ON THE COVER: Inspired by the vintage label for Standard Bitter Ale brewed and bottled by Tooheys from Australia. This month we talk beer. Tara and I visited several local breweries all over Polk and tasted a LOT of beer. (It was a pretty fun work month.) Even though the breweries are very different from each other, there was one common thread in each of them. They wanted to create a place for locals to go to, where “everyone knows your name.” They wanted to create a place where you can go if you’re having a bad day and need friends around, or a really good day and you want to celebrate with friends around. Either way, it’s the perfect gathering place.

We visit DOU Bakehouse and meet the woman behind the cookies! DOU has a very “magical” operation and it all started from her kitchen. For our cocktail, we make a homemade version of a Shamrock Shake, but with Scotch, for St. Patrick’s Day. They’re dangerously good. I wanted to take a moment to remember Sebastien Le Forban, a friend of Haven that we lost in late January. He was a snowbird from Paris with a larger than life personality. Sebastien was the subject of many articles written for Haven by Sally DC, she referred to him often as “Frenchy.” We’re lucky that we got to meet him and spend time with him, he will be missed. Check out our list of the Top Ten things to do in Polk, Orlando & Tampa and we’ll probably see you at some of the events. There’s something about snakes that drives some people to extremes. After the Associated Press picked up a story about water snakes mating in a tree by Lake Hollingsworth, headline writers went into full clickbait mode. “Huge snake orgy forces park to close,” AOL UK screamed. Actually, no park closed. City crews put yellow caution tape around a tree near the lake that didn’t even interfere with the well-traveled walking/jogging path. Hey, AOL UK: Keep calm and carry on.

This one didn’t go international, but the Tampa TV stations got good video after an otter invaded a lakeside home in south Lakeland, fought the family French bulldog and bit the teenage daughter on her leg. The perky daughter and her equally perky mom told an animated story of Mom pouncing on the offending otter and flinging it out the back door. Downside for the daughter: She had to get rabies shots since it was unclear whether the otter was diseased. Downside for the otter: Authorities eventually found it (or a lookalike) and expelled it from the lake.

Ah, spring. In Lakeland, that means MLB baseball, an influx of Michigan license tags, and yellow tape near our lakes marking nesting spots for swans. The city Parks Department tries to protect Swan City’s waterfowl mascots when they’re minding their young. This year they’re taking it a step further after somebody snatched a five-week-old cygnet last May. At least one nest is adorned with a sign that says, in essence: Look, but don’t touch. You’re on Candid Camera.

The latest Hospital Compare ratings from the U.S. Centers for Medicare and Medicaid Services again give Lakeland Regional Health Medical Center one star out of five, placing it among the bottom 5 percent of hospitals nationwide. The hospital responds that recent improvements won’t show in the ratings for another year or two and that the rating formulas favor institutions serving affluent communities with highly educated populations.

People in Polk are nervously watching a bill involving Florida Polytechnic University and hoping it’s killed before the Legislature adjourns in mid-March. The bill, which came out of a House committee, would place the Lakeland-based university under the administrative control of the University of Florida. Rep. Randy Fine, the Brevard Republican pushing the bill, says it’s a matter of fiscal prudence since per-student costs are far higher at Poly. But university President Randy Avent counters that each dollar spent has “maximum positive impact” in providing “a core STEM education available nowhere else in our state.“

Lkld Live, a nonprofit arts venue in downtown Lakeland, is heading in new directions. Housed in a blackbox theater in the old Firestone building, it has highlighted a broad variety of music since early 2017. But several music venues have emerged since then, and new Executive Director Nate Fleming wants to add comedy, theater, classes and visual arts to the repertoire. Fleming, 28, founded Swan City Improv, which he will continue to run, along with his Lkld Food Tours venture.

Will the city of Lakeland grow its 350 miles of fiber optic cable into an Internet service for residents and businesses? Commissioners have made it clear they don’t have the appetite for investing up to $90 million into a municipal-run broadband utility. But they’re still holding out hope for a partnership with an emerging private company. The city is issuing a request for proposals asking companies to submit their best ideas for collaborating with the city on a service offering “reasonable access at a reasonable price point.”

The pressure for more public parking downtown decelerated a bit when the Heritage Plaza Parking Garage opened last month at Kentucky Avenue and Orange Street. While most of the spaces are reserved for the garage’s four investors, 49 regular spaces and 10 spaces for disabled people will be available to the public during business hours at $1 per hour. Payment can be made via pay-by-plate machines on the first floor or via the ParkMobile app, using zone 2701. In addition, roughly 200 spaces on the first and second floors controlled by the city of Lakeland will be available to the public for free on evenings and weekends.

Traffic counters were placed in 90+ locations south of downtown recently to gather data on traffic counts, travel times and vehicle types before the upcoming one-year test of the South Florida Avenue “road diet.” That project will involve narrowing Florida Avenue from five lanes to three between Ariana and Lime Streets in order to improve safety, walkability and economic development in Dixieland. Construction is expected to begin around May in prep for the test scheduled to start around October. At the end of the test, city and state officials will analyze the before and after data to weigh whether to make the changes permanent.

Wabash Avenue will extend northward to Kathleen Road, taking pressure off Harden/Sykes Boulevards and Florida Avenue, now that the city has agreed to spend $380,050 for the last bit of land needed for the project. In addition, planners still hope to extend Wabash from Ariana south to Harden Boulevard near the Polk Parkway, creating a western bypass around Lakeland and opening new areas for development.

Drink. Local. Lakeland. It’s like déjà vu – but the good kind. Just two years ago Swan Brewing opened their downtown Lakeland location off of Pine Street. Owner Dan Thumberg remembers when he first began to imagine his version for what he thought a brewery should be in the mid-2000s. His partner Christian Hood was dreaming up a brewery concept as well, though the two hadn’t yet met. In 2014, Hood was going to nursing school and began homebrewing while Thumberg worked for an Anheuser-Busch distributorship. “It was serendipitous how Swan Brewing came together,” said Thumberg. “We met at the Downtown Farmers Curb Market. I was selling home brewing supplies out of a 10 x 10 tent and he was looking to buy some.” The two got to talking and it came up that they both wanted to start a brewery. In fact, they both had already devised a business plan for their idea. Thumberg and Hood sat down at Molly McHugh’s over a beer and set to work planning. “We started to put the plan into motion and look for places, trying to understand what the market was demanding, and what we could afford to do here in town,” said Thumberg. Everything that happened for Swan to open seemed fortuitous. As if the clouds parted and the beer gods spoke – and it was so. A series of unfortunate events led Thumberg right to the spot where Swan sits today. It goes like this. Thumberg had to have melanoma removed from his shoulder at Watson Clinic. He returned home from surgery. “My mailman had left me a nice little note in my mailbox telling me that it was full and that he had taken all of my mail down to the post office because he couldn’t fit it in the box,” said Thumberg. “Perfect…,” he thought. Post-surgery, he begrudgingly made his way to the post office, collected his mail and stepped outside. “I looked across the street and thought – that looks like it could be a brewery.” It took them two years to build out the former auto repair shop into a proper brewery. - CONTINUED ON PAGE 18 -

SWAN SETTLES IN THE SOUTHSIDE

Dartboards, a Golden Tee, Pac Man, Galaga, and a pool table set the scene for a more adult-oriented good time. “That’s where you can go and play Cards Against Humanity and What Do You Meme and the things that aren’t appropriate to have at a family-friendly brewery,” he said.

Swan had a soft opening of their southside spot on January 24. “We unlocked the doors, turned the sign on and said let’s see what this thing does,” said Thumberg. The turnout was a reassurance that the southside would support their new location. There were so many in attendance that they had to open the front and back doors for space. “People were just flooding out,” he said. “That was mindblowing. I didn’t realize there was such a need for it down there.”

Instead of the grill of an antique Plymouth hanging above the taps, there is a 75-inch television running the day’s sports. “That was the idea – to make it an offshoot, keep it in the same family, have the same great beer, the same great people who work there, but make it a little closer to home for the Southside people,” he said.

The entire space is a little less than 1300 square feet, only slightly smaller than their downtown taproom. It has 16 taps of mostly Swan beer with a few guest appearances and ciders. In fact, the southside location is licensed as a cidery – a new venture for the brewery. They plan to make small batch ciders and potentially meads by the beginning of the summer.

THE BUSINESS OF BEER Thumberg walked us through how they conceptualize flavors, stories behind their most beloved beers, and some that never made it past a pilot batch.

Thumberg said that he and Hood approached this location differently from their flagship. With their downtown location, they had more freedom to mold the space into what they wanted. Swan South is in a strip plaza built in the 1970s – there wasn’t much that could be done structurally. But that’s not what they were looking to do anyway.

“We do a lot of research,” he smiled. “Which means we drink a lot of beer.” The Swan team tries to “keep with the zeitgeist of the day” and understand which direction beer is headed in, according to Thumberg. The Swan guys consider themselves traditionalists. “We love drinking traditional beer styles but we like to play in that arena as well. If there’s something we can do to tweak that traditional style to make it more interesting or maybe something nobody’s had before, we’re all about it,” he said.

“We wanted to make it the neighborhood bar – we wanted to make it the “Cheers,” said Thumberg of the new taproom. “We wanted to branch out from the downtown location and bring Swan to some of the people that might not be able to experience it, but once a month, when they make it downtown to go out with the family. [...] We wanted to create another neighborhood place for them to go.” havenmagazines.com

“We will usually start with a traditional style and say ‘What can we do to this to take it to the next level without going too crazy?’” 18


beer styles. Thumberg was working on a pilot batch of what was supposed to be an English brown ale. His business partner decided to play a little prank on him by swiping some of his malts. After fermenting for a month, the beer turned out weak and watery. They decided there would be no harm in experimenting with the hazelnut flavoring samples that Amoretti Flavoring Company had brought them.

Ideas are tossed around until they’ve found something they think just might work. “We’ve got a computer that will show us if our head is in the right direction for the kind of beer we want to make,” he said. This program gives them insights into factors like hoppiness, flavor profile, color, etc. “If we know that it’s going to be a good beer – we’ll go ahead and jump right into production with it. We’ll make a full ten-barrel batch of it,” he said. That’s a commitment of over 300 gallons of that beer.

“We put it on the wall for friends and family to try and I don’t think that beer lasted a day,” he said. The beer was tweaked to bring the alcohol volume back up and to use the right malt bill. It remains one of Swan’s best-selling brews – Downtown (Hazelnut) Brown.

If they aren’t quite sure, they will put it on the pilot system of about 50 gallons.

Another Lakeland love and my personal favorite is The Bean, a coconut and coffee blonde. “We knew that we wanted to have a beer that tied to the community as locally as possible,” said Thumberg. The beans they use are from Ethos Coffee, a Lakelandbased craft roastery focused on ethically sourced coffee. Swan uses Ethos’ Poaquil which comes from a women-led cooperative in Guatemala called “Cooperativa La Asuncion.”

One beer that didn’t make the cut beyond a pilot batch was a blood orange IPA. Sounds tasty, right? Not only did the hops hide the sweetness of the blood orange, Thumberg said, “Some of the pithiness from the blood orange itself lent to a little bit of extra bitterness. It wasn’t where we wanted it.” It was drinkable, but it wasn’t Swan Brewing quality.

Not only was Swan sold on the coffee’s ethical origins, but the flavor complements their beer. Thumberg said, “The way that it plays in the beer is magical. The way that we introduce it, you don’t get a whole lot of the coffee notes, you get more of the chocolate notes that come through. You combine that with the coconut and it’s almost like a Mounds Bar.”

If it makes it past the pilot, on to the beer wall it goes for customer feedback. They ask patrons if they like it, if there’s anything they would change, and size it up against their veteran brews. “We’ll go through different iterations until we hit a style that we think is going to work,” said Thumberg. One popular beer was born out of a prank and a hazelnut sample. Before they opened Swan, the team was working on different

said, “It’s an IPA, but instead of using ale yeast, we use the lager yeast. IPAs are normally a bit heavier, fuller-bodied, it can be a bit heavy to drink sometimes. Lagers traditionally are crisp, clean, light in body, easy to drink. We put the two together. We have a nice easy drinking, light-bodied, hoppy in-your-face lager that’s 6.8%.”

A staple beer they’ve tweaked subtly to achieve fandom is their Straight Outta Lakeland IPA. It is not only on its way to the number one spot in the taproom but in distribution as well. Thumberg explained that when other breweries duck, they weave. “Most breweries nowadays are moving towards the east coast style IPA or New England IPA which is very hazy with tropical notes – pineapple, orange, mango.” He isn’t a fan. “We decided not to do that. We decided to stay more traditional and do a west coast style IPA – Lagunitas IPA, Sierra Nevada, some of the cool old-school IPA’s that we grew up drinking in the early to mid-2000s.”

MORE GROWTH FOR THE BREWERY The last two years and the Lakeland community have been good to Swan. So good, that even immediately after opening their second location, the brewery has its eyes set on more growth to accommodate demand in the taproom and from bars and restaurants that want to carry Swan beer. Thumberg says this growth will either surface as another neighborhood taproom or as a second production facility to increase their production and offset that demand.

“What we’re seeing and what I’m most happy about is the return of the lager. The good old fashioned Czech Pils, German Pils, American-style lager, whatever name you want to put on it,” said Thumberg. “That beer is so incredibly difficult to make and so easy to screw up.” It’s like going to a restaurant and ordering an omelet, he said. “You can tell how good a chef is by how their omelet comes out. It’s the same thing with lager.”

In the meantime, if you’re looking for somewhere to party on St. Patrick’s Day, Swan’s got you covered. What’s on the St. Patty’s Day docket for the brewery? Live music, food from Salt & Fire Food Lab and green beer – ya dig? “We’ll be partying all weekend for St. Patty’s Day,” said Thumberg. “Green beer, corned beef, and cabbage, man.”

Swan has several lagers on tap. A 4% American light lager they call #Freedom was made for the drinking buds of craft beer enthusiasts who might not share their same love of craft beer. “We made #Freedom for those guys, so they could come in with their buddies and everyone could have a great time,” he said.

Thumberg was exceptionally proud of Swan’s German-style Pilsner, Poke County Pils. He described it as a hoppier beer with more body that leads with a crisp, clean taste. “I think that is probably the best example of a Pils that I’ve seen, at least in the state of Florida,” he said.

The Life and Legacy of Betsye Kay Finch Described as radiant, encouraging, one-of-a-kind, Betsye Kay Finch left an impression on everyone she met. Perhaps most important were the impressions made on her thousands of dance students over her three decades of teaching dance in Lakeland. Now, her daughter, Alexis Rocker is carrying on her legacy by providing an opportunity for young people who share her mother’s love of the performing arts. Born in Fort Meade in October 1926, Betsye started dancing at just four years old. She grew up in Lakeland, where her mother, Gertrude Kay, would drive her to Tampa to study dance. “Some people are gifted with knowing what they want to do when they grow up,” said Alexis. “My mother knew.” At 16-years old, a smart and determined Betsye Kay Finch graduated from Lakeland High School and moved to New York City to further study dance and drama at the Feagin School of Dramatic Art. Though the move would seem bold to most, Betsye was comfortable in the warmth and glimmer of the New York lights. Alex J. Kay, Betyse’s father hailed from Philadelphia. Every summer, she and her brothers would drive to Philadelphia to visit their relatives before moving on to Atlantic City and New York City. “Had it not been for those summers visiting in Philadelphia, Atlantic City, and New York City, she probably would have been a bit intimidated and not gone to New York to study. But she knew that’s where she wanted to be,” said Alexis. The Rehearsal Club, where Betsye lived, was within walking distance of NBC Studios and Radio City Music Hall. The born dancer tried out and made it as a Radio City Rockette. The demanding schedule of upwards of six shows a day led her to step away from the chorus line and focus on her academics, drama, and dance. “She took tap lessons from Ziegfeld Follies choreographer Ned Wayburn and from Bill “Bojangles” Robinson,” said daughter, Alexis. And by the time she left the Big Apple, “She held four coveted union cards: Actors’ Equity, the American Guild of Variety Artists, SAG, and American Federation of TV and Radio Artists.”

TEACHING TAP AND OTHER INVALUABLE LESSONS In 1949, the former Rockette moved back to Lakeland for marriage and family. This would not be the end of the line for Betyse’s illustrious dance career. In 1951, she founded Betsye Kay’s School of Dance in Lakeland. Two former students of Betyse’s, Nancy Cook Fisher and Leah Bellotto Lauderdale remember tapping along with their teacher with fondness.

The three women also mentioned fellow former dance student, Kay Ruthven Hagan who went on to serve in the North Carolina and United States Senate. “She was a big fan of my mother’s and vice versa,” said Alexis.

“When I was four, I told Mother that I wanted to take dance. I remember looking at this book and it showed somebody on half-toe in a ballet shoe and somebody on pointe,” said Nancy. “I looked at this book for a whole year waiting to go to ballet school.”

“Kay was a beautiful dancer. […] She was a brilliant person in many ways,” said Nancy. “She carried her poise into college and her political life.”

Nancy continued, “I was so excited when I walked into Betsye’s studio. There was this woman with this fabulous smile and she welcomed me.”

“All of this influence on these young women has carried over into their adult lives,” said Betyse’s daughter.

Leah described Betsye Kay’s personality as vivacious. “You knew when Betsye Kay was in the room,” she said. “She also had this heightened sense of encouragement, professionalism, and versatility.” Betsye was teaching not only four, five, and six-year-olds, but high school students as well. “She also spoke to who you were,” said Leah. She and her two sisters grew up on a cattle ranch. Betsye would choreograph little cowboy numbers with ballet and tap incorporated just for the three sisters, complete with cowboy boots and getup. “Betsye Kay brought the arts to life,” she said.

Throughout her life, Betsye continued to choreograph and take the stage for the likes of Theatre Winter Haven, Lakeland Little Theatre (now Lakeland Community Theatre), Mark I & II Dinner Theatres, and others. She was instrumental in helping to raise funds to restore the Polk Theatre. She was chairman of the 60th-anniversary 1988 production, “Heavenly Daze!” that helped raise funds for the restoration of the landmark theater. A lover of the arts, Betsye was an early champion of the Polk Museum of Art as well.

Betsye’s daughter Alexis took dance with her too. Around 12-years-old, she told her mother that she didn’t think she was cut out for dance. “She looked at me […] and she said to me very dramatically and sweetly, ‘I’m glad that you finally came to realize this.’’’ The humorous moment was a testament to Betyse’s candor as well as an illustration of her grace as a teacher and mother. “What was so marvelous about my mother is that she had me come to that conclusion on my own. It wasn’t forced upon me,” said Alexis.

Her creativity surpassed dance, Betsye also hosted a weekly radio program, “Borrowed and Blue,” on WONN and wrote a weekly column for The Ledger about social happenings around the city called “In Lakeland’s Mirror.” Later in life, Betsye was involved at her church, All Saints’ Episcopal Church, as well as substitute-taught at Oscar J. Pope Elementary and Jesse Keen Elementary School after she retired from dance study. “In essence, Mother was always teaching,” said Alexis.

The influence of their dance teacher went beyond the walls of the unairconditioned Lakeland dance studio. Nancy continued to dance into her fifties. “The joy of dance did not leave me because she so influenced my life,” she said.

As a firm believer in education, Betsye saw to it that her children were well educated and cultured by the world. Alexis remembers traveling to New York City with her mother at the age of five. Betsye continued her dance studies while a caretaker would accompany Alexis to Central Park Zoo and Broadway matinees. Betsye took Alexis and her brother, Al Finch across the world and back – Paris, Milan, Peru. “My mother’s comment was, ‘Travel is educational.’ And indeed, it was.”

Teamwork, poise, and presence before an audience were only a few of the lessons imparted on Leah by Betsye Kay.

AN NYC CELEBRATION FOR THE DANCER

“I knew right away when my mother passed that I wanted to form a foundation in her honor to continue to help other young people who might not be as fortunate as she was, to have the help that she had to get to New York to study,” said Alexis. “Why not perpetuate in her name, to be able to help other young people go forward to study and pursue their dreams. It is to keep her memory alive. She was adamant about education – helping young people become successful in whatever they did in life.”

Betsye Kay Finch passed away on March 3, 2019. On October 25, at Sardi’s, the iconic Broadway restaurant, family, friends, former students, and colleagues gathered to remember the talented dancer and teacher. It would have been her 93rd birthday. The day was celebratory and emotional for Alexis. “To think all of these people traveled such distances to celebrate her and honor her life – it spoke so highly of my mom,” she said.

The scholarship will be awarded amongst the five Lakeland area high schools to deserving graduating seniors pursuing post-secondary education in dance or musical theatre. This will include scholarships toward theatrical institutions and dance academies. “Not every creative soul chooses to go the academic route. We didn’t want to narrow it to only college or university,” said Alexis.

Lakeland native Lindsey Alley shared memories with Betsye. One of which involved the two aboard a plane bound for LaGuardia Airport that had to make an emergency landing. “When the plane eventually landed, on foam and to throngs of emergency trucks, Miss Betsye was giggling as she slid down the emergency chute. I’ll never forget that moment or her joyous zest for life,” recounted Alley. In attendance was famed composer of the Broadway musical, Annie, Charles Strouse whom Betsye met while attending the musical, Bring Back Birdie to see former student Rebecca Renfroe-Borneman. Alexis was overjoyed Strouse came to the celebration. “He appreciated the fact that she made such an impact on her community with dance,” said Alexis.

Alexis Rocker and six other people who knew Betsye Kay personally are on the board, including Leah Bellotto Lauderdale. Nancy Cook Fisher and Rebecca Renfroe-Borneman are advisors to the Board. The Betsye Kay Finch Performing Arts Foundation will be working with the Polk Education Foundation to receive applicants. The first scholarships will be awarded later this spring and they plan to have their first fundraiser in September. “She was such an influence on my life and continued to be until the day she died,” said Nancy of Betsye Kay. “That woman was just a ray of sunshine.”

Renfroe-Borneman who was also a guest at the October 25 luncheon, penned and sung a song entitled “Dancing in the Tune” for her childhood dance teacher. In the last stanza of the song, Rebecca belts:

Betsye Kay Finch was a one-in-a-million person, a dazzling performer with an electric Broadway smile, kind eyes, and a light that shone bright enough to illuminate all who encountered her. If even one of the students who receive a scholarship from her foundation go on to do a fraction of what Betsye did in her lifetime, imagine how the community could be uplifted and enriched. Alexis said of her mother, “She’s still helping young people from Heaven.”

Punk Rock Flea Vol. Tres! “It’s for everyone,” Chastain said of the market. Even if your family doesn’t have a Punk Rock mom, dad, and 2.5 Punk Rock kids. “This is for that one person in every family to be able to comfortably share the positives of Punk Rock with everyone.” Lakeland Punk Rock Flea is pet and kidfriendly. Activities for kids include DIY buttons, patches, and zines, as well as a rock wall and more. Jimmy’s Famous Seafood Express will be onsite. Chad says, “Their shrimp tacos are ridiculous.” Serving up some tasty vegan fare is Nah Dogs Vegan Hot Dog Cart out of St. Pete. Blue Dog Craft Barbecue will be there too with all the good stuff. “They are the best barbecue in Central Florida, if not further,” said Chad. Tikiz Shaved Ice will be there to cool you down and Sprinkleista Bakery will bring the sweets.

It’s been one year since Chad Chastain, self-described event promoter/ stupid punk kid/ table tennis semi-pro/ sh!tty drummer started the Lakeland Punk Rock Flea Market at Swan Brewing. The idea was an amalgamation of his love of the Punk scene counterculture and his wife, Ellen’s love of art. The party starts at Lakeland Punk Rock Flea Market Volume 3 on Sunday, March 29. Chastain was disappointed in the lackluster Punk scene when he moved to Florida from Arkansas. “In Lakeland, the scene had gotten really boring,” he said. He had never stopped listening to the same music he had enjoyed in the 80s and 90s and wanted to share that with his kids and with the community. Chad knows how to throw a good party. So, he decided to combine Punk music and culture with unique vendors selling everything from art, clothing, jewelry, skateboards, records, and more. He wanted everyone to come together for a good time, no mosh pit necessary.

Oh, and of course, lots of beer.

IT’S ALL ABOUT THE MUSIC, MAN

A modest 250 people were expected to attend the first event. He and Dan Thumberg with Swan Brewing were blown away when 1000 – 1500 folks showed up. “That first one was absolute insanity, it reminded me of our grand opening here,” said Thumberg. Chastain doubled the size of the market and Lakeland PRF Volume 2 brought in 2500. Volume 1 was one of the five best business days Swan has ever had, and Vol. 2 shattered that.

Chastain says PRF Vol. 3 will be generally the same, but better. He is leaning heavily into the music this goaround. “The lineup of bands that we have is just getting better and better,” he said. Returning for Volume 3 is ButchQueen and the Bad Habits. “Everything they do is perfect for the event. They’re so fun,” said Chastain. Another local favorite, Bully for You will take the stage to reconnect with their Punk kid roots. Instrumental surf Punk band from Tampa, Black Valley Moon will also shred at the market. The band features Sam Williams on guitar who also plays with Punk royalty Down By Law. “[Down By Law] was featured on the first PUNK-O-RAMA compilation CD, which was a lot of kids’ first Punk album, ever!” said Chad. The PRF founder described Wolf-Face as a “straight forward Punk band,” playing in werewolf masks and The Beavers basketball uniforms from Teen Wolf. Rounding out the band line-up is Suck Brick Kid from

Chastain dates the Punk scene back to 1975. “It was always an underground thing until Green Day, Dookie,” he said. Green Day dropped their Dookie album twentysix years ago. In honor of that, Chastain opted for the album’s cover art as inspiration for the PRF Vol. 3 posters. The artwork, depicting a PRF cartoon explosion in a busy Lakeland backdrop complete with Space Ghost, ButchQueen, Chad, Dan, Glenn Danzig, Henry Rollins, and other characters was the creation of designer and illustrator Megan Montrose (@montrosedesignstudio).

Art Night with the Lakeland Magic The Lakeland Magic, the NBA G League affiliate of the Orlando Magic will be tipping-off against the Grand Rapids Drive, the NBA G League affiliate of the Detroit Pistons on March 14, 2020. Before the game, basketball fans and art aficionados can enjoy an art show that has been nearly a year in the works. The event was the idea of Ticket Sales Associate for the Lakeland Magic, Weston Riddle. “I’m very passionate about sports as well as the arts,” said Weston. He grew up painting with his grandmother when he got out of school and on days off. This time spent with his grandmother spurred his interest in the arts which continues today. Riddle began working with the Magic last season. Towards the end of last season, he got an idea, “What if we did something that combined two of my passions – art and basketball – and made one huge evening out of it?” He knew there must be others like him that enjoy Lakeland’s rich arts community who are also fans of a good basketball game. With an arts-appreciative team behind him and the help of Art Crawl Founder/President Ellen Chastain, the ball got rolling on Art Night. The Lakeland Magic announced this art night theme at a preview event back in June where they announced plans for a mural and jersey design contest as well.

The ‘LKLD’ mural designed by the Lakeland Magic and completed by local artist, Gillian Fazio, was unveiled last September at the RP Funding Center as part of the project mixing the arts and basketball. The mural “is inspired by community pride serving as a destination for both locals and those visiting our city,” reads an article released by the Lakeland Magic. “We thought it would be a great idea to make our stamp, show that we are very passionate about the arts, and have a nice little beacon for the arena here,” said Riddle. A jersey design contest was launched inviting local artists to design uniforms that were to be worn by Lakeland Magic players. The three contest finalists were Josh “Bump” Galletta, Daniel Dalhoff, and Alex Kirsch. Daniel Dalhoff ultimately won the contest. In partnership with the City of Lakeland, proceeds from the auctioned jerseys will be used to feed and take care of the swans on Lake Morton. Riddle met Ellen and Chad Chastain at a Haus Mrkt. “They both love basketball […] and are definitely passionate about the arts, so it was a perfect partnership,” said Riddle. “We are working in partnership with Ellen and talking to some of the schools to showcase student work at Art Night,” he said. On March 14, the doors will open early, at 5 pm. Arts will be the focus of the evening until tip-off as well as

throughout the game as attendees wish to walk around the arena. Riddle, Chastain, and the Lakeland Magic team are still in the process of solidifying artists, but Riddle estimates they will have 14 professional artists as well as student artists from some of the area schools. Artwork will be available for purchase throughout the evening. Riddle said, “I’m most looking forward to seeing not only the fans who are passionate about the arts learn more about the local art scene here in Lakeland and Polk County, but [also] the fan who loves sports, […] see different works and think ‘I need to buy this piece or go to the next art festival or the next Art Crawl.’” He says the Lakeland Magic are invested in the arts and hope to continue hosting events that incorporate art and basketball. Delivering exquisite cookies out of a Honda Civic. That’s how DOU Bakehouse owners Diana Cortes Blanquicet and David Hernandez got started. The DOU team has since outgrown that Honda Civic for a spacious commercial kitchen producing ten thousand cookies and pastries every week.

Diana started making cookies and cakes back home before bringing her culinary aptitude to Florida six years ago. Friends here began asking for her treats. One person said they worked for a café and needed chocolate chip cookies – 1,200 a week to be exact.

Diana is originally from Colombia. “Back home I went to school for international business administration. Within a year I found that it was too boring for me to sit down in an office,” she said. While taking time to decide what she wanted to do with her life, she took up a hobby – a cooking class. “It wasn’t really a career that I was looking for, but time went by so fast that I said, ‘This is what I want to do for the rest of my life – be happy cooking.’”

The baker was confident in her culinary abilities, but working out of their house, Diana and David didn’t have the capacity to make such large quantities. This company required her to have a commercial kitchen and registered business, two things she didn’t have at the moment. She couldn’t take the contract.

She traveled to Argentina in pursuit of a professional culinary education. This is where she was introduced to baking. “That was the hardest class. I failed the first pastry course. I love to eat sweet things and I had to learn over and over and try and

She went on to attend Valencia College in Orlando for pastry to hone her craft. She learned they had a commissary kitchen that could be rented out by the hour. A year had passed and the same company approached Diana. By this time she had registered her business, DOU Bakehouse. “I started making cookies out of that kitchen. It was my husband and me, and we started delivering in a Honda Civic,” she said. “It looked like a clown car,” she smiled, “with cookies all over. That’s how we started selling to Joffrey’s Coffee.” The DOU Bakehouse couple continued to grow, making cookies by hand, working like mad, sometimes twenty hours a day until they could hire their first employee. Joffrey’s asked if they could also make muffins. Of course! Again, they worked by hand, twenty hours a day, until they could purchase a machine that would expedite the process. The operation has continued to flourish. The pastry chef attributes DOU’s growth and continued success to their attention to detail and consistency. Diana was trained and mentored by German pastry chef, Stefan Riemer. - CONTINUED ON PAGE 34 -

“Anytime I messed something up I would send him the picture and he would tell me what I did wrong and then teach me how to do it. He taught me, for example, to be very precise in my recipes,” she said. She types up all of her recipes to be displayed for her team in a detailed, easy to comprehend format. “Everything is color-coded. I tell them exactly how long and at what speed to mix things, so we have the same results every time,” she said. “If I send one cookie or one thousand cookies, all of them look exactly the same, every time.”

If you don’t have a house or you have a criminal past, then it’s almost impossible for you to get a job,” she said. “I met Tammy when she was in a program where she was coming back into society,” she said of one of her employees. “I told her, ‘I don’t care what you did before. I’m just interested in what you’re doing today and tomorrow.’”

A SECRET INGREDIENT

DOU employee, Tammy Blake started out living in her car and now has her own house and dog. “She’s brought more friends over,” said Diana. As they continue to grow and need more shifts, more people are being given the hand up that they so desperately need in the form of a steady job doing meaningful work.

In a private commercial kitchen off of Massachusetts Avenue in Lakeland, Diana and her team make confections like fancifully decorated sugar cookies and French macarons to chocolate chip cookies, croissants, petit gateau, which are small mousse cakes with a glossy Glaçage on top, muffins, and more. Diana said that everything she makes for her largest wholesale client is “fun and very magical.”

CURIOUS CREATIVITY AND CATS We walked to the area of her kitchen where the team sheet out cookies, decorate, and what Diana calls her lab. “If I have a new project, I come here to my lab, play my music and I start creating new recipes,” she explained. And inspiration can come from the most unusual sources. She spoke about a project in which she needed to design an animal-inspired cookie. Diana found inspiration for the texture of the animal’s fur while eating a bowl of her favorite cereal.

The kitchen is alive, electric with the DOU team working diligently to catchy music amidst the sugary aroma of not yet frosted French macarons. “The music part is very important, that’s our secret ingredient,” she smiled. The night shift loves to rock out to Metallica and the morning crew loves Latin music. “I think that changes everything. […] I think the energy you put into the product really shows.” Diana introduced us to her ovens – Optimus Prime and Bumblebee. Even the large candy apple red mixer has its own personality, Iron Man. The idea behind naming the equipment is that it too is part of the team and should be treated with care as such.

Outside of business hours, Diana joked that she is a crazy cat lady with her three cats, Gigi, Nala, and Chai. She also loves to travel and read though it can be hard to find time for those things. Diana says she is thankful that her husband works at the bakehouse with her, handling the logistics and technology, because office hours often extend from 8 am to 8 pm on any given day. “Sometimes it’s hard for me to find that balance to disconnect from being a business owner,” she said. “Sometimes I dream I’m here.”

GIVING THEM A CHANCE The DOU team is now 15 members strong from a delivery driver to dishwashers. Some of their team began as homeless

BAKING PEOPLE SMILE The first and only retail spot currently featuring cookie magic from DOU is the Winter Haven Farmers Market on Saturdays. DOU will announce on their social media which Saturday’s they will be attending the market. Her goal is to continue building upon their wholesale foundation and to one day open a retail brick and mortar of their own where people can enjoy their desserts and a cup of coffee. An online retail shop is currently in the works. From the first sweet smell to the last bite, it’s clear that Diana and her team bake love into all they make. The DOU owner says her absolute favorite part of baking is, “When I see someone eat my cookie. That’s why I like to go to the farmer’s market myself because I usually don’t get the chance to see people eating my product.” The reactions and faces people make when they are truly enjoying something Diana put her heart and soul into, fulfills her. DOU ships thousands of cookies out each week to wholesale clients but don’t often get to see the thousands of smiles their treats put across faces. “If you think about it – the products that I make and that you’re eating are the closest that I can be to you,” said DOU Bakehouse owner, Diana Cortes Blanquicet. “You’re putting the product in your body, you’re nourishing your body, or just having fun eating something. The Florida Brewery Runs on Girl Power Seven hundred and fifty bottles per minute shoot down a production line outside a large window in Julie Williams’s office. One thousand cases worth of beverages will expeditiously clink down the line during the hour we talk with chief operating officer Julie Williams and chief financial officer Stacey Oakley of The Florida Brewery. These two ladies are kind of a big deal. Together, they operate the largest women-run brewery in the United States.

like Winn Dixie and Albertsons. Their own craft line didn’t take off. TFB’s Gator Lager gained some traction making it as far north as Michigan but did not last against other large beer distributors. In 2009, Venezuelan industrial conglomerate Empresas Polar purchased the brewing company. Today The Florida Brewery produces over 110,000 barrels of product per year. They distribute their craft beers from Miami to Orlando. TFB also produces Malta, a barley-based carbonated sweet beverage. “We are the largest co-packer for [malta] in the southeast,” said Oakley. They produce the sweet beverage for Publix, Goya, and Bacardi along with other private label brands. In addition to beer and malta, they produce nonalcoholic Ginger Beer and Blood Orange Ginger Beer for Powell & Mahoney, a company that distributes to Target and Starbucks.

A HISTORY OF THE BREWERY The Florida Brewery (TFB) was originally founded as Duncan Brewing Company by an Ohio brewmaster in 1973. Duncan chose Auburndale as the ideal spot for a brewing facility for its quality of water and community support. He railroaded a gargantuan copper kettle down from Dayton and began brewing in the outskirts of Auburndale. The brewery has changed hands several times throughout its history but has remained continuously operational.

Polar is their biggest beer distributed internationally, shipping to over 20 countries and throughout the U.S. The brewing company has a 40,000 square foot warehouse shipping between 8 and 10 truckloads a day. On any given day, TFB produces between 8,000 and 13,000 cases of product.

In 1983 it was renamed The Florida Brewery. Also during the 80s, the Duncans released a line of craft beers along with brewing and packaging generic store brand beers for stores

“I went to the lab and I learned about the chemistry of the beer,” she said. “Making beer is a lot more complicated than people think and you have to be on time. Especially if you want to keep the quality and consistency of the beer.” She continued to learn more about the technical side of brewing and worked her way up to Lab Quality Manager.

Julie Williams was a CPA by trade with her own accounting outsourcing firm. In 2007, the owners of the brewery before Polar’s proprietorship became one of her clients. When Polar took ownership, they asked Williams to come aboard to run the brewery. She passed the accounting business to her husband and has overseen brewery operations since 2010. Williams was the first female plant manager Empresas Polar had ever hired.

In 2016, Williams and Oakley offered Velasquez the opportunity to travel to Germany for a year to be trained as a Certified Brewmaster. She accepted the offer without hesitation. The experience is one that sticks with her. “I not only learned about beer, which was the main part, I learned about other cultures and how the beer culture is different,” she said.

Stacey Oakley comes from the finance side of the hospitality industry. She was the CFO for a Nantucket yacht club for six years. Looking to escape the frigid northeast winters, she and her husband, Matt Oakley moved to Auburndale, Florida where Stacey’s brother lived.

NEW BEGINNINGS FOR THE BREWING COMPANY

Oakley worked as a senior financial analyst for a resort outside of Disney. When a position came up with The Florida Brewery, she was interested. She met with Williams and remembers thinking, “I don’t care what I end up doing or what [the job] is, but I want to be there.” She and Williams clicked and have been successfully growing the brewery since. That was six years ago. “We are now the largest women-run brewery in the U.S.,” according to Oakley. Shortly after taking ownership of the brewery, Polar gave the two women the opportunity to run it independently. Williams became the COO and Oakley took on the role of CFO.

When Empresas Polar allowed them to run The Florida Brewery independently two years ago, Williams and Oakley knew it needed a complete change. A brand remodel commenced with new logos, beer research and development, and strategy. What better beer to debut their company facelift with than a vintage favorite, Gator Lager. The original formula wasn’t available, so they devised their own recipe. The 1980s Gator Lager has a phrase on the label: “A Taste of the Florida Lifestyle.” This embodied everything Williams and Oakley wanted TFB to be. “A Taste of the Florida Lifestyle” is now the company mantra and the essence of every beer they create. When creating a beer, they try to imagine where someone would be drinking their beer in Florida and what kind of memory they would be creating around it. Oakley likened it to a song. “Music always brings you to a place and time and our beer, we want to be the same,” she said.

Completing the female beer boss trifecta is their brewmaster, Daniella Velasquez. Velasquez is from Venezuela. She attended school at UCF and came to the brewery as an intern. “I’ve always known I wanted to be an engineer. I love processes,” she said. “I fell in love with brewing when I started working here.” Daniella started as a maintenance intern at the brewery. A couple of months in, the remodel of the brewhouse began and she was moved to quality.

Williams and Oakley, of course, wanted to continue to perfect and grow the manufacturing aspect of The Florida Brewery but wanted to draw people not only to their brands but to come together. Construction began to convert part of the facility into a public tasting room and hangout spot. “The main thing we wanted to do was provide a place for the community to come,” said Williams. Auburndale is a small, tight-knit community where everyone knows everyone, but it needed a central gathering space and The Florida Brewery was going to give them one. On January 19, 2019, The Florida Brewery opened its doors to the public with a Tasting Room, Public House, and Beer Garden. A few months ago they celebrated their one-year anniversary.

Graffiti art murals are tagged across different surfaces. The brewery gave graffiti artist, Hiero Veiga, free reign to create with only one request – that he include a gator. He did, along with a polar bear in honor of Polar, and a detailed mural of Stacey Oakley’s hand pouring a beer from the tap. A roomy wooden pole barn, “The Public House,” covers part of the exterior lounge area. An immense copper kettle overlooks the seating area as an art fixture. The kettle is the same one Duncan had railroaded down from Dayton, Ohio in the 1970s. It was still being used to brew at the facility as recently as 2013. The copper kettle is the inspiration behind the Crave & Copper by The Florida Brewery’s name and decor. The plan is to epoxy the top of the kettle to convert it to a functioning bar top.

The public space was built around a house that sits in the middle of the facility. The house belonged to the Duncans who lived on the property. The following owners also occupied the house until Polar bought the brewery in 2009. “It was a normal, functioning house around this big plant,” said Williams.

The Tasting Room was constructed from the mother-in-law side of the original home. The space still feels a lot like a comfy living room. All of the rooms that were previously used as offices and before that, bedrooms and closets, have been turned into storage and retail space.

“The Beer Garden used to be their backyard,” she added. The former owner’s grandkids would come and play out in the yard. The outside space was completely reimagined with a deck, painted lake backdrop, and a row of colorful Adirondack chairs. Cheery beachy-hue umbrellas cover a row of picnic tables and lush plant life brightens up the Beer Garden. “We wanted to take people out of being in industrial Auburndale to being in an oasis away from everything,” said Oakley.

The space has sayings and signs across the walls. “We didn’t realize we were making memories. We just knew we were having fun,” read one sign. That’s how they want patrons to feel, said Oakley. Another sign, appropriate for the femaleoperated brewery, hangs outside of the restrooms. “Men left. Women are always right.”

else. They wore name badges that read, ‘I brew it all,’ ‘I run it all,’ and ‘I sell it all.’ Williams smiled saying they got quite the reaction and high-fives when attendees realized they weren’t just serving for the brewery – they were the brewery.

As women in a predominantly male industry, Oakley and Williams have a unique perspective on running a brewing company. First and foremost, their 48 employees, whom they call family, mean the most to them. Their employee retention speaks volumes for their dedication to being a family-first company. Their longest-running employee is the filler operator who has been at the brewery for 30 years, and a lab tech of over 20 years.

Even their approach to contract brewing has a feminine touch. The women say their level of trust, attention to detail, and even the office décor make all the difference when meeting with clients. They don’t look at their position as female brewery operators as a hindrance. They say it has been a help in everything from distribution to relationship building with clients. “It’s been a huge benefit for us,” said Oakley. “We bring a lot to the table when we come.”

“I think we tend to have that ability to create a family and a place where people enjoy working. […] Where they feel like they’re not just an employee who comes in, runs their machine, and goes home,” said Williams. Oakley added that it is one thing to say they are a family-first company and another to understand that someone may need to stay home with a sick child or leave early for a doctor’s appointment or have to rush to a family emergency.

Female brewmasters are also in the minority, but Valasquez said, “I like to be a female in a world of guys [...] It’s an open community.” “Equality in this business, at least between brewmasters, is something normal,” she said. “I do exactly the same thing, I work as hard as them, and they understand that.”

Two years ago, The Florida Brewery signed up to attend the Great American Beer Festival in Colorado. They signed up for the ‘Meet the Brewers’ section. “We were the only female booth there, out of 800 breweries,” said Oakley. It was a threeday festival with thousands of people sampling one-ounce pours of their beer. To best represent their “Taste of the Florida Lifestyle,” they brought Amber, Beach Me Up, and Gator Lager. On day three, TFB kicked their kegs before anyone

Getting the Deets on Bartow’ s New Microbrewery Extra, extra, read all about it – Bartow beer lovers rejoice! The city’s first microbrewery, Front Page Brewing Company, is set to open this month. The craft brew culture in Polk County is ever-growing and we are not complaining. We sent Front Page owner, Johnnie Levin (JL) a few questions to get more acquainted with the brewery. Of course, once they open you will catch the LKLD team at the Front Page taproom – you know, for journalistic research purposes. LKLD: Tell us a little bit about yourself. Are you from Bartow? How did you get into the business of brewing? JL: My husband Bill, and I do live in Bartow. We’ve been here for about 10 years and absolutely consider Bartow our home. After semi-retiring from a corporate career, I was looking for what to do with the next chapter of my life. It sounds cliché, but as a lifelong fan of craft beer, it was worth seeing if getting involved in the craft beer industry was an option. I completed the University of South Florida-St Pete Brewing Arts Certification Program and almost immediately after beginning the program, I knew it was where I wanted to be. From there, the concept of opening Bartow’s first-ever microbrewery started to come to life and we’ve never looked back. LKLD: Tell us about the Front Page concept. Will there be a tasting room or will you just be producing and distributing? JL: Front Page Brewing Company brews our own beer and initially we are selling it only in our taproom. Avenues for distribution will be explored at a later date. We will also have rotating guest taps to help showcase other great craft breweries and cideries.

LKLD: Why the name Front Page?

LKLD: What will your initial beers be?

JL: It never ceases to amaze me how many people have a connection with this building because of The Polk County Democrat newspaper. They, or a family member, worked in the building, delivered newspapers, came inside to renew their subscription or take out an advertisement. We wanted to recognize and honor the deep connection the building has with the community. Our logo, with the dog holding the paper, helps bridge that connection with something we are personally passionate about – supporting and advocating for animal welfare.

JL: At the time of writing this, we have not yet completely dialed in our line up; however, we are not going to focus on a particular style, but rather try to have a wide variety and continually bring new styles or variations on those styles to the taproom. Brewing craft beer is truly an art form. Brewers are passionate about their craft and love to experiment and explore all of the different ways beer can be made. We are also listening to what our customers want and hope we can not only give them great quality beers in the styles they know and love, but also introduce them to ones they may not have had before.

LKLD: How big is the space? What will your brewing capacity be?

LKLD: Tell us a little bit about your brewmaster and the rest of the FPB team.

JL: The building itself, with the small addition we made, is now 7,600 square feet. Of that, the taproom takes up over 3,200 sq ft. In our brewhouse, we have a 10 bbl (barrel) brewing system and a 1 bbl pilot system. In addition, we have a front patio and rear green space for our patrons to enjoy their beverages.

JL: Our Head Brewer, Scott Douglas, came to us with a brewing background that started in Bradenton, FL, at 3 Keys Brewing. His career later took him out to Odell Brewing Co in Colorado. When Scott decided to come home to Florida, it happened to coincide with our search for a brewer and, as they say, the rest is history. The rest of our staff come from a variety of backgrounds, including breweries, and all of them have a passion for this industry and are super excited to serve up Scott’s brews.

LKLD: What will the interior of the space be like? What look or feel are you trying to achieve? JL: The interior definitely has an industrial look and feel to it, and yet it’s open and inviting. Large glass storefronts in the front and rear of the taproom allow lots of natural light in and two large windows allow patrons to see into the brewhouse.

LKLD: How long has this project been in the works? When do you expect to open? JL: We’ve been working on this project since really the start of me joining the USF-SP Brewing Arts Program, but the detailed planning and preparations started in mid-2018. In March 2019, we acquired our building and, after finalizing our architectural plans with The Lunz Group, we partnered with Springer Construction to start working on the extensive renovations in September 2019. In February 2020, the renovations were completed and we started preparing for our grand opening in early March.

LKLD: What do you hope this brewery brings to the Bartow community? JL: We want to be, first and foremost, Bartow’s (and surrounding areas) “local.” The idea of a “local” is one that the British have had for centuries – a brewery/pub in a town or village that is the destination for all of the locals to go enjoy their favorite beer and socialize with their friends and acquaintances. This concept is growing rapidly in the US, as breweries and taprooms are opening in not only neighborhoods of larger metropolitan cities, but also in the smallest of towns all over the country.
