Pork Chops with Tomatoes & Olives Preparation time: Cooking time: Serves:

INGREDIENTS 4 pork chops 1 cup cherry tomatoes cut in half 1 onion sliced 2 cloves garlic chopped or left whole
1 tsp dried rosemary or a couple of fresh sprigs Salt and pepper 1 tsp paprika 10 black olives (optional) 2 tbs oil

METHOD 1. Brown chops in oil in large frying pan. Remove and keep aside. 2. Add onions and garlic to remaining oil in pan and stir-fry till soft. Remove from the pan. 3. Return chops to pan, arrange onions and garlic around them together with the herbs and cherry tomatoes. 4. Season with salt and pepper. 5. Add paprika, cover and cook till tomatoes release their juices and chops are done. 6. Top with olives before serving.

Serve with crusty bread to mop up the juices and a glass of white wine! Remove rinds, rub with salt and pop under grill for a crunchy side dish (be careful not to burn them). This recipe can be used for other pork cuts.
