THE FOOD HYGIENE RATING SCHEME IN ENGLAND, WALES AND NORTHERN IRELAND The food hygiene scheme will help you choose where to eat out or shop for food by giving you information about the hygiene standards in restaurants, pubs, cafes, takeaways, hotels, and other places you eat out. Supermarkets and other food shops are also included in the scheme. The scheme is run by local authorities in England, Wales and Northern Ireland in partnership with the Food Standards Agency. Each business is given a ‘hygiene rating’ when it is inspected by a food safety officer from the business’ local authority. The hygiene rating shows how closely the business is meeting the requirements of food hygiene law. When you eat out or shop for food, you might see a sticker in the window or on the door, or a certificate on display, showing you the hygiene rating for that business. Businesses are encouraged to display these stickers and certificates at their premises in a place where you can easily see them when you visit.
PUBS & BARS In the town centre Church Street and its tributaries offer a great selection of small bars and well known options. If you are a real-ale enthusiast there are a number of bars recognised by CAMRA including Hartlepool’s, and possibly the country’s smallest pub; The Rat Race Ale House which is found at Hartlepool Railway Station. And when it comes to the end of the night, Hartlepool is very well served by good quality taxi services with ranks on and around Church Street and Victoria Road as well as a steady supply from Navigation Point at the Marina. All Hackney Carriages in Hartlepool are yellow in colour. Dining out in Hartlepool is very popular and you know the choice is vast. Often to complete that perfect dinner or lunch we enjoy a pre or post meal drink. Once again, in Hartlepool, you are never far from a great option for drinks. At Navigation Point on Hartlepool Marina there is a great choice of bars to complement any meal. From champagnes in Black Olive to premium beers in Bar 516 to the charm of the Rosie O’Gradys and the buzz of Vibes bar, there is something for everyone.

CASA DEL MAR MEDITERRANEAN TAPAS Casa Del Mar is Krimo’s third venture on Hartlepool Marina. Opened in January 2006, it has now acquired a tremendous reputation for the enormous variety of Mediterranean Tapas served there. Tapas has become a very popular style of eating, you can start with a snack if you wish and work your way up to a feast very easily. Casa Del Mar also has a takeaway service for those that fancy something a little different. During the summer, Casa Del Mar excels in al fresco dining, and the lunchtime and Happy Hour deals should not be missed. THE DUGOUT CAFÉ LUNCHES, SANDWICHES & SNACKS The Heugh Gun Battery is situated on the Headland in Hartlepool. This area of the North East coast is rich in history and the museum aims to educate its visitors on part of that history. The First World War touched many lives but on 16th December 1914 Hartlepool suffered a bombardment which would be remembered by many over 90 years later. Integral to the attraction, though accessible to all visitors is the Café, recently re-branded as ‘Poppy’s’. The pretty café, decorated with appropriate memorabilia serves up real home-cooked food for all visitors. The café can also be booked for private parties, events and gatherings. The Café enjoys a full drinks license and there are plans to expand the facility in 2013.

KRIMOS MEDITERRANEAN CUISINE Krimo’s first opened at Seaton Carew on May 4th 1985. After fifteen years, it moved to its superb location overlooking the lock gates at Hartlepool Marina. Krimo’s has always been a special place for the people of Hartlepool. At weekends it is advisable to book well in advance although midweek, one may find a spare table. STARTER SMOKED FISH WARMER FROM RAUDIN’S RESTAURANT INGREDIENTS 90g streaky bacon chopped 500g potatoes diced finely 600ml milk 1 x small can of sweet corn drained 350g of smoked haddock or cod, even mix of both 4 x spring onions and 1 bay leaf, salt and pepper and crusty bread to serve
METHOD Heat a saucepan, add the bacon and dry fry for 2 minutes until the fat begins to run. Add the potatoes, milk, bay leaf and seasoning, bring to the boil and simmer for 5 minutes. Add the sweet corn, fish and spring onion and cook for a further 5 minutes. Check that the potatoes are well cooked (they should be if you cut them into small cubes). Serve and enjoy. Serves 2

MAIN COURSE CONFIT SHOULDER OF LAMB FROM WYNYARD HALL INGREDIENTS FOR THE CONFIT
INGREDIENTS FOR THE VEGETABLES & GRATIN
1 shoulder of lamb, boned & salted 4 pints duck fat 2 heads garlic 2 sprigs thyme
2 bunches baby carrots 2 bunches baby leeks 2 bunches baby fennel 2 bunches baby turnips 200ml red wine sauce 4 large potatoes 250ml double cream 2 cloves garlic
METHOD For the confit, wash the salt off the shoulder of lamb and place it in the duck fat with garlic and thyme. Cover the tin with foil and cook at 150째C for four hours. Remove the lamb from the fat and drain it. Roll in cling film and mould into a sausage shape. Peel and wash the baby vegetables, place in a pan of salted boiling water. Cook until tender, then drain and cool in iced water. Layer thinly sliced potatoes in an oven proof dish. Place cream in a pan with 2 cloves of garlic and bring to the boil. Remove garlic and pour the hot cream over potatoes, place in the oven for 55 minutes at 180째C. To serve: Pre heat the oven to 180째C. Bring a pan of salted water to the boil. Cut lamb into portions, place on oven tray and heat in the oven for 12 minutes, than add gratin potatoes and heat for a further 10 minutes. Remove lamb and potatoes from the oven and keep warm. Add baby vegetables to the boiling water for 3 minutes, then drain. Plate the meal and serve with red wine sauce. Serves 8 www.eatinhartlepool.com | 35
DESSERT STRAWBERRIES & PIMM’S WITH MASCARPONE ICE CREAM FROM WYNYARD HALL INGREDIENTS FOR STRAWBERRIES & PIMMS 2 punnets English strawberries (cut in half ) 200ml Pimm’s 2 gelatine leaves 1 vanilla pod 200g sugar
INGREDIENTS FOR MASCARPONE ICE CREAM 250ml double cream 250ml whole milk 50g egg yolks 100g sugar 100g mascarpone
METHOD In a bowl, marinate the strawberries with Pimm’s, sugar and vanilla – leave for 24 hours. Drain the liquid and dissolve the soaked gelatine into the mix. Set in serving glasses. Once set, top with the strawberries. To make the ice cream, add all the ingredients apart from the mascarpone to a pan. Constantly stir over a low heat until the mix has reached 83°C before whisking in the mascarpone. Cool the mix. Churn the cooled mix in an ice cream machine for 20-30 minutes. Once frozen, add a scoop of the ice cream to the strawberries and Pimm’s. Serves 4 36 | www.eatinhartlepool.com
