½ cup ribs celery, chopped ¾ cup quinoa 1 10-oz. pkg. frozen chopped spinach, thawed and dried 1 15-oz. can black beans, rinsed and drained 1 cup of medium onion, chopped 1 tablespoon ground cumin 1 ½ cups carrots, grated 1½ cups grated reduced-fat pepper Jack cheese, divided 2 15-oz. cans diced tomatoes, drained, liquid reserved 2 teaspoons garlic, minced 2 tablespoons olive oil 2 cups water 4 large red bell peppers, halved and ribs removed

First, heat oil in saucepan over medium heat Add celery and onion, cook it for 5 minutes Add garlic and cumin, sauté for 1 minute Stir in drained tomatoes and spinach. Cook until most of the liquid evaporate Stir in water, black beans, carrots and quinoa. Cover and bring to boil. Reduce the heat to medium-low, simmer for 20 minutes 6. Stir in cheese, season with pepper and salt if you want 7. Preheat oven to 350°F. Fill the bottom of baking dish with the liquid from 8. Fill each of the half bell pepper with ¾ cup quinoa mixture then place it in the baking dish. 9. Cover it with foil, bake for an hour 10. Uncover and sprinkle with 1 tablespoon cheese 11. Bake for another 15 minutes, wait until the top of the stuffed peppers turn brown 12. Leave it for 5 minutes 13. Move the stuffed peppers to serving plates

Ground black pepper Salt 1 small onion, diced 1 cup tomato sauce 1 tomato, diced 1 cup quinoa, rinsed and drained 1 cup mozzarella cheese, shredded 1 zucchini, diced 1 small eggplant, diced 2 cups water 2 cloves garlic, minced 2 tablespoons olive oil 6 bell peppers, tops cut off and seeded
Steps: 1. Preheat oven to 175 degrees C (or 350 degrees F). Line aluminum foil to a deep baking dish 2. Put water and quinoa in a saucepan. Bring it to boil 3. Cover, reduce the heat and simmer. Wait for 15 minutes or until the water is absorbed and quinoa tender 4. Using large skillet, heat olive oil over medium heat. Cook and stir garlic and onion for 5 to 7 minutes 5. Add tomato, eggplant and zucchini. Cook for 3 to 5 minutes, wait until it become tender 6. Stir tomato sauce into the mixture, cover and simmer for another 10 minutes. Wait until the vegetables become soft 7. Stir the quinoa to the mixture. Season it with pepper and salt 8. Put the mixture into bell peppers 9. Place bell peppers in baking dish 10. With aluminum foil, cover the dish 11. Bake bell peppers for 18 minutes; wait until it become slightly tender 12. Remove the cover. Sprinkle mozzarella cheese to bell peppers 13. Bake it again for another 5 minutes, wait until the cheese is melted and bubbling
