August | September issue. Even though I don’t know most of my readers personally, I look at you as a friend for supporting my path and journey with Heartland LIVING. Sometimes I may not feel I know what my path is, but God does. He knows how my talents and abilities can best fit into this plan he has for me so I continue to bring you the best I can find for you to read about in your communities. Friends are the family we get to choose and I was blessed about 30 years ago with a very special friend, my BFF Nancy “Boo” Redding. She has always been more like a sister to me and her friendship is such a blessing. Boo and her husband, Robert “Buck”, invited us to their backyard BBQ a few weeks ago and let us capture photos of a special day with family and friends. We hope you find time to create your on backyard BBQ with family and friends and share some of our recipes. I am honored to have photographer Katara Simmons join our team at Heartland LIVING and what an amazing cover she captured for us with her first photo shoot. I had the pleasure of working with Katara at the Backyard BBQ and it was like working with someone I had known for years. Katara is not only a professional but is very passionate about capturing every moment. I am looking forward to many more photo shoots with her and especially one we have planned for you for our October | November issue. With the end of Summer approaching and the kids returning to school, we thought it would be a good time to take a weekend trip to visit one of the natural wonders of the world that Florida has to offer, the Natural Springs. Each spring offers a unique look into nature and wildlife. It’s a perfect time to pack up your cooler and go tubing down the cool springs. Finally, a story I’ve wanted to cover for some time now is the Historic Fish Camps of Bull Bay. I took a trip with my daughter Jessica to Little Gasparilla Island a few years back and since seeing these “camps” in the water, I’ve been interested in learning more about them and featuring their originality and history in this publication. I hope you enjoy reading about the family heritage these secluded getaways contain in their small appearance. As you will see, we have added our new “From Our Readers” page to share your comments and suggestions on our previous issue. Behind the Scenes Art Director

Bridgette K. Waldau has been a graphic and fine artist for over 30 years. She moved from

Illinois to South Florida in 1972. She received her A.A. from the Ft. Lauderdale Institute of Art and a Bachelor of Fine Art degree from Stetson University. She moved to Okeechobee in 1994 where she opened her studio, Bridgette Waldau Studio of Art. Bridgette has been creative director for several publications, working with Heartland Publications and Marketing as creative director since 2011. Bridgette is also very active in the community. She is arts and culture director of Okeechobee Main Street (10 years) and member of the Chamber of Commerce of Okeechobee County. Bridgette is married to James, a retired firefighter from the City of Hialeah.

Editor Writer Jessica Pleger is an Asset Transfer Specialist at Statler Financial. She is also the owner and operator of Pink Pineapple Catering that allows her to fulfill her passions for cooking and entertaining. She attended the University of Central Florida where she received a Bachelor’s degree in Finance. Jessica also enjoys taking photos, researching and writing stories, and participating in community events throughout the Heartland. A lifelong resident of Florida, Jessica was raised in Hardee County and now resides in Avon Park with her Husband, Jonathan. In her spare time, she enjoys being outdoors, traveling and spending time with family.

Rafael Pacheco I am a Pisces and was born on the island of Puerto Rico, but ironically I can’t swim. My dog thinks I am crazy for locking the door so many times in 10 seconds and my cats think I am made of catnip. Everything I wear is black, gray or blue. If I put on something colorful I must have been in a hurry. Keep me away from triple layer chocolate cakes, flan or Oreos. They are my kryptonites. The 70’s were peaceful, the 80’s were rocking, the 90’s were military and the new millennium is inspiring. Photography is how I have let my artistic visions come to life since the early 90’s. Patience, kindness, sharing, sacrifice, love and not to judge I saw my mother practice these and they stayed within me. We are collective energy and all from the same Source. I don’t see the world through my eyes. I see it through my soul.

This Michigan native is an avid outdoor enthusiast who can often be found photographing wildlife at Highlands Hammock State Park or in her own yard on Lake Sebring. Friends and family describe Pam as a great home chef who knows how to throw a dinner party. Because of her passion for travel, adventure, and great last-minute deals, Pam has been on numerous cruises and has traveled throughout the United States, Europe, the Caribbean, Mexico and Central America.

Katara Simmons I am an adventure seeker and a proud mom. My passions are capturing

life moments on camera and raising my 10-year-old son Kaden. Professionally, I have 15 years of experience as a staff photographer for local newspapers and with my own business a Sebring-based photography studio, Kaptured by Katara. My special talents are shooting people, editorial content, and marketing images. I'm a Highlands county native and enjoy meeting people and exploring places around the world. When I'm not taking pictures, I am helping grow my family's business, Sebring Wholesale Meats.

Photographer Sharon Cannon is a professional photographer as well as a licensed aesthetician and

makeup artist. Her passion has always been photography. She see’s everything as a moment to be captured, a true “Nikon moment”. She is an award winning photographer having transitioned from amateur to professional in 2010 when she was contacted by local publications to photograph events in the local area. Sharon was a member of the American Business Women’s Association and the American Cancer Society’s Look Good Feel Better Chairperson. She is a member of Okeechobee Main Street, on the arts and cultural committee. Sharon has lived in Okeechobee for many years, and has one son, Karl. “I love the history of our little town. I want to preserve all of our ‘todays’ through the lens of my camera, for our future ‘tomorrows’.”

Amber Callaham lives in Lakeland, FL, with her husband and Goldendoodle Hank. She

graduated with her masters in school counseling at the University of Central Florida and is an elementary school counselor at a title I school in Bartow, FL. Helping and being an advocate for disadvantaged children is her passion and what she feels the Lord has led her to do. In her free time she enjoys gardening, reading, traveling and photography. In 2012 a friend taught her how to use her Nikon and she hasn't been able to put it down since. Weddings, engagements, families and children are some of her favorite moments to capture.

Photographer Traci Newlin I am a native Floridian, born and raised in Arcadia. I still live here with husband, Jerry, 4 dogs and five horses. I attended SLU and SFU with studies in Biology Education (among a million other things). I trained barrel horses for years and competed across the nation at rodeos. My passion for art bled over into photography about twelve years ago. I am basically self-taught. I love portrait photography where my goal is to evoke some kind of emotion. I’m a member of the Professional Photographers of America and Florida Professional Photographers.

Audra Clemons A Bachelor of Arts degree in English Literature from the University of Missouri propelled Audra Clemons to begin her professional writing career in Los Angeles, California. At the age of 27 she wrote, produced and sold a national television show. After three top-rated seasons, Audra relocated to work in Miami, FL, where she enjoyed being closer to her family in Okeechobee. After a short stint in Miami, Audra was offered a position in New York City with the top International Travel PR agency. Currently, Audra travels between Florida and South America. She owns a boutique media service company that offers PR, Marketing, Brand Journalism and Social Media services. Audra also enjoys freelance writing for numerous media outlets.

Katy Fassler has been telling stories since she was able

to scribble her name in crayon on the walls. Hailing from Akron, Ohio, she moved to Sebring in 2006 to attend the Great Commission Bible Institute. Katy, an avid reader and book collector, lives by Dr. Suess’ advice, “Fill your house with stacks of books, in all the crannies and all the nooks.” Katy is currently the Director of Children’s Ministry at the First United Methodist Church in Sebring. Katy and her husband, Sean, live in Sebring with their two daughters, Adia and Emery.

Jessica Van Eerde is a freelance writer in her spare

family, has lived overseas but did most of her growing up in Arcadia. After meeting and marrying Mike Prescott, she moved to Wauchula in 1979 and now calls it her home. She and Mike raised their three children there and now are reaping the benefits of their labor with four sweet, beautiful grandchildren. As a child, Layne loved watching her mother and grandmother in the kitchen. Her cooking style is eclectic and best described as “Southern comfort cuisine”. Of course her husband says that he made her the “Chef” that she is today. Layne has conducted cooking classes in Punta Gorda and currently teaches a class in Wauchula. She loves to invent and re-invent recipes. Her greatest joy comes from three things: her faith, loving on her family and getting in the kitchen and “whipping” up something good.

On Aug. 12, 2012 our lives changed forever. Our six-year-old son began to exhibit the signs and symptoms of a stroke. We rushed him to a pediatric hospital and from there flown to Miami Children's Hospital. They diagnosed my son with a very rare disease called Moyamoya, there is no cure and his future was uncertain. Our small community of Okeechobee was praying and sending us their love. Cindy Sebring Adams who wanted to do a story on Ryan contacted us. We met the talented photographer, Raphael Pacheco, and did a photo shoot. Then Pam Golinski came over and wrote " Our Story". The day the magazine came out, Cindy came to Okeechobee to distribute the magazines, but she met us first downtown in Flagler Park, where she handed Ryan the magazine. The look on his face as he saw his picture gracing the cover was priceless. He took the magazine, sat down and starting looking at the magazine. With the Heartland LIVING story and our community rallying around Ryan, we were able to get to LIVING the best doctor in the country. Ryan has had two brain surgeries since that day and continues to do well. Thanks to all of the staff at Heartland LIVING for A Community loving us, sharing our story and always keeping up with his progress. -The Arnold Family, Okeechobee

It’s not a party unless you set the tone with a theme! To enhance the Redding’s beautiful country barn, they chose a rustic look for the day. You can set a beautiful entertaining area without a lot of fuss by using vintage tablecloths, mason jars, wildflowers and knick-knacks from around your house. Also, find an easy Pinterest do – it yourself options or visit your favorite local merchant for creative decorative ideas. There are many ways to make your party look like a million bucks without breaking the bank.

Fire up the grill and throw on your favorite foods and seasonal vegetables. Grill Master Brian Knight lit the “Big Green Egg” and prepared burgers and ribs for the Redding’s BBQ. It’s hard to beat the standard All American Burger but we offer it to you with a twist, the Blue Cheese Burger. For the healthier eaters, a Salmon Burger is a perfect light alternative. Serve them with your desired toppings along with a side of potato salad and grilled corn-on-the-cob with herb butter. Everyone has their go-to family recipes so it’s a great time to have guests bring a side dish to share. Make sure to always add an ice bath to your salad dishes to keep them safe and fresh throughout the day.

A refreshing White Sangria, Watermelon Margarita or Bloody Mary are perfect concoctions for a hot summer day! „

The Best Bloody Mary Recipe 3 ounces Vodka 5 ounces Bloody Mary mix – Zing Zang is preferred 1 tablespoon Lemon Juice Fresh ground black pepper Dashes of hot sauce 1/4 teaspoon salt – for the rim 1/4 teaspoon celery salt – for the rim Wet the rim of your glass with lemon and mix your salt and celery salt until evenly combined. Coat the rim with the salt mixture. Fill your cup with ice. Add your vodka and Zing Zang mix and stir. Next squeeze your lemon juice in and stir in your pepper and hot sauce, tasting as you go to get the right amount. Top with your favorite condiments. Enjoy!

Watermelon Margarita Recipe 2 teaspoons sugar or salt 1 lime wedge 3 cups cubed seeded watermelon 3/4 cups tequila 2 tablespoons sugar ½ teaspoon salt 2 tablespoons fresh lime juice 2 tablespoon Triple Sec 3 cups ice Lime wedges

Place sugar or salt in a saucer. Rub the rims of 6 glasses with 1 lime wedge; spin rim of each glass in sugar/salt to coat. Set glasses aside. Combine watermelon and next 6 ingredients in a blender; process until smooth. Pour margarita into glasses and garnish with lime wedges.

Blue Cheese Burgers

Recipe Makes 12 burgers

3 pounds lean ground beef 4 ounces blue cheese, crumbled 1/4 cup chopped scallion 1 teaspoon Worcestershire sauce 2 ½ teaspoon Everglades Seasoning

In a large bowl, mix the ground beef, blue cheese, scallion, Worcestershire sauce and Everglades Seasoning. Preheat grill for high heat. Form the burger mixture into about 12 patties. Grill patties 5 minutes per side for a medium rare burger or until your desired heat preference. Serve on a toasted bun with your favorite condiments.


BBQ Ribs Recipe ½ cup Everglades Seasoning Rub 2 tablespoons of brown sugar 2 tablespoons stone ground mustard 2 lbs country-style pork ribs Mix together the Brown Sugar, Rub and Mustard. Trim the pork ribs and season ribs with dry rub. Let the ribs marinade at room temperature for 30 minutes. Heat up the grill and clean the grates. Grill over direct high heat with the grill covered turning every 10-15 minutes. When meat temp reaches 155° remove from grill, top with your favorite barbeque sauce and enjoy.

Salmon Burger With yogurt-cucumber-dill sauce

Recipe To make 4- 8 mini sliders 1 – 2 pound Salmon fillets Path them dry and salt and pepper them both sides right before cooking ½ red onion 1 ripe avocado in slices 3-4 Lettuce leaves For the yogurt sauce: 1 cup Greek yogurt ½ English or pickling cucumber 1 tablespoon of dry dill or 2 tablespoons of fresh. ½ teaspoon fresh ground pepper ¼ teaspoon sea salt ¼ teaspoon celery salt 1 small garlic clove zest of one yellow lemon For the sauce, place everything in a blender or using a hand blender purée into well combined. Keep it chilled. On a very hot skillet sauté the Salmon fillets about 4-5 minutes per side leaving the centers slightly pink. Set them aside. Thinly slice the red onion. Cut the buns in half and slightly toast them, start assembling the burgers. Place the bottom bun, lettuce, salmon, yogurt –cucumber dill sauce, avocado and onions place the bun top and… Time to eat!

Creamy Red Potato Salad With Bacon Recipe Serves: 10-12 2 ½ pounds medium size red potatoes 6 eggs 1 pound bacon, chopped 1 ½ cup of mayo ¼ cup sour cream 1 tablespoon Dijon mustard salt and pepper to taste Cook chopped bacon in a large frying pan. While the bacon is cooking, scrub and cut your red potatoes into medium bite size pieces. Put in a large pot and fill with cold water.

Boil potatoes until tender, about 12 minutes but not too soft. Drain. Let potatoes completely dry.

In a large mixing bowl combine the mayo, sour cream, mustard, salt and pepper until creamy.

Boil the eggs for 8-10 minutes (at the same time as you start the potatoes and bacon). Peel the shells off the eggs. Cut the eggs in bite size pieces and set aside.

Grilled Corn with Herb Butter Recipe Makes 8 servings 1 cup butter 1/4 cup chopped fresh cilantro 1 1/2 tablespoon fresh lime juice 1 pinch cayenne pepper 8 ears corn on the cob, unhusked 3 quarts cold water, or as needed to cover Cream butter in a bowl until smooth; mix in cilantro, lime juice, and cayenne pepper until thoroughly combined. Cover and refrigerate to blend flavors. Peel husks back from ears of corn, leaving the husks attached at the bottom of the ears. Remove all the corn silk and close husks over the ears again. Cover corn ears with cold water until husks are thoroughly soaked, about 20 minutes. Preheat grill for medium heat and lightly oil the grate. Place the corn onto the hot grate and grill covered until husks are charred and the corn kernels are tender, 20 to 25 minutes, turning often. Strip off husks and serve corn with cilantro lime butter. „

of the state's most affluent communities lies a few pieces of real estate that, to a select few, are invaluable. In fact, if you were to ask the fishermen that often occupy these tiny recreational fish camps to trade them for their choice of houses on the neighboring island, the notion would be considered laughable. „

Three of these historically registered wooden stilt homes are perched proudly above the shallow backwaters of Bull Bay: the Willis Fish Cabin, the West Coast Fish Company Residential Cabin (bunkhouse) and the Icing Station at Bull Bay. When you head inland from Boca Grande toward Charlotte Harbor you pass by Bull Bay, a peaceful little bay traveled only by those who know the waters well enough to not run aground during low tides. Surrounded by mangroves and steeped in history, this otherwise ordinary bay is made extraordinary by its residences. Scattered across the bay are the three fish camps, similar in their history but all having a very different story to tell. Sided in cypress that has weathered into the perfect shade of gray, they are topped with tin, surrounded by docks and, on most weekends, they are filled with laughter and stories. In the early 1900s, fishing was a thriving industry in Charlotte and Lee Counties. Established in 1897, the Punta Gorda Fishing Company operated 140 boats and employed 230 at their offshore fisheries. Ice houses and residential fishing cabins were built to support the industry. „

A third generation harbor pilot and historian with the Boca Grande Historical Society, Captain Robert Johnson recalled, “These houses you refer to as stilt houses were known locally as fish houses. They served a vital purpose in the functioning of the Charlotte Harbor fishing industry. Before high-powered commercial boats became common, a larger fish boat often as long as 30 or 40 feet (run boats) would travel down the bay (Charlotte Harbor) from fish companies in Punta Gorda. They would provide the ice necessary to keep the fish from spoiling, and they would pick up the fish that the commercial fishermen had collected in their nets and then preserved on ice at these fish houses. The fish were transported to the railroad in Punta Gorda and shipped north.�


“The biggest industry in Punta Gorda for 50 years was the fishing industry,” stated developer Robert “Bucky” McQueen in a 2005 article in the Chicago Tribune. McQueen owns the West Coast Fish Company Residential Cabin in conjunction with brothers Brit and Rex Goulding and their uncle, Mike Goulding. Sitting furthermost into the bay, the Residential Cabin was a bunkhouse. Though rustic, the cabin offered weary commercial fishermen shelter from the storms, a place to sleep and rainwater collected from gutters mounted on the building. The McQueen and Goulding families purchased the property in 1970 from Shug Willis.

“That fish camp we acquired when my brother and I were very young. That was our vacations,” Rex Goulding said. “It is very close in my heart, and now my four kids enjoy it. We get out there every five or six weeks.”

“We lease the bottom from the state. The structure is ours. Our fish camp is incorporated under the name Bull Bay Fish Company, Inc.,” Brit Goulding explained. “I was four years old when I first went down there. We ate clams and oysters, and we caught fish with my dad, Joseph. It was one of those things you pass on, a portion of history we don't want to let go. It all goes back to the old, old time southern heritage, that's what it means. Old time southern heritage, family and paradise.” During the mid-1980s, the Florida Department of Natural Resources stated that fish shacks like the ones in Bull Bay were navigational hazards and posed a threat to sea grasses and began burning down the structures throughout Charlotte and Lee Counties.

In an effort to preserve these icons of local history, Brit and Rex's grandfather Harry Goulding (a retired vice president of the Punta Gorda Fishing Company), Bucky McQueen, Punta Gorda attorney Michael Haymans, and Icing Station owner Randy Dunn all worked to secure the listing of ten of the stilted structures on the U.S. National Register of Historic Places (April 10, 1991), including the three on Bull Bay. Just inside the mouth of Bull Bay, tucked tightly against the mangroves is the Icing Station. It was a holding facility where all the fisherman would bring their daily catch to be iced down and stored until various fishing companies would send barges to retrieve the haul, usually about three times a week. The ice box was a room with two foot thick walls, typically insulated with sawdust, newspaper or coquina shells. Built in the early 1920s, the Icing Station was relocated to its present location at Bull Bay in 1931. The two room structure was moved by a barge that was slid in between the pilings under the shack during low tide. Then, as the tide rose the shack was lifted off its pilings and moved into position over the pilings set in Bull Bay. Originally, there was a very small attached room, accessed by a wood plank, that was called the Ice House Tinder. It was a residence for the attendant that operated the ice house. Dr. Ralph Brandon purchased the building located near Cayo Palu from the Punta Gorda Fish Company in 1960. In 1974, Randy Dunn took over the maintenance of the fish camp and became co-owner. When Dr. Brandon passed away, Mr. Dunn took full ownership. “Members of my family moved to Punta Gorda in 1956, and my aunt went to work for Doctor Brandon, a local dentist,” said Dunn, who is retired from the healthcare industry and now serves as the CEO of the Charlotte County YMCA in North Port. “It is probably one of the most important parts of my life, having grown up with access to the harbor in that way.” He

When Hurricane Charley devastated the area in 2004, many of the fish camps were severely damaged. But the Florida Forever Act of 1999 allows for the rebuilding of historical designated stilt homes after a disaster if they are restored to original specifications. The Willis Fish Cabin was originally built by the Punta Gorda Fishing Company as a place for Mr. Willis and his family to live while he spent time as a fisherman. This particular shack sits nearly in the center of the bay. It is the smallest of the three with two rooms, one room full of bunk beds and the other just a small kitchen and living area. It, like the others, has a low dock for parking boats, wrap around walk ways, a small back deck, an outdoor shower and Eco-friendly water systems that include a composting bathroom. With no electricity or running water, generators and fresh water are brought in for weekend and summer stays. It is a humble home to say the least but for those who are privileged to stay, it is perfect. For Captain Ron Jones, a fourth generation fisherman, the opportunity given to him by the late Jim Kelly to have ownership in one of these remarkable dwellings was one that he could not refuse. Being able to call the Willis Fish Cabin at Bull Bay his home, even if only for a weekend at a time, is special. Preserving the history of the occupation that runs through his veins and sharing the stories he grew up hearing is just a part of what makes the shack experience so extraordinary. “To be able to come here with my son is a gift,” Jones said. “These shacks are treasures that sit on top of the water instead of below it. When we come here with our friends and their children, we are living in a history lesson. And the best part is that you don't have to tell the kids how special

n Friday, July 10, the Gilbert Family of Companies dedicated their new American flag at their Gilbert Chevrolet location in Okeechobee. Sitting atop a 60’ flag pole, this 25’ x 13’ American Flag is visible from the Hoover Dike to the south and from more than a mile away to the north. However, this event was not just a flag dedication. The Culbreth family, owners of the Gilbert Family of Companies (named after their grandfather, Gilbert Sr.), took this as an opportunity to honor the more than a dozen United States Military Veterans that currently work for them and “all Veterans that have fought to provide the freedoms we hold dear”, said Gil Culbreth.

The flag was raised for the first time by the Okeechobee County Sheriff’s Office Honor Guard which consisted of Detective Bryan Lowe, Officer John Haze, Officer Quinton Speed, and Officer Brant Harden. The Honorable Judge Jerald (Jerry) Bryant gave both powerful and educational remarks about our nation’s great flag. "Since its adoption in 1777 as the symbol of a new nation founded on the principles of liberty and freedom, the flag has been respected and protected, by every generation of Americans.

Summer

is a time to enjoy being outside and to explore the hidden treasures of our motherland. You don’t have to go to a theme park to have a day of fun; Florida is packed full of natural springs, probably more than any other place on the planet. Springs are naturally occurring places where water flows from the underground layer of water under the surface. Most of these springs offer crisp, cool waters and a variety of rare wildlife; all filled with a rich and interesting history. Springs offer a unique and inexpensive adventure of tubing, swimming, canoeing and most even have campgrounds. For the more extreme adventurer and experienced scuba diver, a spectacular look into the underground world can be seen in the caves and caverns. Over the next few pages we will take a sneak peek into the natural beauty Florida has to offer. These natural springs are only a short trip away, usually off the beaten path and perfect for a weekend getaway with your family and friends. .

Warm Mineral Springs A

t a consistent temperature of 87 degrees, Warm Mineral Springs contains 9 million gallons of fresh water which replenishes itself every two hours. This natural resource is comprised of 51 minerals, which is one of the highest mineral contents of any natural spring in the United States. Warm Mineral Springs is recognized by the U.S. National Register of Historic Places because it is one of the most important underwater archeological sites in America. During exploratory dives in the 1950s, the remains of a prehistoric hunter and seven other humans were discovered in a very well preserved state. Similarly, evidence of several creatures have been extracted from the spring, including saber tooth tigers, giant sloths, tortoises, and even camels. Scientists anticipate that future excavations may reveal findings that may date back as far as 30,000 years.

Blue Spring Park

B

lue Spring is a first magnitude spring on the St. Johns River. Jacques Cousteau filmed here in 1971, bringing attention to the manatee and the importance of Blue Spring as a winter refuge, greatly influencing the state's decision to purchase the land. Today people from across the globe join local residents in visiting Blue Spring State Park during two distinct seasons. During the summer, swimmers, snorkelers, and divers cool off in the 72 degree spring, getting an up close look at the Floridan aquifer as it pushes water out of its vent at a rate of about 100 million gallons of water per day. Wintertime closes the swimming area, but still draws crowds to see Blue Spring’s most famous seasonal resident: the West Indian manatee. Two concessionaires on the property provide unique ways to interact with the natural features of the park. Canoe rentals and boat tours are offered year round, and tube rentals are offered during the swimming season. Get here early or expect a long wait to get into the park. „

Rainbow Springs

A

rchaeological evidence indicates that people have been using this spring for nearly 10,000 years. Rainbow Springs is Florida's fourth largest spring and, from the 1930s through the 1970s, was the site of a popular, privately-owned attraction. The Rainbow River is popular for tubing, swimming, snorkeling, canoeing, and kayaking. Canoes and kayaks can be rented at the headsprings. A picnic area at the spring includes tables, grills, and pavilions as well as private pavilions for large gatherings, private pavilions can be reserved. Rainbow Springs also offers full-service campgrounds. Rainbow Springs State Park is always excited to welcome guests and supporters to come out and enjoy the environmental, historical and recreational value we have to offer. „

Ichetucknee River

T

he crystalline Ichetucknee River flows six miles through shaded hammocks and wetlands before it joins the Santa Fe River. From the end of May until early September, tubing down the river is the premier activity in the area. In addition to tubing, visitors can enjoy picnicking, snorkeling, canoeing, swimming, hiking, and wildlife viewing. October through March scuba diving is available in the Blue Hole only (you must be cave certified). White-tailed deer, raccoons, wild turkeys, wood ducks and great blue herons can be seen from the river. Picnic areas, equipped with tables and grills, are available throughout the park. A full-service concession offers food, refreshments, and outdoor products from Memorial Day through Labor Day. Tubes plus snorkeling and diving equipment can be rented from private vendors outside the park. „

Kelly Park, Rock Springs Run I

n 1927, under a wooden shelter in what is now Apopka, Dr. Howard A. Kelly and a group of friends celebrated his generous donation of 260 acres of property to Orange County. Today this 360-acre park’s focal point remains the free-flowing natural spring (at a year-round constant 68 degrees F); the water erupts at the spring head – an exposed 20-foot-tall limestone outcropping dotted with caves – at a rate of 26,000 gallons per minute and flows swiftly to the end of a stretch of river watched over by lifeguards. Beyond the swimming area, the water races off to feed the Wekiva River before joining the St. Johns River on its way to the sea. The forest provides protected habitat for a variety of animal species. Over the years the park has been enhanced with a full-service concession, picnic pavilions, grills, a playground, restrooms, and tent and RV camping. It continues to be a favorite watering hole for thousands of locals and tourists annually; visitors can rent inner tubes outside the park to float along for ¾ of a mile (takes about 15 minutes), then walk the path back and go again!

Ginnie Springs T

he clear, bluish water of Ginnie Spring and several other springs in the Ginnie Springs Recreation Area have attracted visitors for generations. The park is very popular with open-water divers and cave divers due to the clear water, sand and limestone bottom, and extensive cave system associated with these springs. Because the springs are located like a string of pearls along the Santa Fe River, it is easy to paddle a canoe or kayak or simply float down the river or “go tubing” to visit each one. Visitors can also snorkel at each spring, as long as they have the appropriate diver flag and float. Other than the scubadiving and swimming access areas, the waterfront is a natural mix of cypress or hardwood trees. Turtles resting on logs and wading birds perched along the shoreline are common sights. Upland amenities include both wilderness and vehicle camping sites, covered picnic areas, a volleyball court, and a playground for children.

Art Therapy?

The American Art Therapy Association describes art therapy as "a mental health profession that uses the creative process of art making to improve and enhance the physical, mental and emotional well-being.” It is founded on the belief that self-expression has the power to help people communicate, overcome stress and explore various aspects of their own personalities. While therapy in general have many benefits, the concept of art therapy has proven to be successful in various ways that differ from traditional therapy. There are assorted uses for art therapy with respect to healing, but the benefits will surprise you if you’ve never heard of art as a form of therapy.

Art therapy sets itself apart as a means of therapy by utilizing the creative process of art. Anyone can be creative in some form or another. Art therapy can be especially valuable to children because they may feel uncomfortable expressing themselves with words. While art therapy can benefit children, it can also be very helpful to adults. Anyone can benefit from art therapy. Even if someone is using creative arts as a means of expression without the aid of an art therapist, there are still many benefits to be had. By expressing feelings through art, an art therapist can help individuals see things about themselves that otherwise may have not have made sense. Art therapists can help break through the process of emotions and feelings that individuals are struggling with and this can help with the healing. Since art therapists are trained in the arts and also in therapy, they are capable of guiding a person through the process of creative expression. Art therapists are also

quite effective in providing insight into a person’s creations and can help them in understanding certain aspects of themselves which maybe they didn’t know existed - good or bad. It is this idea of self-exploration that on many occasions lead a person to some profound conclusions about themselves. The effects of art


therapy can lead to a sense of relief and improved mental health. Remember, this is still therapy, but with a different element than most people are used to - art. Art therapy can benefit a wide-spectrum of disorders, diseases, and disabilities. Art therapy can help improve various mental and physical symptoms including, but not limited to, reducing pain, anxiety and tension. It can be beneficial to those who have mental disorders, severe or light emotional abuse, cancer, post traumatic stress disorders (PTSD), people who are bipolar and a variety of other serious ailments. Art therapy can also help people with their social skills. The benefits of art therapy in these types of situations can help with people that are withdrawn or shy, or who, for some reason or another, have a difficult time functioning within social situations. Many cultures have used art for thousands of years as a way to express, communicate and heal. This type of treatment can be traced back to

the 1940s. The artist Adrian Hill discovered the benefits of drawing and painting while recovering from tuberculosis in a British sanatorium. He subsequently encouraged his fellow in-patients to embrace this therapeutic modality. This began his work in this arena, which was documented in 1945 in his book Art Versus Illness. Today, art therapy is widely practiced and highly respected by health care professionals. It is utilized in hospitals, forensic institutions, psychiatric and rehabilitation facilities, wellness centers, schools and other clinical and community settings. Again, maybe it’s just the act of executing creative expression on your own or with others, or maybe it’s seeking professional help with a certified art therapist. Either way, the benefits of art therapy make it worth exploring as a catalyst for healing. ¢

Beat the Heat: Popsicles that Keep You Cool and Slim It’s that time of year again! Put one foot out the door and already you’re dripping with sweat. You need some way to beat the heat. Ice cream sounds delicious, but what if you’re trying to eat healthy or have lactose intolerance? Well, there’s another treat that is both indulgent and cool: Popsicles! Now, a lot of the Popsicles on your grocery store shelves are loaded with added sugars, preservatives and unhealthy dyes which aren’t going to help you eat healthy or keep your waistline in check, but there are other amazing alternatives which are easy to make, cost less, and can keep you cool and healthy. All you need is some creativity, some delicious ingredients, and a little bit of patience (so they have time to freeze). I promise it will be worth the wait. There are several magnificent Popsicle recipes that I’ve tried and loved, and so many more that I can’t wait to try. The best part is you can find recipes all over. From a general Google search of “healthy Popsicle recipes” to a simple perusal of Pinterest, there are hundreds and hundreds of recipes to try. There are even a number of recipe books dedicated solely to Popsicles. Trust me when I say, you’ll never run out of options to try. If you are looking for something sweet but not full of excess unnatural sugars, you can try a fruit based Popsicle, such as Karly Blair’s Chunky Monkey Fruit Popsicles. If you want something reminiscent of a Fudgsicle, just as tasty but much healthier, you can make a soy-free, gluten-free fiber-rich Vegan Black Bean Fudge Pop (see Kathy Hester’s The Great Vegan Bean Book). Or, if you want something savory, you

can make something with a bit different, like Marla Meredith's Lemonade Cucumber Spa Pop, which is a true citrus treat. Another plus is there’s nothing special you need to make them. More often than not, I simply use small plastic cups with Popsicle sticks or cake pop sticks that you can find at your local craft store. If you want to get “fancy” you can buy Popsicle molds in a variety of shapes and sizes. You can find these molds almost everywhere, from Wal-Mart and Amazon.com, to Williams and Sonoma and specialty stores. The prices vary based on where you shop, the material of the mold and what design you’re looking for but on average the molds range anywhere from $5 for a set of 4 to $15 for a set of 6 or 9. There’s truly nothing better on a hot, Central Florida day than a cool, refreshing Popsicle straight from the freezer; especially when you can rely on the fact that it was made with healthy ingredients and won’t cost you an extra hour at the gym. Maribel Sanders The Face of Sebring Macaroni Kid

M

others wear many hats; gourmet chef, chauffeur, financial advisor and home manager to name a few. Maribel Sanders, a graduate of the University of Central Florida, a wife and a homeschooling mom of two girls, wears her many hats well and is working to help parents juggle the necessities and busyness of raising children. Sanders, a Sebring resident, is heavily involved in the Highlands Maribel Sanders County community. She and her husband, Mike, serve at Grace Bible Church, leading the married couples’ ministry and are involved in other Bible studies and ministries. She loves to tell the story of how she and her husband met, in a psychiatric ward! Sanders was in school studying to be a child psychologist and Mike was working as a nurse. While she decided to take her love of children in a different direction, finishing her degree in special education, she left school with wonderful experiences and the love of her life. Sanders, the publisher of the newsletter and website Sebring Macaroni Kid, saw the need for a resource for families to know the happenings of the area. “A few years ago, I was talking with a mom and said ‘There has to be a place where someone can go and find all the things for families’. That got the ball rolling.” The free website gives a rolling calendar of events, promotes local businesses and hosts events for families of Highlands County and surrounding areas. It also includes blog posts of activities, crafts, tips on parenting and weekly newsletter.

One of the largest events, Sebring Macaroni Kid organization has hosted is the Princess Ball, a father- daughter evening at the Circle Theater. This year’s ball will be September 25 from 6-8 pm. “It is so important in a little girl’s life, to have special moments with her dad.” Tickets are now available. Sharing events and information is only one side of Sanders’ dream. Watching the community come together is the ultimate goal. In May of 2013, Sebring Macaroni Kid was instrumental in rallying the community to help a family with a terminal child visit Disney World. Through the generous gifts and funds raised from Ruby Tuesday dinners, Maribel was able to make arrangements for the hotel, tickets and even some spending money for the family to enjoy a wonderful and much deserved vacation. “Sebring Macaroni Kid is the resource for families. The Lingering Citrus Greening Before droves of tourists flocked to Walt Disney World and before South Beach was a mecca, a style and a beach like any other in Florida, the mighty orange ruled the Sunshine State. However, the discovery of citrus greening in Florida over ten years ago sent Florida Citrus growers into a crisis. Citrus remains a huge industry in the state, with a total economic impact of nearly $11 billion per year, but greening has cost growers in the juice business $7.8 billion since 2006, according to a report by University of Florida [UF]. What happens to a tree that is affected by citrus greening? The fruit on the branches stays small, tastes bitter and never ripens from its green stage of development – hence the name. Even worse, the disease eventually kills the tree. There is no known cure for this putrid disease, which is on the United State Department of Agriculture’s list of threats to plants and wildlife regulated by the Agricultural Bioterrorism Protection Act. With not enough fruit available in Florida, some orange juice manufacturers are now relying heavily on supplemental imports from California and Mexico. A side effect of this supply-and-demand crisis has also pushed the retail prices up, therefore reducing orange juice at the breakfast table. This disaster started in June of 1998 when an Asian citrus psyllid was first detected in two South Florida counties. At

the time, the psyllid was considered to be a significant pest, and although it did not appear to carry the deadly bacterial disease that causes citrus greening, it made establishment of greening more likely if the disease were introduced. A few years later the devastation would be apparent. Today, the University of Florida is heading much of the combative research on citrus greening and one interesting test is the introduction of a beneficial wasp, Tamarixia radiata, which is now widely established throughout Florida. This wasp feeds on the psyllids and reduces their population. Other insects like lady beetles, lacewings and spiders are also consuming more than 90 percent of psyllid eggs and nymphs. Another UF scientist, Swadeshmukul Santra, recently developed a temporary solution of a zinc-based bactericidal spray he calls Zinkicide, which addresses citrus greening by targeting the bacteria that cause the disease. Dr. Erik Mirkov, a plant pathologist with the Texas A&M University’s AgriLife Research and Extension Center in Weslaco, also has been working on a cure and found a

promising lead with spinach proteins that appear to curb the disease. His patented research involves combining a spinach gene with conventional citrus trees such as Rio Red grapefruit and Hamlin orange. The U.S. Environmental Protection Agency has approved the application for an Experimental Use Permit that clears the way for substantial acreages of transgenic citrus to be planted. The application was submitted by Southern Gardens Citrus, one of the largest citrus producers in Florida, which is working with several universities and state and federal agencies to come up with a solution. There are many more hopeful stories like these – brilliant minds coming up with ideas to control the disease. The less-than-savory journey down the citrus greening path has been long, but let’s not give up the hope for a solution. ¢

A Night Out at Eighteen East Restaurant Review by Cindy Sebring Adams

If

you’re looking for a place where you can eat a great dinner and live entertainment, Eighteen East is the place for you. Located in Downtown Avon Park, owner and chef David Ailstock has created a dining establishment that makes you feel welcome and right at home from the moment you walk in the door. David’s vivacious personality warms the atmosphere which matches the warm venue and décor. Known for having “The Best Steak in Town”, they’re menu also offers a variety of sandwiches, salads and a nightly special, usually featuring fresh seafood. On the night my friends Nancy Redding, Teri Leavengood and myself visited Eighteen East, David prepared a sample of his menu items for us to taste and share. The special that evening was Bone In Pork Chop atop Apple Cider Cole Slaw with Mac & Cheese & Green Beans as well as a Blackened Redfish with Everglades “Cactus Dust”, Fresh Asparagus with Hollandaise and Mashed Red Potatoes. For Appetizer we had the Bib Lettuce Wrapped Mahi Tacos with an Avocado Cilantro Slaw and fresh Tomatoes from local McCracken Farms. This was a fresh starter with perfectly prepared Mahi on top of bright slaw with

local ingredients. Now that is hard to beat! Then for our entrée we shared the two specials along with the Bacon Burger with Mushrooms, Swiss Cheese and served with Beer Battered Crazy Fries drizzled with Ranch Dressing and the Black N’ Blue Bone in Rib Eye Steak Topped with Blue Cheese Crumbles. You can add Grilled Shrimp to the steak for Eighteen East’s own Surf & Turf. Everything was perfectly cooked to order and taste just as delicious as it looks. Luckily my girlfriends and I were sharing so we had room for the Granny Smith Apple Dumpling with Homemade Amish Cinnamon Ice Cream for dessert. It was the perfect ending to a delicious meal. Eighteen East is open Tuesday through Saturday from 4:00 pm through 9:30 pm. Most nights the place is grooving to local musicians that offer the prefect entertainment for your dinner. The genre of music varies from country to jazz so there is something for everyone to enjoy. You’ll find this beautiful rustic restaurant packed with family and friends who are there for a great glass of wine, an ice cold beer, delicious meal and a good time. On June 13, the Division 7 AAA Dixie Youth DeSoto All Stars competed in the Division “B� tournament. The team had an awesome year and ended up Runner-Ups behind East Lakeland. They advanced to the State Championships held in Franklin County. DeSoto 10U advanced in the tournament and on July 21 DeSoto players really outdid themselves. They came together behind the fantastic pitching arm of Jace Kellogg and Nehemiah Strader. They were able to end the game early by a ten run rule in the 4th inning, 14-4 against Blountstown. To end the journey on July 22nd after two hard fought games DeSoto 10U Team is State Champion Runner-up! These boys played their hearts out. They leave Franklin County with their heads held high and they returned to DeSoto as CHAMPIONS! Cracker Kids Camp By Jessica Prescott Peace River Explorations held its second annual Cracker Kids Camp this summer at the historic train depot in Wauchula. Designed to help elementary-age students to learn and experience the rich heritage of the Heartland and the State of Florida, the camp was packed with interactive learning, engaging activities, hands-on-crafts and themed snacks. Campers started out their week in Florida’s prehistoric past, digging for fossils and creating alligator crafts. Then the campers traveled through time learning about the Native American Seminole Tribe and Florida Cracker pioneers. Campers absorbed an array of tidbits about our area’s deep agricultural roots, from beekeeping and the citrus industry to dairy farming and phosphate mining. Designing colorful Seminole vests, squeezing fresh orange juice, planting garden seeds, hearing the crack of a bull whip from a real Florida Cracker cowboy, playing pioneer games and churning homemade butter – each day was filled with authentic Florida experiences for real Cracker Kids! Tenth Annual Heartland Triathlon By Cherie Patrick Starr Photos by Katara Simmons The 10th Annual Heartland Triathlon was a tremendous success with the largest crowd in the events history and nearly 1,000 competitors. The events were held on June 20th for the Youth and June 21st for the Adult Sprint and Olympic Distance. The competitors Swim in the clear, spring-fed waters of Lake Jackson, ride on the smooth, fast paced Bike course on the open roads north of Sebring and Run the historic downtown Sebring circle to the finish line! If you were fortunate to finish in the top 5 in your age group, you’d love the armload of unique awards you walked away with. The Heartland Triathlon is an event created by Triathletes for Triathletes and their families. This annual event received a tremendous amount of support by the local community.

Sertoma Junior Golf Tour By Jonathan & Amanda Armentrout Sertoma Junior Golf Tour is a youth program open to ages 6-18 designed to promote the game of golf, friendship, and good sportsmanship. The youth compete in nine different events; as well as the J.W. McFarling Junior Golf Classic in Spring Lake, Sebring, FL, the Bill Jarrett Ford Match Play Championship at River Greens, Avon Park, FL and the Sertoma Junior Tour Championship at Sun ‘N Lake, Sebring, FL. The events span throughout the Heartland and scores are figured at the end of the season to determine overall winners in each age division. The semi-formal dance was a night filled with music and fun. The event also included a dinner, games and keepsake handprints and photos. It was a successful and fun event for all who attended.

Okeechobee Main Street held an artist’s reception for Reneé King on July 16 at the Historical Okeechobee County Courthouse. Reneé King is an oil, acrylic and mixed-media artist. Using various mediums, put to canvas, King generates a dynamic feel into every painting she creates. Her vibrant musical theme abstracts are on exhibit at through Sept. 1.

The T. Mims Corporation Red, White & Kaboom Independence Celebration took place at Lake Mirror along the Frances Langford Promenade on Friday, July 3rd with a breathtaking fireworks display dazzling the crowd. A live concert featuring the energetic Clemons Road band started the party as soon as the first note rang! A variety of food trucks surrounded Lake Mirror and everyone relaxed on their blankets and enjoyed the festivities and fireworks to the finish line.
