Grandma Rosie's Shrimp Dip by Lisa 1/4 cup onion chopped fine 1 can tomato soup 2 cans little shrimps, drain and rinse well 8 oz creme cheese 1 cup mayonnaise 2 pkgs knox unflavored gelatin
Melt cheese in soup, don't boil, let cool. Add gelatin to soup/cheese and mix well Add mayo, mix well Add rest of stuff, mix well. Put in mold, chill. Overturn out of mold when set, mix ketchup and horseradish for cocktail sauce. Serve with big shrimps and ritz crackers.
Aubergine & Tomato Salad by Emma 1 aubergine, sliced 4 to 5 tomatoes, that are good for a salad. (Sometimes lots of cherry tomatoes cut in half used to work better in France) Dressing: 2 tbsp olive oil 1 tbsp tamari or soy sauce 1 tbsp apple cider vinegar (I sometimes used to use some Balsamic instead) 1 tsp sugar 1 tbsp lemon juice pepper Basil to garnish
Cranberry Salad by Bethany (beautiful on the table and very yummy) 2 cups cranberries (usually about 1/2 of the package) 1 cup water 1/2 cup sugar 1 small package cherry jello 1 cup chopped apples 1 cup chopped celery 1 cup chopped nuts
Boil the cranberries, water and sugar until the berries pop open. Remove from heat and add the package of jello while the cranberries mixture is still hot. Let cool slightly and add the apples, celery and nuts. Pour in pretty dish and chill in your refrigerator.
Salt the sliced aubergine in a colander and leave for 30 minutes. Mix up the dressing, making sure the sugar is dissolved in the mix. When the aubergines have rested for 30 minutes, rinse, pat dry and fry in oil or grill until cooked. Cut up tomatoes, lay the aubergine out on a serving plate, mix the dressing in with the tomatoes and spoon over the aubergine. Garnish with the basil.

Dark Chocolate Truffles by Cassie (makes about 30) ingredients: 1/3 cup heavy cream; 6 TBSP unsalted butter, cut into pats; 2 cups bittersweet chocolate chips; and either 1/3 cup unsweetened cocoa or 3/ 4 cup chopped almonds and/or pecans for coating the outside
Instructions: Bring the heavy cream to a simmer; add the butter and stir until melted; add chocolate, stir until completely melted and smooth; remove from heat and pour the mixture into a shallow bowl; cool, cover, and refrigerate until firm, about 2 hours; spread coating choice on wax paper; roll chocolate mixture into 1" balls and roll each ball in coating.
Chocolate Macaroons by Lisa 4 cups flaked or shredded coconut 2/3 cups white sugar (or less) 4 tbsp flour 6 tbsp cocoa powder 2 tsp vanilla 4 egg whites
Preheat oven to 350 degrees F. Mix coconut, sugar, flour, cocoa powder until blended. Stir in vanilla, unbeaten egg whites. Use ice cream scoop to place mounds on lined cookie sheet. Bake 18-22 minutes until just set. Let cool on pan.

apple cider, caramel and whipped cream. :) simple yet oh so delicious and wintery...
(optional Chocolate dipped!) -- makes about 20 ingredients: 14oz sweetened coconut flakes; 14oz sweetened condensed milk; 1 teaspoon vanilla extract; 2 large egg whites at room temp; 1/4 kosher salt
instructions: preheat oven to 325; combine the condensed milk and vanilla in a large bowl; whip the egg whites with the kosher salt in a bowl stand mixer (or use a very deep bowl and a hand-held electric beater) on high speed until they form medium/firm peaks; fold the egg whites into the coconut mix; use a teaspoon to drop the batter in mounds onto two sheet pans lined with parchment paper; cook 35-40 minutes, until golden brown Optional chocolate dipping, after macaroons are fully cooked: ingredients: 8oz bittersweet or semisweet chocolate, 1 teaspoon vegetable oil instructions: cut chocolate into chunks; melt chocolate and vegetable oil over medium heat; when most of the chocolate is melted, stir until smooth; let cool and then stir again; dip 1/3 of each macaroon into the chocolate and place on waxed paper until hardened.

Frozen Cranberry Salad by Sarah
I can’t remember a Christmas without this recipe - it’s been on our Christmas dinner table every year since I was born, pretty much. When I was at university, my flatmates scoffed at the creamy pink concoction (mainly because of the weird combination of ingredients and the fact that this recipe is a time-warp from the 1950s), but once they tried it they couldn’t stop eating it. It’s a truly heavenly and delicious twist on the old (but nonetheless wonderful) cranberry sauce. And really easy, too! 1 can of whole cranberry sauce 1 large package of cream cheese 1 cup of mayonnaise 1 small Cool Whip 1 small can crushed pineapple
Cream together the cream cheese and mayonnaise, and the fold in the Cool Whip. Mix well. Stir in cranberries and pineapple. Pour into pan, seal tightly and freeze. Be sure to take it out of the freezer a few minutes before serving so that it will be easier to cut into small squares.
Zimtsterne (Cinnamon cookies, Christmas treat) Submitted by Carolyn Ingredients for approximately 50 cookies (depending on the size of a single cookie): 3 fresh white of egg (about 100 g (3.5 ounces)) 1 pinch of salt 250 g (9 ounces) confectioner's sugar 1½ tablespoons of cinnamon ½ tablespoon of kirsch or lemon juice 350 g (12 ounces) grind almonds
Preparation: 1. Stir white of egg and salt in a bowl until it is real stiff. 2. Add confectioner's sugar, stir until ingredients are evenly distributed. Put 1 dl (0.4 cups) aside for the frosting. 3. Add cinnamon, kirsch (or lemon juice) and almonds, knead to a soft dough. 4. Roll out dough on a flat surface (it may be slightly covered with sugar), approximately 7 mm (0.3 inches) thick. Put out stars or other shapes and put them on a baking sheet covered with baking paper. 5. Let them rest for about 5 to 6 hours or over night in a dry place. 6. Carefully sweep the cookies with the frosting set aside in step 2. 7. Bake for about 3 to 5 minutes in the center of the pre-heated oven at 250 °C (480 °F). 8. Let cool completely before serving. Mulled Cider
Christmas Cranberry Apple Muffins

Ingredients 1 litre/1 pint 15fl oz cider 60ml/2fl oz dark rum 250ml/9fl oz apple and ginger tea, from herbal teabag 40g/1½oz soft dark brown sugar 2 clementines 4 cloves 2 cardamom pods 2 sticks cinnamon 2 fresh bay leaves
Easy, fast, delicious, and perfect served warm around the tree on Christmas morning!
How to make it! 1. Pour the cider, rum and herbal tea into a wide saucepan. Add the sugar and place the saucepan over a low heat. 2. Slice the clementines in half and stick a clove into each half. Add the clementines to the pan. 3. Break the cinnamon sticks in half. Add the cinnamon, bay leaves and cardamom pods to the saucepan. 4. Heat the saucepan until the mixture is almost boiling. Turn down the heat once the pan is near to boiling. 5. To serve, ladle the mulled cider into heatproof glasses with handles. Source: bbc.co.uk
1/2 cup sour cream 1/4 cup milk 1/2 cup brown sugar 1/4 cup oil 1 egg, beaten 1 3/4 cup flour 1 Tbsp. baking powder pinch of salt 1/4 tsp. baking soda 1 cup cranberries 1/2 cup peeled, chopped apple
Preheat oven to 400° and prepare muffin cups. Combine sour cream, milk, brown sugar, oil and egg in a bowl. In a separate large bowl, stir together flour, baking powder, salt, and baking soda, then fold in berries and apple to coat. Add wet ingredients to flour mixture, and stir only until dry ingredients are moistened. Spoon into well-greased or lined muffin cups. Bake for 20-22 minutes. Serve warm. Yum!
The Official Nanaimo Bar Recipe (from the City of Nanaimo) submitted by Julie & Kathryn Our favourite holiday recipe is for a much loved confection here in Canada; Nanaimo Bars! Though not soley a holiday treat, we tend to make it around the holidays, ourselves. Top Layer * 4 squares semi-sweet chocolate (1 oz. each) * 2 Tbsp. unsalted butter
Melt chocolate and butter over low heat. Cool. Once cool, but still liquid, pour over second layer and chill in refrigerator.
Middle Layer * ½ cup unsalted butter * 2 Tbsp. and 2 Tsp. cream * 2 Tbsp. vanilla custard powder * 2 cups icing sugar
Cream butter, cream, custard powder, and icing sugar together well. Beat until light. Spread over bottom layer.
Bottom Layer * ½ cup unsalted butter * ¼ cup sugar * 5 tbsp. cocoa * 1 egg beaten * 1 ¼ cups graham wafer crumbs * ½ c. finely chopped almonds * 1 cup coconut
Melt first 3 ingredients in top of double boiler. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs, coconut, and nuts. Press firmly into an ungreased 8" x 8" pan.

I am really into things olfactory, so my DIY tip is about that: Make pomanders by using a knife to make tiny slits into lemons and oranges. Insert cloves into those slits. Now roll your pomanders in orris root powder. You can already display them like this, as they dry in a bowl. Another alternative is to attach ribbons to them with the aid of toothpicks and hang them up.

My DIY thing I have done in the past or what my friends have done, is one, make a mix CD for all your friends with a personalized note on the front. I know we all listen to music on itunes these days, but there is nothing like the mix from a friend. I also used to carve make linoleum blocks of Rudolph the reindeer. I would use silver for his body and red for his nose and print them on black cards. People always responding really well to those! - Kelly Lynn

Here's something i used to do as a kid. i'd collect tissue boxes with holiday designs (if not a tissue box, a cardstock paper. white is nice...). cut them out into a postcard shape 4x6. with aluminum foil or candy foil wrappers, cut out or shape with hands little stars, snow flakes or just simple tiny balls. glue them on to the design side of the 'postcard'. (let's say the design is a house or tree with snow falling down. i'd accentuate the snow with the aluminum foil snow flakes - and if you're using cardstock paper, with a black pen, draw an outline of a simple house and a pine tree use the foil stars and snow flakes for the sky and the tiny balls to cover the floor). use the card as an outline to cut out a blank piece of paper (whatever color you desire). glue to the flip side of the card. with a fine point black pen, mock a postcard layout. you know, a vertical line in the middle, three horizontal lines on the right side for the address and a square on the top right corner for the stamp! - RJ
