ixty years. From parades to country music stars, the Water Festival has been delighting residents and visitors with a wide array of entertainment and sporting events designed to appeal to folks of every age and interest. The real star of the Festival is rightly Beaufort’s beautiful waterways, featured in everything from toad fishing to sports fishing, paddle boarding to dragon boat races, shrimp boat tours and the blessing of the fleet. And of course the Festival itself is held at the Henry C. Chambers Waterfront Park in downtown Beaufort, the perfect waterfront venue for the musical entertainment, arts and crafts market and all the other events jammed packed into the exciting ten day schedule. The Festival is completely run by volunteers. In fact it takes over 400, who are led by a very experienced team of coordinators, who are in turn led by the Commodore. This year’s Commodore is Bill Damude, who has been volunteering for the Festival for eleven years. Commodore Damude has thirty two years of teaching experience, twenty three years teaching at Beaufort High School, and twenty six years as head coach of the wrestling team. A warm, affable man, Commodore Damude is clearly at ease in his Festival role. Recently he took time from his busy schedule to talk with Beaufort Lifestyle about this year’s “Southern Summer Bash.” Traditions play an important role in the events but the Water Festival stays current by adding new and exciting events from time to time. What is new or different at this year’s Water Festival (WF)? BD: Every year we try to keep things fresh so this year we are bringing back the Gatorland Ski show, moving the Air Show to the second Sunday after the Blessing of the Fleet, and designating Tuesday to “Time-warp Tuesday” with sixties music to coincide with the 60th Water Festival. One of the Commodore’s many tasks is to design the popular annual tee shirt. Tell us about this year’s tee shirt design. BD: Many elements went into this year’s design; my wife and I along with Mary Thibault worked on the design aspects for a few months and then Mary came up with the proof. In the design there are many things that reflect the outlook of my family and me along with the Water

Festival. We picked a summer beach/ river scene with chairs to illustrate our laid back approach in Beaufort as well as myself. The plate of Lowcountry Supper represents that great night as well as the surrounding waters, the diamond shape represents the 60th anniversary/annual year, the guitar is for our son Taylor, and the hat is for our daughter Jylian. Stew the crab is an element that has been part of our family for many years and it came from Mary Thibault. There are some hidden items that the public will have to search when they get their shirts. How long have you been involved with the WF? BD: Eleven years. How did you first get involved? BD: I became involved with the Festival, like many others, through a friend who was working with the Festival. And being a teacher I had my summers free. Why did you continue as a volunteer with the WF? BD: Once I started I found the group of volunteers to be awesome and the Festival organization is great. They made us feel like family, and we have made lifelong friends. Not to mention that the Festival is the best event anywhere! What is your favorite WF memory? BD: My favorite memories would have to be shagging with my wife and daughter at the Commodore’s Ball every year. It is one of the few nights that most of the crew can take a break and enjoy the party. What is your favorite event? BD: I have a few favorite events, the Commodore’s Ball, Motown Monday, and the Concert in the Park. What entertainment do you have lined up for this year? BD: This year’s music reflects my personal taste, so we have country legend Neil McCoy for the Concert in the Park; crowd favorite Deaz Guyz on Motown Monday, and a new group, White Chocolate, for Throwback Tuesday. Departure, a Journey tribute band, along with local talent Marjory Lee, will play for Lowcountry Supper. Hilton Head favorite Silicon Sister is opening for Slippery When Wet, a Bon Jovi cover band, for the River Dance, and then we have Too Much Sylvia for the Commodore’s Ball.

Tell our readers something they may not know about the WF. BD: The Beaufort Water Festival is one of the largest fund raisers for local civic, school and community groups. Groups are paid a nightly fee to man our many areas of the Festival. Also, they may not know that planning for the next year’s Festival begins in September so it is a year round job. Tell us a little about yourself, where were you born and raised? BD: I was born and raised in Mansfield, Ohio. How did you come to live in Beaufort? BD: After I graduated from Ohio State University, I got married a few weeks later, then I came to Beaufort to teach a few weeks after that; the two best decisions in my life. My wife and I fell in love with Beaufort and we can’t imagine living anywhere else. Tell us about your family. BD: I have been married to my beautiful wife Marcia for thirty two years and we have two children, who are both in college. Marcia works in the Women’s Imaging Center at Beaufort Memorial Hospital and is the Imaging Services Coordinator. Our son Taylor goes to the Musician’s Institute in Hollywood, California and our daughter Jylian (a former Pirette) goes to the College of Charleston. Anything else you would like to add? BD: I would like to thank all of our loyal sponsors who have been with the Festival for many years because without their support the Festival would not be able to take place. I also hope that all festival goers have a great time during the festival, or at one of our many sporting and water events. I look forward to meeting many new people at our Southern Summer Bash. For further information visit the webpage http://bftwaterfestival. com. The WF is also on Facebook and Twitter and you can download the Water Festival app.

A Life Tied To The Water: Rich Tighe - Sailor, Boatman, Yacht Broker and Maritime Volunteer

H

story by carol lauvray

is life-long passion for the water began at age seven in the Finger Lakes of Upstate New York. That’s when Rich Tighe learned to sail at his family’s summer cottage on one of the lakes. Boats, sailing and the water have been in his blood ever since. From Dream To Reality After high school, Rich joined the Navy as an electronics technician, assigned to a destroyer stationed in Mayport, Florida. Following a stint in the Navy and attending Elmira College, Rich and his wife moved to San Diego where he took an electronics job in the aeronautics industry— postponing his cherished dream of becoming a yacht broker for a steadier job to support his family. When Rich’s marriage ended, it was not surprising that a 33-foot sailboat became his home on the water at Shelter Island in San Diego. “I’ve always loved being around the water. I love the independence and peacefulness of living on and sailing boats—and the fun of it,” he said. Rich lived on a series of sailboats in San Diego and it was during that time that he met Debbie at a printing industry tradeshow. They married in 1980. Debbie shared Rich’s love of the water, so they spent much of their free time sailing to West Coast destinations like Catalina Island, Ensenada, Mexico and the Coronado Islands. While Rich was selling printing equipment for a living, he dabbled in

brokering yachts on the side. So when he won work-related sales trips to Florida, instead of spending time golfing or socializing, Rich would look at boats for sale in the area. His formula was to buy a yacht in Florida and sail it to Houston, where he arranged to ship it to California. Since the boats in Florida were less expensive, he could resell them in California for a profit. Thus began Rich’s yacht-brokering career while he was still working his regular job. During their migration from the West

“The business of selling yachts is fun. I love the sense of adventure I get when I think of where these boats will travel. I’ve sold boats to people who have sailed them to the Bahamas, the Caribbean, Chesapeake Bay and New England. As a yacht broker, a few years ago I had the opportunity to realize one of my top Bucket List experiences. I sold a 62-foot Offshore Pilothouse powerboat docked in Rockland, Maine and the sales contract specified that I deliver the boat to the buyer in Jupiter, Florida. As mate on the voyage from Maine to Florida, I piloted the yacht through New York City—passing the United Nations, Wall Street, the Empire State Building, Ellis Island and the Statue of Liberty. I will never forget the thrill of that experience,” Rich recalled. Following the Tides to Beaufort

Coast to the East Coast, in 1991 Rich and Debbie made a job-related stopover in Atlanta for 10 years. Another job transfer and the lure of the water beckoned the couple to Fort Lauderdale in 2001. Shortly afterward though, the economic downturn following September 11th forced Rich to look for new work opportunities, so he renewed his skills as a yacht broker. He began brokering luxury powerboats made by companies like Grand Bank, Ocean Alexander, West Bay Sonship, and Offshore Yachts.

After more than a decade in Fort Lauderdale, Rich and Debbie wanted to simplify life and find a more peaceful place to live, so in 2012 they embarked on a series of road trips to towns along the South Carolina and Georgia coasts in search of a new home. When the couple visited Beaufort, they knew they’d found what they were seeking. “We love everything about Beaufort—its picturesque coastal beauty, small-town quaintness, and friendly people. We feel welcome and comfortable here in Beaufort—this is the perfect place for us!” Rich explains. During the past year Rich has sold five yachts, including three 54-foot Offshore powerboats, a 56-foot Neptunus Fly

“I’ve always loved being around the water. I love the independence and peacefulness of living on and sailing boats—and the fun of it!” Bridge, and a 56-foot Farr Pilothouse sailboat, complete with three bedrooms, 2 baths and a custom Tommy Bahama interior. He said most of his sales come from repeat clients and client referrals. But Rich’s connection to the water in Beaufort goes beyond his vocation of yacht broker. He and Debbie enjoy many water-related activities here. Kayaking One of the couple’s favorite pastimes is kayaking with the Tide Riders Kayak Club. Rich and Debbie own twin Wilderness Systems 14-foot, sit-in kayaks and they enjoy paddling with the club to explore fascinating destinations in the Lowcountry and beyond. Among their recent excursions are trips paddling: • In Ebenezer Creek in Georgia—an eerie, prehistoric-looking Cypress forest immersed in water; • Through the scenic ACE basin’s pristine waterways; and • Along the Beaufort River at high tide, to view historic antebellum mansions on Bay Street and in the Old Point from the water. Rich says, “We enjoy experiencing the natural beauty of the area by kayak because it brings you close to the wildlife that live here, like dolphins, osprey and eagles.” Rowing Rowing is another water sport that

18 June/July 2015 | www.BeaufortLifestyle.com

Rich enjoys now that he lives in Beaufort. He’s become an active member of the nonprofit Beaufort Rowing Club, and rows three mornings a week from the landing on Parris Island. The club has more than 50 members and owns several four-man and eight-man shells. It’s open to rowers of all skill levels, even those who have never rowed. “Rowing is a great way to get exercise and meet people,” said Rich. Model Ship Building His love for boats and the ocean drew him to begin building models of historic sailing ships from kits about 20 years ago and Rich has assembled several since then. His model ships range in size from large vessels to relatively small ones, but he says all of the models involve intricate detail work and require hundreds of hours to complete. One of Rich’s model ships is a replica of the H.M.S. Beagle, a ship made famous by Charles Darwin’s historic travels and surveys in South America, which led him to develop his theory of evolution. Volunteering In addition to his work as a yacht broker and his other water-related pastimes, Rich has found ways to volunteer in the community that reflect his love of the water. Every Friday morning he volunteers at the Port Royal Sound Foundation Maritime Center on Lemon Island, which

opened in late 2014. The center features a 3,000-gallon aquarium and two touch tanks, displaying several species native to Port Royal Sound including red drum, cobia, sea trout, crabs, flounder, and conches. That’s where Rich comes in— each week he volunteers to fill three huge outdoor supply tanks that feed the indoor aquarium and touch tanks with water from the sound. In addition, he assists with cleaning the aquarium and touch tanks when that’s needed. Rich also volunteers for the Beaufort County YMCA Spirit of America program in the summer, teaching rising 7th to 10th grade students to sail 15-foot Hunter sailboats on our local waters during the week-long sessions. In addition to teaching sailing, the YMCA summer youth programs also include instruction in motor boating, kayaking, canoeing and stand-up paddle boarding. At Home On The Water In Beaufort Since their arrival in 2012, Beaufort has become home to Rich and Debbie Tighe. They’ve embraced their new coastal community and love their life on the water here. It all started years ago when Rich was a young man living in New York and dreamed of becoming a yacht broker. Decades later and after moving across the country and back again, Rich’s dream has come true. And he’s found the reality of living in Beaufort better than he could have dreamed.

dding to a long list of interests and accomplishments, Judy Dayner is now officially a bag lady, a beach trash bag lady. Spearheading the Fripp Island Turtle Team’s Ocean Conservancy program, Minimizing Trash, Maximizing Turtles, Judy can be found picking trash up on the beach and cataloging it in an app on her phone which sends the information straight to a data collection center. Ocean Conservancy (OC) is trying to help save one of her favorite creatures - the sea turtle. Judy and her husband of 47 years, John, planned for and retired to Fripp Island thirteen years ago so they could help take care of the turtles. Fripp Island’s Turtle Team has recently joined OC’s program which includes about 26 other beaches in the Carolinas, Georgia and Florida; their collective goal is to see what is washing up on the beaches and then try to find its sources. “Ocean Conservancy,” according to their website (oceanconservancy.org), “educates and empowers citizens to take action on behalf of the ocean. From the Arctic to the Gulf of Mexico to the halls of Congress, Ocean Conservancy brings people together to find solutions for our water planet. Informed by science, our work guides policy and engages people in protecting the ocean and its wildlife for future generations.” This particular program, part of International Coastal Cleanup, is geared toward protecting the turtles. However, Judy points out, “So many important things come from the sea; for instance, half of the oxygen we breathe comes from the ocean. Quite a bit of industry and the jobs therein all over the world come from the ocean. The kinds and amounts of trash that wash up on beaches are amazing. One of the most destructive for the turtles is plastic bags which the turtles mistake for their favorite food source, the jellyfish.” In 2014, info-graphics that were put together by OC show that 648,015 volunteers collected 12,329,332 pounds of trash in 12,914 miles. Leading the list were 2,043,470 cigarette butts, followed by food wrappers, plastic beverage bottles, bottle caps, straws and plastic bags. Among of the more interesting finds were a 1904 typewriter, a guitar, a pink tutu, a plastic eye ball and a voodoo doll in a jar. Members of the Fripp Island Women’s Club put their beach trash to good use when, in 2013, they decorated their community Christmas tree with toys found on the beach and surrounded it with layers of boogie boards. In 2014, the Christmas tree was decorated with discarded flip flops, which goes to show that one man’s trash can be another man’s treasure, except that beach trash is harmful to wildlife, swimmers, boaters and the environment in general. The app that Judy uses, cleanswell, has a list of the most commonly found items. You check them off as you find them and they are instantly recorded. That list can also be printed out from their website and mailed in. The

OC provided the Fripp Island Turtle Program with laminated sheets listing common trash items so the sheets can be reused. The OC also states trash be picked up in recyclable bags rather than plastic trash bags. One of Judy’s favorite turtle events is the annual Totally Turtle Week at Fripp. The 2015 Turtle Crawl 5K will be held on July 17 at the Fripp Island Beach Club and is open to everyone. Judy’s friend Fripp Island Turtle Program Director Janie Lackman, invites everyone: “This family fun event will feature both a 5K race as well as a 1 Mile Fun Walk/Run. Proceeds benefit the Fripp Island Turtle Program, a 501(c) 3 non-profit volunteer nest protection program permitted by the SC Department of Natural Resources and dedicated to the conservation of sea turtles and educating the public about his amazing species. Sign-up today to join the FUN and do our part to help our state reptile, the loggerhead sea turtle. Judy adds, “We are a strictly volunteer organization, with 46 volunteers this summer. The 2014 Turtle Crawl was so successful that The Fripp Island Turtle Team donated $10,000 to the Sea Turtle Hospital in Charleston. We hope this year’s Turtle Crawl will be even more successful. Volunteers work in patrols that meet at 6:30 a.m. to walk the Fripp beach looking for nests; we rope them off to keep them safe, or we move them if they were laid too close to the high tide line. We monitor nests each day, and when nests hatch, after three days, we inventory them.” When Judy and John are not enjoying the beach and the turtles at Fripp, they may be relaxing in their North Beach Haven house on Long Beach Island, New Jersey, or they are indulging in Judy’s favorite pastime, traveling in their RV. “Actually,” she admits, “I’m addicted to RV-ing.” Judy was a biology teacher and science supervisor in Bergen County, NJ, and John was a language arts supervisor. They met when they were students at the University of Connecticut. “It all started when we bought a VW camper, then we had our son, got a dog, and had a daughter. Every year, on the day after school got out, we packed up everyone in that camper and took off across the United States and Canada.” About one of those RV trips, Judy recounts, “Years ago when our son and daughter were little, we used to camp every summer for two weeks at Huntington Beach State Park in Murrells Inlet. That was before there were many restrictions on handling sea turtles. We used to go on all the nature hikes and talks, and one year the naturalist, Julie, moved a nest that was in danger of being destroyed by high tides. She

put the eggs in a children’s plastic swimming pool filled with sand from the beach and they incubated there. We were there when they hatched, and Julie asked us to help with releasing the hatchlings. Both our son and daughter got to carefully carry hatchlings down the beach; then they eagerly watched as the baby turtles scurried to the sea. “Our daughter, Dr. Jennifer Crotty, is an assistant professor of pediatrics in Greenville,NC. Our son, Dr. Jeremy Dayner, is a board certified emergency medicine physician and chair of the Department of Emergency Medicine in Freehold, NJ. Both were biology majors in college, and both tell people that those summers

in Huntington Beach changed their lives. “Now our four grandchildren love to come to Fripp to see the turtle tracks in the morning, watch as the turtle patrol moves eggs, and see hatchlings go to the ocean. I’m thrilled that this new generation is so excited about sea turtles; they’ll help keep them safe in the future.” Another of the Dayners’ passions is shag dancing. “We bought our home on Fripp in 1985 and we rented it out full time for years until we retired in June of 2002. That fall we saw people dancing the shag and I saw an announcement in a Beaufort paper inviting people to come to Lady’s Island Country Club for a shag dance. We went, and we were the only people who had no idea how to shag. The DJ asked if we’d like lessons, so we started learning the Carolina Shag. In 2003, a new club formed, the Beaufort Shag Club, and my husband and I are charter members. John was on the board for two years, then I ran for election. This is my third year on the board, I’ve been the vice president, the director of membership, and the president for a short time. We love the dance and the many wonderful friends we’ve met in Beaufort, North Myrtle Beach and on the shag cruises. Every year a large group of us from Beaufort attend Society of Stranders in North Myrtle Beach where three times a year hundreds of shaggers from all over meet to dance and have fun. We learn new steps, have a huge parade in April and a big concert in September. Great fun. We also attend events at other shag clubs, and people from other clubs visit us. For the last two years the Beaufort Shag Club hosted a well-known shag band, The Holiday Band, at the Shed in Port Royal and shaggers from all over attended.” When you see Judy walking down the beach putting beach trash in a recyclable bag, or searching for turtle tracks, and maybe with just a little dance to her step, catch up, match her stride and help yourself to some turtle fever. With energy and enthusiasm to share, this may be what you’ll hear her say, “This morning Janie Lackman, another volunteer, and I found and relocated 144 eggs to a safe zone on the north beach. As I picked up the eggs (with gloves of course) I thought that most of embryos will hatch into hatchlings; however, few of the hatchlings will make it to adulthood. The males that make it will never return to our beach, and the females will return to the Lowcountry beaches twenty five or thirty years from now. Pretty amazing.”

Mary Thibault Designer of 2015 Water Festival T-Shirt story by mary ellen thompson photography by john wolwerth

28 June/July 2015 | www.BeaufortLifestyle.com

A

n en plein air artist at heart, Mary often sits by the front window of her Thibault Gallery to paint. When you step inside and see Mary’s paintings, it’s like being handed a big box of crayons. She uses all the colors in the spectrum in such a cheerful and invigorating manner that they can’t help but make you smile. And the thing about it is that Mary’s personality is also composed of all those cheerful colors, and just like in her paintings, when you talk to her they all come alive at once. Fellow artist, Marilee Sartori, sums it up, “Mary has magic in her brushes.” No wonder she has been chosen by three Commodores to design their Water Festival t-shirts first in 2009, then in 2013 and now, again in 2015. But Mary has a much longer association with the Water Festival; she has spent 21 years painting faces there. Each Commodore chooses the design he wants and chooses the artist to render it. This year, Bill Damude, and his wife Marcia, wanted the t-shirt design to be created with the perspective of being on the sandbar. Two Adirondack chairs sit on the sand facing the water and in the distance the two downtown bridges can be seen. In between the chairs is a red cooler with a platter of Frogmore stew on top, and secretly placed in that stew is the initial “E” for Mary’s husband, Eric. One chair has a guitar leaning against it for the Commodore’s son who plays the guitar, and the other chair has a ribbon on a straw hat with the name of the Commodore’s daughter. Mary added a few other touches she thought represent the area, such as a watermelon, a Tervis cup with the Water Festival logo, and a blue crab skittering across the sand. In the background, the sun is sinking into the horizon over the Beaufort River with the sky dressed in resplendent sunset colors. Mary also designed the Water Festival Fishing Tournament t-shirt for 2015; her only given criteria were the fish in the design. In a big rising plume of water, the fish are riding high and cresting on the waves. There was one teensy little problem, however: the fish Mary were told to use were a flounder, a redfish (on which she made the spot in the shape of our state), a trout and a black sea bass; she rendered them beautifully and realistically. But the black sea bass was supposed to be a black drum and the painting was finished by the time the mistake was discovered, so she painted a black drum which was successfully photoshopped in place. If you stop into the gallery you can see the original painting and if you look really, really closely, you will also see that Mary has painted the names of all her children and grand-children in the design, which is a bit reminiscent of Al Hirschfeld’s drawings with his “Nina,” or the “Lilly” always found in Lilly Pulitzer designs. However, for Mary this is simply a way of celebrating her family. Family is extremely important to Mary; between them, she and Eric have seven children (Megan, Erin, Megan, Lauren, Caitlin, Alex, and Carter). Having known each other at Battery Creek High School (he was the football player, she was the cheerleader), the two of them reconnected one year at, of all places, the Commodores Ball during Water Festival. Eric’s daughter, Lauren, wanted a ride home so Eric went to trade his Harley for a car to drive her home, when he got back he ran into Mary who also wanted a ride home; Lauren got another ride and Eric and Mary started on the ride of their lives. Eric laughs when he thinks back on the days he knew Mary in high school and says, “When she walked down the hall, I thought to myself - that girl is a fox.” Mary responds, www.BeaufortLifestyle.com | June/July 2015

“Eric always calls me Beautiful; if he calls me Mary, I know I’m in trouble.” Mary’s life wasn’t always such smooth sailing. When she was eight, she found out she had been adopted at birth. One day when she went home after school and asked her mother why all the children teased her because she didn’t look like her parents. It wasn’t for many years, until after Mary had started the search for her birth mother and was getting close to finding her, that her adoptive mother told her the circumstances. Mary’s mother had been raped and didn’t feel that she could keep a baby that was conceived under those circumstances, but she did elect to continue the pregnancy so she could give that life a start. Eventually, Mary did locate her birth mother, Diane, and when Diane and her husband, Henry, came to Beaufort to meet Mary, Henry was wearing a pink “It’s A Girl!” button and was handing out pink cigars at the airport, 29 years after her birth. Mother and daughter stay in close touch, and a bonus for Mary was finding out that she has some half-brothers to boot. Part of what has always sustained Mary is her religion and her relationship with God. “God’s word always comes into our gallery; we even have a crucifix over the door. I’m big on gratitude, I keep a gratitude journal and I pray before, during and after, when I paint. I know God’s hand is in this.” Raised in the Catholic Church, Mary taught at St. Peter’s for ten years. In the back of each of her paintings she writes “John 3:16” to symbolically represent, “For God so loved the world that he gave his one and

only Son, that whoever believes in him shall not perish but have eternal life.” A self-taught artist, Mary has wanted her own gallery for many years; prior to opening the Thibault Gallery, she took a spot at Atelier on Bay but its upstairs location was more conducive to studio space than gallery space. Before that, she was at Greenfish Gallery when it was in the George Elliott house, where she would sit out under the magnolia tree in the yard and paint there. She began painting when her daughter, Caitlin, was three. Mary’s mother-in-law at the time, Mary Howe, was an artist and when Mary took a look at Caitlin’s child’s water color box one day, she wondered if she, too, could paint like Grandma. She started with murals in the children’s bedrooms, painted props for the children’s shows at school, and quickly, she says, “It became my passion.” On January 7, 2014, her dream became a reality when the Thibault Gallery opened its doors on Bay Street welcoming the art of twelve other artists to compliment one another. Strong colors are Mary’s forte, “They’re friendly; it’s about love, the bright colors express that love and passion. I think that’s the thing for all artists, we have to paint what we love. Part of my inspiration is the Lowcountry - it’s embedded in me.” Of course Mary’s renditions of the Lowcountry are not soft colored marsh paintings - they are bright and bold. Another something she has a small passion for is cupcakes. She paints small square cupcake paintings that have an actual birthday candle imbedded in the frosting. Signed “Bella” instead of “Mary,” because the Spanish word for grandmother is Abuella; they are whimsical and the perfect birthday gift. When asked what she likes to do when she’s not in the studio, painting, she responds, “Paint. I like to paint. My favorite thing is painting outside on my easel. I just love painting, that and being with my grand-babies,” she laughs when she says, “It’s a good thing Eric cooks!”

Question: Should I count on Tricare or Medicare to pay for my long-term care at home, in assisted living, or a nursing home eventually? Bill G. Answer: Tricare and Medicare are “medical plans” and do not include non-medical, custodial care at home or in a facility. You can pay out of pocket, which I don’t recommend because it will erode your retirement income, or you can use Long-term Care Insurance to pay the non-medical costs for caregivers to get you through the day.

Breakwater Restaurant and Bar

C

story by mary ellen thompson

hic, cozy, and casual all at the same time, Breakwater Restaurant and Bar is a restaurant where you can go dressed in shorts and flip flops, or your little black dress and pearls, and be equally comfortable. Not only is the vibe fun and welcoming but the food is also exquisite, mostly because Donna and Gary Lang and Beth Shaw’s dedication to excellence rivals Carrie Bradshaw’s passion for Manolo Blahniks. Want a fancy dinner? Done. Want to celebrate a special occasion? Done. Want a private dining room surrounded by 1300 bottles of fine wine? Done. Want to grab a bite and a beverage and walk out the door without breaking the bank? Done. You can choose between sitting at the bar where you’re likely to strike up a conversation with your barstool neighbor, or at a high top table in the bar where you can survey the scene, or at a cozy table in the room in front of the bar where you can whisper, or in the main dinning room. Don’t forget about the wine room which seats up to twelve and you can show off your party animal for all the bar to see, or close the drapes and make everyone wonder what you’re up to, or just be private. Now that it’s summertime, Breakwater has, in addition to the regular menu, weeknight specials that are not to be missed: Monday - moules and frites, or steak and frites (in case your multi-linguistics are on the fritz, moules is French for mussles, frites is French for fries) Tuesday: Taco Tuesday - chef’s choice of tacos

photography by paul nurnberg

Wednesday: Farmers Market Menu - 3 courses based on what’s fresh and exciting from the local farmers market, plus the added bonus of 1/2 priced wines Thursday: Thin Crust Thursday - a choice of flatbread pizzas. (Sigh, yum.) Can’t choose which suits you best? Try them all, it’s a great way to spend the summer. On weekends, the restaurant still offers all the seasonal choices that make your mouth water. Need comfort? Order the Southern Fried Chicken served with red skin mashed potatoes, haricots verts and cream gravy. Seeking your seafood fix? How about the Southern Fried Shrimp, Spicy Southern Calamari, Blackened Mahi, Fresh Catch, Pan-Seared Scottish Salmon; or the Diver Scallops which are pan-seared and served with creamy chive and corn risotto, basil and mint pesto, and watermelon radish. Or maybe you’re just in the mood for something light - like the seasonal salad and lamb chop tapas. Don’t try to tear this page out and eat it - make a reservation. Of course the wine, beer, and cocktail selections are extensive and interesting, so if you’re just there to socialize, order a glass of wine and try the Pimento Cheese Plate for a nibble. If all of this isn’t enticing enough - the food is locally sourced and ninety-eight percent of it comes into the kitchen in ingredient form and is made there. Gary Lang describes it as a “from scratch kitchen.” He continues, “Our sauces aren’t roux and butter based, they are made from stock reductions and we make our own www.BeaufortLifestyle.com | June/July 2015

stock.” Now we’re approaching healthy and natural and local. Local sourcing relationships are such an important part of the economy and the ensuing enjoyment of the food itself, as well as a matter of pride to the restaurant and the supplier alike. Enough about the food for now. Let’s talk about the dynamics. Three business partners for fourteen years, and best friends to boot. How does that work? Gary and Beth are the chefs, Donna’s forte is the business side as general manager. Gary grew up in Gainsville, GA where his mother owned a deli that grew into a catering business. When he was in college in Atlanta getting his degree in real estate and urban development, he worked as a waiter at Steak and Ale, then at Gregory Scotts which was, he says, “When I got the bug, it was during the blackening craze, and the food was not only good but creatively prepared.” Originally from Birmingham AL, Beth started out with a degree in civil engineering, but knew she wanted to go to culinary school so she took the money she made from engineering and put herself through Johnson and Wales in Charleston, then went to Montana to intern. (Now she’s putting that engineering background to good use as she’s studying equipment repair part time at TCL because there is a lot of equipment in a restaurant kitchen.) Donna was living in Atlanta, Gary was in Memphis, and one weekend when he came to visit, Donna took him to an open house for the culinary program at the Art Institute of Atlanta. They moved up their wedding plans, took off on their honeymoon and Gary enrolled in the culinary program; “At 35, I was the oldest one there.” When his program was finished, Gary and Donna started to look for a restaurant on the coast, found Bistro on West Street in Beaufort and bought it. Meanwhile, Beth finished her internship, wanted a job in Beaufort and knocked on their door. She started out making salads, became a line cook, second sous-chef, and sous-chef in rapid succession. Then she became their business partner and it’s been a relationship that works beautifully for all of them. When in the kitchen, Gary and Beth draw on their upbringing for inspiration. The fried shrimp recipe comes form Gary’s mom; the pimento cheese from Beth’s mom. They have taken the traditional Southern food that we all love and made it lighter and healthier, without sacrificing any of the flavors. And then there is the selection of desserts which are always something that cannot be easily resisted. There are some favorites that never seem to leave the menu, or if so, for very long. One of the most popular choices is the tuna tartare. As a matter of fact, Gary says this is a dish that is just popular nationwide. He wasn’t planning on putting it on the menu in their Greenville restaurant but people insisted. The recipe has been through a few incarnations with the tuna being paired with a soy based glaze, avocado, or Thai chili sauce at one point. This is the description currently on the menu: “Tuna Tartare (based on availability) sushi grade tuna marinated in a house made volcano sauce, lime, green onions, wasabi pistachio puree, pickled cucumber & ginger salad, wonton crisps.” How could you resist? Wander on in, look for a seat at the bar, or make a reservation, and have a lovely evening; just reading the menu is indulgent as you can almost feel the flavors tease your palate. Enjoy!
