first). Dice peppers (yellow, green and orange) and onion. Pour chopped vegetables over chilled pasta. Mix. Add 3 tbsp. of mayo. Stir. Add 3 tbsp of parmesan cheese. Stir. Add cooked chicken and sprinkle with shredded cheese to flavor. Chill and serve...get fancy with a side of spinach! 23

Salmon Spinach Salad Serves 1-2 // Prep 10 min. // Cook 8 min.
Ingredients: 1 atlantic salmon filet garlic salt pepper lawry’s seasoning salt ¼ green pepper ¼ yellow pepper ¼ onion 1 cucumber, slice to your liking 1 tomato, slice to your liking shredded sharp cheddar cheese spinach raspberry dressing grease frying pan with butter & sunflower oil (or olive oil)
InsTructions: Season both sides of salmon to taste with garlic salt, pepper and Lawry’s seasoning salt. Cook in small greased frying pan over medium heat for 4 minutes on both sides or until it begins to flake. Set aside. Dice peppers (yellow and green), onion, tomato and cucumbers. Place all vegetables in buttered pan on low medium heat for sautéing. Stir. Slowly add in shredded cheese to your liking. Allow to melt for a few seconds. Place sautéd vegetables and cooked salmon over a bed of spinach. Drizzle your favorite raspberry dressing over the salad and serve!

you think you fancy Salmon ® Eggo waffle Sandwich Serves 1 // Prep 10 min. // Cook 8 min. Ingredients: 1 atlantic salmon filet garlic salt pepper lawry’s seasoning salt 1 green pepper, sliced to your liking 1 yellow pepper, same 1 onion, same 1 cucumber, same 1 tomato, same shredded sharp cheddar cheese mayonnaise 2 eggo® waffles, buttermilk grease frying pan with butter & sunflower oil (or olive oil) small frying pan toaster oven
InsTructions: Season both sides of salmon to taste with garlic salt, pepper and Lawry’s seasoning salt. Cook in small greased frying pan over medium heat for 4 minutes on both sides or until it begins to flake. Set aside. Dice peppers (yellow and green), onion, tomato and cucumbers. Place all vegetables in buttered pan on low medium heat for sautéing. Stir and place to the side. Toast 2 frozen waffles for 1 minute, then cook waffles for about 30 seconds on both sides in buttered frying pan. Melt shredded cheese over one waffle, preferably in the mircrowave or toasted oven for 15 seconds. Spread mayo over one waffle, place cooked salmon and sautéd vegetables on top; close that beautiful sandwich with the other waffle and serve! *2 snaps 51

Grilled cheese Serves 1 // Prep 4 mins. // Cook 8 mins. Ingredients: shredded sharp cheddar cheese 2 slice of swiss cheese 1 slice of american cheese dash of lawry’s seasoning salt 1 tbsp. chopped onions handful of spinach 2 slices of bread, whole wheat grease frying pan with butter small frying pan
InsTructions: Sauté chopped onions and spinach on medium heat for 2 minutes in small buttered frying pan. Set side. Take 2 slices of bread (your choice), place all cheeses on one side...THEN sprinkle a dash of Lawry’s in the middle and close. Cook in small buttered frying pan on both sides for about 2.5 minutes or until golden brown (if you like that)! Now that it is all gooey with goodness...open it up and place the sautéd onions and spinach inside. AND SERVE!! If you add in smoked sausage and/or smoked sausage with BBQ sauce instead of the spinach... you will be doing major things...MAJOR!! Yooooooo... 57

I’m So Saucey... BBQ Sauce Beef burger Serves 1 // Prep 6 mins. // Cook 9 mins. Ingredients: 1 lb ground round ¼cup bbq sauce, sweet baby ray’s 1 tbsp. yellow mustard 1 slice of swiss cheese garlic salt pepper lawry’s seasoning salt chopped onions, up to you! tomato sliced cucumber sliced mayonnaise (optional) hamburger bun
InsTructions: Place ground round on a plate or bowl, season meat with garlic salt, pepper and Lawry’s seasoning salt to taste. Add in mustard and BBQ sauce and mix. Get in there and work it out!! Place burger or burgers depending on your size preference, I made 2 (pictured) in medium frying pan and cook on both sides for about 4 minutes or until done to your liking! Place burger on a warm bun with the optional mayo. Add a slice of Swiss cheese, more BBQ sauce and mustard to taste, chopped onions, cucumber and tomato! Then find your finest dish and serve the saucey burger!!

Add shredded cheese on top and allow to melt. Warm croissant in the mircrowave for 15 seconds, cut open, insert spinach/lettuce and tomatoes and lay burger on top. Close that fancy burger. Get a small bowl and mix mayo, ketchup, garlic salt and parmesan cheese together to taste and boom there you have some “special” sauce to dip this juicy burger in!! SERVE. 85

Better than your mama’s
Deep dish Peach cobbler Serves. . .you decide // prep 20 mins. // Cook 55 mins. Ingredients: 4 cans of 15 oz sliced peaches 2 pie crusts, 9inch ¼ tsp cinnamon ½ tsp salt ½ tsp vanilla, imitation or pure ½ cup of granulated sugar ½ cup of light brown sugar 1 stick of unsalted butter medium pot for cobbler juice 8x8inch casserole dish roller knife
InsTructions: Pre-heat oven to 425ºF. Roll out 1 pie crust, place in casserole dish, poke several holes to vent, then bake for about 10 minutes. Take out and set aside. Open the cans of peaches. Take peaches out and do not throw away the juice! In a medium pot, add the juice from the peaches, a stick of butter, light brown sugar and granulated sugar. Stir. Add cinnamon, salt and vanilla. Stir. Taste and make sure it is amazing!! Set aside. Dice peaches and place all peaches in casserole dish. Take the other pie crust, roll it out and make one inch pieces for pattern. Pour in most of the juice. Then, lay pie crust pieces on top, securing each piece. Pour more juice on top but not around the edges (it’s not a good look...). Bake for 55 minutes, if not done, keep baking, and check every 5/10 minutes after untill golden brown or done. SERVE with or without ice cream!! 99

Untitled(because it's ready for anything Brown Sugar Pound cake Serves. . .you decide // prep 25 mins. // cook 55 mins. Ingredients: 3cups all-purpose flour 1 tsp. baking powder ¼ tsp of hazulnut creamer ½ tsp. salt 3 sticks of butter, salted/unsalted 1 tbsp. of sour cream 3cups firmly packed light brown sugar 5 large eggs 1cup whole milk & 1 tsp. vanilla, mixed together 2 bowls for mixing, large & small electric mixer or a strong hand wooden spoon
InsTructions: Pre-heat oven to 325ºF degrees. Butter and lightly flour or PAM® your preferred cake pan (options listed below). Mix flour, baking powder, creamer and salt together in a small bowl. Set aside. In a large bowl, use mixer to beat in butter on medium speed for 3 minutes, until whipped! Slowly add in sugar and continue mixing for 3 more minutes until light & fluffy. Beat eggs in one at a time, maintaining the wholeness of the batter. Alternatley add in vanilla milk, flour and sour cream. Beat and pour batter in cake pans. Bake for 55 minutes, if not done, keep baking, and check every 5/10 minutes after untill golden brown or done. Allow to cool for 10 minutes and Serve like a work of art. Get fancy with frosting if YOU need to!

This Pound Cake is truly ready for anything, if you add half of a Banana, it quickly becomes sensational Banana Bread, if you add frosting, it becomes an amazing fancy Birthday Cake...the list goes on.
