Halen Môn Halen Môn – Welsh for ‘Anglesey salt’ – began with a saucepan of seawater bubbling on the Aga in Alison and David Lea-Wilson’s family kitchen. As the water boiled away and the salt crystals started to form, they realised they’d struck culinary white gold. Initially the salt was supplied to local butchers, today it’s sold around the world – even Barack Obama is a fan. The difference between it and ordinary table salt is the delicate, nonbitter taste, brilliant gem-like appearance and balance of delicious minerals. HMGARL

The Chocolate Society Originally founded in a small Yorkshire village in 1991, one of its aims – along with producing incredible truffles, caramels and bars – was to draw attention to the vast difference between great chocolate, and the inferior, mass-produced version. By 2009 the recession was at its height, and The Chocolate Society went into administration. Fortunately for cocoa lovers the story didn’t end there. Two brothers from Somerset bought the company and established a small factory in rural Somerset and re-established The Chocolate Society as a premium artisan brand which is praised by chefs and connoisseurs. Premium grade Scottish farmed and wild salmon are cured and oaksmoked in a slow and painstaking process lasting two days and nights. Nothing less allows the sides to fully develop their distinctive taste and characteristic texture. MacGilvray’s rare delicacy has won multiple awards, and is smoked salmon as it ought to be.
