elcome to the Christmas Edition of The Vine magazine, showcasing fashion, festivities and everything you need to help you and your family celebrate in style.

Throughout this issue, we focus on fashion, with dedicated shoots for women and for men showcasing the best summer fashion that Burnside Village has to offer. For the little ones, we threw a party and invited kids of every age to show off all of the incredible children’s fashions that have landed in the Village this summer! At Burnside Village, one thing we love about Christmas is that it is time spent with the family. This year, we invited Leigh Sexton to share the perfect summer menu from canapes to dessert, shot on location at our very own H by Felici and featuring delicious ingredients from the Village. We hope this menu inspires many enjoyable feasts at your own home. We understand that Christmas is a busy time, so to make your Christmas easier we’re providing free gift-wrapping. We also bring Santa to the Village – he arrives at our annual Brunch with Santa (check out page 13 for details) and will of course be on hand to hear all your Christmas wishes. Men’s summer fashion steps out of the traditional dark tones and into bold primary colours and summery pastels for a sharp, understated look that evokes an effortlessly cool attitude. Don’t be afraid to wear the same colour top and bottom – break it up in different tones or patterns for maximum impact. Go for bold colours in tailored shorts and polo shirts, such as those found in Zara, Rodd & Gunn and Gazman. For daytime, ditch the boat shoes and go for a dressed down look with a pair of classic Converse from be a sport or casual trainers from Geox. Place sugar, chicken stock, ginger and soy in a bowl and whisk until the sugar dissolves, place in a saucepan and over a low heat, heat through, remove from heat and set aside. In another bowl, add scallops and drizzle with peanut oil, then sprinkle with the extra sugar and pepper. Heat a non-stick pan over high heat and cook scallops in small batches for 20–30 seconds on each side or until just cooked. Place pepper, salt, coriander, oil and lime juice in a large bowl and whisk to combine. Place tuna steaks in the bowl and cover with the mixture. Set aside to marinate for at least 5 minutes. Meanwhile, combine dressing ingredients in a jar and shake to combine. Set aside. In a large mixing bowl, combine salad ingredients and set aside. Heat a large non-stick pan and cook tuna steaks for 20-25 seconds on each side, remove from heat and let rest for 5 minutes. To serve, cut tuna in thin strips and arrange on a plate, top with salad and drizzle with the dressing.

TIPS For chilli lovers, add fresh, thinly sliced chilli to the dressing or salad. Be sure not to overcook the tuna, it must be seared only on the outside.

In a large bowl, add mince, paprika, cumin and coriander. Mix through with a fork, using the fork to make the mince smooth. Add in egg, mint, parsley and garlic and continue to smooth out the mince. Once it is well mixed in, season with salt and pepper and, using your hands, shape into a kofta, then set aside for the spices to infuse for at least 5 minutes or up to 3 hours in the refrigerator. To make dressing, place yoghurt, garlic, cucumber, salt and pepper in a bowl and mix through. Stir in the oil and lemon juice and set aside in the refrigerator. On the stovetop, heat the butter and oil over a medium heat. Cook koftas, turning regularly to brown on all sides and cook through. Once all the koftas are cooked, use the same pan to lightly toast the pita bread on each side.

In a saucepan, bring stock to the boil. Add rice wine, spring onions, shallots, garlic, salt, pepper and mirin, bring back to the boil. Once at boiling point, add the chicken breasts, making sure the stock covers the breasts, and cook on a low boil for 8 to 10 minutes until cooked through (you can check the chicken is cooked by making a small cut in the breast). For the salad, first make the dressing: in a bowl, mix sugar, garlic, ginger and sesame oil, adjusting the taste to your liking. To make the sauce, place garlic, ginger, coriander roots and half of the leaves, and shallots in a hand blender and blend, adding peanut oil to make a smooth paste. Place mixture in a saucepan and cook over a low heat until slightly coloured, then add chilli bean paste and cook over a low heat for 1 minute. If needed, add more oil and caster sugar to taste. To serve, remove chicken from stock and slice. Place the stock (about Âź cup) to each bowl and add the sliced chicken. Top with the sauce and garnish with remaining coriander leaves. Place cucumbers in the salad dressing and serve the salad on the side, with extra sauce for dipping.

TIP The best way to eat this is with a piece of chicken, sauce and cucumber all together.

Once the oil is hot enough, squeeze about 3 inches of dough into the oil and use a butter knife to cut the dough away at the tip of the piping tool. Depending on the size of your pot, you should be able to do up to five at a time. Use a slotted spoon to turn churros around in the oil. Once they are browned all over, remove from the oil and place on a paper towel to remove excess oil, then dip into sugar dust to coat, careful to cover all sides. To make chocolate sauce, place chocolate in a bain marie (or you can use a heatproof bowl on top of a saucepan of water, making sure the water does not touch the bottom of the bowl). Bring the water to a simmer, stirring chocolate with a metal spoon for about 2-3 minutes. Ensure the water doesn’t boil as it will overcook the chocolate. When melted, place chocolate in individual bowls and serve with churros.

TIPS Chocolate varies, so for best results, use the highest quality chocolate you can find. This recipe features three types of chocolate but you can use whatever type you prefer. If the white chocolate has trouble melting smoothly, stir in 50ml of thickened cream once it’s melted.

Make churro dough mix by adding water, butter, brown sugar and salt in a medium saucepan. Heat until it just boils. Remove from the heat, add flour then return to the heat for a few minutes, stirring constantly, until it comes together as a dough (about 1-2 minutes). Remove from the heat to cool slightly. Meanwhile, in a separate bowl, mix the eggs and vanilla together and then add about a tablespoon of the egg mixture to the flour mixture. You will need patience as the mixture takes a bit of stirring to come together. Repeat until all of the egg mixture is mixed in and well blended. Set aside to cool. While that is cooling, place vegetable oil in a medium-to-large pot and heat to very hot. Meanwhile, make the sugar dust by mixing sugar and cinnamon in a large bowl. Set aside. Fill your piping bag with the churro dough mixture. Test that the oil is hot enough by placing a small amount of dough mix into it. The dough should bubble up straight away – if it does, your oil is ready.

After winning My Kitchen Rules this year with friend Jennifer Evans, Leigh Sexton’s life has been all about food. The owner of Dulwich florist Lilli-Anthus Floral Design, Leigh has been involved in a number of Adelaide food events and now hopes to open her own café within her store. Her love of food began from a young age. “I grew up on a farm and my nan was always cooking using produce from the farm and I learnt where food came from and I started to appreciate it.” She says it is her creativity that has inspired her cooking ventures so far, that she enjoys “just playing with flavours and challenging myself to try different recipes”.
