Vegan Atlanta is a group founded by Jen Foley, David Fournier, and Luce Fornier, and is intended to be a place for those who follow the teachings of Donald Watson, who founded The Vegan Society and coined the term vegan back in the 1940s. The group is a place for Atliens to share
stories, recipes, advice, advocate, and discuss the ins and outs of being a vegan in the A. With almost 5,000 Facebook followers, Vegan Atlanta is continuously growing and accepting new members with open arms. On any given day you can expect someone to be giving advice on ethics, letting everyone know what’s on the hot bar at Whole Foods, or sharing cute videos of piglets cuddling with puppies. Being vegan
isn’t extreme and it’s going to take over the world but until then we must all do our part to make sure we spread the love and educational resources for those who don’t quite understand why we do what we do. Vegan Atlanta is a warm, inviting, and passionate group to be a part of and every day brings new opportunity in the fight to end animal cruelty and suffering. Just remember, be kind to every kind!

To make your tofu ricotta, you are going to add all the ingredients listed besides the marinara, 1 cup of the spinach and the mushrooms to a food processor and blend until smooth. Season to desired taste. Next, you are going to start cooking the lasagna noodles as directed. While those are cooking, you can warm up some olive oil in a sauté pan with salt, pepper and Italian seasoning to taste
and add your chopped mushrooms. Continue to sauté until they are cooked thoroughly. To prepare the rolls, you will take one entire lasagna noodle, and smooth a heaping tablespoon of your tofu mixture down the entirety of the noodle. You can then add your sautéed mushrooms and remaining uncooked spinach, carefully roll them up and place into a baking dish. Make
sure you spread a thick enough layer of the marinara to the bottom of the baking dish so that your lasagna rolls won’t stick to the dish! Once you have finished making all the rolls, you can top each one with more marinara, and sprinkle with Italian seasoning. Cover with foil and bake at 350 degrees for 20 minutes or until cooked all the way through. Recipe Submitted by: Becca Cannon, @beccalayy
INGREDIENTS: · 1 pack of firm or extra firm tofu · the juice of 2 lemons · 1/4 cup of nutritional yeast · 1 1/2 cup roughly chopped mushrooms · salt, pepper, and Italian herbs to taste · 1 jar of marinara sauce of your choice

I N G R E D I E N T S : 1/2 head cauliflower 1/2 cup BBQ sauce of choice 1 cup bread crumbs 1 cup flour 1/2 cup non-dairy milk 1 tsp salt 1 tsp pepper 1 tsp garlic powder 1 tsp paprika

D I R E C T I O N S : Preheat your oven to 400 degrees. Chop your cauliflower into bite sized flourets, rinsing and drying them. Spray the bottom of a pan with nonstick spray, spread your cauliflower out and season with salt and pepper. Bake for 5 minutes, turn cauliflower and bake for 5 more minutes. Remove the florets from oven and let cool. Place your non dairy milk, flour, salt, pepper, garlic powder and
paprika in a small bowl and mix thoroughly until you have a thick paste that will stick to your cauliflower. Add more milk by the tablespoon if it is too thick, or add flour by the tablespoon if too thin. Next you are going to take another small bowl and add your breadcrumbs. You are going to want to take the cooled cauliflower, roll it in the flour coating, again in breadcrumbs, and place back onto the pan.
When you have done this to every floret, place pan back into the oven for 10 more minutes. While the cauliflower is finishing up in the oven, you need to prepare the sauce; you can make your own or use whatever (vegan) brand you prefer. After the cauliflower has finished cooking, pour the sauce over it, place it back in the oven one more time to make sure everything is warm, and then you’re finished!

Tacos are among the
easiest of meals to prepare, usually only requiring 20 minutes or less from preparation to cooking. There really is no wrong way to eat a taco- you can use meatless meat crumbles, black beans, mushrooms, and various other items to
replace the meat or just load them down with zesty veggies, seasoning, and salsa. We hope you will enjoy this simple recipe submitted by Vegan Atlanta member, Amber Sproul, @ ambersproul.
Ingredients:
1 small to medium onion of your choice 3 to 4 garlic cloves 2 tbsp. oil of your choice 10 oz. can of mild red chile enchilada sauce 1 package of beefless crumbles 1 tsp. dried oregano 1 tsp. paprika 2 tsp. chili powder ½ tsp. garlic powder 1 tbsp. cumin Black pepper and sea salt to taste Taco shells Toppings of your choice (lettuce, tomatoes, vegan sour cream, cilantro, etc.)
Directions: Sauté onions and garlic in oil on medium heat for about 6 – 10 minutes until onions are translucent.
Taste and adjust seasonings accordingly, adding black pepper and sea salt if needed.
Add package of crumbles, enchilada sauce, and seasonings. Stir to combine and continue to cook on low to medium heat until cooked through.
Assemble tacos, adding your favorite toppings and enjoy!

MEET THE AVOCADO guru BEHIND AVOCADO VEGAN CAFE AND JUICE BAR Godfrey Lewis,
owner of Avocado Vegan Cafe and Juice Bar, has found a way to bring his Jamaican roots and influences to Atlanta. Being vegetarian for most of his life- 37 years!Godfrey transitioned into veganism 12 years ago after his wife, Asucena Lewis, who had Lupus, was told there was nothing more the doctors could do for her with the
exception of placing her on steroids. Refusing to give up and not wanting to go through the pain and trauma steroids can cause, Asucena, did research on the benefits of a whole food plant based diet to see what results could be gotten from this lifestyle. Joined by Godfrey, the two embarked on this new journey to health and they were not disappointed! Not only
was Asucena cured of her Lupus but her and Godfrey were feeling better than ever. He attributes his great health and wellbeing to his WFPB diet as well as exercise, mainly in the form of yoga which he just so happens to teach. Godfrey has been teaching yoga workshops for about 10 years and focuses on health, nutrition, and healing via a balance of healthy
lifestyle choices and exercise. Avocados are among some of the most versatile fruits out available. The avocado is a tree that is native to South Central Mexico and refers to the tree’s fruit which is botanically a large berry with a single seed. Avocados are sometimes called an avocado pear or the alligator pear due to it’s spherical shape and rough green skin. Much like bananas, avocados

grow on trees but ripen off of the tree.
Many people use avocados for both sweet and savory dishes such as in tacos or salads, on burgers and deli sandwiches, or in puddings and cakes. There is no right or wrong way to enjoy avocados as long as you are enjoying them.
Avocados are a fantastic source of healthy fats, folate, potassium, Vitamins C, K, E, B5, and B6- plus many others.

Simple Avocado Salad Dressing
INGREDIENTS:

1 whole avocado, pitted and scooped 1 whole lemon, juiced and zest 1/2 tbsp garlic, chopped 2 tbsp shallots, chopped 1 cup of water Salt and pepper
1. Finely chop up your shallots and garlic. Set aside. 2. Zest and juice your lemon. Set both aside. 3. Open and pit the avocado, scoop out the insides, and set aside. Discard skin and pit. 4. Place avocado, lemon zest, lemon juice,
1/2 tablespoon of garlic, 2 tablespoons of shallots, and 1 cup of water in a blender and blend until smooth. 5. Add a little salt and pepper to taste. Mix well. 6. Serve on whatever dish you are enjoying, or store in the fridge in a cellophane-covered bowl.

Atlanta member and animal rights activist, is a soon-to-be graduate of Georgia State University- graduating with a Bachelor of Fine Arts degree in Graphic Design. Lisa has recently launched her blog, HUMBLE AND PURE, which aims to serve as an information hub for those seeking advice on becoming vegan, transitioning into the vegan lifestyle, or for those vegans who still have questions- because let’s face it, no one is perfect and the times are always changing! Every day more and more people worldwide are deciding enough is enough and they are seeking out veganism whether it be for health, ethical, or numerous other reasons. HUMBLE AND PURE isn’t your typical vegan blog not only by way of content but it is also a beautiful work of artintertwining stunning visual pieces with sassy but honest editorial work

The blog is meant to guide and direct those seeking or already a part of the lifestyle while also making it interesting and inviting to those who may not know a lot about what veganism is and what vegans stand for. Noah’s Ark Animal Sanctuary Noah’s Ark Animal Sanctuary, located in
Locust Grove, Georgia, is a non-profit educational safe haven for over 1,500 exotic and farm animals and over 100 difference species. With food and housing costs averaging around $33,000 annually, Noah’s Ark is ran entirely off of generous private donors and is neither State nor Federally funded. As well as hosting all of these animals the sanctuary also runs a Wild Life Rehabilitation program that oversees 100s of animals yearly. The primary goal of Noah’s Ark is to
provide and safe and healthy space for these animals- free of abuse and mistreatment. While walking the roughly 1 mile long trail through the sanctuary you can see and read about tigers, pigs, donkeys, bears, and many other animals. These animals often times are coming to the sanctuary after being kept as illegal pets, confiscated from airports, forced to perform in circuses for frivolous entertainment, or even more common reasons such as the animal was “too noisy and long-lived” or “too messy”.
No matter the reason, Noah’s Ark does an amazing job housing and caring for these animals by giving them nourishment, room to grow and play, and being an educational resource for those who don’t understand what is and isn’t okay when it comes to the treatment of animals.
