For those of you wondering when the city of Lakeland will decide whether to offer broadband Internet through their miles of fiber-optic cable: You can keep wondering. After two workshops on a possible broadband utility last month, city commissioners generally agreed on three things: They need more info, they want to hear from the public, and the elephant in the room is whether private provider Spectrum will increase speeds and lower prices. Stay tuned.
A bar that doubles as an arcade for electronic games is being planned for the downtown building that also houses LkldLive. The owners of Cob & Pen joined a few other backers for this new-to-Lakeland concept. Rec Room would be family friendly before 9 p.m., and adults-only after that. Around the corner, local businessman Kevin Stringer plans to open a second Dissent Craft Brewing (the first is in St. Pete) in the Kentucky Avenue storefront that once housed half of La Carreta Mexican Restaurant.
A couple of new restaurants have been announced in neighborhoods between downtown and the Polk Parkway: Biscuits and Benedicts, serving breakfast and lunch, is coming to the South Florida Avenue spot in Dixieland that housed Nineteen61 before it moved downtown. At Oakbridge, the Azteca D’Oro Mexican restaurant chain is expanding to Lakeland. It will occupy the standalone building built for TooJays Deli and will compete with nearby TexMex chains Abuelo’s and Chili’s.
“Is Lakeland Florida’s next hip food city? It sure seems like it.” That was the headline when Tampa Bay Times Food and Lifestyle Editor Michelle Stark took a culinary tour of Lakeland. Her tour guide was Maggie Leach, kitchen director at the Catapult small-biz incubator, so the tour leans heavily on Catapult friends and alumni. Featured eateries include soon-to-open spots such as The Joinery food hall, Yard on Mass food truck park and Honeycomb Bread Bakers. Stark visited established restaurants including Cafe Zuppina, Black & Brew and Born & Bread Bakehouse.
When the massive Bonnet Springs Park opens west of downtown in 2021, visitors can expect a fine-dining restaurant, a family-friendly cafe, banquet hall and other food concessions. Park promoters plan to solicit bids from potential food vendors this month. Restaurant consultants KK&P will work alongside the vendor(s) to fine-tune the dining concepts inside the 180-acre urban respite. Plans include a destination restaurant intended to draw visitors from other Central Florida cities.

For once, viral photos from Lakeland showed something happy: a wedding engagement. Alexandra Darch and Dylan Smith, who met three years ago while working at the Oakbridge Publix, posed for the pictures at the store after plans for an outdoor shoot got rained out. Winter Haven photographer Jennifer Goodlet staged creative shots -- on shopping carts, near food displays and behind refrigerator glass, for example. They were first picked up by Florida news and social media sites, and ultimately went national.
Also getting national attention: a new exhibit at the Polk Museum of Art. Chadd Scott, who writes about the intersection of art and travel, wrote in Forbes that “American Impressionism Through the French Lens” proves “you shouldn’t have to live or travel in New York or Chicago to see the greatest art the world has ever produced.” The exhibit remains on display in the museum’s main galleries through Oct. 13. It explores the effects of French art of the late 19th Century on a younger generation of American artists, many of them with the means to study in Europe.
Here’s a story about some paintings without a happy ending: After Redemption Church moved into the building that previously housed St. David’s Episcopal Church, they wanted to let passersby on Edgewood Drive know they were welcoming to all. So they painted signs of welcome over four large murals that looked like stained glass and depicted biblical scenes. Local artist Rick Olivo, who spent around two months more than a dozen years ago creating the 9-by12-foot murals, was distraught when he heard and wants to find a way to protect other public art.
Last month we reported that Lakeland Regional Health had asked the city of Lakeland to forgo scheduled increases in the hospital’s lease payments for five years and that could lead to a property tax increase. Since then, city commissioners agreed to hold off on the increases but also said there would be no tax increase this year. Instead, they’re going to cut spending, including four to six salaries and delaying land purchases for a park in southwest Lakeland.
Sykes Enterprises Inc. is expanding its Lakeland customer-service call center and hiring an unspecified number of employees thought to be several hundred. Applications can be made in person at 1144 Griffin Road or at jobs.sykes.com. The Lakeland call center services three companies and recently added two more; one is in health care, and the other is a wellknown software company, a Sykes manager said.

Back in 1987, I saw the man of my dreams and he was so pun k. He wore super skinny jeans, a leather jacket with band pat ches sew n on and the same Jane’s Addiction shirt almost everyday. He played bass in a punk band called Haunting Souls and I went to every single one of his shows. One look at him and he stole my heart, I fell hard. I also loved the music, (favorite show was Bad Bra ins at St. Andrews Hall in ‘90) dressed in my own thr ift store find s and shaved one side of my head. We were a perfect match. We dated, and then I went off to art school. Was the love story over? Where is he now? He’s in the office behind me, I married him and he will always be my favorite punk rocker. Punk was born in the early 70s with groups like Iggy and the Sto oges, MC5 and the New York Dolls. The Ramones releas ed their self-titled album in 1976, which has been said to be the bluepr int for all punk music to follow. The movement spread to Bri tain with bands like the Sex Pistols, The Clash and Buzzcocks . With fast, aggressive beats and socially aware lyr ics, Genera tion Xers, full of teen angst found something to believe in. Nirvan a hit the mainstream in the early 90s and alo ng with Gre en Day a whole new generation was introduced.

LAKELAND PUNK ROCK FLEA MARKET VOLUME 2 After the huge success of the first Punk Rock Flea Market back in March of this year, there was no doubt there would be a second one. For one day, Swan Brewing will be immersed in Punk Rock, bigger and better than the first time. But what is it exactly? We sat down with the organizer, Chad Chastain to find out what to expect. First, a little about Chad. He was born in Atlanta and raised in a small, rural town surrounded by country music. He hated country music. When he was 13, his world opened up. While sitting in his mom’s Chevy Astro van in the parking lot of a Pizza Hut, he heard Green Day and Offspring for the first time.
“i felt like I finally heard something that spoke to me and for me.” Two years later, his parents divorced and he ended up in the little town of Conway, AR. That’s where he really fell in love with the punk rock community explaining, “I started playing guitar, drums, and singing in any band that was around. After booking several shows, I created a website in the early days of the internet which I called ArkanSuck (www.angelfire.com/ar2/ arkanSuck) to serve as a resource page for the music community for the entire state of Arkansas. “It helped connect bands, venues, labels, and the scenes that didn’t know each other existed. It also enabled younger bands to play shows with more established touring bands.” What I liked most about it was that through that simple website, I was able to witness a tight, loving, supportive, underground music community flourish in a state that otherwise should have ignored it or shut it down.” At age 20, Chad was working at a Guitar Center in Little Rock, when he married his best friend, Ellen. They transferred with the company to Orlando to be closer to his older brother in Tampa who was seriously injured by a drunk driver. He continued, “Lakeland was never on the radar for us. We ended up here by accident through my job transfers and stayed thanks to the Polk Museum of Art hiring my wife 17 years ago. I think the smaller town charm just meshed more with our personalities.” Chad and Ellen have helped run other Lakeland events like Innoskate, Art Crawl and even the Children’s Art Tent at Mayfaire. They both share a love of celebrating art mixed with nostalgia. Two years ago, Chad was invited to fill in on drums with a Ramones cover band, Judi & The Outsiders, for what was both a punk show and a drag show. “I knew I would love the punk show, but honestly the idea of a drag show seemed awkward, until I saw how they both shared the same aspects of not being “normal” and for being generally frowned upon. That’s when the idea hit me to create an event that melded my love of punk rock and counter culture with my wife’s love of art... and really now that we’re both parents, getting to share that with my kids and friends is just icing on the cake,” Chad said. Punk Rock Flea Market comes in. For about eight years, Punk Rock Flea Markets have been popping up all over the country. Chad saw the potential with Lakeland being between Orlando and Tampa and now you can expect a PRFM to happen twice a year with plans to continue to evolve and grow. So what is the Punk Rock Flea Market? Chad explained it like this, “The short answer is a counter culture flea market... but the real long answer is an all day party for the entire family that celebrates our underground music and youth cultures from the late 70s through today for those of us who weren’t necessarily in the norm. Here you’ll find vendors from all over Florida selling tons of old records, band t-shirts, oddities, collectables, jewelry, local art, a free DIY button booth, skateboards, bicycles, henna tattoos, horror memorabilia, toys, live music, food trucks, and so much more... plus it’s at Lakeland’s coolest family & pet friendly outdoor bar & brewery. You DO NOT have to be a punk rocker to enjoy yourself or to find a new favorite treasure. This is a fun and safe experience that everyone should share.” He added, “When most people think “punk” they tend to go negative to what they’ve seen in movies with big mohawks, leather jackets and drunken brawls. I can honestly say I’ve seen far worse things happen at country concerts and children’s sporting events. For the most part, punk culture has always been a safe, caring and supportive world for me, which is one of the biggest things I want Lakeland to see.” The first punk rock flea market was a giant success and thanks to Swan Brewing, the next one will be twice the size with an additional tent allowing for more booths, music, food, and an all around good time. Chad ended on this note, “I’m most excited for the community. This event is such a great opportunity to meet and discover new artists and makers who you never knew lived right down the road. It’s a party. Coasting Through Middle School “Why do I have to learn this stuff? I’ll never use it in real life.” – Every middle school student ever Skateboard-wielding Southwest Middle School teacher Paul Peterson has found a way to engage students in their education using just four wheels and a board. Peterson, who teaches 6th through 8th-grade art has been teaching for 22 years, with twenty of those years spent at Southwest. In 2013, the Smithsonian hosted the inaugural Innoskate festival. The festival celebrated skateboarding, skate culture and its influence on American and world culture. The next year, Innoskate came to Polk Museum of Art in Lakeland and the Museum of History and Industry in Seattle. Peterson said, “I’ve been skateboarding all my life and I’ve built skateboards since I was in high school. But I never could find a cost-effective way to incorporate that into my lessons.” Innoskate rolling into Lakeland was the catalyst for Peterson to do just that. The 2014 festival is where the teacher got connected with Paul Schmitt. Schmitt owns one of the largest skateboard manufacturers in North America, PS Stix, and developed the Create A Skate program where schools can order skateboards for their classes to paint. According to createaskate.org, “Professor Schmitt’s unique program is dedicated to helping young people create a hand-made version of one of his professional quality skateboard decks.”
Painting the board is a highlight for many in the program. Students spend about a week sketching out the imagery for their board. Peterson uses documentaries like Stuntwood: The Birth, Life, and Death of a Skateboard, and excerpts from Dogtown and Z-Boys, and Bones Brigade: An Autobiography to give students skate culture inspiration. As long as it is school appropriate and creative, Peterson allows the students to be relatively free with their design.
Haynes has even gone on to compete in a juried art competition at Art Crawl when she was in 7th grade. “It was when I realized how I could take this somewhere with me. Ever since then I’ve been doing shows and selling my artwork,” she said. After finishing high school, Haynes would like to attend art school at Ringling, SCAD, or Rhode Island School of Design. She is also interested in the medical field and says med school is also an option for her.
Around Peterson’s classroom is a display of boards in varying states of completion. Some are rough, not yet finished. Others have been painted with such detail that they are works of art – each crafted by the hands of talented middle school students.
SKATEBOARDS FOR SALE!
MORE THAN ART Peterson uses skateboards as a tool to make the lessons students are learning in middle school, relevant and applicable to their lives. In doing so, he incorporates a range of subjects. “Originally it started out with Create A Skate as a way to get kids interested in art,” he said. He realized that giving this opportunity to create a skateboard captured students’ attention in a way he hadn’t been able to before. With a captive audience, Peterson relates skateboarding to other areas of their education.
The response to the program was so great that the art teacher wanted to participate in Create A Skate again. He realized his students were interested in different boards and riding styles. This diversity made buying different decks, trucks, and wheels cost-prohibitive on a public school budget. “We started working on ways that we could develop our own press, our own molds,” said Peterson.
“It’s about building the student holistically, instead of being so narrowly focused on my subject matter,” he said. Peterson added, “I’m not expecting them to be the next Picasso or Da Vinci, but I am expecting that they put some effort into their learning and take ownership of their learning.” Science and engineering are incorporated into making boards as Peterson teaches lessons on the basic principles involved in designing a board from symmetry to the physics behind turnability. “They start learning about the physics of inertia, gravity, centrifugal force with the turnability of the skateboards. They learn math – you’d be amazed how many kids have a difficult time just measuring things out with a ruler, but they have to measure things out because if they don’t and we cut it out wrong, that’s their board,” said Peterson. “I realized it was a way to engage a lot of other subjects.”
Developing his method of making boards, Peterson set up a program – Grade 8 Skate. To be a part of the initiative, students have to earn $25 themselves, not from their parents. Earning the money to participate gives the students a sense of responsibility and ownership over their board explained the teacher.
“It took me 15 years of teaching here before I even got to this point where I’m this excited about it and I’m continuing to push it to grow,” he said. His enthusiasm and teaching style have been impacted tremendously by Grade 8 Skate. “I’m having more success now than when I started this program.”
Each student in Grade 8 Skate is involved in designing and making their own unique board. If they’ve never skated before, he’ll suggest what style of board might suit them. “There’s a lot of different styles of riding so I try to focus on what they’re interested in and make something very specifically designed to their height, weight, riding style, [and] experience,” said the art teacher.
One student quite impacted by Peterson’s Grade 8 Skate program is 16-year-old high school junior, Taylor Haynes. Haynes didn’t go to Southwest Middle School but met Peterson through the Polk Museum of Art’s summer camp when she was 10. “He kind of became my mentor,” she said. She completed her first board at age 11 and has done one every year since. “I never realized how complicated it was. You would think a piece of board and some wheels wouldn’t be that interesting but the aerodynamics and the designs that go into it are very interesting,” she said.
The first year, Peterson’s students completed over 50 boards through CreateASkate.org and got the opportunity to display them at Innoskate and meet Schmitt as well as skateboarding legend, Rodney Mullen.
GRADE 8 SKATE
Peterson and his students make boards using two, 12-ton hydraulic presses. They’ve even created an alternative to traditional grip tape using polyurethane and coarse aggregate. The innovation doesn’t stop there. Peterson has been known to give his class a challenge from time to time. A few years ago, after watching a YouTube video of Paul Schmitt creating a cardboard skateboard for Tony Hawk to ride, Peterson issued the same challenge to his students. He tasked them with creating a cardboard skateboard that he, a fully grown adult, could ride. They made several prototypes and one that he even rode for two months before it had flexed too much to continue riding. havenmagazines.com
She praised Mr. Peterson for introducing her to skateboards (now one of her favorite things) and for propelling her forward in her art career. “He has opened my eyes to how accomplished people can do art. You always hear about starving artists and that kind of stereotype. He’s helped me realize that’s not the case,” she said. “He’s really inspired me to keep working and keep developing skill and see where it goes for college.”

Mr. Peterson and his students set up a tent to rep Grade 8 Skate at the first Punk Rock Flea in March. Last school year, the program was awarded a STEM grant from AT&T and The Polk Education Foundation which helped finance the boards. “One of the things that we wanted to accomplish with the STEM grant was to develop a sustainable program, rather than having to write grants every year or ask for money,” Peterson said. Selling their boards at Punk Rock Flea allowed Peterson to incorporate business lessons in as well – something the STEM grant placed an importance on along with expanding on what the students were already learning in regards to STEM subjects. They sold enough skateboards at the PRF to cover their cost and have leftover inventory to bring to the September market along with what they build between now and then. They will also be selling handmade balance boards (which were a hit at the last market), and an assortment of decks and fully assembled skateboards. The funds made from selling the boards will go back into Grade 8 Skate and the Southwest Middle School art program.
PARTNERING FOR A PURPOSE “One of our goals this year aside from making artist edition boards, we partnered up with Boards for Bros and Getaboard which are charitable organizations out of Tampa and Orlando that are interested in getting skateboards in the hands of disadvantaged kids,” said Peterson. “Skateboarding teaches you a tenacity that you may not learn other ways.” He is also working with skateboarding organizations GRO (Girls Riding Organization) focused on getting girls into action sports, and the Good Push Skateboarding Alliance, an initiative by Skateistan supporting social skateboarding projects across the globe. The social aspect of skateboarding is almost as important as the other lessons he teaches. With bigotry, homophobia, racism and other social injustices tearing people down, Peterson hopes skateboarding can build them up and be an outlet, a safe place, a way to connect. Peterson wants children of every skin color, gender, learning difference, or economic status to find a community in skateboarding. “If I can use skateboarding as kind of a hook to build a community, then maybe these kids won’t be picked on so much or laughed at or maybe they’ll feel a little more free to express themselves without so much of the judgment. Maybe ultimately these kids will build lifelong friendships, maybe they’ll start tutoring each other and helping each other out,” said Peterson. No matter what they get out of it, be it a relevant use for their school lessons, a community, or a sense of pride in a board they’ve created – thanks to Mr. Peterson and Grade 8 Skate, students at Southwest Middle School are being given a push in the right direction. Red Swan Graphic Design “Anything funny and snarky inspires me,” says Red Swan Graphic Design owner Tate Krupa, “I like making people laugh.” Krupa has been creating and selling her work for 15 years from what she considers her “mobile gift shop,” though her passion for creating started at a much younger age. As a child, she always made drawings and doodles, and by high school, she knew she wanted to go into the graphic design field. By college she was majoring in art, focusing specifically on printmaking. She says that her experience with printmaking affects the way she approaches graphic design, allowing her to better understand and utilize negative space, as well as color relationships and separations. It also helps her know when to call it quits on a design and send it to the printer.
While Krupa loves her job, she says that there can be some difficult parts of being a graphic designer. Getting clients and broadening your reach is not easy, especially when certain products are so easy to find mass produced. Most people will likely go to large companies for products like greeting cards and t-shirts, but according to Krupa, local designers will go the extra mile for clients. “If you shop at the farmer’s market, you probably want to buy from local designers, too,” she mentions. Local designers, as well as most local businesses, want to work with clients to give them a good experience and a product they will be happy with. This is why, Krupa says, it is important to support local designers first.
With all of this knowledge and experience wrapped together, one can begin to see how the self-proclaimed “jack of all trades, hopefully master of some” got to where she is now, making and selling a large variety of different kinds of art. Krupa explains that the types of products she makes are always evolving. Currently, she makes greeting cards, notepads, and stationery, and that’s just the paper products. She also makes items out of repurposed goods like old vinyl records. Out of everything she sells, she says the lapel pins and stickers are her best sellers. Though she works in many mediums, she does have one that she enjoys working with the most. She loves drawing because it is easily the most versatile of the mediums in which she works. Drawings can be turned into prints, stickers, magnets, or a greeting card design, so it ends up being the most valuable skill to know. The designer also just got a new iPad Pro, which has allowed her to create her work from anywhere. She loves the freedom that the tablet gives her, as she no longer has to stay in one place to make her art. Ever the ambitious person, though, Krupa still hopes to branch out into more mediums. She just learned macramé, and now wants to start making tote bags with screen printed designs, coffee cups, and t-shirts. As for what inspires Krupa, she says that anything funny is enough to get her creative juices flowing. She loves to make people laugh, and a lot of times this is done through pop culture references. A quick scroll through her Instagram, and you’ll see a portrait of Kramer from Seinfeld, a collection of Ruth Bader Ginsburg magnets, and a Bill and Ted pin set. She’s not afraid to get political, either, offering a selection of Pride pins, feminist pins, and various other pins promoting political figures. “Everyone deserves equality, and that’s important to share through my work,” Krupa says. She does say that politics are not her main focus, though, as she mainly wants her work to make people happy or remind them of past memories. havenmagazines.com

If you want to support this local designer, then you have a lot of options. Krupa sells her work on Etsy and at various markets, including the Moonlight Market at Grove Roots, the Lakeland Farmer’s Market (for a little over a year now), Brew Hub, and occasionally the seasonal Haus Mrkt. She’s also trying to get into local stores and indoor markets, citing the Florida heat as a reason to stay indoors. She did not do the Lakeland Farmer’s Market over the summer, but her first day back will be September 7th (the market’s first day back after being closed all of August). Kon Tiki Taco Talk Who wants tacos and tiki drinks? I think that’s all we really need to say here. Going strong for over 80 years, where did the first tiki drinks come from? According to behindthebar.com, Ernest Raymond Beaumont Gantt opened Don the Beachcomber in 1934, inspired by his travels in the South Pacific. It was a tropical-themed bar and restaurant in Hollywood, California, replete with flaming torches and rattan furniture. Don the Beachcomber had a look and feel designed to transport patrons to an ambiguous, exotic locale. He called his concoctions “rhum rhapsodies,” and many of his original recipes, like the Scorpion and the Zombie, are still being slung by bartenders today. This year we’re hosting the 2nd annual Kon Tiki Taco at Haus 820. Find a babysitter, schedule off work and get that tropical shirt cleaned because there’s a trip to paradise waiting for you. Spend the evening with a tiki cocktail in one hand and a taco in the other while dancing to the sounds of everyone’s favorite, DJ Jenks. Swan Brewing will be serving up a couple of craft brews, and fun will be had by all.

Let’s talk with Kon Tiki Taco creator, Chris Sexson about what’s new this year. Let’s start at the beginning. What is it? “Kon Tiki Taco is a great cocktail party. We want to throw fun events without all the formality of networking or agendas. The goal is to raise a glass amongst friends, have a bite of food and just have a good time. There will be multiple cocktails to choose from crafted by our friends at Cob & Pen and Revival Bar. If cocktails aren’t your thing, we will also have a selection of great beer from Swan Brewing.” What was your inspiration? “Good question. Growing up in Dayton, Ohio our local movie theater was called the Kon Tiki. This monolith of a place in North Dayton stood out like a sore thumb. It was highly impressionable to me as a kid. Designed like a Polynesian structure, the inside was lit with deep red lights, red carpet, tiki statues, it was awesome. I saw Star Wars there on its release weekend. As I have grown older, I have a deep appreciation for craft cocktails and tasty tacos. Maybe a drink or two a few years ago helped spark the name and Kon Tiki Taco was born. Keep it simple, craft Tiki drinks and Tacos. I thought, I’d go to that. Mix in a great DJ, make the room fun, keep the price right, bring together a great group of creators in the community. And here we are.” What should the guests expect? “Too much to drink and too much to eat. Great sounds from DJ Jenks to keep you in the groove. Low lighting, good cocktails, tasty bites, great sounds, a little nostalgia, hopefully a memorable time.” How much does it cost, what do you get for that price? “We never want to over serve, but we try to approach these events as open bar and food. Come have a good time. For $35 you get great craft drinks, tacos that are amazing, entertainment all in a chill setting. Honestly I don’t think there’s a better value for an event in Central Florida. Add in the fact that we have such great partners collaborating, this is kinda chill for thirty five bucks.” Anything new this year? Anything different? “Last year we had just over 400 attendees. So the old saying,‘if it’s not broken don’t fix it’ may apply? With that said, we 21

Who’ s Ready for a Good Thyme? It’s about thyme Lakeland got a fresh, fast eatery. Soon Lakeland’s hungry will be able to order online or stop by the pick-up window of Good Thyme for a quick, delicious meal. From the minds who brought you Cob & Pen, comes Good Thyme! This will be the second Lakeland restaurant (with a bar + arcade on the way) for partners Jason Ellis, Conn O’Leary, and Corey Ripley. Good Thyme has been in the works for a while, dished Cob & Pen owner Jason Ellis. “We talk about different concepts and ideas all the time,” he said. Ellis was clear they didn’t want to add to the noise of a concept already being done, but rather fill a gap for the city. From watching Cob & Pen’s social media and social media in general, Ellis has seen requests from Lakeland foodies for more fresh, healthy and dietary-conscious options. To run the show at Good Thyme as managers, head chefs, and partners, Ellis enlisted the help of former Cob & Pen employees, Amber Davis and Matt Flowers. Davis has been in the culinary field for ten years. She attended culinary school at Le Cordon Bleu in Orlando and her career has taken her from Lake Wales to New York, Sebring, Boca, and Lakeland. Cob & Pen sits high on the list of restaurants she’s worked with. “Every day Jason would come in and say ‘Let’s do something new.’ It was a challenge, it was good because we’d have to make it from scratch and we’d have to make it in-house,” she said. Flowers and Davis plan to carry over that same innovation into the Good Thyme menu. Flowers hails from Avon Park. He moved to Boca Raton after high school, landing a job at a pizza place. “My culinary upbringing was pretty normal for a Southern kid in Avon Park. I didn’t know a whole lot outside of collard greens and cornbread,” he said. From the pizza joint, he moved on to an Italian eatery. There he worked with a chef who he says taught him everything he knows. “I kind of fell in love with the rush. I like the fast-paced work and the action – it keeps me going,” said Flowers. The Good Thyme team have been working together to conceptualize a menu suited for just about everyone. Davis described their cuisine as, “A mix of healthy and fresh and home comfort type food.” Flowers added, “Something for your every day if you’re really health conscious and something for your cheat day too.” The menu will boast Southern comforts like chicken biscuits and classic breakfast sandwiches, in addition to gluten-free, vegetarian, and vegan options. The Good Thyme partners wanted to blend Lakeland’s affinity for classic comfort food with the dietary-specific and healthy eats they’ve heard requested. Ellis explained, “Our main goal is to have offerings

that appeal to ALL of Lakeland with a curated menu bent towards cleaner/healthier and just in general more conscious eating. Focused on along with providing comfort food and staples, we have multiple and hearty options for gluten-free, dairy-free, vegetarian, and vegan conscious eaters too.” The chefs broke down a few of their favorite dishes on the menu. For Flowers, their cauliflower fried rice takes the cake. A spin on traditional fried rice, they’ve substituted rice with riced cauliflower and a generous helping of veggies served with an over-easy egg on top. Flowers described this hearty yet light option as, “pretty, tasty, and innovative.” A mouthwatering tuna poke will grace the Good Thyme menu as well. The tuna is dressed in a classic sauce and accompanied by pineapple and fresh cucumber on a bed of sushi rice. It is finished off with wasabi mayo, scallions, and black sesame seeds and served alongside crispy fried wontons. Both Flowers and Davis are partial to the smoked pork belly tacos. Complimenting the smoked pork belly is a creamy slaw of house-made yogurt and brine from their own sweet and spicy pickles – a fun repurpose of ingredients that works well together. The tacos are topped with grilled pineapple, a housemade barbeque sauce, and jalapenos from the same brine. Davis said she is excited for the opportunity to provide something much needed to the community while also having the chance to flex her culinary muscles. “The fun thing about this is we’re doing vegetarian and vegan, and I don’t have a lot of experience with it, so it’s a learning experience,” she said. “It’s awesome because it’s able to provide for people with dietary needs that a lot of places aren’t able to do or choose not to.” Part of the menu experimentation has been bringing in people with certain dietary needs or preferences to taste their food. From vegan sausages to acai bowls, Davis and Flowers have worked diligently to perfect the dishes using feedback from their taste-testers. About Davis and Flowers, Ellis said, “It’s hard to find people who are that willing to take criticism, try new things, keep reinventing. That’s been a great part of our relationship since they were at Cob & Pen.” He expressed that their brilliant food is a testament to both the pride that goes into their work and the ego they leave out of it. The team has toyed with the idea of putting made-to-order vegan biscuits on the menu along with vegan sausage and gravy. Vegan desserts like brownies or cheesecake are likely to make an appearance too. “It’s not that we want to label ourselves as a vegan place, we just want to be a place where everyone can find something that tastes good.” Fingers crossed, Good Thyme hopes to open mid-September.

Ellis would like to spend the weeks leading up to their grand opening doing soft openings and connecting with the community with promotions. “We also feel like, with the pickup concept, efficiency and speed are super important,” Ellis said. So, in addition to food feedback, these soft openings will be the perfect opportunity to test their efficiency. On the go, pick-up breakfast and lunch will predominantly be their style. Dixieland offers breezeway seating outside of Concord Coffee, and the Good Thyme space has a patio area they plan to spruce up for hungry patrons who want to hang out. Good Thyme won’t only be sharing a breezeway with Concord Coffee – the two plan to collaborate. They are working out the details of being able to order Good Thyme food at Concord and vice versa, Good Thyme may have Concord drip or cold brew available at the pick-up window. Having options for everyone has been at the forefront of the Good Thyme concept – for both their food and price point. “That’s our other goal is to keep it super approachable for everybody,” said Ellis. Out the door for breakfast, Good Thyme guests can expect to pay around $3 to $7, and for lunch with a drink and side in the $8 to $12 range. Of course, specialties like their tuna poke may run you a bit more. Tentatively, their hours of operation will be Tuesday through Saturday 7 am to 3 pm. Concord may carry a few Good Thyme offerings on Sundays and Mondays. Ellis envisions weekly pop-ups too. “I really love oysters and I feel like the oyster culture is missing a little bit in town, so we want to do an oyster happy hour every Friday – beer, wine, champagne, shrimp cocktail, oysters, lobster roll or a shrimp roll,” he said. We can hardly contain our excitement for Good Thyme, but we would be remiss to not mention The Rec Room. The marriage of a bar and an arcade, The Rec Room will have newer and classic console games, classic arcade games, ski ball, air hockey, ping pong and the like. Word is they plan to have a golf simulator too! Libations will include a selection of draft beers and curation of canned beers, wine, and cocktails. Father and Daughter Create Art Together As far back as her memory extends, 10-year-old Harlow Manning has wanted to be an artist. The apple doesn’t fall far from the tree as she follows in the footsteps of her father, internationally known artist, Trent Manning. “We are launching a business together for the Punk Rock Flea Market,” said Trent. Ever since the pair first collaborated for their exhibition, “Inspired” at Outer Space Art Gallery when Harlow was seven, they’ve been looking for another project to take on. Trent attended the last Punk Rock Flea Market and thought it would be the perfect venue to debut their new business, Cerk Fillet. “All of the sculptures that I did were based on her sketches for our first show. All the paintings originated from her sketchbook,” Trent said. “This time it’s going to be a little bit more me and a little bit more her, and then we’re also going to collaborate.” The name is an ode to the adorable way Harlow used to mispronounce Cirque du Soleil. Trent remembers, “When we first took her to Cirque du Soleil, she couldn’t pronounce it. She kept saying, ‘I want to go see Cerk Fillet again!’”
Her teacher went on to explain that the project was to do a self-portrait. Harlow’s stood out because of the big rainbow in hers. When the teacher told her that wasn’t part of the project, Harlow retorted, “But that’s my rainbow.” When her teacher informed her that she didn’t have a rainbow, Harlow said, “Just because you can’t see it doesn’t mean it isn’t there.” The artist works with his daughter diligently, teaching her about filling space, composition and taking her sketches from concept to a complete piece of art. “I encourage her to sketch every night,” he said. He tells her to sketch anything she’d like. “You’re going to make better work, by making more work,” he said. “The work on her own is her ideas, her original concept, but I’m helping her turn those into finished pieces,” he added.
“We’re taking our love of the circus and our thing together and we’re going to do this kind of traveling band of sideshow freaks,” he said. Both he and Harlow will have original pieces along with collaborative works.
Harlow’s favorite character she’s ever drawn into existence has become a central figure in her father’s work as well. Zombie Boy made his first appearance in their “Inspired” show. “We loved it so much that it carried over into my work,” said Trent. Dad even cuts daughter a royalty check for anything he sells depicting her signature Zombie Boy – a loveable undead character with a round mouth and gnarled teeth. Zombie Boy and other beloved characters will be a part of their new work too.
Beyond the father, daughter quality time, Cerk Fillet will also serve as a sort of rebrand for Trent and an early portfolio for Harlow. Trent hopes to create a line of work with a more approachable price point. “It’s about making a body of work for me that’s more accessible to the masses,” he said. Harlow would like to compile a portfolio impressive enough to one day attend Harrison School For the Arts.
The narrative for Cerk Fillet is still developing according to Trent. “The basis of it is this traveling band of friends – a group. I don’t know why I always go back to traveling and this migrant thing. I feel like Americans have never been forced to be displaced and travel,” he said. That doesn’t mean everything they present will be tied in with a gypsysque circus tribe. “I’m giving her free reign to do whatever she wants,” said Trent.

Harlow discussed her inspiration for Cerk Fillet. “For this one, I’m trying to do more circusy and anything that pops into my mind, I put it down on a piece of paper,” she said.
Trent’s work is well-recognized for its whimsically dark and detailed narrative. The storytelling aspect is something Harlow has taken an interest in as well. “There has always been a very strong narrative in my work,” said Trent. “I’ve noticed she has that too. When she draws something she usually has a complex story behind it.” The young artist has been sketching since she was only three. She loves to illustrate books like two she’s currently penning, “The Ultimate Sleepover Guide” and “The Perfect Pool Party.” In kindergarten, she was voted ‘Best Storyteller’ according to her dad. Trent remembers being called into her class by her teacher when he was picking her up one day. The teacher asked if he could pick out Harlow’s self-portrait from the collection on the wall. He said, “Yes, that one’s Harlow’s.”

Already selling well are their Pinhead sculptures. The name was inspired by Trent’s love of The Ramones. The sculptures, which were conceptualized especially for the Punk Rock Flea, depict cute and creepy clowns using old bowling pins. Trent only intended to make one batch, but after posting a few photos of them online, the demand exploded. Cerk Fillet will have sculptures, paintings, stickers, and cards at the market this month for art lovers eager to collect the Mannings’ delightfully creepy aesthetic. “We’re going to try to develop a whole product line,” said Manning. If Cerk Fillet is well received at their first market, the two plan to set up shop at other central markets like the Indie Flea.

“I’m just excited to be working with her again,” remarked Trent. Harlow agreed that her favorite part of their business venture is “being with him.” The father and daughter will be reserving a portion of the proceeds from their wonderfully weird artwork for a cause dear to them. Trent and Harlow will be donating 20% of their joint proceeds, and 100% of Harlow’s proceeds to her Helpers Club. She was inspired to start the club after witnessing the staggering number of homeless in New Orleans while on a family trip. Her Helpers Club – which consists of Harlow and her friends – buy food, toiletries, and necessities to make bags. The family walks around New Orleans, giving out the bags to homeless folks in the city.
ENCOURAGING HARLOW Harlow thought for a moment when asked about what her future as an artist might look like. Beyond attending Harrison, she said, “I would like to continue working with him as long as I can and then eventually grow into my own studio and do my own artwork.” Harlow’s parents foster her interests. “I’ve taken sewing classes and I’ve been to theatre camp,” she said. She loves fashion, costume, and set design. Harlow even has her own studio space complete with sewing and painting stations at home. “I feel like if we expose her to everything now, she’ll find her niche much sooner than I did,” said Trent. “It took me a long time until I actually got encouraged by my art teacher. I was almost an adult at that point.” Encouragement from his high school art teacher meant so much to Trent that he will do anything he can to be that supportive force for his daughter. He said, “Encouragement is 90% of artwork. If you don’t feel like you’re turning out good work and there’s no response from people, no one seems to get it – you don’t have much reason to go in. But if you have deadlines and you have feedback and you feel like it’s appreciated by people, then you have a reason to go in and do that.” “I just want to encourage her,” Trent said. “Whatever she wants to do, I’m going to facilitate it.” IG @cerkfillet FB @cerkfillet

Protect the Pitties Stereotypically synonymous with aggression, ferocity, and volatility, Pit Bulls are not often granted the chance they deserve at life and a happy home. Co-founders of The Polk County Bully Project, Angie Lorio, Shannon Medina, and Erika Wisniewski say this reputation could not be further from the truth. Replacing these words should be loyalty, love, companionship, and protection. The stigma has become a matter of life or death. According to Erika Wisniewski citing a study conducted by Best Friends Animal Society, Polk County Animal Control euthanizes more animals than any other county in the state. We called to file a record request with Polk County Animal Control on August 9 to confirm the number of dogs euthanized. Regretfully, after numerous calls, on the date of print, August 28, we have not yet received the information. Most affected by these outrageous stats are Pit Bulls. Bully breeds, who are most commonly recognized by their blockshaped head and stocky, muscular build, aren’t a single breed at all. According to SPCA kennel manager Erika Wisniewski, “Pit Bulls are mutts. There are no two Pit Bulls that look identical. They were a cross between a Bulldog and an American Staffordshire Terrier. The American Staffordshire Terrier, which people stereotypically call a Pit Bull, is actually not a Pit Bull.” Additionally, American Bulldogs, American Pit Terriers, Bull Terriers, Staffordshire Bull Terriers and other mixed breeds are often given the “Pit Bull” label. Over time, this “breed” has been cruelly used in dogfighting and trained to be aggressive towards other dogs as a matter of survival. This mistreatment fuels the stigma and paired with Polk County’s animal overpopulation, this has become the perfect Pit Bull storm. To save this breed and all dogs, the SPCA in conjunction with Animal Control and other rescues and animal organizations in the county have begun an initiative to make Polk, a no-kill county by 2025. As a part of this initiative, the SPCA has partnered with a few women who have a heart for pitties, to find them homes.
THE POLK COUNTY BULLY PROJECT Lakeland residents Angie Lorio and Shannon Medina have teamed up with Erika Wisniewski and the SPCA to start The Polk County Bully Project. The focus of this group is to rehome dogs, often transporting them north where they are less discriminated against for their “breed” and have a higher chance of adoption. According to PCBP, any dog deemed to be of a stereotypically aggressive breed such as a Pit Bull or American Bulldog, are not put on the adoption floor at Polk County Animal Control. “Unfortunately, that’s what this area

is full of,” Wisniewski said. Unless claimed by their owner or pulled by a rescue, that dog will be euthanized – their breed is their death sentence. The PCBP made a point to not villainize Animal Control who is also a partner in the no-kill by 2025 initiative. Wisniewski said, “They do everything that they can to reunite their dogs with their owners, but when people don’t come in and reclaim their dogs or choose to give up on their dogs – what is Animal Control supposed to do?” This problem, which most in the community would be shocked and saddened to hear, goes full circle. “A lot of it comes down to community education and spaying and neutering pets,” said Wisniewski. Though Polk County requires dogs to be altered before being adopted out, an owner can still pick up their pup from Animal Control intact. Lorio said it would be a dream to have that changed to where the dog must be spayed or neutered before being released to its owners. This, she said, would inevitably slow the overpopulation. Medina noted the need for legislation related to breeding and responsible pet ownership. This is a community issue that needs to be acknowledged and solved by the community. With a collective community-backed effort and a legislative push, Polk County could realistically be no-kill by 2025.
HOME, SWEET HOME Polk County Bully Project has made contacts with rescues and transports from Florida to Canada and everywhere in between. “When we show them a picture of a dog, they can find a home within weeks,” said Lorio. They sent their first pooch north in February – a good boy named Cooper. Admittedly, they didn’t know what they were doing. But they were determined to find Cooper a home. Within a week of choosing his file from a pile of other block-headed bullies, Cooper was placed with a rescue in Canada. The second dog was Pokey, a three-legged dog that also road-tripped all the way to Canada. Before a dog is deemed “ready to go” for their rehoming program, it first must be tested heartworm negative, neutered or spayed, fully vetted, and sociable with other animals. They prefer to have a more detailed description of the dog’s personality like if they’re house trained, what they are afraid of, their activity level and other personality traits that are best observed by a foster. They’ve flown dogs, paid for transport, and have gotten help from a few good samaritans. The day was saved once by Orlando non-profit, Batman for Paws who drove three dogs to Vermont for PCBP. Riding shotgun and accounting for over 90 of the 160 pounds worth of dog that Batman was transporting, was Ty. The Polk

County SPCA’s longest resident, Ty was a “slobber faced” black and white 9-year-old American Bulldog who everyone loved. When he left in May, he had been there for well over a year. Before that, he was at the Brevard County SPCA spending just as much time getting overlooked. “The shelter environment is not a place for dogs to live long-term. Can it be a short-term solution for dogs? Yes. Is it ideal? Absolutely not, and I say that for any dog across the board,” said the SPCA kennel manager. “It’s not fair for them to live there long term. It doesn’t do anything for their mental health or their physical health.” For an old man like Ty, it wasn’t necessarily a matter of life or death. But it was a matter of finally getting a home, love, attention, and all the belly rubs he deserves.
A MISUNDERSTOOD BREED Is it nature or nurture that has hung such a heavy reputation on Pit Bulls? Angie Lorio explained where some of this unsavory reputation stems from. “Genetically speaking, they’re a strong dog,” she said. Used in fighting rings, starved, fed gunpowder, repeatedly used for breeding, and otherwise mistreated and abused – any negative behavior is taught, or purposely brought out in them. “They’re born kind dogs. They fall into the wrong hands and they are changed,” said Lorio. “It’s not an innate thing for them. They’re taught to not get along with other dogs,” added Wisniewski. “You find dogs that come from a background of mistreatment. If shown how and given the proper amount of time to get along with other dogs and how to act and be social around other dogs – they’re fabulous with other dogs and children.” American Staffordshire Terriers were originally bred in England to nanny children according to Lorio. She said, “They love children, they’re wonderful with children unless they’ve fallen into the wrong hands prior – starved, fighting for what little food they have, taught to fight one another.” But even mistreated dogs aren’t beyond rehabilitation. “Their ability to forgive and get over the things that have happened to them, is phenomenal,” said Medina. One such dog who was able to forgive and get a second chance at a happy home is Lady. Lady spent her life outside in a pen, used for breeding. She was surrendered to the SPCA with one of her offspring. Her family couldn’t rehome the last puppy and Lady, who was no longer producing, had served her purpose. She sat for too long, over a year, at the SPCA. An 80-something pound brindle, blockheaded dog proved not to be a desirable adoptee in the area. Lady was spayed and fully vetted. months before rehoming her. Polk County Bully Project sent her photo to the rescue who had committed to take her in New Hampshire. Within a couple of hours, Lady was spoken for. Lorio drove her to Atlanta where she met with transport at 3 am to travel the rest of the way to her new home. The women say Lady is thriving in her new home and is now the sister to two Labs. “Everybody’s hands that she passed through, commented on how beautiful and kind [she is]. Everyone just fell in love with her.” Said Lorio. “As soon as we got her out of that environment, she blossomed.” One dog recently adopted was Petey. Petey came from Polk County Animal Control in 2016. He was adopted shortly thereafter and was returned to the SPCA in February of this year because the family was moving. Wisniewski described him as anxious in the kennel, spinning in circles. That was hard to believe as the dog before me had a “Let’s play!” look in his eye, tail wagging, as he pranced around. Ever the good boy, he would sit occasionally to receive a treat. Petey, who has an underbite so cute it hurts, gets along with other dogs, loves children and all people, is very social, high-energy and walks great on a leash. Thanks to the SPCA and PCBP – Petey is home!

DO YOUR PART At the top of the list of Polk County Bully Project’s needs are funding for transportation and fosters. From plane tickets to paid transport, getting these dogs to their home is not cheap. On the lower end, the cost per dog to transport is $125 and climbing. PCBP holds fundraisers, like their ‘Beers for Bullies’ event last month at Cob & Pen and by selling bracelets made by Wisniewski’s sister that say “Adorabull.” As for fosters, Lorio said, “What would be ideal is as soon as we get that rescue commitment, to move that dog to a foster home temporarily because now we’ve freed up a kennel that Erika can pull another dog from Animal Control and save it – that would be beautiful.” Who is an ideal foster candidate? “There isn’t an ‘ideal person.’ They can have a job, they can have kids, be single, be in school – anybody can do it,” said Medina. Those concerned with the cost commitment of fostering a dog need not worry. The SPCA provides everything for the dog from food, a crate, to medical and anything else they need. Fosters are imperative to the PCBP mission. Not only does it free up a kennel for an incoming pup at the SPCA, but fostering also provides an insight into a dog’s true personality

(like Petey). A foster who spends time with a dog in a home environment versus a kennel environment will be able to give the rescue an idea of how they are with kids, other animals, overall temperament, if they’re housetrained, what they’re afraid of, etc. “This sets them [the northern rescue] up for success to find a perfect owner,” said Lorio. The Polk County Bully Project is in the process of registering for their 501(c)(3) non-profit status. They have a dream to one day have a facility of their own to expand what they’re already doing and to be a resource and a partner to other animal organizations locally. Do your part. If your pet isn’t spayed or neutered, get it done. If you’re considering adopting a dog, buck the stereotype and consider a bully. Donate, foster, volunteer, spread the word. Local Co-op Keeps Lakeland Rolling What started as a small initiative centered around cycling and community has grown into a cooperative of much grander proportions. William Schaffer has been a cycling advocate for the city of Lakeland for ten years. Unwholly Bikes is the second bicycle co-op he’s created – a program called Veloswan was the first. The difference between the two concepts Schaffer says is an organized approach and a focus on becoming a 501(c)(3) nonprofit.
workshop, but also having knowledgeable bike mechanics there to teach how to properly do everything,” said Masters.
BIG PLANS
The odds of walking into their workshop and finding a whole bike is slim as it would defeat the Unwholly purpose. “If you build it yourself you take better care of it, you take ownership of it,” said Schaffer. They want to promote learning to fix and maintain your bike, yourself.
The co-op is currently in the process of applying for their 501(c) (3) to become an official nonprofit. As a community program, they do have a few needs you could help fill. They have everything they need to operate but are always looking for more shop equipment, any bikes in any condition, professional bike tools, and volunteers.
Four months ago, Schaffer presented friend Mac Masters with the idea of having a group ride and a small workshop called Church of the Unwholly Bike. Schaffer envisioned it being, “a bunch of misfit punk rock kids building bicycles and helping the community.” But Unwholly Bikes has grown into much more than that.
“We love putting people on bicycles and have them build a bike that’s completely their own,” said Schaffer. “It’s a huge blessing to us to have these people come in and change their lives. There are people who come in that just need it to get to work and without that bike they are unemployed, there are people who want to start riding bikes with their kids, couples who come in that want to ride together to create something new in their relationship. The reasons are endless. It’s just, do you want to put your butt on a bike and your bike on the road? That’s all we care about.”
Masters and Schaffer along with co-founders Tyler Fox and Sami Polk worked to turn their small-scale co-op into a welloiled nonprofit that has the potential to touch more lives (and bikes) in Lakeland. “My original intention was for it to be a bunch of punk rock kids riding cool bicycles around and cleaning up lakes and helping people out. Now, it’s a full-fledged, fully operational bicycle shop with a 100 bicycle inventory, workbench, workspace and a storage unit,” said Schaffer.
CHURCH OF THE UNWHOLLY BIKE Along with that 100-bike inventory in their soon to open shop, Unwholly Bikes has community outreach programs planned in addition to their Church of the Unwholly Bike. Church is in session on the second Sunday of each month. The three-phase event consists of an hour of food and fellowship, an hour of riding, and an hour of community service. During the summer, much of their efforts have surrounded picking up trash. In the fall, they have plans to partner with VISTE (Volunteers in Service to the Elderly) to clean up yards for senior citizens. Though the program’s name is a play on words, it isn’t a religious service, but a running commitment to do good in the community. “All are welcome all the time,” said Schaffer.
In a soft opening of their workspace, they’ve been fixing bikes in the shop since July 1. The roughly 400-square-foot location is off of Lake Mirror and has three bike work stations. Since July 1, Schaffer estimates they’ve fixed twenty bikes – and they haven’t even officially opened yet. Unwholly Bikes will have a grand opening PARTY (Schaffer insisted it was going to be a PARTY – all caps) on September 14th. The grand opening will be an open house for the community to meet the founding members, volunteers, and see what Unwholly is all about. There will be a food truck (Cuban B’s), a ride-in bike show, t-shirts for sale, and a ribbon cutting. Mayor Bill Mutz is even expected to be in attendance. Be there or be square. Schaffer and the team are psyched to attend the Punk Rock Flea Market, September 29. “We’re going to spend the whole day talking about the shop and what we’re doing,” he said. They will have shirts and stickers for sale as part of their fundraising efforts, and a drawing for four 20-inch BMX bikes that were built by volunteers. Kids 18 and under get one free ticket for a chance to win one of the four bikes.
“Everything we do is with a steward’s heart – everything,” he said. “We do it for the sake of doing the right thing and to promote cycling.”
THE UNWHOLLY SHOP The Unwholly Bikes shop is “open to anyone and everyone,” said Masters. Whether it is a necessity or a hobby, all are welcome to use the shop to build or maintain their bike. Unwholly Bikes is ideal for anyone new to cycling, or those who either may not have the funds or don’t want to drop a ton of cash on a hobby they aren’t yet fully invested in. Masters himself was new to the bike scene before getting involved with Unwholly Bikes. “The thing that drew me into it was the idea of having some kind of community project and doing good and having a weekend activity to get me out of the house,” he said. “It’s kind of grown and evolved into this bigger thing once I was exposed to the bike community here in Lakeland and also recognizing all the potential good that could come from getting people on bikes and educating them about bikes.” The community is invited to come to Unwholly Bikes to build or repair their own, using the shop’s tools and expertise. “That’s really what we’re bringing to the table is a community bike 31
Supporters of the Unwholly mission are encouraged to donate gift cards from Bent’s Schwinn that they can use to buy the tools and parts they need directly. “Bent’s is a huge fan of us and a huge supporter of our shop. Ever the experimental artist, visitors will see how Pierre and his art were inspired deeply by his grandfather and his legacy, and this exhibition puts a spotlight on the artist’s narrative works and series.
