People have become more aware of the benefits of choosing local, as it is better for our communities, our environment and our own wellbeing. However, with the cost of living squeeze, some wonder if they can afford local. But local can offer value in many ways.
If you want to be GREEN, buy local. Buying local reduces food miles, plus local businesses are usually more environmentally aware. Some of our members have even achieved B-corp certification.
Buying direct from the producer via markets and food festivals provides great VALUE, while independent butchers, farm shops and delis can supply the exact amount required, keeping costs down and ensuring ZERO WASTE. Service is personal and cooking suggestions can be provided, creating a more pleasurable EXPERIENCE.
Local TASTES better, so you need less for more flavour; plus local fruit and veg have a higher NUTRITIONAL content as they are so FRESH.
Supporting local SUPPLY CHAINS is also important. When pandemics and global affairs empty national retailers’ shelves, it is our local producers and independents who keep our store cupboards stocked.

Support Your Village Store
The village shop is a local asset, therefore shopping at your village store is an investment in the community as much as a convenience. Their value was realised in lockdown when village shops experienced a massive uplift in use. However, inflation has since created a difficult trading environment.
Run By the Community for the Community
Village shops can’t compete with the big supermarkets on price, yet they offer more in terms of social value. Many are community-run enterprises, run on a not for profit basis and dependent on volunteers. One such is Headley Community Shop. When the old village shop could no longer be run profitably on a commercial basis, it was taken over by the Headley with Ashford Hill Community Shop Association and relocated to an old Baptist chapel, converted to provide a shop, post office and a room for community purposes.
Peter Hemmings of Headley Community Shop, explains: “The shop and post office together with the community room acts as a hub for the village which over the years has lost its school and pub.
“As well as being a useful ‘corner store’ for everyday items, we operate a large paper round. Income from the paper round is our mainstay. Income from the post office is finely balanced. The shop income subsidises the post office, although it can be argued that the post office increases footfall.”
The shop also supports the local economy, stocking many local items, mostly Hampshire Fare members, from apple juice to mint chocolates. Meanwhile the community room has a social programme that includes village lunches, afternoon cafés and art classes.
The shop is run by a management committee and employs six staff, although it couldn’t operate without its volunteers. One recruit says: “I enjoy my time helping in the shop; it has given me the opportunity to become much more familiar with the community and its personalities. New customers frequently comment about what a lovely shop it is and the friendly atmosphere.”

Investing in Your Community
Lara Madge is the shop and café manager for The Boundary, previously known more prosaically as St Mary Bourne Village Shop. Lara explains: “We have been a community-run village shop for the last 21 years. I took over the shop in 2017. Back then it was a typical community-run shop focusing on the budget end of the market. I introduced more local produce and some luxury items while keeping the bargain products. The shop grew in popularity and we started to turn a profit.
“In March 2020 when we went into lockdown our sales doubled overnight. It was our time to shine. We started doing home deliveries, maintained regular contact with anyone living on their own, and supplied food bags every now and then to let people know we were there for them.
“But now sales have dropped to their previous levels, which is why we decided to up our game to the community, and build an extension incorporating a café and eco-shop, in response to listening to customers talking about what they wanted. We recognised there was an opportunity to grow our services.
“At the beginning of 2022, we started a fundraising campaign. We changed from a Community Interest Company to a Community Benefit Society and opened up a community share offer scheme at £25 a share, raising £250,000 in six weeks!”
Work started in July with the new shop and café opening in December 2022.
“We have been amazed by the community support during the build. Kong Scaffolding, owned by someone in the village, donated all the scaffolding and Freedom Bespoke, a local door and window company, gifted us all the windows and doors, including installation.
“While we are nervous about expanding the business at such a difficult economic time, raising that money on a community share scheme pressure tested whether the community actually wanted the village store. I have no doubt it is going to be an uphill struggle to keep it profitable, but it is all about the community.”
Services to the Community
Enham Village Store and Post Office was taken over by Leslie and Tim Francis 20 years ago and they’ve been collecting awards ever since, with the latest seeing Leslie receive an MBE in the New Year’s Honours List! Leslie, who is also Chair of the Parish Council, was recognised for her service to her local community.
Nick Read, Post Office Chief Executive, said: “Leslie and Tim go above and beyond for their community, adapting their store to make it easier for their customers who are elderly or disabled, arranging home deliveries, fundraising and putting on big celebrations for the village for special occasions.”
When they took it over the store was very run down, but now it’s a modern, fully stocked shop with an active post office and offers as many local products as they can find.
Leslie reflects: “It really is the hub of this community and is a lifeline for many. We always support local producers and encourage small businesses by profiling their goods.”
During lockdown turnover more than doubled, but has now returned to pre-pandemic levels. However, determined to deliver more to the community this year they are revamping part of the store and expanding some lines including ‘free from’ ranges. They are also reintroducing events such as tastings, fun Fridays, seasonal raffles and outdoor markets.
Everton Stores and Post Office has been run by Barrie and Carole Morgan since 2016. The main initiative they introduced was increasing the stock significantly including stocking over 30 local suppliers. This has resulted in greater footfall as well as customers coming from a wider area.
Barrie says: “We stock local meats, fruit in season, Isle of Wight tomatoes, Garlic Farm products, New Forest Shortbread, ice cream, local bakery goods, eggs, and fudge to name just a few.
“The village store is an essential part of the community and, following lockdowns, we have continued to deliver to some of our elderly customers who are not able to get out and about.”
Sourcing & Stocking Local
Cheriton Village Store and Post Office has been managed by Gillian Gray-Knight for 14 years as a community asset. Essential services include an outreach post office, prescription collection point and ticket sales for local events, in addition to newspapers. Local produce is stocked whenever possible and includes Bramley Bakery, Lyburn cheeses, meat and pies from CE Evans & Son butchers, and honey from village beekeepers.
Gillian adds: “We also, with the church and the village hall, collaborate to stock and run the weekly Café on the Green on Thursday mornings.”
Chilbolton Village Shop incorporates its own tea room. Owner Nicky Bond says: “Since we took on the shop in December 2015 the business has changed hugely. In particular we have grown our own homecooked range, producing more in-house through ‘Nicky’s Kitchen on the Test’.
We are very lucky to be in a lovely community and many customers have become our friends. I believe the shop to be of great value to the community. We have prescriptions delivered here, we are a collection point for the much needed local food bank, and we continue to deliver to several customers, as we did during the pandemic. The post office is also an asset. In general, we’re a meeting point where customers can be sure of a warm welcome.
If we can source it locally, we will. I still find it remarkable that Hampshire produces so many fine foods right on our doorstep, and we are very proud to stock produce from many of them, including smoked trout by ChalkStream, local meats from Greenfield Pork, ales by Goddards Brewery and Andwell Brewery, gin by Wessex Spirits, wines by Black Chalk, coffee from Moon Roast, mint chocolates by Summerdown, free range eggs from Fluffetts Farm, teas from New Forest Tea Company, souffles thanks to Red Fox Fine Foods, preserves from The Real Jam & Chutney Company, spelt flour grown by Wheatsheaf Farming and micro greens from Lusso Leaf. We have forged great partnerships with so many Hampshire businesses!”

HOW TO COOK: SUSTAINABLE SEAFOOD ON THE BBQ
A special workshop was run by SEASON, the cookery school based at Lainston House, focusing on cooking sustainable seafood on the BBQ. This course was the culmination of the Great Solent Seafood project: a partnership between Hampshire Fare and Hampshire & Isle of Wight Wildlife Trust informing people about buying, cooking and eating local sustainable seafood.
The course was held in Lainston House’s delightful kitchen garden. Recipes were created by Phil Yeomans, Executive Head Chef, Lainston House, and Andy Mackenzie, Executive Chef, Chef’s Academy, Exclusive Collection, using sustainable seafood from the Solent, all cooked on the BBQ.
A talk given by Tim Ferrero, Senior Specialist Marine Conservation, Hampshire & Isle of Wight Wildlife Trust, focused on the Solent’s sustainable seafood. Tracy Nash, Commercial Manager, Hampshire Fare, reflected: “Tim Ferrero’s talk may well have changed a few minds about where to buy seafood, with more consideration about traceability, as well as freshness and flavour!”
Chris and Richard Auburn, from Wareham, agreed: “‘What a superb experience! We’ve learnt loads about sustainably caught fish from Tim Ferrero and how to cook it from the chefs. The recipes were amazing and not only convinced us about local sustainable seafood, but also opened our eyes to what can be cooked on a BBQ. All of the recipes have now found a place within our home cookbook.”
Phil Yeomans concluded: “Our philosophy here is very much about sustainability. Lainston House is part of the Exclusive Collection, the first hotel group in the UK to achieve B-Corp certification. As part of this we have a focus on growing our own produce and using local suppliers. Therefore, we were delighted to host this event and explain to people about local sustainable seafood and how to prepare and cook it.”

Baked Crab with Brown Crab Butter
Ingredients
Crab Butter
150g brown crab meat
½ tsp horseradish sauce
85ml double cream
Baked Crab
20g salted butter
1 shallot, finely chopped
½ tsp English mustard
½ tsp horseradish sauce
2 tsp lemon juice
75ml double cream
220g white crab meat (freshly picked)
Cleaned out crab shell
45g cheddar cheese, grated
30g golden breadcrumbs
2 tsp parsley, freshly chopped
Salt and pepper to taste
Method
1 To make the crab butter, place the brown crab meat into a food processor/blender with the horseradish sauce and blitz, slowly adding the double cream until a mayonnaise consistency is reached.
2 Melt the butter in a pan over heat and sauté the shallot until soft but not coloured. Add the mustard, horseradish sauce and lemon juice, and then stir in the double cream.
3 Once the sauce is combined, stir in the picked fresh white crab meat.
4 Spoon the crab mixture into the cleaned crab shell. Cook at the back of a BBQ grill over indirect heat for 5 to 10 minutes.
5 Meanwhile, combine the cheese, breadcrumbs and parsley in a bowl with a little salt and pepper. Set aside.
6 When the crab in the shell on the grill is hot, cover the crab with the breadcrumb and cheese mixture and cook until bubbling and golden (2-3 minutes).
Serve with sourdough toast and a small pot of the crab butter.

Cedar Plank Cooked Lemon Sole
Ingredients
Cedar plank (pre-soaked)
1 lemon sole, skinned, trimmed and head removed
2 glugs of olive oil
2 generous pinches of sea salt flakes
Spray bottle of water (just in case)
Method
1 Soak cedar plank in cold water overnight.
For the Sauce
25g salted butter
Half a lemon, juiced
1-2 tbsp Lilliput capers, drained
1 tbsp fresh flat leaf parsley, chopped Salt and pepper to taste
2 Set your Kamado BBQ with indirect heat (coals to one side). Set the heat to 180-200c.
3 Oil both sides of the lemon sole and season with sea salt.
4 Place the lemon sole on the wet cedar plank and the plank on the grill.
5 Bake the fish for around 10-15 mins turning the plank occasionally to cook fish evenly. Have the water spray ready just in case the cedar plank ignites!
6 When the lemon sole is cooked, bring the plank and the fish off the grill to rest.
7 To make the sauce, heat a small pan over the BBQ grill. Add the cold butter. Stir the butter until it turns a nut-brown colour.
8 Squeeze in the juice of half a lemon to stop the butter burning.
9 Remove from the heat and stir in the capers, parsley, and season to taste. Coat the sauce over the lemon sole on the plank and serve.

BBQ Wok-Steamed Palourde Clams
Ingredients
1 red sweet pepper
Splash of oil
1 banana shallot, finely chopped
1 clove garlic, finely sliced
1kg Palourde clams (soaked and cleaned)
4 or 5 sprigs fresh lemon verbena
100ml local sparkling cider
Pinch of micro lemon balm to garnish (optional)
Method
1 Scorch the sweet red pepper on the hot coals until blackened and set aside to cool. Scrape off charred skin, remove seeds and finely dice.
2 Heat a splash of oil in the BBQ wok and cook the shallots for a minute or so.
3 Add the garlic and cook quickly then stir in the prepared clams along with the lemon Verbena.
4 Add the sparkling cider then stir.
5 Allow the clams to cook in the juices.
6 Put the wok lid on for 2 minutes, then lift the lid and add the diced red pepper.
7 Cook together for a few minutes until the all the clams are open.
8 Serve in a bowl with plenty of their juices, good bread and a garnish of micro lemon balm. Serve with good bread to mop up the juices

The Cookery School at Quob Park Estate is a relaxed and fun environment in which to learn to create your own Exceptional Gourmet Experiences under Michelin-trained, Executive Chef, Scott Garner and his team. Our courses are suitable for all levels of experience. Including half-day introductions to residential programmes, dinner party master classes to alfresco dining, there’s something for everyone.
Many courses focus on recipes important to Scott and members of the Terry Family inspired from their own international gourmet experiences which are reflected in the food served both at the Quob Park Estate and Hotel venues. All courses include Course Tuition, Completion Certificate, Tea and Coffee, and your own Chef’s Apron to take home. Full Day courses include an informal lunch in The Cookery School, and a Potager ‘Kitchen Garden’ tour. Where possible, the ingredients will be picked from the Potager adding to your experience on the day.
A unique element of Our Cookery School is the opportunity at the end of each course to try recommended Wine Pairings for the food you have prepared.
The Wine School
Advance or commence your wine knowledge with Our Wine School. Under the tuition of our team of Wine Experts and Sommeliers, led by Master Sommelier Simon Dupaquier-Green, you’ll have the opportunity to learn professional wine tasting techniques, how to identify a wine’s flavours and aromas, understand the importance of climate in the wine making process, and how to identify the various components of wine such as acidity and alcohol and how they affect the structure of wine.
All of our courses are designed to be fun and are conducted in a relaxed and friendly environment, recognising that everyone’s palette is unique and there is no right or wrong when it comes to your personal taste in wine. All courses will also demonstrate the amazing effect that the right wine pairing can have on your appreciation on any individual wine.
All courses include Course Tuition, Completion Certificate, your own branded tasting glass, and sufficient tasting card credit to allow you to sample up to 10 wines from the hundreds available by the glass from our tasting machines. Full Day courses include an informal lunch in one of our Tasting Lounges. No prior experience is needed for entry level courses.
INSPIRING GENERATION NEXT!
Hampshire Fare regularly goes back to school to explain to students where the food on their plate comes from and encourage them to discover local produce. This has included: the launch of the national campaign British Food Fortnight from Wicor Primary School, Portchester; sponsoring baking courses at City College Southampton; delivering ‘local’ workshops at Mountbatten School, Romsey, and holding Hampshire’s first #FarmMyFood day last July at Wheatsheaf Farming, North Waltham, in partnership with LEAF. It was attended by more than 150 students, and so successful it is being held again this summer.
Carl Edwards, Director Education & Public Engagement, LEAF, said: “The food hall and variety of local produce really excited the students. We hope the students realise that what they choose to buy directly impacts the environment where they live.”
Tracy Nash, Commercial Manager, Hampshire Fare, added: “#FarmMyFood day brought together a range of experts with topics from finance to food preparation, soil health to sustainability. It was the largest event Hampshire Fare has been involved with for school pupils and our first such event to be held on location on a farm. The Wishing Hare was specially designed by artist Sophie Handy as part of last year’s Hares of Hampshire art trail in Southampton and Winchester - a fundraising campaign organised by The Murray Parish Trust. Lyburn Farm lies on the Northern edge of the New Forest and runs a herd of 170 Pedigree Friesians. They use their milk to produce a hard, yellow cheese but not that reminiscent of a Cheddar. Made in 5kg wheels, they come in 6 different styles. Best known will be Old Winchester, a very hard cheese 18 months of age. At the other end they have Stoney Cross, mould ripened, young supple and buttery at 8 weeks of age. They can either pack as a whole wheels or vac pack wedges for village shops.

From its birth as a farm diversification project, Hattingley’s grown to become one of the leading wineries in the UK. Simon Robinson planted his first vineyard in 2008 and an eco-friendly winery was purpose built in 2010. The Hampshire Food Festival is already one of the most ambitious food festivals in the country in terms of scale and reach, however in 2023 the Hampshire Food Festival is going even BIGGER!
Orchestrated by Hampshire Fare, the Festival encompasses a tasty programme of events running across the region, including chef demos, menus, markets, tours, tastings, workshops and more.

This reflects the growing interest in discovering, buying and tasting local produce. More people are also holidaying at home with food and drink central to their holiday experience. In addition, many of us are making greener lifestyle choices, and buying local is usually the greenest option, benefiting our environment in addition to supporting our independent businesses.”
In response, the 21st Hampshire Food Festival has been given a makeover. It will now run throughout the summer across Hampshire and the Isle of Wight. The Festival is also going LIVE with a couple of special Festival dates. The first is Celebrate Hampshire, a new event taking over Festival Place (1st-2nd July) including chef demos focusing on simple local hacks, tips on
budget batch cooking and treats such as Test trout tacos! The second event is a food market in the grounds of Winchester Cathedral (9th July) with a focus on community and the environment, including a zero waste special.

EAT SEASONALLY
Eating seasonally makes so much sense. Produce is cheaper when it is in season, it is more flavoursome and more nutritious as it is fresher, and it is better for the planet, too.
As the climate changes, so does seasonality with some crops, such as asparagus, available earlier in the year, and others, such as strawberries, still available in late autumn. Please read the labels and pick local and British whenever possible. Here’s our guide to the seasons’ best eatings.

Tips from the Top Preparing Meats
Gordon Stott – Head Chef/Proprietor, The Purefoy Arms
For nicely seasoned protein, brine meat or fish using an eight percent solution - eg 80g salt and 80g sugar to 1 litre of water with any herbs or spices you want. The bigger the piece of meat the longer you should leave it. For example, I would allow one or two hours for a 7oz fillet steak, but I would leave a large roasting joint overnight. Brining not only seasons the meat, but helps tenderise the meat and keeps it moist when cooking.
