In winter, everyone tends to pull out his or her easy-to-wear, dark clothes. However, our Glam Noir fashion shoot demonstrates that wearing black does not have to be boring! Featuring beautiful textures and embellished fabrics, black is transformed into pure decadence. We would like to thank the Burnside Council for allowing us to shoot at Burnside Town Hall, which provided an evocative backdrop for our fashions. This season, sixties fashion has also returned in full swing and our Mod Squad spread will show you that this trend can easily be worn by all. Whether it is a felt wide-brimmed hat or a pair of cuffed chinos, you can find all your sixties inspired fashion at Burnside Village. The Village is now home to a work of art from the city of lights itself. Direct from the Modus Gallery in Paris, Frivole is a bronze sculpture crafted by French artist Françoise Abraham. Known for her elongated shapes full of sensuality and tenderness, Abraham’s ‘Frivole’ captures the feminine figure in an energetic and curious way. Unveiled at the official opening of the Stage 3 Development, the sculpture will remain at the Village and be the focal point of the Burnside Village Sculpture Competition in August this year.

our river red gum THIS MAJESTIC TREE PROVIDES A TRANQUIL ENVIRONMENT FOR SHOPPERS AT BURNSIDE Visitors to our atrium have been enjoying the majestic presence of our river red gum, which is doing well in its new indoor environment. After shading the carpark of the Village for many years, the redevelopment saw the tree move inside. Aborman Tree Solutions director and aborist Marcus Lodge says the process has been quite an adjustment for the 100-year-old tree. “We have essentially changed the atmosphere around the tree: taking it from an open, natural air space to an unnatural one, which has changed everything from the wind contact to the way the light hits the tree,” he says. “I don’t think anyone has ever done this before.” Marcus has been looking after the tree for around 15 years, first consulting with Burnside on the tree in 1997. He has since become the main caretaker of this gentle giant, helping the tree adapt to its new home and stay happy and healthy. “The tree is going well considering it has been undergoing significant change. It is healthy and responding well to the treatment.” This treatment includes regular pruning and

canopy management to compensate for factors such as lack of wind and some treatment of the root zone. The tree has its own water supply and a specially designed pop-top roof to help it flourish. Marcus and others from his team of arborists visit the tree every fortnight, and tidy the canopy every six weeks, with specific treatments for things such as insecticide. The tree has the same life expectancy as most river red gums, which is an astonishing 600 years. Having the tree watch over the Village creates a beautiful, tranquil atmosphere for visitors and is the perfect spot to enjoy time out while shopping. However, this is just one of the positive effects of maintaining this stately tree. “It’s important to preserve trees on development sites so we can preserve some sort of urban forest,” Marcus says. “It’s good for the environment. The global brand has made its way to Adelaide and is calling Burnside Village home. Smoky eyes Winter is all about smoky eyes, but this year’s look throws in a shot of colour. Make Up Store’s Megan Hand recommends using a navy blue eyeshadow with a slight metallic ďŹ nish to make your eyes really pop. SMOOTH SKIN Cleansing milks moisturise the skin while cleaning, making them ideal for cooler weather, says Make Up Store’s Megan Hand. She recommends using a treatment mask twice a week to give the skin an injection of moisture. To combat the effects of indoor heating, finish with a slightly richer moisturiser than what you use in the warm weather. To prevent flaking, Mecca’s Tony Baumann recommends using Hollywood facialist Kate Somerville’s face serum over moisturiser. village cookbook Chilli pork ribs Chilli and pork go so well together – perfect for cosy winter days. If you don’t want too much heat, discard the chilli seeds prior to adding to the dish. By Dennis Leslie 2.5kg young pork ribs, cut into individual ribs 8L water 1 cup light soy 1 tbsp black peppercorns 1 brown onion, peeled and cut into rough wedges 1 tbsp vegetable oil 3 birdseye chillies, sliced into thin rings 1 bunch spring onions, sliced into thin rings 2 cloves garlic, crushed and finely chopped 2 tbsp ketcup manis sea salt, seasoning to taste cracked white pepper, seasoning to taste

Place water in a large pot along with the light soy, black peppercorns and chopped brown onions to make a cooking stock. Take the stock up to boiling point then down to simmer for about 20 minutes.

Add the pork ribs into the stock and simmer for 20 minutes or until the meat starts to gently fall off the bone. Strain the pork ribs and allow to drain in a colander, then place the ribs on paper towel and dab them dry.

Heat a wok on high heat and allow to heat up until the surface of the wok starts to smoke a little. Add vegetable oil and allow to heat up for 10 seconds. Add the dried ribs to the wok, browning all sides. Add the spring onions and toss them through. Add garlic and toss through and allow to cook while stirring for about 10 seconds. Add chilli and toss through, continue to stir fry for another 10 seconds. Add ketcup manis and toss through until evenly coated. Season with sea salt and white pepper then serve.

Thai chicken and broccoli noodle soup The chicken is poached on the carcass which makes the meat incredibly juicy and tender, and is delicious served in the fragrant broth. Any leftover meat is great in salads or on sandwiches. Leftover broth freezes well and can be used in the same way as chicken stock. By Callum Hann 2 tbsp vegetable oil 1 bunch coriander, stems sliced, leaves reserved for serving 6 cloves garlic, sliced thumb-sized piece of ginger, sliced 2 sticks lemongrass, sliced (optional) 1.4kg whole chicken ½ cup soy sauce 2 tbsp fish sauce 2 tbsp brown sugar 4 star anise (optional) 6 spring onions 1 head broccoli, cut into florets dried noodles, to serve (I like Japanese Somen)

Heat a large saucepan (big enough to fit the chicken in) over medium heat. Add oil, then coriander stems, garlic, ginger and lemongrass (if using). When starting to turn golden, add the chicken breast-side down and add around 2L of water or enough to just cover. Add soy sauce, fish sauce, brown sugar, star anise and 2 whole spring onions. Bring to the boil on a high heat, then immediately turn down heat and simmer gently for an hour and 15 minutes or until chicken is soft and the leg meat is almost falling off the bone. It should be a really gentle simmer, just the odd bubble is perfect. Carefully lift chicken out of the pot with tongs, reserving liquid. Allow the chicken to cool enough to handle. Meanwhile, cook noodles according to packet directions, drain, and blanch broccoli in boiling water until just tender. Drain well. Slice remaining spring onions finely on an angle. Coarsely shred chicken meat from the carcass. Strain reserved liquid and discard solids. Divide noodles, broccoli and chicken meat among bowls, ladel in broth. Scatter over sliced spring onions and coriander leaves to serve.

Lamb shank and red wine casserole with orange gremolata Slow cooking the shanks makes them tender and the sauce flavoursome. If you have a slow cooker, start the shanks and vegetables in a frying pan, then put all ingredients to the cooker and let it cook for the best part of the day. By Callum Hann 4 lamb shanks ¼ cup flour 4 tbsp vegetable oil 2 leeks, washed and sliced 2 carrots, sliced 3 sticks celery 4 cloves garlic, halved 2 tsp fresh rosemary, chopped 2/3 cup red wine 2 x 400g can chopped tomatoes salt and pepper, to taste 2 cups beef stock

Orange gremolata ½ bunch flat-leaf parsley, finely chopped finely grated zest of 1 orange 1 cloved garlic, chopped as finely as possible

Combine lamb shanks and flour in a disposable plastic bag. Shake bag to coat lamb in flour. Heat a large heavy-based casserole dish over high heat. Add 2 tablespoons of the oil. Dust any excess flour from shanks. Add 2 shanks and cook, turning occasionally, until browned all over. Remove shanks form pan and set aside. Repeat with remaining shanks. Using tongs and several pieces of paper towel, carefully wipe out pan. Add remaining 2 tablespoons of oil. Add leeks, carrot, garlic and rosemary. Cook, stirring regularly, for 10 minutes or until leek has softened.

Add red wine, allow to simmer until mostly evaporated then add tomatoes. Add lamb shanks back into the pot and push into tomato liquid. Season with salt and pepper. Add 2 cups of stock, ensuring shanks are covered in liquid. Bring to a simmer, then turn heat to low and cover. Cook for 4 hours or until the meat is falling from the bone. The pot should be at a very gentle simmer, just the odd bubble. Remove lid, remove shanks from liquid and set aside. Increase heat and simmer sauce for 15 minutes or until thickened slightly. Meanwhile, combine all gremolata ingredients in a small bowl. Add shanks back into sauce. Serve casserole with gremolata over the top. Serve as a lazy Sunday lunch or as a dinner with mashed sweet potato.

Angel hair pasta, chorizo, prawns, cherry tomato, basil and shaved parmesan Pasta makes a hearty winter dish as a meal on its own or can be served in small portions as an entree. By Dennis Leslie 500g angel hair pasta 2 each chorizo sausage, taken out of casing and broken up 500ml white wine 1kg mussels 200g prawns, peeled and de-veined 2 punnet cherry tomatoes, cut in half ½ bunch fresh basil, picked 150g shaved parmesan (shave with peeler) 2 garlic cloves, finely chopped 1 large onion, cut into small squares sea salt black pepper extra virgin olive oil

Boil water in a large pot for the pasta; add about 3 tablespoons of salt per litre of water. When the water is boiling, add pasta, making sure you break them up so they don’t clump together as it cooks. Heat up a large pan that has a tight-fitting lid on high heat until it starts to slightly smoke. Add mussels, toss through quickly. Remove from heat and add the wine around the edge of the pan. Cover with a tight-fitting lid and cook for about 5 minutes on high heat. Do not take the lid off as the steam is important to open the mussels. Once all the mussels have opened, pour them into a colander with a bowl underneath to catch the liquor. Place the same pan on the high heat again. When the pan is hot, add about 1 teaspoon of olive oil. Add the onions and sauté for a minute. Add the sausage and continue to sauté, without colour, for about 2 minutes. Add the garlic and cook for a further minute or so or until the rawness ‘smell’ is out of the garlic, taking care not to get the pan too hot at this point otherwise the garlic will burn.

Strain your pasta well and add to the pan. Toss through until evenly distributed. Season with sea salt and black pepper.

Add the tomatoes and cook until it starts to break down a little. Add the mussels and mussel liquor to cook for a further minute. Add the prawns and allow to cook until they are about 60% cooked through.

There doesn’t appear to be enough mixture when you initially make this dish, but rest assured it rises up around the pear to fill the ramekin. Cardamom is a very unique flavour, if you aren’t a fan feel free to leave it out or substitute with more cinnamon. By Callum Hann 60g cold butter, chopped

Preheat oven to 1800C (1600C fan forced). Combine butter and sugar in the bowl of a food processor and blend until just combined. Add almond meal, egg, yolk, baking powder, cinnamon and cardamom. Blend until combined. Divide mixture evenly between four 1-cup ramekins. Push pear pieces into the mixture. Transfer ramekins to the oven and bake for 25-30 minutes or until pear has softened and a skewer in the mixture comes out clean. Meanwhile, combine cardamom yoghurt ingredients in a small bowl, stir a little to create swirls. Remove ramekins from oven, enjoy warm or cooled with cardamom yoghurt.

By Dennis Leslie 1.3kg chocolate (66%) 1.3kg butter 22 whole eggs 1kg icing sugar 10 egg yolks 150g cocoa (70%) 675g all-purpose flour 40g baking powder

Melt chocolate and butter. Whisk eggs, icing sugar and yolks until they reach foam stage. Fold in chocolate then dry ingredients. Butter 12 ramekins and pour in the chocolate mixture. Bake at 190°C until it slightly pulls away from the edges.

Eat well move well Winter for most of us involves warm food and lazy weekends indoors. We move less but eat more, and the result is an expanding waistline. Don’t let your winter comforts result in an upward shift on the scales. Stews, soups and slow-cooked meals are more popular in the cooler months. Fine dining comes to Burnside Village with the opening of H by Felici.

International fashion brands and the best local designs aren’t the only thing new at Burnside Village. Head around to the timber deck and you’ll find the latest dining experience to hit Burnside – H by Felici. The brainchild of Houssam and Hatem Abiad, (the people behind well-loved coffee bar Felici), H by Felici will deliver the same great coffee but with a unique new dining experience added to the menu! The man behind the reins at Felici’s café, David Biulsich, will also serve as operations manager for H. Working alongside the original Felici team is Paul Wood, as executive chef of the chic establishment. Perhaps best known for his appearance in the 2010 series of the popular television show My Kitchen Rules, Paul has been anything but idle since then. Involved in this year’s Tasting Australia and last year’s Cheesefest, Paul has now turned his hand to the restaurant business after working with Houssam on Queensland flood relief charity event SA 4 QLD. “We wanted to create a really different dining experience to what is already offered at Burnside,” Paul says.

“The directors decided Burnside is the ideal place to expand the Felici brand as there’s not a lot of dining places like it. It seemed the perfect fit.” The menu is designed by Paul himself and features a mouth-watering combination of contemporary dishes with a Mediterranean touch. The menu also has a strong focus on desserts, with 12 options on the menu. When asked for his recommendation, Paul says, “Nobody goes past my chocolate salted caramel tart!” H by Felici seats up to 50 people inside and 40 on the casual deck (complete with über-stylish benches and lounges), making it an ideal space for functions, which Paul hopes will be a feature of the restaurant. “The focus of H is style, service and food, and we operate on the notion that at H, the experience is everything,” Paul says. “It is a whole new dining experience not only for Burnside, but for Adelaide as a whole.” H by Felici Open 7 days for breakfast, lunch and dinner. Their foccacias and paninis are grilled to order, and their sweets are addictively delicious (try the apricot cheesecake). Cocolat Eat-in or take home Cocolat’s range of delicious treats. Choose from truffles, lamingtons, hot chocolates and even waffles. You can also order the perfect cake for that special occasion or grab a cone of award-winning gelato.

Umi Sushi While popular for their delicious sushi, Umi also offers a range of Japanese dishes: noodles, teriyaki chicken and salads, all made fresh on the premises. It’s the healthy choice for a light lunch between shopping.

Utzi Espresso With a great range of foccacias, piadinas and gourmet rolls, Utzi is sure to have something for everyone. Their cakes and patisseries also make it worth the visit.
