The founders of The Joinery, Lakeland’s artisan food hall across from Lake Mirror, are planning an expansion. Jon and Sarah Bucklew are still in the early conceptual stage, but they are contemplating a smaller building that would contain a full-service restaurant, event space, and morning coffee. The addition would take up part of the venue’s parking lot, but parking will be expanded into land to the east that the city of Lakeland is selling to the property’s owner, Wesley Beck. Beck promises the expansion will be “cool … What he (Jon) has done with The Joinery is too fabulous for our community to just put a little metal building there.”
Lakeland voters returned three incumbents to office in November’s city elections. Mayor Bill Mutz defeated challenger Saga Stevin by a decisive 2-to-1 margin. First-term City Commissioners Sara Roberts McCarley and Mike Musick — both of them previously elected to partial terms in special elections — were both re-elected to full four-year terms. Mutz told reporters that by returning three business-friendly incumbents to office, “Lakeland feels well established with the existing commission.” Asked at a LkldNow candidate forum whether he would seek higher office when his term ends, Mutz gave an unequivocal response: “Absolutely no.”
Imagine walking, jogging, or biking along a wide trail overlooking the west side of Lake Hunter. Plans are underway to turn that into a reality. The city of Lakeland and the Florida Department of Transportation are discussing a 10-to 12-foot multi-purpose trail stretching 1.4 miles along Sikes Boulevard between Ariana and Lime streets. Where possible, the trail would veer away from the busy roadway. For places where the space between the road and the lake is narrow, planners are contemplating several alternatives, including a wooden boardwalk, retaining wall, cantilevered path, or adding fill dirt and a grassy slope.

Lakeland has a new semipro basketball team, and the mover-and-shaker behind it is a Southeastern University student. At 21, Amy Rhodes is the youngest and only woman team owner in the Florida Basketball Association. The Lakeland Royals become the ninth team in the league, which was founded in 2012 and starts its 2022 season in March. Their coach is Charles Jeune, who played at the College of Mount Saint Vincent and Southeastern University before coaching for seven years in the Hudson Valley. Games will be streamed live and viewable on the team’s website as well as on Facebook and YouTube.
It’s been nearly three years since a restaurant has operated at Lakeland Linder Airport, but that’s about to change. Michigan aircraft CEO Sven Lepschy is planning to invest $3 million to renovate and expand the dining area in the airport’s mezzanine. The Waco Kitchen he plans to open there will be modeled after his restaurant with the same name at Battle Creek Executive Airport in Michigan. In addition to airport staff and travelers, Lepschy hopes to serve the thousands of people moving into new subdivisions in southwest Lakeland who have few nearby dining options.
Veterans Day was marked in Lakeland by the dedication of a new monument at Veterans Park. The monument honors Polk County’s African American soldiers who served during World War II. One of those veterans attending the ceremony was Herman Jenkins of Lakeland. At age 102, he stood unassisted near the monument during the ceremony. Jenkins grew up in Lakeland and during the war was part of a quartermaster unit that guarded a supply depot in Normandy and later guarded German POWs. Also attending was J.J. Corbett, 99, of Bartow, a former Polk County School Board member.
Jay Dennis, the 62-year-old retired pastor who oversaw tremendous growth during 21 years at Church at the Mall, is launching a new church in a landmark building in the Lake Morton area. He describes City Central Church as a non-denominational congregation for the unchurched and de-churched. Starting in January, it will meet at 310 Frank Lloyd Wright Way in a tall-steepled sanctuary that was built for Southside Baptist Church and later became part of St. Joseph Academy. The structure is now owned by Florida Southern College, which is renovating the adjoining classroom building for its graduate nursing program.
The dining and entertainment district that’s developing north and east of Lake Mirror is getting a dog park. The park will be built in a gently sloping dry retention pond at the southeast corner of Main Street and Rose Street. The land, which is midway between The Joinery and The Poor Porker, was donated to the city by the Florida Department of Transportation. Just around the corner: the new Velazquez Cigar Co. and La Imperial Bakery. The $150,000 that the city plans to spend on the dog park — part of it from a nearby land sale and part from impact fees — is well under the $400,000 price tag of a dog park that was planned nearby but never built.

LPD RECRUITING TRIP YIELDS 13 TRAINED OFFICERS FROM NEW YORK CITY A Lakeland Police Department recruiting trip to New York City has resulted in 13 trained officers moving here to join the force. Some of the officers said they were drawn to Lakeland because it lacks the anti-police sentiment they experienced in New York. One recruit said he was sold when he was told he could park his police cruiser in front of his house. “To me, that was mind-blowing,” former NYPD officer Matthew Spoto said. “I used to lie about what I did. I used to tell people I was a bartender. I was ashamed to be a law enforcement officer.” Because the new recruits are already certified, the training should take half the normal time and they’ll be ready to hit the street. BOOKSTORE GOES MOBILE WITH A RESTORED VINTAGE METAL TRAVEL TRAILER The family that founded Lakeland’s Little Bus Books last spring recently debuted the namesake little bus that makes their bookshop mobile. It’s actually a restored vintage metal travel trailer: a 1953 Va-ka-shun-ette. The bookstore on wheels was founded by Lakeland residents Lynsey and Michael Pippin. “Our mission started with the realization that we needed to broaden our own cultural perspectives,” Lynsey said. “Books provide a simple, unobtrusive way for individuals to gain knowledge and experience a variety of cultures.” The selection is curated by Lynsey and includes books by local authors.

Cook one bag of frozen shrimp, peeled and deveined (size 21-25 is best) in water with a touch of salt until it comes to a boil, remove from the heat. Drain well and allow to cool while you prepare the tartar sauce.
½ cup chopped celery 1 cup sweet relish ½ cup raw red onions ¼ cup basil leaves salt and pepper
Tartar sauce: Mix celery, relish, onion, and basil together in a bowl. Add mayonnaise to the desired thickness. Add a touch of salt, pepper, and lemon juice to your liking. Mix well.

3 red pears
¼ cup chopped pistachios
Start by washing your fruit, but KEEP THE SKIN ON! Cut the pear into 8 even-sized pieces, and don’t forget to core them. Soak your pears in cold water and lemon juice while you’re working on the gastrique. Combine syrup, vinegar, spices, and bay leaf into a medium saucepan. Bring up to a boil on high heat. Reduce heat to medium/low and allow to simmer for 10 minutes or until the liquid coats the back of the spoon. Once your gastrique is reduced and ready, strain with a fine-mesh strainer and set aside (make sure to keep it warm). Individually wrap your pears with a slice of prosciutto.

TO ASSEMBLE:
12-16 ounces prosciutto 1 package arugula
8 ounces pure maple syrup 2 cloves 1 star anise
Grab your favorite platter or wooden board and put a layer of arugula down. Assemble your pears on top of the arugula. Drizzle your gastrique over the top of your pears and sprinkle with salt and pepper. Finish it off with some chopped pistachios and enjoy!

Drain the artichokes then roll them in a clean towel to dry. Shred them into little chicken-ish pieces, then hand mix them into the bean mixture. Buy shrimp cooked, deveined, and shells off (tails on if preferred). Size can be to your liking but we recommend the 26/30 size or medium to large.
1 orange, juiced 1 cup ketchup
Mix all liquids except lime juice, in a large bowl. Add more hot sauce for those that like it!
1 cup tomato juice
Combine cucumbers, tomatoes, white onions, jalapenos, and add chopped cilantro.
2 tablespoons hot sauce, Valentina 2 tablespoons Worcestershire sauce 4 plum tomatoes, diced 1 cucumber, diced 1 white onion, diced
Cut avocado in half and cut one half into small squares and add to vegetables. The other half can be cut into slices for garnish on the side of the serving bowl. Slowly mix all ingredients and squeeze lime juice over, add salt and pepper to taste. Best served in a thick goblet style glass (i.e. margarita cup) or 14 oz bowl. Fill the bowl about threequarters high with liquid. Put 3 to 5 shrimp around the edges tails up and 2 to 3 laying flat on top of salsa. Garnish with lime and avocado. Ready to go!

INGREDIENTS
MEATBALLS DIRECTIONS:
1 pound ground beef (Preferably a 75%/25% or 70%/30% blend. Fresh ground is best if possible) large white onion, cut into small dice (Half for meatballs and a half for sauce) 6-8 minced garlic cloves (Half for meatballs and a half for sauce) kosher salt black pepper 2 cans of San Marzano tomatoes 1-2 bundles of fresh basil
In a large mixing bowl combine the ground beef, half of your large diced onion, half of your minced garlic, bread crumbs, parsley, pecorino, 1-2 eggs, salt (~2 tablespoons), black pepper (~1/2 tablespoon) and a splash of milk as needed for moisture. Mix until thoroughly combined. Form into balls. Roughly racquet ball sized. Place in the fridge to rest while you prep the tomato sauce.
1 pound fresh pasta (Linguine or Spaghetti) 1/4 cup fresh bread crumbs (toast Italian bread in your oven on the lowest temperature setting for 20-30 min and crumble to a semifine uniform texture) 1/4 cup Pecorino cheese 1/4 cup curly parsley 1-2 eggs whole milk sugar olive oil
TOMATO SAUCE DIRECTIONS: Prepare your tomatoes. Remove any basil that may be inside the can. Place in bowl and crush with your hands until they become a uniform texture. Not too chunky. Remove any cores you see. In a skillet, sauté half of your diced white onion in olive oil. Season with salt and pepper when the onions start to turn translucent. Add garlic and stir constantly. Do not burn. May only take a minute or two. Add tomatoes to pan and lower heat to a simmer. Add a dash of sugar to cut the acidity of the tomatoes. Tie a bunch of basil together with butcher’s twine and place in sauce. Cover with lid and stir occasionally. Do not let it boil. Cook approximately 45 minutes while you sauté the meatballs. COOKING YOUR MEATBALLS: Heat a sauté pan over medium heat. Add a healthy layer of olive oil to pan. When it’s shimmering, it is ready to cook. Carefully place meatballs in pan. Don’t overcrowd the pan. Cook all sides until they are dark brown. They will let you know when they are ready to flip. If they won’t release from the pan let them sear a little longer. When all sides are cooked, remove lid from tomato sauce and place meatballs in the sauce. Turn off the heat and let them get to know each other. PASTA DIRECTIONS: Bring a pot of water to a boil and salt heavily. Water should taste like sea water. Add pasta. Fresh pasta will only take a couple of minutes. Stir occasionally. Strain and add to a large serving bowl. Cover noodles with tomato sauce (remove the bunch of basil) immediately. Top with meatballs. Garnish with Pecorino and fresh basil. Enjoy!

Saute onion and garlic until fragrant. Add to a bowl with drained beans, pumpkin, goat cheese, spices, and spinach (if using it). Mix well. Or, you can buzz this all up in the food processor for a smoother consistency.

Lay wrapper in front of you so that a corner points towards you like a diamond. With your finger or a brush, wet the edges of the wrapper with water. Place a strip of the roasted poblano in the center of the wrapper and scoop a spoonful of the filling onto the poblano. Fold the bottom corner up over the filling. Bring the left and right corners to the center, pressing gently and tucking in. Roll the egg roll away from you, folding it into itself. Repeat until all wrappers are filled.

2 cups of all-purpose flour 1/3 cup of sugar 2 teaspoons baking powder 1/2 teaspoon kosher salt 1/4 cup heavy cream + 2 tablespoons 1/4 cup of Coppertail Citrus Gose + 2 tablespoons 1 large egg zest of one large orange 1/2 cup frozen unsalted butter, cut into pieces 1 cup dried cranberries, roughly chopped
Preheat oven to 425 degrees. Line baking sheet with parchment paper.
GLAZE:
Glaze: Mix powdered sugar, beer, and zest together until smooth. Dip each cooled scone twice and sit on a rack over a pan to allow dripping.
1 cup sifted powdered sugar 2 tablespoons Coppertail Citrus gose* zest of half an orange
Whisk flour, baking powder, sugar, and salt together. In a measuring cup, combine 1/4 cup heavy cream, 1/4 cup beer, egg, and zest. Use a pastry cutter or two forks to combine the butter into flour mixture until mixture looks like coarse, pealike crumbs. Fold in chopped cranberries. Pour in heavy cream/beer mixture and fold until it begins to clump. Turn over onto a well-floured counter and knead with floured hands until combined. The mixture will appear to need more liquid but kneading will combine it. If mixture is too sticky, sprinkle with more flour. Make into a ball, cut in half, and pat into a circle. Cut into 8 slices, arrange on baking sheet. Mix 2 tablespoons of heavy cream and 2 tablespoons of beer and brush on top of the scones. Bake for about 12-15 minutes, rotating at 6 minutes. Remove and allow to cool on a rack. Let them cool completely before glazing.
Tip: Freezing the butter and working with it the least amount allows for scones not to spread as much in the oven. I also like to make the dough the night before and allow rest time in the fridge, however it is not mandatory. These can be whipped up quickly by keeping ingredients cold. * You can use any citrus-forward beer (citrus gose, New England IPA, etc)

In the bowl add the chocolate, butter, espresso, and sugar, stir until melted. Remove the bowl from the pot and let cool to room temperature. Whip the cream to stiff peaks, gently fold into the melted chocolate mixture, until it is combined and no streaks remain.
CHOCOLATE GANACHE DIRECTIONS: Bring cream to a low boil and pour over the chocolate, allow to sit for 2-3 minutes, then gently whisk until smooth and combined. Set aside. TO ASSEMBLE:
Pour into your molds, gently tap on the counter to completely fill the cavity.
Unmold mousse dome, place on cookie crust circle, set on cooling rack on top of a bowl.
Place in freezer for 4 hours to set.
Pour warm chocolate ganache over mousse dome allowing to completely cover the dome.

Gently press toffee pieces, chocolate chips, sprinkles, or crushed peppermint around the bottom rim of the dome.

4 cups old-fashioned oats
Simmer raisins and rum over low heat until raisins are plump, 15 to 20 minutes. Drain on paper towels. Preheat oven to 425 degrees. Spread oats on a rimmed baking sheet and toast until lightly golden, about 6 minutes. Add pecans and coconut, toss to combine, and continue toasting until pecans are fragrant and oats are deep golden brown, about 6 minutes more. Let cool slightly.
2 cups pecans, chopped 2 cups shredded coconut 2 cups all-purpose flour 2 teaspoons kosher salt 1 teaspoon baking soda 1 teaspoon ground cinnamon ½ teaspoon freshly ground nutmeg 3 sticks unsalted butter, room temperature 1 ½ cups (packed) light brown sugar ½ cup granulated sugar 2 large eggs, room temperature 4 tablespoons molasses 5 teaspoons vanilla extract 1 ½ cups raisins
Whisk flour, salt, baking soda, cinnamon, and nutmeg in a medium bowl; stir in oats, coconut, and pecans. Using an electric mixer on medium speed, beat butter, brown sugar, and granulated sugar in a large bowl, scraping down the sides of the bowl, until light and fluffy, 3 to 4 minutes. Add eggs, molasses, and vanilla and beat until incorporated, about 1 minute. Reduce speed to low; add dry ingredients and raisins and continue to beat, scraping down sides and bottom of the bowl, until just combined. Let sit at room temperature for at least one hour to hydrate oatmeal. Preheat oven to 350 degrees. Line 2 rimmed baking sheets with parchment paper. Using a 2-ounce scoop, space dough 3 inches apart. Do not flatten; cookies will spread as they bake. Bake cookies, rotating sheets halfway through, until edges are golden brown and firm but centers are soft, 15–17 minutes. Let sit on sheets 10 minutes, then transfer to wire racks; let cool. Cookie dough can be made 3 days ahead; cover and chill. Let dough come to room temperature before baking.

PIE FILLING DIRECTIONS: 1: Using a mixer or immersion blender, combine the phase A ingredients together, scraping the sides of the bowl to ensure it is evenly mixed. 2: Add in phase B and blend to achieve a smooth mixture. 3: Add in the melted butter and blend until smooth. Scrape down the sides of your bowl to make sure everything is evenly combined. Preheat the oven to 375 degree and let the filling rest in the fridge until the oven is ready to bake. TO ASSEMBLE: 1: Line two 9” pie tins with pie dough. Use a fork or your fingers to crimp the edges of the crust.

TART CRUST INGREDIENTS
DIRECTIONS:
1 cup all-purpose flour
Preheat oven to 400 degrees.

Start with the tart’s crust. Combine all dry ingredients in a bowl. Cut in cold butter by rubbing butter pieces into the dry ingredients until small and pea-sized.

Add milk and knead the dough until it just comes together. If too dry, add 1 tablespoon of milk at a time. Wrap dough and chill for at least 30 min.

Temper in the warm melted chocolate while whisking continuously. The filling will be thick and glossy. Fill prepared tart shell and smooth out with a spatula. Bake at 400 degrees for 3 minutes, no more, no less! Let the tart cool and then set in the refrigerator for at least 30 minutes for it to completely set. Slice and enjoy!

2 tablespoons spicy chai tea (or anything similar to our loose-leaf tea blend of black tea, cinnamon, orange peel, cloves, allspice, ginger, cardamom, and black pepper)
Pour your milk of choice into a small pan and bring to a boil. Add the Spicy Chai tea blend, mixing thoroughly and simmering on low heat for 8-10 minutes.

While your tea is simmering, grind your coffee on a coarse setting, place it on a French Press, and steep with your hot (205 degrees) water for 5 minutes.
1 cup (8 fl oz) of organic whole milk (or milk alternative of your choice)
Pour the milky chai blend into the French Press with the coffee, mix well, and plunge. Immediately transfer into serving cups.

Peel whole orange and lemon and use the zest in your saucepan, cut fruit in half and juice liquid into the saucepan and throw away the pith of the fruit. Simmer ingredients over low/medium heat for 20 minutes. Remove from heat and place in a refrigerator to cool and infuse for 2 hours. Once cooled, add Brandy. Strain all ingredients through a mesh fine strainer or cheesecloth.... a coffee filter will work well for this as well. Serve in a footed mug with an orange twist and cinnamon stick garnish.
