LETTER FROM PUBLISHER THE

Each issue of Heartland LIVING has its twist and turns, and our June & July Issue was no exception. We start with 108 blank pages and then go through a flow of ideas. We play matchmaker with what our writers have written, photos from our photographers, and editor proofing to prepare all for the final design. I couldn’t do any of this without all of them.

The fun really begins bringing it all together with Bridgette, my creative director. My team and I work to bring all the stories, photography and ideas together, but seriously, she is the one that brings you all the creative designs you love. There’s never just one “right way” in selecting photos and designs to go with the stories, it is a matter of what feels right at the time.

Then there’s the cover photo, which at times, we will go over and over for many hours and must make hard decisions. You can be sure when the cover is chosen, a lot of time, thought, and hours were put into it. There were so many great choices for this issue, and we are pleased with our selection of placing on the cover, beautiful model Trista Gilliard.

Heartland LIVING would like to thank all our professional vendors, friends and staff who contributed to the Wedding Guide photo shoot. Summer Fun is Calling! The kids are out of school and it’s time to play. This is the best time for so many fun things to do, from family vacations to pool time and more.

This issue we are sharing a few gems perfect to keep you, the family and friends entertained. Christy has discovered some of the Florida Springs, that are not only beautiful, but a great way for cooling off this summer. Bridgette is also sharing, with her fun illustrations, the health benefits of going to our gorgeous Florida beaches. We also include some backyard recipes that you can cook up with family and friends, and of course that pool would be nice to dip into as well. Let’s stay cool this summer.

Bridgette Waldau has been a graphic and fine artist for over 40 years. She received her A.A. from the Ft. Lauderdale Institute of Art and a Bachelor of Fine Art degree from Stetson University. Bridgette has been creative director for several publications, working with Heartland Publications & Marketing as art director since 2011, winning 11 Florida Magazine Charlie Awards (2015- 2021). Bridgette is married to James, a retired firefighter from the City of Hialeah.

Caroline Maxcy Fox was born and raised in Central Florida. She decided to be an artist at the age of five. After achieving her BSA from Florida State University, she practiced in the field of design for six years and then received a Master's in Graphic Design from NC State University. She honed her artistic craft and developed a "way of seeing" that fuels her work. Caroline is a full-time photographer and lives with her husband in the heart of Sebring. Together they run the day-to-day life at The Great Commission Bible Institute as the site coordinators and dorm parents. Naturally, adventure abounds.

Kristy Harris is an Art Teacher, Artist and Graphic Designer in Highlands County. Originally from Michigan, Kristy received a Bachelor of Fine Arts degree from Northern Michigan University. Kristy and her husband, Cason, moved to Lake Placid after college, fell in love with the area and just…never left. They have one daughter, Olivia, as well as two dogs and two kitty cats. When she isn’t teaching high schoolers, Kristy enjoys running her freelance graphic design business (Kristy’s Kreatives), growing flowers, taking photos, traveling, and spending time with her favorite people

Kelsey Schauf was born and raised in Sebring and resides in Mooresville, NC. For the first eight years of her career, she was a Public Relations Representative in the motorsports industry. Kelsey left that industry in 2022 to spend more time with her husband, Jacob, and son, Kolbey. She is currently working at Carolina Cat in Charlotte, North Carolina as a Marketing Specialist for the Rental and Used divisions.

LISA TAYLOR HALL picked up her camera 7 years ago when motherhood inspired her to see the beauty in each day. She loves how photography captures a moment in time that otherwise might be forgotten. Lisa loves to capture organic moments in their best light. She grew up in Sebring and currently lives in Lake Wales with her husband and their three sons. Lisa specializes in lifestyle photography for families, small events, maternity, and graduates.

59 A work and no play makes Jill a dull girl, so let’s put responsibilities aside and tag along with our publisher, Cindy Sebring Adams, and her bestie Diana Albritton for a girls’ weekend in Savannah, Georgia! It’s only a six and half hour drive from Sebring to Savannah. Called “the Hostess City of the South” for its antebellum hospitality and charm, Savannah marks the spot in 1733 when the 120 passengers of the good ship “Anne,” led by General James Oglethorpe, landed on a bluff high along the Savannah River and created the 13th American colony. Savannah is known for its beautiful landscapes, well-preserved architecture, and vibrant history. Cindy and Diana were only there for the weekend, but they packed in a lot of fun. When it comes to floral design, simplicity will never go out of style. However, maximalism floral-focused design is having a moment, and we are here for it! Traditionally, wedding florals have been bouquet-centered. However, with 2024 trends, overall floral event design allows for countless opportunities of expression for weddings. Think pops of color (i.e. that Pantone Color of the Year: Peach Fuzz) and artistic floral installations. Speaking of the bouquet, the once-popular “round” arrangement has transformed into “wispy florals” that are inspired by wildflowers. That loose, wispy look can be created by using flowers like poppies, ranunculus, cosmos, and tulips with bold staples like roses and peonies. One of the most unique 2024 wedding trends packs a visual punch by making enchanting botanical wonderlands of chandeliers, photobooths, sculptures, and arches. This trend can be captured by working with your florist to create a focal point that will really wow your guests.

Today’s couples are all about choosing unique wedding venues that resonate with their distinct personalities. Locations like wineries, taprooms, open-concept barns, and large estates have become popular sites for the all-inclusive wedding ceremony and reception. Additionally, as weddings become less structured, the trend is to have a smaller, intimate ceremony on Friday night with a larger, separate party the next day focusing on casual, family-style food and candid photography. By separating the two aspects of your wedding, your ceremony can be more intimate, and the day two party opens up unlimited options for theme, decor, menu, and dress code. Bonus tip: never underestimate the power of a day three post-wedding brunch to send off your guests.

Speaking of themes and decor, couples today are becoming more mindful about sustainability, including when it comes to their nuptials. The onward march of progress is fueled by innovation, but this same progress is tempered by the consequences of change. Perhaps every town that has survived the test of time bears the scars of economic downturn, rebellion, and bust. Some towns, like Lakeland, FL, go further to embrace, celebrate, and honor the fascinating stories of triumph and despair memorialized in the historic buildings and homes. A stroll through Lakeland’s Downtown or a drive through the seven historic districts is an invitation to explore and reflect on the intricacies of the past. Lakeland summons you into the story of a place, introducing you to the characters and highlighting the actions and experiences of individuals as generations layered their hopeful efforts for something better. But this story was almost lost, almost never told, almost never celebrated.

Lakeland’s downtown sits centrally; it is the heartbeat, the hub. Built in the boom of the 1920s, the town crowned its success with the construction of the Lake Mirror Promenade, later named the Frances Langford Promenade. Completed in 1928, the promenade exemplified the City Beautiful Movement, introducing the concepts of city beautification and monumental grandeur. The walkway around Lake Mirror and its various Neoclassical features, was designed by New York landscape architect Charles Wellford Leavitt. The large scale of the project— a nearly 7,000 ft seawall, grand staircase, arched and vaulted loggia, circular boat ramp, and elaborate light fixtures— symbolized the optimism of Lakeland’s citizens during the Land Boom. But every boom has a bust. Over the next 50 years, many of Lakeland’s historical buildings, churches, and hotels were lost to the pressures of suburban sprawl, a slowed economy, and the desires of a newly car-centric public. Traditional businesses left Lakeland’s downtown, and beautification efforts focused on modernization. The Frances Langford Promenade languished along with the economy, falling into a state of disrepair by the mid 1970s. The once-grand symbol of hope had become an eyesore on the landscape, and the historical fabric of Lakeland’s heart was torn and tattered.

If history “is a tapestry woven by the actions and decisions of individuals” as the popular podcast “The Rest is History” claims, it would be safe to say that no one would have predicted the way the stories would weave together. Jean Bunch was barely 30 years old when she and her husband purchased a piece of land “way out” in Highlands City, southeast of lakeland. Active Lakeland residents, they had purchased the property as an investment, and the tilting farmhouse that came with it was being used for storage until they could tear it down.”It was so slanted,” Jean laughs, “my kids would ride the office chairs with wheels downhill…. inside!” The Bunch family spent a lot of time “just hanging out” at the property with friends, and when one suggested that straightening up the old building wouldn’t be too big a project, they did it. That one small action transformed the house. Suddenly, The Bunches could see it for what it was—beautiful, stately, promising.

Nationally, the country itself was in a moment of historical reflection. By the mid-1960s, federallyfunded infrastructure and urban renewal projects nationwide had resulted in the rapid destruction of significant places in the nation’s history. Congress recognized that the federal government’s historic preservation program was inadequate to ensure that future generations could appreciate and enjoy the rich heritage of the nation, and so they passed the National Historic Preservation Act (NHPA). Signed into law on October 15, 1966, the act established a national preservation program and a system of procedural protections which encouraged both the identification and protection of historic resources, including archeological resources, at the federal level and, indirectly, at the state and local levels. NHPA represents the most extensive preservation legislation ever enacted in the U.S.

Following the zeitgeist of the times, Jean Bunch dove into the project of restoring the 1914 farmhouse with vigor. Taking a sabbatical from all of her volunteer work, she hammered and cut and drilled alongside the crew, falling deeply in love with the work of restoration. Every nook and cranny of this home had been touched by the hands of people that were carving out a life, just like her. Their influences, beliefs, heartaches, and success were woven into the handiwork; Hope and promise were nailed into every plank of the flooring. Witnessing the restoration of this home, in which Jean and David still live, opened their eyes to view Lakeland in a new light.

It was on the heels of her own personal historical restoration project that Jean Bunch met Jim Edwards. He had been hired by the City of Lakeland to do some planning. The disrepair of the Frances Langford Promenade and other historical buildings were at the front of his mind. The project would be massive, and funding was certainly an obstacle. In 1979, Historic Lakeland, Inc. was incorporated by Jean Bunch and Mildred Grizzard. The first undertakings of the organization were to seek a grant that would provide funding and to obtain the documentation that would secure a spot for Lake Mirror on the State Registry of Historic Places. Four years later, on July 3, 1983, fireworks erupted in the sky over Lake Mirror. Lakeland Residents stood in awe at the beautiful display in their downtown. This exact scene had played out 55 years earlier to celebrate the original completion of the grand promenade! „

Historic Lakeland, Inc. had made its mark on Lakeland with the repair of the promenade and quickly set their sites on other notable historic buildings and neighborhoods. Through extensive education and an insistent presence, the organization garnered increasing support. Today, Lakeland is a unique display of history thanks to the efforts of those sensitive to retaining the historic fabrics. The Terrace Hotel, the Sorosis Building, the Coca-Cola Building, the original Lakeland High School building, and the seven distinct designated historic neighborhoods are among the many Historic Lakeland, Inc. success stories.

History is not solely determined by great rulers or monumental events. It is equally influenced by the actions and experiences of ordinary people. The history of a city is woven by the threads of its residents and the colorful legacy that weaves through the community. You know that feeling in the dead of summer when you jump into your pool and the water is so warm that it’s not refreshing at all, it just feels... wet? Well, that never happens in Florida’s natural springs! The water stays around 72 degrees year-round in the over 1,000 recognized natural springs across the state.

Florida has the most springs out of all 50 states and more than most countries in the world. Because of the large amounts of porous limestone near our underground aquifer system, water easily finds its way into the springs. Add to that the 59 inches of rain we get each year, and we end up with a unique geological and climatic combination that results in spring formation. Many springs are protected and located within our state parks. Let’s take a look at some of Florida’s hottest natural “cool spots” you might want to visit this summer.

Nature’s Lazy River

If you love the lazy rivers at Florida’s water parks, this is the place for you. At Ichetucknee Springs, located a little less than an hour northwest of Gainesville, you can rent a tube and float for 45 minutes to 2 hours down a shady, pristine river deep in the heart of North-central Florida.

Our family stayed at a nearby campground a few summers ago to enjoy this one-of-a-kind experience. A storm rained down on us during our first float, (fair warning: there are only two places to call it quits— Dampier’s Landing and what they call the “final takeout”) so it was a chilly hour for us! But after warming up with some hot soup in our RV in the parking lot, we checked the weather and decided to go again.

Our second float was absolute paradise: warm air, cold water, the gentle current carrying us along as we admired nature on all sides. Unlike with theme parks, this experience is not over scripted. If a tree falls into the river, nobody is going to drag it out... you’ll need to float your way around it. I got some exercise steering my tube around obstacles, but my teenage daughter subscribed to a different philosophy: “Just let the river take you, Mom. It will find a way.” The wisdom of children.

While tubing is the main attraction at Ichetucknee, there are other adventures to be had as well in this 2,669-acre wildlife haven, including birding, hiking, paddling, and scuba diving or snorkeling the Blue Hole Spring.

One Hell of a Dive

Devil’s Den is underground—how apropos. This inverted-mushroom-shaped cave located in Williston (a little over half an hour southwest of Gainesville) is 54 feet deep. Billed as one of North America’s most prehistoric places, Devil’s Den Spring has been home to many extinct animal fossils dating back from 2 million to 10,000 years ago, the most famous of these being an extinct species of Florida cave bear now on display at the University of Florida’s Museum of Natural History. Local lore has it that the spring got its name from the steam that would rise from the mouth of the cave on cold winter days. Scuba divers describe “waiting at the gates of hell” as steam rises around them, water so clear they can see straight to the bottom, and “archaic-looking turtles and behemoth fish” swarming around them “without a care.”

Divers with open water certification do not need a reservation, except for night dives. If you’re not scuba certified, you can snorkel Devil’s Den with a reservation. Access to the spring is limited to those who are snorkeling or diving, and there is an admission fee. There is lodging right on property, including four cabins for rent, an RV park with 32 sites, and tent camping. „

Manatee Hangout

But what if I want to see manatees, you ask? Then you’ll want to visit Three Sisters Springs, part of the Crystal River National Wildlife Refuge on the West Coast. This park features a boardwalk with viewing platforms for observing the springs and native wildlife, as well as bike and hiking trails with views of Magnolia Springs, Lake Crystal, and the wetlands. Renowned as a winter sanctuary for West Indian Manatees, the 57-acre refuge supports over 100 bird species and various other wildlife. Guided tours are available by US Fish & Wildlife Service volunteers.

In an attempt to preserve shoreline vegetation and water clarity, water access isn’t available from the refuge. However, you can launch kayaks, canoes, or paddleboards from any of the public kayak launches on Kings Bay. If you want to swim with the gentle manatees, tours are offered through local outfitters. If you do get up close, remember, look but don’t touch! Manatees are federally protected.

Close to Home

If you’re looking for a day trip, Wekiwa Springs is one of the closer destinations, located just 20 miles north of Orlando in Apopka. We took a day trip there recently, and although we were under a heat advisory, we were cool as cucumbers after snorkeling and floating in 72-degree water inside the concrete-lined swimming hole. Forty-three million gallons of fresh water per day bubbles up in this spring, where we dodged other swimmers and floaters as we snorkeled and chased tiny guppy-looking fish hanging out just below the surface.

Besides cooling off in the spring, Wekiwa Springs State Park offers bicycling, birding, camping, canoeing and kayaking, fishing, geo-seeking, horseback riding, mountain biking, and hiking. The secret is definitely out about this piece of “real Florida” just a stone’s throw from the theme parks, so be sure to go early. Visitors are turned away once the park reaches capacity.

A couple of other options for Florida Springs include:

Located in High Springs, FL, due west of Gainesville, Ginnie Springs is a popular destination that offers tubing down the river, scuba diving, swimming, snorkeling, padding, volleyball, and concessions. The only Florida spring with actual mermaids, Weeki Wachee is located about 45 minutes from Tampa and is famous for its underwater mermaid show. Buccaneer Bay onsite offers a sandy beach, two enormous water slides, a wading area for small children, and concessions. Kayak and paddleboard rentals are also available. Check the Heartland Living archives online for a feature article on Weeki Wachee State Park and its mermaids.

Regardless of which springs you visit, there are some general things to be aware of:

Go Early. Like Wekiwa, many of the springs will close temporarily if they reach capacity, so arrive early to avoid getting turned away at the door.

Alligators. Yes, alligators live in the springs. For the most part, they do not want to be where lots of people are swimming. That said, it is not unheard of to come across one, so be wary.

Pets and Service Animals. Many of these parks either don’t allow pets and service animals or only allow them in certain areas.

 Check the Website. Because park closures regularly occur due to weather, water quality, and other factors, it’s a good idea to check the park’s website for updates before making the trip.

 Sun and Bugs. It’s Florida—it’s hot and buggy. Don’t forget your sunscreen, hat, shade, and insect repellent!

With so many amazing beaches in Florida, the sandy shores are calling me. I love the smooth and crashing waves of beautiful blues and teals. Breathing in salty scents of the sea breeze is calming, along with the tranquil sounds of the ocean and seagulls.

If you need to get out of your apartment or house for a while this summer, then go to the beach. It is an amazing place to relax and reset. It doesn't get any better than this in Florida. Quite a few studies show that going to the beach improves physical health and mental health.

Here are some great reasons why you should visit the beach from time to time:

The minerals and salt in the ocean water soothe sore joints. It even has the ability to accelerate the healing of scrapes and cuts.

Sand acts as a natural exfoliator. It helps peels off ; dead skin cells from your feet and anywhere else to give you a wonderful glow. Going to the beach, is like going to an all-natural spa.

While at the beach, you are more than likely going to swim, walk, and run, all of which are a great way to exercise. You can stay healthy, get fit, or even lose weight at the beach. Just an hour of swimming can burn up to 410 calories.

Great Summer Outdoor Meals

Heading into Summer means it is time for outdoor grilling. It is that time of the year to go outdoors and celebrate the 4th of July or any summer day with family and friends. Heartland Living is bringing you some of our favorite meals. Check out these recipes that are traditional burgers and chicken recipes, along with some healthy vegetables and refreshing tea. INGREDIENTS

1/2 cup mayonnaise

1/4 cup ketchup

3 tablespoons dill pickle relish

3 tablespoons Dijon mustard

3 pounds ground beef

1 ½ teaspoons Kosher salt and 1 ½ teaspoons ground black pepper

2 tablespoons canola oil

6 slices American or Cheddar cheese

INSTRUCTIONS

I think this is the best cheeseburger especially with this burger sauce.

1. Sauce: In a small bowl, whisk together mayonnaise, ketchup, dill pickle relish and Dijon.

2. In a large bowl, combine beef, salt and pepper. Mix with hands or wooden spoon, then form into 6 patties the size of the hamburger buns.

3. Fire up the grill if you’re wanting to be outside. If inside, heat canola oil in a large cast iron skillet over medium high heat. Cook until desired doneness, top with cheese.

4. Serve immediately in hamburger buns with sauce and desired toppings.

Tender and Juicy Chicken Kabobs with Lemon-Garlic Marinade

INGREDIENTS

4 tablespoons olive oil, divided

1 diced shallot

3 tablespoons freshly squeezed lemon juice

1 tablespoon lemon zest

1 tablespoon chopped fresh rosemary

3 cloves garlic, minced

3 teaspoons Dijon mustard

1 1/2 teaspoons Kosher salt and 1 1/2 teaspoons

ground black pepper

2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks

1 red onion, cut into 1 1/2-inch pieces

INSTRUCTIONS

1. In a medium bowl, combine 2 tablespoons olive oil, shallot, lemon juice, lemon zest, rosemary, garlic, mustard, salt and pepper.

2. In a gallon size Ziploc bag, combine chicken and olive oil mixture; marinate for at least 2 hours or overnight, turning the bag occasionally. Drain the chicken from the marinade.

3. Put chicken and onion onto skewers and brush with remaining 2 tablespoons olive oil: season with salt and pepper.

4. Preheat grill to medium heat.

5. Add skewers to grill and cook, turning occasionally until the chicken is completely cooked through, about 10 minutes. Serve immediately.

Simple and not your classic potato salad. Crisp bacon with Dijon, fresh chives, dill and soft boiled eggs.

INSTRUCTIONS

INGREDIENTS

6 slices of bacon

3 pounds mixed yellow and red baby potatoes, halved

Kosher salt and freshly ground black pepper

3 tablespoons extra virgin olive oil

2 tablespoons whole grain Dijon mustard

1 tablespoon red wine vinegar

2 minced shallots

3 tablespoons chopped fresh chives

3 tablespoons chopped fresh dill

4 soft boiled eggs, sliced or halved

1. Heat a large cast iron skillet over medium high heat. Add bacon and cook until brown and crispy, about 7 minutes. Drain excess fat and transfer to a paper towel-lined plate.

2. Place potatoes in a medium saucepan and cover with cold salted water. Bring to a boil and simmer until just tender, about 5 minutes; drain well.

3. In a large bowl, whisk together olive oil, mustard, vinegar, shallots, chives and dill; season with salt and pepper, to taste. Stir in potatoes and bacon until well combined. Top with boiled eggs.

4. Serve immediately.

Crisp-tender grilled veggies served with a tangy, garlic basil sauce.

INGREDIENTS

3 tablespoons olive oil

1 pound trimmed asparagus

1 pound cherry tomatoes

8 ounces cremini mushrooms

3 ears corn, each cut crosswise into 4 pieces

3 zucchini, cut lengthwise

Kosher salt and freshly ground black pepper, to taste

BASIL GARLIC SAUCE

1/2 cup olive oil

2 tablespoons red wine vinegar

2 teaspoons Dijon mustard

2 cloves garlic. chopped 1/3 cup packed fresh basil leaves

3 tablespoons packed fresh parsley leaves

Kosher salt and freshly ground black pepper, to taste

INSTRUCTIONS

1. Preheat grill to medium heat.

2. Basil garlic sauce. Combine olive oil, vinegar, Dijon, garlic, basil and parsley in the bowl of a food processor until smooth and vibrant green; season with salt and pepper, to taste. Set aside.

3. Brush olive oil onto the asparagus, tomatoes, mushrooms, corn and zucchini; season with salt and pepper, to taste.

4. Add vegetables to grill and cook, turning occasionally, until lightly charred all over, about 3-4 minutes for the asparagus, tomatoes and mushrooms and about 5-8 minutes for the corn and zucchini.

5. Serve immediately, and you are going to want basil garlic sauce on everything!

Lightly fresh iced tea with raspberries and peaches, so refreshing!

INGREDIENTS

2 tea bags

1 cup raspberries

2 peaches, sliced

3 tablespoons agave nectar

Fresh Mint leaves, for garnish

INSTRUCTIONS

1. Steep tea bags in 4 cups boiling water according to package instructions; discard tea bags and let cool.

2. Combine peaches, raspberries and agave nectar in blender until smooth; strain through cheesecloth or fine sieve.

3. In a large pitcher, whisk together raspberry peach mixture and brewed tea. Place in refrigerator until chilled.

4. Serve over ice and garnish with raspberries, peach slices and mint leaves.
