L PL ATES Saturday 29 April | $79 The best way to learn a new skill in the kitchen is to do it yourself. With this philosophy in mind, The Advertiser has teamed with TAFE SA’s Regency International Centre to create a series of hands-on cooking classes, featuring some of the State’s best known chefs and food heroes, as part of Tasting Australia. The L Plates classes, part of Regency’s Gastronomic Adventures program, will be practical and fun, with small class sizes (max 16) and plenty of time to hone techniques with our amazing team of mentors.

FINO Italian Feast with

TH E MAN. TH E C H EF. TH E I CON. The Godfather of modern cooking makes his Adelaide debut; in 2017, Tasting Australia is proud to present Marco Pierre White as our very special guest.

A ‘chef’s chef’, Pierre White was the youngest person ever to receive three prestigious Michelin stars at the age of 33. His protégés include Heston Blumenthal and Gordon Ramsay, though his legacy is immeasurable. After leaving school Pierre White moved to London at age 16 with little more than £7, a box of books and a bag of clothes. Marco’s determination led to his classical culinary

training as a commis under Albert and Michael Roux at Le Gavroche. In 1987 Pierre White opened Harvey’s in Wandsworth Common, London, where he won his first Michelin star, the second following in just the next year. Seven years later at The Restaurant Marco Pierre White in Knightsbridge the esteemed chef won his third star, thanks in part to the assistance of

a young Jock Zonfrillo (Restaurant Orana & Tasting Australia Creative Curator). Pierre White will be back in the kitchen at Tasting Australia with his protégé for the first time since their stint together at the Knightsbridge hotel. “It’s always nice to see how some of the boys have developed their careers successfully and it’s a credit to their hard work and application,” Pierre White said. “Jock is one of them and he is doing great things in Adelaide and I am looking forward to stepping back into the kitchen with him again.” Pierre White’s regular television appearances as a judge and mentor have provided modern day chefs, cooks and food lovers with valuable insight to the workings of a world-class chef. This energy comes in waves and for Adelaide the crest of the wave is almost here. Anyone visiting Adelaide can feel it, they can taste it and they can drink it. It’s great to be cooking with a lot of my peers and people I really admire at Tasting Australia. They are interesting and talented chefs and it’s not often that we get to cook together. Chef Quiz, hosted by the amazing guys at Fool Magazine, is one of my picks of the festival; that will be a real spectacle. It’s a rare opportunity to see chefs as you would not normally see them – completely unfiltered and with nowhere to hide from the questions. The collaboration dinners will be once in a lifetime – three great chefs collaborating and cooking for you in the Glasshouse Kitchen in Town Square. And of course, to have Marco Pierre White in Adelaide for the first time is pretty cool. He has done so much for the industry over the years. Ana Ros is a one-of-a-kind type of chef. She takes a zero-kilometre approach to cooking food at her restaurant Hiša Franko in Slovenia; all of her ingredients arrive on foot from within walking distance. Ros has run the kitchen at Hiša Franko in the Slovenian countryside for 16 years where everyone grows and cooks their own food – there isn’t even a produce store. And it’s exactly this that makes Ros stay. Ros, who is self-trained, was named the World’s Best Female Chef for 2017 by more than 1000 international industry judges for the World’s 50 Best Restaurant Awards.

Originally from the island of Barbados, Paul Carmichael is passionate about preserving tradition and bringing people together over food. Carmichael studied at the Culinary Institute of America before moving to New York City where he worked in kitchens at WD-50, Asiate and Aquavit. Carmichael took the plunge and moved to Sydney in 2015 and became executive chef –bo, which was named 2016 at Momofuku Seio Gourmet Traveller Restaurant of the Year under Carmichael’s leadership in the kitchen.

Each stall will utilise fire as the primary heat source for cooking their menu, adding smokiness and searing heat to your autumn lunch or dinner. Using South Australian produce Charred will showcase regional flair such as dishes cooked by Kangaroo Island firemaster Tony Nolan and Dan Moss of Terroir Auburn (Clare Valley). Hosted by the team from Fool Magazine (Lotta and P-A Jorgensen) and Gourmet Traveller Australia’s Pat Nourse, Chef Quiz will be a right ruckus with chefs like Jock Zonfrillo, Paul Carmichael, Mitch Orr and Simon Bryant baring their brains for all to see. You will play along in the crowd – bring your mates or join a table on the night. Chances are you’ll know more about simple recipes, basic cooking skills and straightforward trivia on these kitchen tyrants than they do. Wine & Spirits Magazine Top 100 alumna. All are but snippets of a man whose passion and enigma have created one of the country’s leading wine brands and earned him the mantle as key influencer of the region, industry and beyond. Taras’s approach to winemaking uses minimal intervention, focusing on organic farming, early picking and natural acidity to showcase the strength of the produce and a progressive skillset in a somewhat traditional field. His connection with wine started early with his family, Ukrainian immigrants, settling in the Clare Valley. Via a dalliance with an Adelaide-based punk bank, Kranktus, (performing at many festivals like Big Day Out) and a stint in Sweden as “flying winemaker crafting wines throughout Europe”, Taras soon invested in his own brand of winemaking. Ochota Barrels’ honour roll is as long and esteemed as the list of Taras’s rock’n’roll mates (not that he ever brags). Yet it’s the love of good wine that drives Taras to produce one barrel after another, and the experience of sharing a swig or seven straight out of those barrels that brings him joy.
